The pandemic has seen record numbers 

of us undertaking DIY projects or geng 

tradesmen in to improve our homes. 

Our enthusiasm shows no sign of abang 

either, with the waing list for builders 

stretching into next year. 

This trend is likely to connue, but 

always make sure you get any necessary 

approvals, or you could run into problems 

when you come to sell your property. 

Planning permission, do you need it? 

Not all alteraons require planning 

permission. Generally, you will only need 

it if your proposed works constute 

development. This has a special meaning 

under planning rules. It includes structural 

alteraons and the sort of work a builder 

would ordinarily do. Non-structural work 

to the interior, like repainng the walls 

or replacing window frames, does not 

normally need permission, although 

special rules apply for listed buildings and 

conservaon areas. 

If your proposed works fall within the 

scope of permied development rights, 

you will not require permission either. 

This excepon covers some of the most 

common types of home improvement, 

such as small extensions and lo 

conversions. However, permied rights 

are subject to condions and limitaons 

and may not apply in all locaons. 

Working out whether you need 

planning permission can somemes be 

complicated. However, your solicitor, 

architect or local authority can help. 

If there is sll doubt, we may suggest 

applying for a cercate of lawful 

development. This would give you peace 

of mind that your improvements are 

lawful from a planning perspecve. 

Not obtaining the appropriate 

planning permission can have serious 

consequences. The 

local planning authority 

could require you to 

restore your home to its 

original condion. Buyers 

will also want to see 

evidence of compliance 

as the planning authority 

could proceed against 

them, as owner, in the 

future. 

Building regulaons 

Alteraons may need building regulaons 

approval, even if they do not need 

planning permission. Building regulaons 

cover a wide range of work, for example, 

the structural integrity of foundaons, 

adequate venlaon, and the safety of 

any electrical installaons. They ensure 

minimum standards for the design and 

construcon of buildings. Failure to 

comply could result in the local authority 

taking enforcement acon, including 

requiring you to remedy any defects. 

There are two ways to apply for 

building regulaons approval: a full 

plans submission and a building 

noce submission. The former has the 

advantage of certainty: you know at the 

outset that, if you follow the approved 

plans and correct procedure, you will get 

a cercate of compliance on compleon 

of the works. The building noce route 

is more ad hoc and involves staged 

inspecons. 

In either case, it is important to ensure 

the building inspector signs the work off 

when nished and you get a cercate of 

compleon. Keep this safe, as your buyer 

is likely to want to see it. 

Restricons in your tle deeds or lease 

Your tle deeds or lease may contain 

restricons, which limit what you can do. 

For example, they may stop you building 

on your land without rst geng consent 

from a third party. 

Failure to comply with a restricon risks 

legal acon. For example, if you fail 

to obtain the required consent from a 

neighbouring landowner for an extension, 

the neighbour could seek compensaon 

or its removal. If you breach the terms of 

your lease, your landlord could seek to 

end your lease early. 

When you come to sell, your buyers 

will want to be sure there have been no 

breaches of tle restricons which could 

affect them when they become owners of 

the property. So, it is important to obtain 

any necessary consents and keep them 

safe. 

What to do when it comes to selling your 

home 

Give copies of any documents relang 

to the alteraons to your solicitor. This 

includes any consents, guarantees, or 

warranes. This will help answer the 

buyer’s pre-contact enquiries promptly 

and get your sale off to a good start. If 

necessary, we can usually obtain copies 

of planning permissions or building 

regulaons noces from the local 

authority. However, this may slow things 

down a lile, especially if they reveal 

issues which need further invesgaon. 

Somemes if you have not obtained 

consent when you should have, you can 

apply for planning permission or building 

regulaons approval retrospecvely. 

In any case, if the works are more than 

four years old, the council cannot usually 

take enforcement acon over a planning 

breach. For building regulaons, the 

period is one year. So, your buyer may 

agree to overlook a technical breach. 

Unfortunately, there remains a small 

residual risk of enforcement acon, for 

example if the council believes there 

is a serious safety risk. If necessary, a 

specialist report or suitable insurance 

cover may provide addional reassurance 

for the buyer and allow your sale to 

proceed. 

You can also apply retrospecvely for 

consent required under tle and lease 

restricons, or tle insurance could 

provide a quicker, pragmac soluon. 

Approaching someone for retrospecve 

consent could make the risk uninsurable, 

so it is important to discuss your situaon 

with us early on. We can then help you 

make informed decisions and avoid any 

unintenonal consequences.

have closed or been forced to make 

cuts, making regular veterinary care

A major exhibition of Old Masters Drawings is on loan from one of 

the UK’s most significant collections and will be showing until 5 

December. Amassed by the 1st, 2nd and 3rd Dukes of Devonshire, 

the Chatsworth collection of Old Masters Drawings comprises 

around 1,800 works by some of the most important artists of 

the 15th, 16th and 17th centuries. Over 60 pieces from the

between Chatsworth, Museums Sheffield, and The Lightbox. 

Featuring works by da Vinci, Poussin, Rembrandt, Rubens, van

You can tell a lot about a home – and its owner, from the 

front garden and as we approach this house it’s not difficult 

to spot that someone with style is living here. An elegant, 

and very healthy looking multi-stemmed olive tree – worthy 

of a role at The RHS Chelsea Flower Show – fills most of the 

space, the rest given over to tasteful and tidy grey slate. 

Owner Cassie Williams greets us and we enter straight into what 

was once the front room of the property. This is one of the few 

clues to the fact that this was once a humble two up, two down 

late Victorian/early Edwardian end of terrace. Beyond this entrance 

room, now a study, the interior has become one large open plan 

space. Gone is the gloom and the cramped separate rooms often 

associated with a small period property. We are now standing in a 

spacious kitchen diner that extends outwards and into the garden.

has cleverly zoned the kitchen, dining and sitting areas within 

a larger unified space, combining features from the original 

rooms so that they work seamlessly with the new part 

inspired glass doors onto a paved outdoor cooking 

and eating area, framed by a striking black pergola, 

which links the outdoor space to the interior. ‘L’ 

shaped seating fits neatly on one edge of the patio, 

constructed by Cassie’s husband, unbelievably 

from old pallets and pieces of leftover wood. 

Cassie explains how they have unified the space 

without losing its character: “There was a little galley 

kitchen and it was quite enclosed and small. We did 

a loft conversion and then completed the kitchen 

extension last year. We wanted a kitchen diner and 

we wanted it to feel cosy, but not cluttered. We’ve 

come out into the garden, but it’s still a good size.” 

Keeping a room clutter-free when you want to 

use accessories (and I get the feeling that Cassie 

enjoys this aspect of interior design) can be hard, 

but she says, “One way is to pare down the colours 

and to stick to a theme, using harmonising neutrals 

with accents in contrasting colours and materials.” 

This helps to unify and streamline the space.

laughs Cassie. “Flatter tones of cream and grey need layers of texture. Accents in wood 

and antique brass contrast with the beige.” Her vision has certainly paid off

has chosen to use natural materials to bring a Scandi-boho vibe to the 

living area. Fur, recycled wood and rattan, together with plants – real 

and faux – and hard to tell the difference; she has some amazingly 

life-like faux pot plants from Abigail Ahern. These all contribute to 

the stylishly relaxed look. The background colour scheme is neutral 

and the kitchen itself is a very pale beige – so beige that the kitchen

Practicality is another important factor, as this is very much 

a family home. “I like making spaces functional as well as good 

looking,” Cassie explains. “We do lots of entertaining and the space 

has proven to be extremely practical for families and lots of kids 

running around. The sofa from Graham & Green just seems to repel 

the dirt,” she adds with a smile. The sides of the island unit in the 

kitchen are clad in recycled wood, so that their son, aged four, can 

sit at it and happily kick his feet on the wood with no ill effects. 

“I am a big fan of hidden storage too,” she says, pointing to corners 

and under pieces of furniture, where hitherto unnoticed baskets and 

bamboo boxes of all shapes and sizes emerge into view. The bench 

by the stable-style back door is not just a useful spot for sitting on

to remove or put on your boots, but 

also conceals large storage baskets 

underneath. “We were going to have 

a utility room here, but the back door 

lets in lot of light, and the space works 

as it is, really.” Natural light is often 

hard to come by in period properties, 

and the split door is a good way to 

bring in a feeling of light and space. 

This is where the old part of the 

house meets the new extension and 

Cassie has cleverly zoned the kitchen, 

dining and sitting areas within a larger 

unified space, combining features 

from the original rooms so that they 

work seamlessly with the new part. 

“We wanted the old to look old, and 

wanted the new to look rustic, but 

with a slightly industrial feel.” She 

has used black as an accent colour to 

link elements of the space together, 

so the unit around the fireplace has 

been designed to echo the framed 

glass doors at the end of the kitchen. 

They have exposed the original brick 

fireplace and installed a wood burner. 

The rustic, but cosy feel in this end 

of the space is further enhanced by 

subtle screening and the sitting area 

is separated from the dining table by 

a unifying black and bamboo screen. 

Upcycling is a key theme in this 

house; it can be difficult to achieve 

successfully, but Cassie has been able 

to use her experience as an interior 

designer – she owns and runs Truffle 

Interiors – and this has helped her to 

develop an expert eye for the details 

that bring a look together and how 

furniture that at first appears dull 

and ordinary can become key parts 

of a scheme. Cassie insists that it’s 

an easy thing to transform ordinary 

off-the-shelf or second hand pieces. 

She gestures towards the black and 

rattan sideboard in the kitchen, which 

she bought from JN Rusticus. “You 

could create something similar by 

buying an IKEA unit, adding some 

webbing, and painting the cabinet 

black and – boom – a bespoke item.” 

Easy when you know how. She has 

also become very adept at combining 

bespoke pieces with furnishings from 

the high street. “It works for clients 

in terms of budget as it makes things 

more accessible and achievable.” 

Repurposing and upcycling 

continues in the front room, which 

is now useful office space. Cassie’s 

husband has made his ’n’ hers desks 

from reclaimed wood on either side of 

fireplace. “It’s a cosy place to work in 

the winter,” she says, “the open fire is 

always on in here.” This room is also 

home to their latest acquisition – her 

childhood piano.” I started playing 

when I was six, so it won’t be long 

before our son can start.” Despite 

being right by the front door, the piano 

looks perfectly at home and fits into 

the scheme as if chosen from the start. 

The stairs here are narrow and 

perilously steep and, unusually, in the 

centre of the house. This has allowed 

them to reconfigure the upstairs rooms 

and to continue the stairs up through 

the middle of the building to the loft 

conversion, which has been converted 

into a master bedroom and en suite.

“I had fun with the bathroom,” Cassie says. “I’ve gone for an Edwardian 

feel, to be in keeping with the house.” The original floorboards have been 

retained, but to make them more bathroom friendly, they were filled with 

mastic, then painted almost black – using Farrow & Ball’s Railings

to create a soft and natural backdrop to the scheme. 

The colours in this room were determined by a cushion 

cover. “It often happens like that,” Cassie smiles, “it 

started with a cushion in here, but all sort of things 

can trigger a colour palette.” She has used accents of 

black in this scheme too, painting the iron bedstead and 

adding in accessories. “I really like black, but only as an 

accent. Neutral colours are great as a background with 

pops of colour.” This also means that the look can be 

changed without the upheaval of redecorating a whole 

room. “I do miss this room,” she sighs, “the loft room 

doesn’t have the high ceilings and sash windows. It does 

have a lovely en suite though, so that’s the trade off.” 

Outside on the landing, the floorboards have been 

sanded down and lightened, using layers of Bona wood 

finish. “The more you put on the lighter it gets, but 

in a subtle way.” This space – which could have been 

just a dull corridor – is bright and airy, and filled with 

natural light, thanks to the large sash window that, 

in the original configuration, was in a bedroom. 

During construction the builders also uncovered another 

fireplace on the outside wall. They have exposed the brick 

surrounding it, and now it ties in with the one below and 

brings a touch of contemporary rustic chic to the landing. 

The repositioned bathroom has no windows, but 

this creates privacy and seems to add to the moody 

elegance. “I had fun with the bathroom,” Cassie says. 

“I’ve gone for an Edwardian feel, to be in keeping 

with the house.” The original floorboards have been 

retained, but to make them more bathroom 

 


Upcycling is a key theme in this house; it can be difficult to achieve successfully, but Cassie has 

been able to use her experience as an interior designer – she owns and runs Truffle Interiors 

– and this has helped her to develop an expert eye for the details that bring a look together 

friendly, they were filled with mastic, then painted 

almost black – using Farrow & Ball’s Railings. 

The couple’s son helped to design his bedroom and 

Cassie solved the problem of storage for little people: 

“You don’t want a huge wardrobe in a child’s room, 

so we found these metal lockers at Mustard Made, 

which work really well.” More useful storage has been 

created using Cassie’s favourite bamboo baskets, here 

tucked tidily into a cubby-holed shelving unit. 

As we take our leave, it’s clear to see that Cassie and 

her husband have carefully pushed at the boundaries 

of this house, extending outwards and upwards 

considerably – and all without compromising the 

integrity of the building. They have stayed sympathetic 

to its spirit, retaining and enhancing all the original 

features, and juxtaposing them with contemporary 

elements. Now boasting four bedrooms instead 

of two, an en suite and a family bathroom, the 

couple have doubled the usable space, ingeniously 

creating a spacious, light filled, family home.

The complete refurbishment of British Army General 

Sir John Moore’s Hastings home provided an irresistible 

project for George and Charlotte Rendall 


Along the East Sussex and Kent coast some of the 

country’s greatest military landmarks make their mark, 

from the hulking masonry of the Martello towers to 

twenty-eight miles of Royal Military canal. But if you ever 

wondered where some of the country’s greatest engineering 

projects were planned, well that would have been at 57 High 

Street, Hastings, by one Lieutenant-General Sir John Moore. 

Moore’s Georgian house, that once provided the backdrop 

to this pivotal time in history, has itself seen many guises: 

a furniture shop, a delicatessen and food shop and student 

digs. When the Grade II listed building went up for sale 

in 2018 – in a slightly sorrier state than Moore had left it 

three hundred years before – the owners of Porters wine 

bar next door, George and Charlotte Rendall, couldn’t 

help themselves. “I had my eye on the property for years,” 

says George. “When it finally came on the market, I knew 

it would be a great place for a bed and breakfast.” 

Re-christened, re-furbished and re-purposed, the building, 

now called Moore House Hastings, has been completely 

transformed by George and Charlotte into a fabulous new 

B&B, although the term bed and breakfast falls somehow short 

of what Charlotte and George have created. Where once there 

was an unloved and, in parts entirely derelict space, rapidly 

falling victim to the elements with holes in the roof, pigeons 

as guests and water pouring down the walls, is now a space 

of which the Old Town can be proud. Under the couple’s

back from the brink and straight into the 21st century as 

Hastings’ newest and most glamorous hospitality destination. 

Moore House Hastings is now filled with pattern, colour and 

most importantly, people. It is no surprise that the very special 

atmosphere that the couple have created at Porters, which they 

took over in 2006 and is now a firm Hastings favourite, has 

been carried through to next door. For Charlotte and George,

like everyone in the hospitality industry, 

it has been a tumultuous year and a 

half. Having purchased the property 

in 2018, they took six months to work 

closely with listed buildings so they 

knew exactly how they should proceed. 

Having then gone as fast as possible to 

get the place refurbished and open to the 

public over the following nine months, 

on the eve of throwing their doors open 

to their first customers, Covid struck. 

Like so many others, the pandemic 

has played havoc with George and 

Charlotte’s plans. The house, having 

taken up a considerable budget due 

to its terrible condition and its listed 

status, has had to sit with its brandnew 

doors shut for most of 2020 and 

into 2021. It’s a story that will strike 

a chord with many business owners 

around the country. Despite the trials 

of the past eighteen months, Charlotte 

and George are incredibly upbeat and 

now, with the country opening up once 

again, the couple are looking forward 

to welcoming guests to Moore House. 

The almost hidden entrance, off a 

small private gated garden, leads into 

a cosy reception hall. A vintage French 

shop counter and bespoke artwork 

welcomes you. Behind its understated 

façade, an incredible labyrinth of space 

opens us, almost Tardis-like, offering 

seven generous double bedrooms and 

bathrooms and a fabulous public area.

against the idea of the seaside 

B&B,” says Charlotte. “Our 

dream was to create something 

that sat closer to a high-end 

hotel experience, with fabulous 

interior design, comfy kingsized 

beds, powerful rainwater 

showers, fluffy towels and 

attention to detail throughout.” 

With influences ranging from 

Soho House to Kit Kemp, you 

can really see how Charlotte and 

George are bringing top end 

London hospitality to Hastings. 

The double reception room, 

set at the back of the building, 

houses both the soft seating area, 

perfect for evening drinks or 

a daytime meeting, whilst the 

other half of the room is set up as 

the breakfast room. Fabrics and 

colours have been cleverly played 

with to create a lounge with two 

entirely different functions. At 

one end there is a warm and 

more sophisticated palette with 

velvet sofas and fabulous freestanding 

lights, at the other end 

the lighter tones of the same 

Borastapeter Korallang wallpaper 

(part of the Wonderland 

Collection by Hanna Werning) 

creates the fresh morning look 

– the perfect backdrop for a 

morning pastry or cappuccino. 

A door at the back of the room 

leads, rather cunningly, into 

the newly renovated garden 

of Porters next door, so guests 

can effortlessly slide from 

breakfast to lunch without 

ever having to step outside! 

Pattern is not something 

Charlotte has shied away from 

in the interior of Moore House 

and this is in a large part due 

to the collaboration with Berni 

and Peter from interior and 

giftware retailer Merchant 57, 

the occupiers of the front of the 

building. Berni’s interior design 

vision, according to Charlotte, 

was invaluable throughout the 

project. Indeed, the shop, now 

expertly packed with stunning 

interior accessories, sourced 

vintage pieces and giftware, is 

the only part that still remains 

of the ground floor retail space 

that was, until quite recently, a 

rather sprawling second-hand 

furniture shop. With Peter 

and Berni on board to help 

direct and source the interiors, 

Charlotte has had the confidence 

to use bold colour and pattern, 

mixing contemporary and

throughout. “I wanted every room to have its own story,” says 

Charlotte. “I think it’s so important for our guests to know that 

each room is completely different. I used to travel all the time 

when I worked in sales and so I know how important it is to have 

character within an interior. I want people to have fond memories 

of their stay with us and hopefully return again and again.”

for us,” says George, “to 

keep our footprint to a 

minimum. When you run 

a restaurant, and now with 

the guest accommodation at 

Moore House, you become 

very aware of how much 

waste you create and what 

you leave behind within the 

environment as waste. We 

wanted to ensure that our eco 

credentials went further than 

how we washed our towels 

and sheets, we really wanted 

to make sure that most of our 

produce, wherever possible, 

was locally sourced and any 

waste or plastic use was kept 

to an absolute minimum.”

of the 1987 hurricane. Before his death, he had refused to swap his old butcher’s bike for a motorbike, 

saying he could travel anywhere he needed to using pedal power. Challenged by his friend, Peter Trickett, 

Jimmy cycled up the steep Crown Lane without standing up and with a £10 note under his bottom – he 

reached the end with the £10 still in place and won the bet. A year after his death, Peter came up with 

the idea for a bike race in his memory, which continues to this day

Walking up through the building, it’s that 

sense of place and a real love of Hastings 

that is apparent wherever you look. Where 

possible, windows with some of the best views 

of Hastings fishermen’s huts and the roofs of 

the Old Town, have been kept clear with just 

minimal sea-urchin printed window transfers, 

a motif taken from the Moore House logo. 

The history of the house has been lovingly 

cared for, with the original Georgian 

staircase hand rail, period cupboards and 

fabulous detailing having been brought 

back to life. The fact that Moore House is 

a three-hundred-year-old building has been 

championed, rather than ironed over and 

local carpenter Mark Barnham has worked his 

magic. Doorways don’t always run straight, 

steps and sloping ceilings pop up here and 

there, a stunning roll top bath had to be 

placed on a specially made plinth, but therein 

lies the absolute charm of the place. It’s 

unique, it’s quirky and it’s utterly charming. 

Every room has been designed to suit this 

sense of individuality and story. The double 

aspect four poster bedroom in dark blue 

of RX2 is particularly impressive. “We had 

to have a four poster in one of the rooms,” 

says George, “but due to the size of the 

staircase and the door frames, the only way 

we could make that happen was to build 

the bed on site.” Maritime artwork from 

the couple’s own collection are married with 

lampshades from the retailer, Cream Cornwall 

which reflect George and Charlotte’s love 

of Cornwall, where the couple spend a lot 

of time, when they’re not in Hastings. 

Each of the rooms has the registration 

number RX, after the local fishing fleet at Rye 

and Hastings and all the wooden key fobs 

are made locally in Rock-a-Nore. There’s a 

nod to the seaside location in the detailing 

in every room, but Charlotte was keen that 

it didn’t become a cliché. “I wanted to pay 

homage to our location without it becoming 

‘themed’, it’s a fine line keeping the seaside 

vibe chic - it’s definitely a case of less is more!”

First, consider the overall 

style – for us, there’s nothing

Use the best quality materials that you 

can, especially for those elements that you 

won’t want to have to replace next time 

you decide to give it an update. It’s worth 

investing in elements such as flooring, 

worktops and carcasses (solid wood adds to 

the cost but will last for years). For example, 

you might be tempted to use a cheaper 

quartz for the worktop, but be wary of how 

3it may stain more easily or fade with age.

a paintable finish – if you tire of the 

colour, or if they become damaged 

over years of use, a skilled painter 

can refresh them and transform the 

overall look for a fraction of the cost

4index” as this is super harder-wearing.

Hideaway 

The days of dark dank utility rooms stuck at the back of the 

house or in the cellar are gone. Now utility rooms get to 

be more functional and aesthetically pleasing spaces that 

you’re proud to have as part of your home. 

This utility room by Ligneous Kitchens is an example of how you 

can disguise the entrance to a utility which adjoins a kitchen, making 

the perfect place to hide away all your cleaning supplies, washing 

machine and any other kitchen related paraphernalia you choose. 

This is achieved by the ingenious use of a panel, made to look like a 

kitchen tall unit, which actually functions as a door – it’s like a secret 

passageway from a film, only infinitely more useful! 

The secret room has plenty of space and is occupied by a washing 

machine, dryer, sink, an elegant tambour, and plenty of extra storage.

Case Study: 

It’s All White 

PTC Kitchens & Interiors talks us through 

a clean sleek white kitchen project 

Our clients came to us with a contemporary design 

in mind, very clean and minimalistic to the eye. We 

designed in polar white with Corian worksurfaces to 

create this look and kept to the theme by designing a handleless 

kitchen. You then focus on the clean white lines and 

modern feel of this amazing space. 

The kitchen was also dressed with a mirrored glass splashback, 

which gives the room an exaggerated feel and generally 

makes the space feel bigger. It is completed with AEG 

appliances, a Quooker boiling tap, Fisher & Paykel fridge/ 

freezer and a Gutmann built-in ceiling extractor. 

Special touches to this room were the seating and bar area – 

also in Corian – with the place mats made in the same material 

as the work surface. The clients had a stair entrance in the 

kitchen which we incorporated into the design by adding a glass

Shaker, not stirred 

Lucas Grant Kitchens talk us through this dreamy blue design 

– an effortlessly modern take on the classic Shaker style 

Our client wanted a family friendly space that also worked as the 

social hub of the house. They asked for a warm-yet-modern feel 

in a Shaker style, with a large centre island for entertaining. 

From our Searle range the kitchen is an in-frame Shaker style, 

manufactured at our workshop in Surrey, the kitchen is completely tailored 

to the clients’ brief and space. Hand-painted in Mylands Bond Street the 

cabinetry pairs beautifully with the Silestone Lyra quartz worksurface. 

With hard wood frames and Shaker finish, the bespoke cabinetry incorporates a 

large larder with solid oak shelves and drawers, a bi fold breakfast cabinet and a glassfronted 

display cabinet. Symmetry was key in framing the sink area with the breakfast 

top cabinetry mirrored on each side. The client was keen to bring in some texture, 

so the open shelving cabinet and the glass cabinet shows the oak finish of the carcass 

and complements the solid oak drawers, knife block and shelves within the cabinets.

Meet the Head 

St Andrew’s Prep’s new Headmaster, Tom Gregory, 

discusses how his own fond memories of being a 

pupil at the school he now heads-up have made 

him realise his dream of becoming a teacher 

You’re brand new to St Andrew’s Prep, 

what have you lined up as your first 

tasks for the new year? My first task 

is to learn everyone’s name, especially 

the children’s. I think I am making 

quite a good start but the children 

are being very patient. I will also be 

looking to build on the excellent 

work of my predecessor. He finished 

the year with one last inspection 

for which we received the highest 

possible rating, so I have a very solid 

foundation from which to build. 

You haven’t always been a teacher 

– why the career change? I always 

wanted to be a teacher but fell into 

Investment Banking after university. 

However, a mixture of a long commute 

from Suffolk to the City and the 

market downturn in 2007 made me 

reassess my career and I followed 

my dream to become a teacher. I 

just wish I had done it sooner. 

What drew you to St Andrew’s Prep? 

I always wanted to be Headmaster of St 

Andrew’s Prep but I never, ever thought 

I would actually have the chance. I 

am very lucky. I have incredibly fond 

memories of my school days here as 

a pupil and, while some of the fabric 

of the school has changed, it looks 

and feels the same and the school’s 

ethos and values mirror my own. 

As a former St Andrew’s pupil, how do 

you think your own experiences of the 

school have shaped the head you are 

today? St Andrew’s provided me with 

endless opportunities and experiences 

– in the classroom, on the sports field, 

on the stage and in the boarding house 

(despite the fact that I could see my 

childhood home from the window of 

my dormitory!). Put simply, I loved 

every day of my school career and want 

the same for the children in my care. 

If you had the chance to teach 

anyone, who would it be? Sir Paul 

McCartney. I had the pleasure of 

meeting him once and we chatted 

for a while and he was one of the 

most engaging and interesting people 

I have ever met. I would have loved 

to have watched him develop into 

the creative genius that he is. 

Can you tell us about an inspirational 

teacher from your school days? That’s an 

easy one. My art teacher from my senior 

school, Eastbourne College. She was 

passionate about her subject and she got 

the very best out of me by understanding 

and working with me – especially when 

I was not showing the required level of 

enthusiasm! I found my old school reports 

recently and I can still feel the genuine 

warmth and care in what she wrote. 

What do you like to do when you’re 

not at work? I like to run as it gives 

me time to think; and running along 

the seafront, which is just a stone’s 

throw from the school, make s me 

appreciate how lucky we are to live in 

such a beautiful part of the country. 

What are you most looking forward to 

this coming year? Watching the children 

at St Andrew’s develop their knowledge, 

skills and character. I believe that happy 

children thrive and achieve, so I want 

to make sure St Andrew’s continues to 

be a friendly, kind and happy school.

Headmaster of Vinehall School, Joff Powis,

What inspired you to become a 

headteacher? I have been hugely 

fortunate to have worked for some 

of the very best prep school leaders. 

Alongside my deep love for learning, 

they instilled in me the moral courage 

to ensure that the child is at the centre 

of all that we do at Vinehall and that 

childhood should be celebrated. 

What have you seen change in 

education during your years at Vinehall 

and as a headteacher? The necessity 

to create and to adapt a progressive 

education for our forward-looking 

children in an ever-changing world. 

Embedded across our skills-based 

curriculum are the five dispositions 

– courageous, collaborative, curious, 

resilient and reflective. Our children 

are enabled to become creative and 

critical thinkers, able to flourish and 

excel as modern global citizens. 

Tell us about Vinehall’s ethos and

How has Vinehall supported pupils’ 

wellbeing during these uncertain 

times? Our small size gave Vinehall the

Once back at school, the spacious

near normal school experience. There 

is little evidence of any ‘lost learning’ 

and our children’s resilience and 

positive attitude has been remarkable. 

What are you most looking forward 

to in the coming school year? Seeing 

the children take the lead in our 

sustainability vision. Projects to 

reduce energy consumption, to 

establish gardening and to grow 

wild-flower meadows and an orchard 

near our bees are already wellestablished. 

Sustainability is being 

woven into all areas of school life. 

This is where education now needs 

to go and where Vinehall can lead. 

What are you most proud of at 

Vinehall? The atmosphere created 

by our happy, confident, engaging 

children. They are not only aware of 

their place in the world but equipped 

with the knowledge, skills and the 

moral fortitude to have a positive 

impact on the lives of others. 

What was your own favourite subject 

at school? Many favourites, but 

Geography always came first. When 

I would lose focus as a prep-school 

boy, Mr Mole would shout, ‘Around 

the lake!’ Off I’d set around the 

beautiful school grounds and lake, 

returning invigorated and open to 

learning once more. It is all about 

the teachers… and he was the best. 

Tell us about a favourite school 

memory... Break times as a boy were 

filled with outdoor exploration, 

den-making and running wild 

with friends. Recreating this 

freedom at Vinehall is central 

to our children’s courage, wellbeing

Thought 

Therapy (PAT) Dogs have become an intergral 

part of school life at Holmewood House School, 

providing comfort and easing anxiety for pupils 

across the year groups. Here, we get to know a little 

bit more about the group of four dogs who have 

made such a positive impression on the school 

Research has demonstrated that therapy dogs, 

properly managed in the school setting, can not 

only make a measurable difference in terms of 

gaining various skills such as reading enhancement, but 

also in contributing critically to emotional and relational 

development, and this is certainly our experience at 

Holmewood House. The presence of our therapy dogs 

decrease anxiety and enable pupils to work through 

issues such as conflict resolution, empathy, compassion, 

emotional regulation and others psycho/social problems. 

These benefits can be categorised into the 

following 5 areas of a child’s development: 

Physical – interaction with a furry friend reduces 

blood pressure, provides tactile stimulation, 

assists with pain management, gives motivation 

to move, walk and stimulates the senses 

Social – time with a dog provides a positive mutual 

topic for discussion, promotes greater self-esteem and 

wellbeing, and focused interaction with others. 

Cognitive – companionship with a dog stimulates 

memory, problem solving and game playing. 

Emotional – an adorable four-legged friend improves 

self-esteem, acceptance from others, and 

lifts mood, often provoking laughter. 

Environmental – a dog in a facility decreases the 

feeling of a sterile environment and can lift moods. 

Here at Holmewood the introduction to Therapy 

Dogs started five years ago with one dog; we now have 

four wonderful companions. Let us introduce you: 

Albert 

Albert is five years old and loves coming to school. He 

gets so excited when the children arrive in the morning 

as he knows he will get lots of lovely cuddles. 

He is very good at understanding when children 

and adults are upset and they need just a little TLC 

to make them feel better and will often lay his head 

on their laps. He loves going out on break duty as the 

children provide him with an endless supply of sticks. 

Albert is wonderful at making the classroom and 

Junior School feel calm and will often nudge up to 

children under their desks – he may be seen lying in the 

corridor keeping a watchful eye to make sure everyone 

is safe and sound and he is always there to listen. 

Baloo 

Baloo was born on the 31st of March 2016. He 

is a chocolate Labrador and has been attending 

Holmewood since he was nine weeks old, successfully 

passing his PAT test at the age of one. 

He is based upstairs in the Collings building, bringing 

much happiness to children and his outdoor walks have 

been popular with Lower and Upper School children. 

Baloo is also active in the local community and 

visits the Hospice in the Weald yearly with the 

school Choir, as well as a sheltered accommodation 

in Crowborough, during the holidays.

Molly 

Since her start at Holmewood, Molly is well known 

for her love of chasing tennis balls and sniffing 

out any dropped cheese at break times. 

Mrs Spoor is her human and both can be found in the 

Prep school, where Molly enjoys attending lessons, hearing 

readers and being a patient and non-judgemental listener. 

She was adopted by the Spoor family when she was between 

one and two years old after a very sad start to life, however she 

has bounced back with a love of life over the past seven years. 

Molly thoroughly enjoys her days at Holmewood, especially 

when children are kind enough to rub her tummy. 

Fergus 

Fergus is Holmewood’s newest PAT dog and can be found 

in Pre Prep where he just loves being with the children, 

hearing readers and watching intently as his ‘Mum’ Mrs 

Riches Marshall uses visual objects to explain place value. 

At the age of 10 he is very used to children and has 

four of his own home ranging from five to 17, so loves 

cuddles and being stroked. His calm and kind nature 

can be seen in the way he interacts with the class. 

Albert, Baloo, Molly and Fergus are integral members 

of our school community and the important role they 

play in supporting our pupils is evident to everyone.

There are a few cheats included within these devilishly 

simple Halloween bakes and they shouldn’t take long to 

make if you are short of time, or want to dash out trick or 

treating – parts of the recipes can be prepped in advance 

too and assembled nearer teatime. Little monsters can 

have some frightful fun joining in with decorating 

Jack O’ Lantern 

Chicken Pies 

Preparation time: (if you are roasting 

the chicken first) 1 hour 30 minutes 

Cooking time: 35 minutes Serves 6-8 

These pies are scarily simple to put 

together and can be made to suit 

the size of the pie dishes you have to 

hand – make cute individual servings 

or one big pie. These are made 

with sweet potato and chicken (feel 

free to substitute pumpkin). Make 

the filling in advance if needed. 

Equipment: roasting pan, 3 small 

pie dishes – or 1 large (I used 

three 15cm cake tins instead) 

• 2 sheets ready rolled puff pastry 

• 1 egg, or 1 tbsp milk for 

brushing onto pastry 

• 1 large whole chicken, roasted (I like 

to use roast chicken meat for chicken 

pie and make stock from the carcass, 

so generally do this the day before, but 

you can use ready cooked chicken and 

a stock cube for the gravy to save time) 

• 500g peeled and diced sweet potato 

• 2 tbsp olive oil 

• 1 chopped red onion 

• 1 tbsp dried oregano 

• 1 small tin (220g) chopped tomatoes 

• 1 tbsp tomato purée 

• 200ml chicken stock 

1. Toss the sweet potato and 

chopped onion in oil, sprinkle with 

oregano and bake in the oven (gas 

mark 5, 170˚C) for approximately 

15 minutes until softened. 

2. While the vegetables are cooking, 

shred the cooked chicken into a mixing 

bowl. Add the remaining ingredients 

and combine. Tip into the pie tins. 

3. Unroll the pastry and cut a circle 

approximately 1cm wider than the pie 

tins. Cut a Jack O’ Lantern face into 

the pastry and carefully lift onto the 

tin. Make a stalk from the remaining 

pastry and join it to the top of the 

face (this is a bit of a fiddle and not 

compulsory – I rested the stalk on 

a ramekin while in the oven). 

4. Brush the pastry with egg or 

milk and bake the pies in a preheated 

oven (mark 6, 180˚C) for 20 

minutes until golden. Serve. 

 


Creepy Pizzas 

Preparation time: 20 minutes 

Cooking time: 5-10 minutes 

Makes 4 small pizzas 

If you don’t want to go to the bother 

of making your own pizza dough, 

there are kits available (near the ready 

rolled pastry at most supermarkets), 

and even part baked pizza bases and 

tomato topping. They can be circular 

or rectangular and any size you choose. 

These are great fun for even the 

youngest children to assemble and cook 

really quickly too. Have fun coming 

up with your own creepy designs. 

• 4 x 20cm pizza bases 

• 200g tomato sauce – either from a jar, 

or made with 1tbsp olive oil, 1 tin finely 

chopped tomatoes (or passata), 2 tbsp 

tomato puree, 1tbsp basil or oregano 

– combined thoroughly together 

• 250g mozzarella pizza 

cheese (must be sliceable) 

• 15-20 black olives 

1. Make/prepare the pizza bases 

and spread with tomato sauce. 

2. Slice mozzarella into thin slabs and 

carve into ghost and spiderweb shapes. 

Place these on the tomato covered 

bases and add olives – cut into slivers 

for ghostly outlines and spiders’ legs. 

3. Use a whole olive for spider bodies 

and a half for a head. The pizzas 

can be prepared in advance and 

kept in the fridge until required. 

4. Place on baking trays and bake 

in a preheated oven (gas 6, 180˚C) 

for a few minutes. Keep your eye 

on them, as overcooking will melt 

the cheese into a grisly mess. 

Black Cat, Bat & 

Toothsome Cupcakes 

Preparation time: 45 minutes-1 hour 

(decorating takes the most time) 

Cooking time: 15-20 minutes 

Makes 18 small cupcakes or 

12 muffin-sized cakes 

These are surprisingly easy to 

make – to be quite honest, any 

combination of ghoulishly coloured 

icing and lurid sweets will go down 

well. Let your imagination run wild 

and get monstrously creative. 

For the cakes: 

• 200g self raising flour 

• 200g sugar 

• 200g softened butter 

• 3 eggs 

• ½ tsp vanilla essence 

• 1 tbsp milk (more if needed) 

For the frosting: 

• 100g cream cheese 

• 100g softened butter 

• 120g icing sugar 

• ½ tsp vanilla essence 

• black, purple (and or other 

colours) food colouring 

• small pack black roll 

out fondant icing 

• mini marshmallows 

• strawberry laces and other 

sweets for decorating

1. Pre-heat oven to gas 4/160˚C. 

Line cupcake or muffin tin with 

paper cases. Add all the ingredients 

to a bowl and beat together in a 

mixer or with a whisk, adding a 

little milk until the mixture reaches 

a slow dropping consistency. 

2. Spoon into paper cases and bake 

in the centre of the oven for 15-20 

minutes until risen and golden 

(check after 15 minutes as ovens 

vary – a fan oven will be quicker). 

3. Make the frosting while the cakes 

are cooling. Beat together cream cheese, 

softened butter, icing sugar. Divide into 

smaller bowls and add colours of choice. 

4. To make cat faces, use slices of mini 

marshmallows for eyes, strawberry 

laces for whiskers and a little black 

fondant icing for ears and pupils. 

I used tiny segments of liquorice 

allsorts for noses and tongues. Cut 

ghoulish shapes from fondant for 

other cakes and decorate with sweets.

It is one of the great surprises of 

the pandemic that fragrances 

continued to sell like hot cakes, 

despite the challenges of actually trying 

a fragrance on your skin, at that time. 

At first, stores were shuttered. Even 

when they did open up, fragrance 

tester bottles were kept under lock 

and key, so we couldn’t spray – and 

beyond that, even sales consultants 

were banned from using them on 

customers’ skin. (This was despite 

the fact that fragrance is, essentially, 

akin to a very expensive form of hand 

sanitiser, as I pointed out to a scent 

sales consultant when she proffered 

me a blotter rather than the longedfor 

zhoosh of a favourite perfume that 

I’d been looking forward to, on a rare 

foray to Selfridges. It was one of the 

few times during the whole pandemic 

when I actually broke down in tears!) 

One of the reasons that fragrance 

flourished is that brands savvily 

downsized their offering. And thus, 

no longer do you have to buy 50ml 

or 100ml sizes, to get your hands 

(or rather, wrists) on a new bottle of 

scent. Today, more and more fragrance 

houses are offering 10ml travel sizes 

– ostensibly for ease of toting around 

in our handbags (now we’ve dusted 

those off again), but which are also a 

wonderful introduction to a perfume. 

Perfume houses are also offering 

‘discovery sets’, so that you can sniff 

your way through an entire collection 

of scents, and identify which you like. 

This is something that’s 

offered by The Perfume 

Society, too, which until 

earlier this year I used to 

run; they curate a selection 

of scents from different brands 

around a particular theme (including 

men’s boxes) – again, to try before 

you buy, at perfumesociety.org. 

Sample and travel sizes are a fantastic 

way to build your fragrance wardrobe, 

because they require such a tiny 

commitment financially. When you’ve 

lived with a fragrance on your skin (and 

clothes – don’t forget clothes!) for a 

while, you can really decide if it’s ‘you’, 

and THEN you can splurge confidently. 

So, I thought I’d start by sharing 

some particularly wonderful sets that 

have crossed my path recently… 

Sana Jardin Discovery Set, £30. 

Eight fabulous fragrances (2ml size), 

created by Carlos Benaïm, one of the 

world’s most revered perfumers, for 

the brand founded by sustainability 

champion Amy Christiansen, who 

empowers female flower harvesters via 

fair commerce. It’s a real magic carpet 

ride, this box of treats, in which my 

favourite is recently-launched Incense 

Water, inspired by the East Asian 

tradition of anointing guests with rose 

water, but with an exotic finale of 

sandalwood, patchouli and musk. (Sana 

Jardin are among the brands offering 

10ml bottles, with a cute rollerball 

size available across the range.) 

Escentric 

Molecules 

Discovery Set, £25 for 10 

x 2ml. This cult fragrance name was 

developed by an enfant terrible of the 

fragrance world, Geza Schoen, who 

bottles single, genderless molecules 

that happen to have astonishing 

complexity in his Molecule fragrances, 

and surrounds that same molecule with 

harmonising ingredients in the Escentric 

fragrances. In the metallic box, you’ll 

find Molecule 01 and Escentric 01, and 

so on, up to Molecule 01 and Escentric 

05 (which I LOVE). Google ‘Escentric 

Molecules’, meanwhile, and you’ll 

find countless people maintaining that 

Molecule 01 works like a pheromone 

and will have strangers following you 

down the street, and I reckon this 

discovery set might be just the chance 

you need to put that to the test! 

Eight & Bob Discovery Set, £20 for 

5 x 2ml. These elegant, Cologne-style 

fragrances are eminently shareable 


and fresh. There’s a wonderful backstory 

to Eight & Bob: the fragrances were 

originally created by French aristocrat 

Albert Fouquet, who would surprise 

his loved ones with exquisite homemade 

perfumes, blended lovingly 

with the help of his family butler (yes, 

really!) One evening in 1937, Albert 

met an American student named John 

F. Kennedy. Mesmerised by Albert’s 

scent, he persuaded him to leave eight 

samples for his friends ‘and one for 

Bob’ – meaning his brother, Robert 

Kennedy. The rest is perfume history… 

Floris Private Collection Set, £35. 

Heritage London fragrance house 

Floris – a family-owned business which 

has been creating out of their original 

premises on Jermyn Street since 1730 

– recently put together a couple of 

discovery sets in lovely cylindrical boxes, 

with the Private Collection showcasing 

five of their most-loved scents 

(including two favourites of mine, the 

zesty Bergamotto di Positano, and A 

Rose For…). Just lovely, all of them. 

The other point about all these gift sets 

is that you can ‘trade up’ to a full-size 

bottle for a birthday or a Christmas 

present, knowing that you won’t be 

making a pricy perfume mistake. 

Alongside discovery sets, there are 

several fragrance collections which prove 

definitively that you don’t need to break 

the bank to enjoy haute parfumerie. 

First up, Zara, yes, ZARA, who enlisted 

Jo Malone (the perfume designer 

who sold her brand to Estée Lauder, 

some years ago), to work on a range 

of ‘Emotions’ scents. The full 90ml 

sizes are priced from just £5.99 for the 

10ml sprays up to £25.99 (and are now 

available online). If you love woody 

scents, I’d point you in the direction 

of zingy Vetiver Pamplemousse. 

Orange blossom lovers will love Fleur 

d’Oranger, while my favourite, as a lover 

of Chypre scents, is Fleur de Patchouli, 

a deliciously nuzzleable play on that 

ingredient. Definitely worth exploring. 

So, too, is the Floral Street 

fragrance 

range. Founded by industry disruptor 

Michelle Feeney, it offers impressively 

high-quality fragrances at non-silly 

prices. They’re all created by stellar New 

York-based perfumer Jérôme Épinette, 

with the bottles and packaging strewn 

with ravishing flower photography 

by top snapper Matthew Donaldson. 

As Floral Street like to say, these are 

‘bunches’ of flowers, rather than 

bouquets, and for autumn I’d invite 

you to bury your nose in some of their 

more ‘snuggleable’ creations, such as 

woody-spicy Black Lotus, Ylang Ylang 

Espresso (keep your nostrils tuned 

for the intriguing coffee note), and 

Chypre Sublime, as chic, smart and 

wearable a rose scent as you’ll ever 

encounter. A 10ml size is £24, here, 

but even the full-size 50ml fragrances 

are £60 – far less than the industry 

average, for niche perfumery. 

So, is there ever a time to splurge, 

any more, when there are affordable 

scents like these on the market? 

Answer: YES – whenever you have a 

big occasion coming up. Because of 

the way that memory and smell are 

entwined, you’re creating an olfactory 

imprint in the brain when you wear 

something for a wedding, a party, or 

a holiday – and a luxurious, blowthe-budget 

fragrance that you wear 

when you’re getting dressed up again 

(rather than for everyday), brings those 

memories flooding pleasurably back, 

and instantly gets you in the mood. 

So: more on ‘splurge’ scents 

that you might want to explore 

in time for writing that ‘Dear 

Santa’ list, next month.

Sarah Maxwell takes a closer look at 

mindfulness and its role in exercise 

The health, fitness and wellbeing 

industry is ever-changing, 

over the years we have seen 

many things come and go, but 

mindfulness practice is here to stay. 

Mindfulness is about being aware 

of where we are and what we’re doing, 

and not overly reactive or overwhelmed 

by what’s going on around us. 

Research is continually showing 

that with mindfulness training you 

can actually change the structure 

of your brain for the better. 

While mindfulness is something we 

all naturally possess, it’s more readily 

available to us when we practice on 

a daily basis. Whenever you bring 

awareness to what you’re directly 

experiencing via your senses, or to 

your state of mind via your thoughts 

and emotions, you’re being mindful. 

And there’s growing research showing 

that when you train your brain to be 

mindful, you’re actually remodelling 

the physical structure of your brain. 

What is mindful fitness? 

In the simplest of terms it’s 

about actually listening to what 

your body needs whether it be 

nutrition, exercise or rest. 

We all know that we need to eat well, 

move more and take time for ourselves 

in order to obtain and maintain the 

healthy lifestyle we want and need. 

For many of us these seem like an 

impossible task – time spent running 

around looking after everyone, work 

and family commitments all get in the 

way in our quest for a healthy lifestyle. 

So how do we go about 

doing fitness mindfully? 

Let’s say you like to go out for a 

regular run, cycle or swim; you 

attend exercise classes, go to the 

gym or workout at home. 

1. Before you start your exercise 

or activity take a few moments to 

enjoy a few deep breaths and set 

the intentions of what you want 

to achieve or feel when you have 

finished. This is something I have 

done with athletes for many years, 

but it is also one of the things I have 

implemented for my clients and 

the results speak for themselves. 

2. Listen and breathe. Take a few 

moments to notice everything around 

you – sounds, smells – notice your 

surroundings and take it all in. If you’re 

used to wearing headphones or listening 

to music, consider taking them off for 

a few moments, breathe and listen. 

3. Observe how you feel physically 

and acknowledge aches and pains 

or difficulties and work out whether 

your emotions are good or bad. 

4. When you have finished whatever 

activity you have chosen to do, pause 

for a moment, take some deep breaths 

and reflect on your achievements, 

however big or small. If you’re like me 

and struggle with meditation – unable 

to have a blank mind for more than 

5 seconds because your to-do list is 

huge – as soon as you’re aware that 

your mind has drifted, just bring 

your mind back to the present. 

Thoughts like this are OK and 

completely normal, Give mindfulness 

a go and see what it can do for you. 

Start small and smell all the roses! 

If you would rather try some guided 

mindfulness/meditation there are many 

options to explore. These are the two 

I currently use. Both have free trial 

periods, so it’s worth seeing if they 

would work for you, too. I’ve been 

using the CALM app to help me sleep 

at night and it’s working well for me: 

calm.com. Headspace is another 

good one I’ve tried, which is worth 

checking out: headspace.com.

Our digestive tract is the barrier between our bodies 

and our environment and digestion is a complex, 

multi-step process involving many organs, hormones, 

enzymes and nutrients, as well as other supporting systems, 

therefore there is a lot of scope for things to go wrong or 

not function as well as they could! The digestive tract is 

under constant assault from toxins and bacteria as well as the 

barrage of food that forms a typical processed western diet. 

Problems in the digestive tract can lead to poor absorption 

of essential nutrients that our bodies require and can often 

cause common symptoms such as bloating, heart burn, gas and 

feeling sluggish. Unfortunately up to 30% of people worldwide 

report living with gut symptoms that impact their daily lives – 

whether that’s an occasional bloated stomach or a debilitating 

daily occurrence – but there are simple dietary and lifestyle 

changes you can adopt to start improving your digestive health. 

Give it a go... 

eat mindfully 

Feeling stressed when we eat can lead to behaviours 

such as not chewing our food properly, eating 

too fast, eating when upset, anxious, or distracted 

which can directly impact our digestive system, 

affecting the absorption of nutrients. Instead try to 

eat mindfully. Enjoy the process of preparing meals: 

thinking, smelling and seeing food stimulates the 

release of digestive hormones and chemicals whilst 

preparing the digestive tract to receive food. Chew 

your food to ensure your body has time to produce 

enough of the enzymes needed to fully break it 

down. Research suggests that chewing your food 32 

times is the magic number to minimise the chance 

of bloating, heartburn, nausea, indigestion or gas. 

However, my advice would be to chew until the 

food has lost all its texture… then chew a bit more!

Learn to... optimise digestion 

Simple and consistent dietary changes can positively impact 

our digestive health. In order to optimise the absorption 

of nutrients and maintain a healthy gut we can tweak our 

diets to help our digestive system work more efficiently. 

A diet low in fibre and essential fats and high in sugars, 

saturated fats, alcohol and processed foods can lead to an 

imbalance of bacteria as well as impairing bowel movement. 

Instead, prioritise plant-based foods that are high in fibre 

and aid the body in removing waste as well as feeding 

our gut microbiome. But don’t forget that as you increase 

your fibre, you should increase your water intake, too. 

Including live probiotics such as unpasteurised cheeses, 

miso, kefir, tempeh and sauerkraut in your diet introduces 

diverse live bacteria. Prebiotic foods – onions, leeks, garlic 

and bananas – act as ‘food’ for this beneficial bacteria. Bitter 

foods like pak choi, kale, chicory and dandelion leaves help 

stimulate stomach acid and support the digestion of nutrients.

It is easy to get caught up in achieving the ‘perfect’ 

diet but don’t forget our brains have a big impact

The natural world is getting ready for the 

winter. The plants have been thinking about 

it for months – since the summer solstice – 

the moment when the earth starts to turn away from 

the sun and the days start their inevitable shortening. 

We might feel that the summer has just started 

by the 21st of June, but ironically this is the signal 

that tells the plants in the northern hemisphere to 

start making fruit and seed, to ripen their wood 

and prepare for the long cold months ahead. 

By autumn the nights are noticeably longer – 

and colder. Fruits and berries are reddening with 

anthocyanin and advertising their readiness to be 

eaten. Those of us who liked picking up sticks and 

shells as children have never really stopped – ok some 

might have transferred to shopping or collecting 

jewellery, but the rest of us are still unable to go on 

a walk without collecting something to bring home. 

It is great fun heading out to harvest free food, or 

natural decorations (sticks) and foraging 

brings added purpose to autumn 

walks. It also helps to satisfy those 

hunter-gatherer instincts.

Fruits and nuts 

The harvest season starts in the late 

summer with soft fruit like blackberries, 

but even in October the hedgerows are 

still packed with deliciousness. There 

are elderberries for sauces and wine, 

rosehips for syrups and cordials, wild 

plums and apples for crumbles and 

pies, cobnuts for roasting and sloes 

for seeping in jars of gin. A veritable 

forager’s feast awaits at the edges of 

fields and paths, but be careful where 

you tread and be mindful not to disturb 

wildlife, or to take more than you need. 

Forager’s hedge 

If you would like all the joys of a hedgerow 

harvest without the muddy trek out into 

the fields, you could always grow an edible 

hedge. You might have to share it with the 

wild creatures, but ultimately that would 

make the experience even better – and 

save money on bird food. Late autumn or 

early winter is the perfect time for planting 

a deciduous hedge. It is much cheaper to 

buy bare-rooted plants, or whips and they 

will establish roots over the winter and get 

going quickly during the following spring. 

It’s fun choosing your own mix of species 

plants, but some hedge suppliers even list 

edible hedges that you can buy by the 

metre – look out for the gin lover’s version. 

Mushrooms 

Field mushrooms and other 

edible fungi are plentiful in 

autumn. A mushroom is the 

fruiting body of the fungus 

and forms when soil conditions 

are warm, but the air is cooler. 

However, many species are 

poisonous – some are even deadly. 

It can be confusing working out 

which is which, so always make 

sure that you take an expert guide 

with you when foraging for fungi.

This is a great time of year for collecting 

decorative cones and seed heads, colourful 

leaves, twigs, acorns and woodland 

finds that can be turned into natural 

arrangements, or saved to be used 

at Christmas. Autumn wreaths are a 

charming celebration of the season and 

are becoming popular to make. If you are 

collecting for your Christmas wreath it’s 

best not to wait until December to go out 

foraging, because the weather has a habit 

of trashing delicate natural decorations.

Choose a dry day for the expedition, as damp seed heads 

will become mouldy – or possibly even start to germinate. 

Store your pickings in a dry place – and away from mice 

and other creatures looking for a quick snack. Out in the 

countryside there are alder cones, acorns and the vibrant 

berries of spindles. Skeletal remains of umbelliferous 

plants like wild carrot and giant hogweed can look 

really attractive too – be careful about using hogweed 

though as it is poisonous, non-native and invasive. 

Berries and fruits should be collected just before you 

need them, but I have more or less stopped picking them 

from the wild – I like to leave them for the birds and 

tend to pick things from the garden like Cotoneaster 

or Pyracantha berries (and even use cranberries from 

the supermarket for last minute embellishments). 

You will find other rich pickings in your own garden 

too. Hydrangea flower heads (bracts) will last for a 

long time once picked, rose hips, seed heads of alliums, 

poppies and love-in-the-mist and the skeletons of 

fennel and angelica make perfect natural decorations 

and will last throughout the winter. 

Collecting wild ingredients is a satisfying activity 

– sending us back to simpler days and 

connecting us with the seasons, but 

even going out and just looking at 

the beauty of the countryside in all its 

autumn glory will be worth basketfuls.

What a peculiar year it has 

proved to be weather-wise 

and every other ‘wise’. And 

whilst we’ve all been affected by gloomy 

skies, heavy rain, high winds, hot sun 

and the rest, it seems to me that our 

flora and fauna are doing their best 

to carry on. Well, most of them. 

I’ve just had a conversation with 

a friend who was going home this 

morning to work out what the one 

healthy tomato he collected from 

his beef tomato plants – which have 

been hit by blight – had cost him! 

Thinking positive at the beginning of 

the season, he’d bought fresh compost, 

new containers and to top it all, a 

mini greenhouse, to protect and house 

his (two) home grown seedlings. So 

all this mollycoddling meant that 

they got off to a good start but as for 

many of us (including Monty!), the 

dreaded blight appeared at lightening 

speed and there was no stopping it. 

But looking around on the daily 

dog walk and on yesterday’s 

amble through 

the lanes 

on the 

Marsh, I see that our native trees 

and hedgerows are proving to be 

as dependable as ever. Fruits are in 

profusion, each providing essential food 

for our local biodiversity and in the 

case of blackberries, I’ll think there will 

be some to spare. As an aside, we got 

into conversation with a couple outside 

the very special St. Thomas à Becket 

Church at Fairfield. There’s ‘nowt so 

queer as folk’ as the last time they’d been 

there, the vicar asked them to come into 

the church where she showed them a 

couple of cans of paint, a paintbrush 

and a note from someone who suggested 

that the church could do with a good 

coat of emulsion! Thank goodness he/ 

she didn’t do it themselves although 

part of the wall had been daubed, 

perhaps as an example of how to do it! 

Anyway, thinking ahead to the late 

autumn/early winter months we can 

do our bit by planting new native 

hedges to help things along if we are 

lucky enough to have the room. If we 

haven’t very much space, perhaps we 

could find room for just one native 

tree or shrub this season. It is so good 

to hear on both the radio and on 

programmes like Countryfile that people 

are planting hedges and native trees for 

posterity and of course for biodiversity. 

Last year we planted about fifty 

healthy young whips bought locally 

from Hopes Grove Nurseries on the 

Smallhythe Road, near Tenterden. 

They were described as a ‘bird friendly 

mix’ and are about four feet high now 

and looking pretty good. Luckily the 

yellow rattle we sowed a few years 

ago has weakened the grasses in the 

area where we planted them so they 

haven’t been completely overwhelmed 

by the extraordinary growth that the 

grass has put on this year. They’ll 

provide ‘flowers, catkins, nuts, berries, 

and autumn colour’ as they mature. 

We didn’t plant them linearly but 

in a group which will hopefully 

make a decent copse full of food and 

shelter and nesting sites for birds. 

The mix is 25% quickthorn 

(hawthorn), 25% blackthorn (sloe), 

25% field maple and the last 25% 

contains lovely things like common 

alder, bird cherry, dogwoods, sweet briar 

rose, wild crab apple, elder and one of 

my favourites, spindle. This is nothing 

compared to the 500 young trees that 

a neighbour planted on her ground a 

few years ago. The Woodland Trust 

provided the trees with the proviso that 

she planted them. The advice given 

was to get them in and then leave them 

to it, which she did. Wow, they are 

growing away so fast and look so good.

Birch are in the same family (Betulaceae) as alder and 

they provide both catkins over a long season and then as 

an added bonus produce huge quantities of seed to feed 

similar birds as the common alder. They are also a host for 

many insects, which in turn are a food source for birds. 

Bird Cherry (Prunus padus) This gorgeous thing is more 

commonly seen in the north of England and also in East 

Anglia it seems. But worth growing here for its display of 

white, heavily scented flowers which appear in April. These 

are a veritable ‘nectar magnet’ in the spring and then develop 

into clusters of reddish black cherries which attract song 

thrushes – sadly a pretty rare sight these days – and blackbirds. 

Badgers and foraging mice are also partial to the cherries. The 

trees’ foliage provides food for the caterpillars of moth species 

including the orchard ermine and the short cloaked moth. 

In fact the orchard ermine is also known as the 

cherry moth. What a lovely moth this is with its 

distinctive white body and black markings. Their 

larvae also feed on blackthorn as well as hawthorn. 

Blackthorn (Prunus spinosa) produces clusters of white flowers 

before its leaves appear, often as early as March. Their fruit, 

well known to foragers later in the year, are sloes which are

of Vitamin C and as they remain on 

the plant for a long time they are ideal 

food for both mammals and birds. 

The plant also provides prickly, dense 

thickets which are perfect for protecting 

both nesting birds from predators 

and provides small mammals such as 

hedgehogs a secure place to overwinter. 

The foliage is a food plant for moth 

caterpillars including the Magpie moth, 

one of which made its way into the porch 

the other day or should I say, night. 

Crab Apple (Malus sylvestris) You’ll see 

these trees on woodland edges and in 

hedgerows. They’re the wild ancestor of 

our cultivated apples and are particularly 

long lived, You can recognise them by 

their habit as their branches become 

twisted and gnarled as they mature. Their 

blossom is sweetly scented and is a good 

source of early pollen for bees. Growing 

crab apples provides a host for the 

hemiparasitic mistletoe, and their branches 

provide a host for any number of lichens. 

Both birds (the blackbird and thrushes 

in particular) and mammals disperse the 

seeds once they’ve eaten the fruit and 

the leaves provide food for all manner 

of moth caterpillars including green 

pug, the extraordinary looking Chinese 

Character moth and the eyed hawkmoth. 

The Chinese Character moth’s 

markings are intended to deter predators 

and are said to resemble bird droppings, 

which is a novel way to appear invisible.

everything together. Pretty pale pink, 

sometimes deep pink, its flowers are 

scented and are part of the countryside’s 

most welcome sights in May. We have 

fourteen native species of rose in the 

UK and this is the one we see the most. 

Unlike many rose cultivars the plant 

doesn’t suffer from black spot and will 

grow in sun or shade. The autumn hips 

are red and full of Vitamin C; blackbirds 

love them and the flowers provide nectar 

for insects. Why the ‘dog rose’? It seems 

that the roots were thought to help if you 

had been bitten by a rabid dog. I wonder. 

Elder (Sambucus nigra) It was said that 

an elder planted near your home would 

keep the devil away. I’m not sure that 

the elder with its rather scraggy form 

and strangely unpleasant smelling twigs 

is a thing of beauty so I might plant it 

a little further away than that. Even the 

buds are raggedy. However those huge 

umbels of creamy, fragrant flowers that 

appear in the spring more than make 

up for that. Once pollinated, the flower 

develops into a late maturing dark berry 

which is eaten by both small mammals 

like dormice and voles as well as birds. 

The foliage is appetising too to all manner 

of moth caterpillars like the dot moth 

and buff ermine. A large group of elder 

often advertises a badger sett or large 

rabbit warren, as the seeds are distributed 

by the animals around and near their 

homes. The plant has so many uses but 

I like the thought of bundles of elder 

foliage being used in dairies to keep flies 

away. That’s worth a try. It was also used 

in the making of dyes – purple from the 

berries, grey and black from the bark 

and yellow and green from the foliage. 

Hawthorn (Crataegus monogyna) 

This is a star. The hawthorn’s 

wonderful pinky white blossom – May 

blossom – was known as the ‘herald 

of the winter and the beginning of 

summer’. A hawthorn really buzzes 

with wildlife and it seems can support 

more than 300 species of insects so 

maybe if you can only fit one new 

native plant in, this should be the one. 

The flowers sustain rare little critters 

such as dormice and provide pollen 

and nectar for pollinators and the 

haws (fruits) are rich in antioxidants 

and are a perfect food for migrating 

birds such as the redwing. These little 

thrushes come south from Scandinavia 

to the UK to feast on apples and 

our heavily berried hawthorns. 

Spindle (Euonymus europaeus) The 

combination of autumn colours and 

bright pink capsules which contain the 

bold orange fruits is pretty dramatic 

and so spindle makes a good hedging 

plant or individually planted beautiful 

large shrub. It would look lovely in a 

winter border added to which, it is so 

accommodating in that it can cope with 

sun, partial shade and slightly more 

difficult sites like coastal positions and 

damp places. Pollinators are drawn to 

the plant but aphids are too – perfect 

for birds but perhaps not ideal if you are 

growing vegetables in a limited space.

Slow,

Hairdresser-turned-shepherdess, Zoë Colville 

farms nearly 100 acres of land near Maidstone 

with her partner, Chris Woodhead. With prime 

focus on their animals’ wellbeing, together they 

rear cows, sheep, goats and pigs, eventually 

selling their meat through The Little Farm 

Fridge. This month, Zoe goes into survival 

mode as an accident rocks their farming life 

The lifestyle we have chosen isn’t always rosy and 

quite often it all hits you at once like an avalanche. 

Survival skills include a good sense of humour and 

a tight network of farming friends. Safe to say the last few 

weeks we have called upon every single favour we’ve even 

slightly been owed. All the stress, sleepless nights and just 

focussing on putting one foot in front of the other have paid 

off because we are out the other side, ladies and gentlemen. 

I may have mentioned before that the land we graze 

is spread out pretty much all over the county and from 

one season to the next we could have animals in up to 

eight locations. This means that we spend a fair amount 

of time on the roads (and our fuel bill could make your 

eyes water!). Driving to check everyone is safe and well, 

ferrying water to some without plumbed in water tanks. 

Moving livestock from one place to the other to adhere 

to conservation schemes. And of course taking animals 

to and from the abattoir in Essex. That said, we have 

two vehicles: the truck which we can’t operate the farm 

without, and the refrigerated van which we can’t operate 

the butchery without. We aren’t fortunate enough to own 

a quad bike, a tractor or any other farm vehicle so the 

truck is such a vital part of our ‘team’. She carries IBCs 

(intermediate bulk containers) of water to the water troughs, 

she tows the trailer to go and pick up bales of straw and 

she drives us round acres of fields gathering in sheep in 

replacement of a sheep dog. Imagine if that workhorse 

was driving to the abattoir (with livestock on board) on 

the motorway when out of nowhere a BMW materialised 

a couple of metres in front, sideways. Miraculously no 

one was harmed, man or beast, but after a few hours 

on the side of a motorway our beloved truck was towed 

away, a write off. Both our businesses are now reliant on a

Renault Kangoo. Did she step up to the mark? Quite the 

opposite, the Kangoo quit. Now what do you do when 

you’re having a rough time and the odds are against you? 

Go to your mum’s and ask her to make it all better. 

We piled all our gear into the boot of her Mini Cooper 

and raised a few eyebrows as we pulled up at gates to check 

the sheep and onlookers saw dishevelled farmer Chris crawl 

out of the white leather driving seat. But we made it work 

because we had no choice, we made do. The second hit came 

a few days later when we had just recovered from the near 

death experience. Checking the pregnant Highland cows on 

the Chalk Downs, it was warm so we wanted to make sure 

they had plenty of water. As we approached them they all 

scarpered as they usually do and left Goldie Horn behind. 

No, no, no. Sadly she had delivered a female calf, three 

weeks premature and BEAUTIFUL, but sadly not alive. 

Goldie was distraught as you can imagine so we needed to 

get her home to the main farm to keep a closer eye on her. 

Favour number two. Borrow a livestock trailer and a 4x4... 

But we survived. It was touch and go for a while 

and we have a few more wrinkles and Chris has his 

first grey beard hair but we didn’t down tools and 

retreat into a cave of peanut M&Ms and Netflix, we 

couldn’t. And it’s that resilience that keeps the food 

on your plates because to be a farmer you have to roll 

with the punches and just keep riding those waves!
