like? It’s a question chef<br />
Daniel Humm has been<br />
asking himself in recent years – and his<br />
surprising answer, in part, is what led<br />
him to transform his Michelin-three-star<br />
gastro palace, Eleven Madison Park, into<br />
a vegan restaurant this summer.<br />
