RCS: Staff shortage could mean more closures

— All schools in the RCS district 

are at risk for closure due to staffing 

shortages similar to RCS High School, 

which on Friday transitioned to one 

day of remote instruction, District 

Superintendent Brian Bailey said. 

The high school was closed to most 

students Friday as a result of staffing 

shortages. Staff members worked that 

day at the school, while most students 

learned from home, Bailey said. 

“The high school staff are working at 

the high school today even though most 

students are home working remotely,” 

Bailey said Friday. “For various 

reasons, including COVID-19-related 

causes, we do not have enough staff 

members present to safely and successfully 

supervise and teach our students 

in person.” 

Students in self-contained special 

education classes were on campus Friday 

for in-person instruction. 

A lack of staff in schools is a widespread 

problem, he added. 

“Our entire region is suffering from a 

severe shortage of substitute teachers,” 

the district superintendent said.

classrooms as much as possible, Bailey 

has for months said at board of education 

meetings. 

But the lack of faculty and staff has 

made switching to remote instruction 

a real possibility not only at the high 

school, but at all schools in the district. 

“Going remote is the last resort for 

us,” Bailey said. “We want and need 

our students to attend in person and 

will continue to do everything in our 

power to maintain in-person instruction. 

All of our schools and our transportation 

department are at risk of 

closure due to staff shortages on a daily 

basis.” 

In addition to teachers, substitute 

teachers and other faculty, there is a 

severe shortage of bus drivers, making 

transportation a challenge as well. 

The district will seek other ways to 

keep students in the classroom, Bailey 

said. 

“We have and will continue to utilize 

creative solutions to keep our doors 

open,” Bailey said. “Both staff and the 

community have continued to rally and 

will ideally make in-person learning 

possible with continuity.” 

At press time, the high school was 

expected to return to in-person instruction 

this week and no other closures 

were planned as of Monday. 

The RCS district is not the only one 

in the Capital Region experiencing 

closure due to staff shortages.

Community raises thousands for breast cancer group

RAVENA — More 

than 150 people turned 

out Sunday to raise 

thousands of dollars for 

breast cancer survivors. 

The breast cancer 

walk, the first of its kind 

in Ravena, was organized 

by the VFW Post 

9594 Auxiliary. Participants 

met on the front 

lawn of the Ravena 

Municipal Building, 

15 Mountain Road, at 

noon. 

“We have many in our 

auxiliary who are breast 

cancer survivors, so 

we thought this would 

be a great event to put 

on,” Auxiliary President 

Mary Ellen Rosato said 

Sunday. 

Breast cancer advocates 

— women, men 

and children — attended 

the walk in big numbers, 

many garbed in 

pink, the color of breast 

cancer advocacy. 

The event raised 

$3,500 for the Delmar-based 

organization 

To Life!, which was 

created in 1998 by a 

breast cancer survivor 

to provide support and 

resources to individuals 

with breast cancer.

are going to To 

Life! It’s a not-forprofit 

organization in 

Delmar and they help 

support women and 

men who are going 

through treatment and 

after-treatment, so it’s

Schmitt said. “Sometimes 

hardships like 

cancer can bring a community 

together to celebrate 

our survivors and 

memorialize those who 

may have been taken by 

breast cancer.” 

Village Trustee Joe 

Ganley, wearing a pink 

shirt and tie and other 

pink accoutrements, 

said the impacts of 

breast cancer are broad. 

“This is something 

that affects all of us,” 

Ganley said as he completed 

the 1-mile walk 

with his children. “A lot 

of families, more families 

than people realize, 

are affected by this. So I 

think an event like this 

brings awareness to it 

and, hopefully, a cure 

at some point. We want 

people to be aware of it 

and perhaps go to get 

checked and hopefully 

catch it early. I am 

happy to be a part of 

something like this.”

my mother’s had cancer 

and I know lots of 

people who are suffering

is a great way to show 

our support and educate

Village Trustee Nancy 

Warner said it shows 

what a sense of community 

can accomplish. 

“Look at what we can 

do when we all come 

together for a common 

cause,” Warner said. 

“We need more of that.”

of Albany, all students 

at Stephen and Harriet 

Myers Middle School 

also had a distance learning 

day Friday due to 

staffing shortages related 

to COVID-19, according 

to the district’s website. 

Like RCS High School, 

the Albany middle school 

returned to in-person 

instruction Monday. 

Students in grades 11 

and 12 at Watervliet High 

School were also forced 

to attend remotely Oct. 

6 and 7 due to a staff 

shortage caused by rising 

COVID-19 cases and 

quarantines, according to 

the district’s website.

Bail reform 

becomes focus at 

gun violence hearing

ALBANY — Law 

enforcement leaders and 

state litigators challenged 

lawmakers last Thursday 

about the state’s bail and 

discovery laws during an 

Assembly hearing about 

gun violence and a stalled 

ammunition sales database 

legislated in 2013. 

The Assembly Codes 

Committee held a public 

hearing on the status of 

the state’s firearm ammunition 

sales database and 

to seek input from stakeholders 

on proposed legislation 

to address the illegal 

import or possession 

of guns in New York. 

But a panel of top law 

enforcement officials, 

including state Chiefs 

of Police Association 

Executive Director Patrick 

Phelan, New York 

Police Department Commissioner 

Dermot Shea 

and department Assistant 

Deputy Commissioner 

Oleg Chernyasky and 

Yonkers Police Commissioner 

John Mueller 

used the opportunity to 

challenge the state’s 2019 

bail reform laws, and 

tying them to increased 

gun violence across New 

York. 

“Last year, 88% of those 

arrested were back out on 

the street within hours, or 

sometimes days of arrest,” 

Shea said. “This year, that 

number stands at 82%. ... 

What we’re seeing is an 

increase of people that 

are committing shootings 

that have open bail arrests 

or people that are committing 

shootings, getting 

out on bail or no bail on 

unrelated charges — all of 

those percentages on rising 

to an alarming level. 

“...The only way to correct 

this issue is to amend 

the law to permit judges 

to consider the level of 

danger an arrestee poses 

to the public.” 

Violent crimes have 

risen in urban areas across 

the nation since 2020, and 

in states that did not make 

recent changes to their 

cash bail system, replied 

Assembly Codes Chairman 

Jeffrey Dinowitz, 

D-Bronx. 

“I don’t think the 

answers are simple,” he 

said, “but I’m not sure 

you can directly connect 

all these changes to what’s 

happening in New York.” 

The law enforcement 

panel expressed support 

to create a database to 

record statewide ammunition 

sales, and noted 

25-year highs in the number 

of firearms seized 

since the beginning of the 

COVID-19 pandemic in 

March 2020. 

Officials have attributed 

the rising crime to the 

poverty, food insecurity 

and other difficulties 

plaguing communities 

since the onslaught of the 

COVID-19 pandemic 19 

months ago. It could take 

years to fully know and 

understand the factors at 

play. 

Crime is up exponentially 

year over year, and 

in the last two years, but 

remains significantly 

lower than overall rates of 

armed burglaries, shootings 

and homicides in the 

80s and 90s. 

“What we needed were 

rational discovery forms 

that would give defendants 

adequate and timely 

access to relevant evidence 

to allow for a more 

educated plea bargain, but 

at the same time, protecting 

witnesses and victims 

from dangerous criminals,” 

Phelan said. 

Shea requested the Legislature 

eliminate cash 

bail, but allow a judge to 

decide to hold a defendant 

with conditions based on 

their public threat level. 

Lawmakers will continue 

to discuss the bail 

reform issue, but will 

push for the creation of 

the ammunition database 

and other proposals to 

combat gun violence. 

Some officials have 

credited the years-long 

delay in creating the database 

to a private agreement 

between former 

Gov. Andrew Cuomo’s 

administration and Senate 

Republicans who were in 

control of the upper house 

after the law passed in 

2013. 

Dinowitz plans to push 

the issue with Gov. Kathy 

Hochul’s office. He had 

not discussed the database 

with the governor as of 

Thursday’s hearing. 

Officials with the state 

Division of Criminal Justice 

Services, the New 

York State Police, the 

state Office of Information 

Technology Services 

declined to participate in 

Thursday’s hearing. 

“Some bureaucrats 

don’t like to be questioned,” 

Dinowitz said 

after the hearing. “They 

have an obligation to, in 

my opinion, to the Legislature 

when they’re asked 

to. I know that our new 

governor is certainly very 

committed to openness 

and transparency. Maybe 

they didn’t get the memo. 

They need to reconsider 

that and frankly if they 

don’t, that would be a 

real, a real slap in the 

face to the people of New 

York.”

That number would 

be much higher if not for 

actions taken by federal

Mikulski died peacefully 

on Monday, October 4. 

He was an organ donor 

and was able to save two 

lives by donating both his 

kidneys. 

Matthew was born 

on January 7, 1980, in 

Camarillo, California. He 

grew up in North Brunswick, 

New Jersey, and 

moved to the Poconos at 

21 years old. In Broadheadsville, 

Pennsylvania, 

Matt met the love of 

his life, Amanda Marie 

Gager, and they had two 

sons, Colin and Christian 

Mikulski. He joined 

the Brotherhood of the 

IBEW Local 164 out of 

Northeastern, New Jersey, 

and worked there as an 

industrial electrician for 

20 years. 

During his lifetime 

Matthew raised his family 

in Pennsylvania, New Jersey 

and New York. Matt 

was an incredibly hard 

worker who was the sole 

bread winner of the family. 

He enjoyed Amanda’s 

cooking, spending time 

with his sons, listening 

to Colin play guitar, and

Social Security announces 5.9% 

benefit increase for 2022 

Social Security and 

Supplemental Security 

Income (SSI) benefits for 

approximately 70 million 

Americans will increase 

5.9% in 2022, the Social 

Security Administration 

announced last week. 

The 5.9% cost-of-living 

adjustment (COLA) 

will begin with benefits 

payable to more than 64 

million Social Security 

beneficiaries in January 

2022. 

Increased payments 

to approximately 8 million 

SSI beneficiaries 

will begin on Dec. 30. 

(Note: some people 

receive both Social Security 

and SSI benefits). The 

Social Security Act ties 

the annual COLA to the 

increase in the Consumer 

Price Index as determined 

by the Department of 

Labor’s Bureau of Labor 

Statistics. 

Some other adjustments 

that take effect in January 

of each year are based 

on the increase in average 

wages. Based on that 

increase, the maximum 

amount of earnings subject 

to the Social Security 

tax (taxable maximum) 

will increase to $147,000 

from $142,800. 

Social Security and SSI 

beneficiaries are normally 

notified by mail starting 

in early December about 

their new benefit amount.

Our annual show of 

fall foliage colors began 

a bit later this season as 

rainy weather and relatively 

warm temperatures 

seemed to have 

slowed down the initial 

changes. 

Sadly, once the process 

begins, it proceeds 

far too quickly. I expect 

peak color to happen 

sometime around now 

for the mountain regions 

in Greene, Ulster and 

Delaware counties, and 

perhaps a week to two 

weeks later for the Capital 

Region and valley 

towns. 

It takes only a few short 

weeks to go from zero 

color to peak color. The 

older I get, the quicker 

this process seems to 

occur each year. 

Roadside trees, which 

are usually under stress 

to begin with, are often 

the first to change leaf 

color. I have heard that 

some people are predicting 

less than an optimal 

display, since the wet 

summer caused lots of 

foliar diseases on trees 

such as sugar maples and 

many of our ash trees 

have already succumbed 

to the emerald ash borer. 

There are some conspicuous 

bare zones in 

our forests where entire 

groves of ash trees have 

succumbed to this pest. 

It is true that many 

sugar maples have 

already shed their leaves, 

somewhat prematurely, 

but there are still many 

left to display their typical 

golden/yellow hues. 

Other 

yellow-colored 

trees include the birches, 

aspen, beech and some 

of the hickories as well 

as hop hornbeam (ironwood). 

Some tree species 

that have predominantly 

red color, such as 

red oak, are among the 

last to change. Staghorn 

sumac is showing its typical 

fiery red color and 

witch hazel is now bright 

yellow. 

Red maples change 

color a bit earlier than 

sugar maples and many 

of them are already near 

peak. The pigments that 

cause the red color, as 

well as various hues of 

purple, are called anthocyanins 

and they really 

need some cooler weather 

to develop. These 

pigments are actually 

formed in leaves at this 

time of the year for reasons 

that scientists do 

not understand. They 

are unable to determine 

what function they play 

in tree physiology. The 

pigments responsible for 

yellow/golden hues are 

called xanthophyll and 

carotenoids and they are 

present all season, but 

are masked by the green 

pigment, 

chlorophyll. 

It is not until the tree 

begins to form an abscission 

layer of cells, cutting 

off water to the chloroplasts, 

that the yellow 

color becomes evident. 

Exposure to sunlight 

affects color, as well. 

The common Virginia 

creeper vine turns yellow 

on the shady forest floor, 

but assumes a vivid red/ 

purple color when the 

vines are growing in full 

sun. Poison ivy behaves 

the same way. 

My favorite plant, 

American ginseng, turns 

a beautiful golden, yellow 

color that seems to 

even glow at twilight. 

Some have speculated 

that ginseng’s brilliant 

fall color allows worthy 

harvesters to find 

it only when the roots 

are fully mature and the 

red berries have already 

dropped. 

If you should happen 

to come upon ginseng 

in the forest that still 

has some bright red berries, 

please remove the 

seeds (usually two white 

seeds) that are inside 

each berry and plant 

them nearby, no deeper 

than three-quarters of an 

inch in the soil beneath 

the duff layer. 

When I find ginseng 

berries I usually eat 

the berry pulp and spit 

out the seeds to plant. I 

cannot suggest that you 

do the same, however, 

because there is a ginseng 

“look alike” plant 

called “Jack in a Pulpit” 

that also has bright red 

berries right now. Ingesting 

any part of this plant, 

including the berries, 

will burn your mouth 

and throat severely. It is 

not a good idea to taste 

any wild berries you may 

encounter, unless you are 

quite certain what species 

of plant they are. 

Left to reproduce on its 

own, ginseng has pretty 

poor success, with perhaps 

less than 1% to 2% 

of the seeds growing into 

mature plants. This process 

also requires about 

10 years to happen, but if 

you carefully replant the 

seeds, the success rate 

can rise to as high as 

85%. 

There are some rather 

beautiful, but also invasive, 

plants that produce 

pretty berries at this time 

of the year. Asiatic bittersweet 

is one such plant 

that I struggle to control 

on my property, where 

it has become a serious 

weed. These twining, 

woody, vines can form 

dense thickets that crowd 

out the other plants nearby. 

The red berries of bittersweet 

are enclosed in 

a bright yellow husk that 

splits open after frost and 

remains in place framing 

the bright red berries. 

It sure is pretty, but it 

is also a pretty serious 

weed in our woodlands!

Labor Day is long past. 

It means the death knell 

of summer. I hate to see 

it go, but you don’t really 

need a calendar to know 

that fall is here. 

The morning air has a 

crispness to it not found 

during the dog days 

of summer. The bright 

green brought on by the 

summer rains is becoming 

duller, browner and 

patches of bright colors 

are starting to appear. 

Pumpkins are starting 

to appear on local farm 

stands and in the market, 

meaning the end of the 

growing season is just 

around the corner. 

The first signs of 

squirrel fever are starting 

to appear. This restless 

feeling arises in my 

chest and I start moving 

quicker. 

I look around and see 

all the little jobs I wanted 

to do before winter 

set in are still waiting for 

my attention and now the 

time to do them is growing 

shorter. I pause for a 

moment in the yard and 

watch my not-so-far-distant 

relatives scurrying 

around gathering food 

for the oncoming winter, 

then start my own scurry. 

Porch steps need 

rebuilding, the entire 

porch needs to be 

scrapped and painted, 

there’s wood to be cut 

and split, the gardens 

need work before their 

winter naps. I scurry 

from job to job, anxiety 

building. 

No wonder so many 

squirrels commit suicide 

this time of the year; 

their broken little corpses 

litter the highways 

as they dash this way 

and that trying to get run 

over. 

The passing tractor-trailers 

are starting to 

look good to me. I pause 

and take a deep breath. 

The weather is still 

good, probably another 

couple of months until 

snow. I’ve got time. 

I stop, put away my 

tools and head to the 

market to relax. I buy 

flour, sugar, coffee, 

bread, milk and head 

for home. I pull into our 

local farmer’s stand. I 

load up on sweet corn 

and tomatoes. I look 

over the pumpkins and 

buy some squash. They 

still have kale and Swiss 

chard, and I get some 

of both. I steer Casper, 

the friendly Kia, toward 

home filled almost to his 

ample capacity. 

I feel more relaxed; 

can’t let the oncoming 

bad weather get to me. 

Comparing myself to a 

squirrel is just completely 

silly. I don’t have as 

much hair as they do 

and I’m nowhere near as 

smart or agile. 

Arriving at home, 

oncoming rain sends me 

scurrying from the car 

to the house, back and 

forth, almost running. 

Passing in the opposite 

direction, from the sunflower 

full of seeds to 

his home in the maple 

tree, almost running is 

the big gray squirrel I 

call “Lucky.” The name 

comes from the fact that 

he’s lucky I haven’t shot 

him yet. 

Back and forth we 

scurry, in opposite directions. 

Finally I pause, 

slightly out of breath. 

Lucky stops and sits 

upon the top of the stump 

of the old soft maple we 

removed this spring. We 

looked at each other for 

a while and I admitted to 

the panting rodent that 

maybe we weren’t so 

different after all. Actually, 

we are much the 

same. 

He tipped his head, 

looked at me as if he 

understood, hopped off 

the stump, ran to the 

middle of the road and 

sat down to await his 

inevitable fate. A stress 

case if I ever saw one.

NEW YORK―Unacast, an 

award-winning location data and 

analytics firm, has launched a Social 

Distancing Scoreboard. 

The Scorecard assigns a letter 

grade of A through F to all states 

and counties in relation to social 

distancing behavior during the 

COVID-19 pandemic. The tool 

does not rank response to the virus 

by public health officials but instead 

focuses on public behavior. 

Using the change in distance 

traveled prior to COVID-19 in 

comparison to present day, areas 

that observe at least a 40% decrease 

in average distance traveled 

are assigned a grade of A, while 

those that exhibit less than 10% decrease 

or increase are assigned an 

F. Letter grades are then compared 

to the number of new COVID-19 

cases reported in those areas to 

help users draw conclusions between 

social distancing behavior 

and virus spread over time. 

So how do local counties rank? 

Overall Greene County has 

received a grade of C-, as has 

Schohaire County. Albany County 

received a grade of C. The best 

scores in New York State were 

four counties in the North Country. 

The overwhelming majority of 

New York State counties received 

a C or D grade, giving the county 

an average C grade. As of press 

time, no county had received an F. 

Overall, the United States average 

grade was a C. Nevada, Colorado, 

Hawaii, Michigan and Wisconsin 

earned B grades. Louisiana 

was the only state to earn an F. 

Unacast is developing the

In the wake of the global pandemic, 

the World Health Organization 

and the Centers for Disease 

Control have advised social distancing 

as a containment method 

to slow the spread of the disease. 

“COVID-19 spreads mainly 

among people who are in close 

contact (within about 6 feet) for a 

prolonged period. Spread happens 

when an infected person coughs, 

sneezes, or talks, and droplets from 

their mouth or nose are launched 

into the air and land in the mouths 

or noses of people nearby. The 

droplets can also be inhaled into 

the lungs. Recent studies indicate 

that people who are infected 

but do not have symptoms likely 

also play a role in the spread of 

COVID-19,” the CDC reports. 

“It may be possible that a person 

can get COVID-19 by touching a 

surface or object that has the virus 

on it and then touching their own 

mouth, nose, or eyes. However, 

this is not thought to be the main 

way the virus spreads. COVID-19 

can live for hours or days on a surface, 

depending on factors such 

as sun light and humidity. Social 

distancing helps limit contact with 

infected people and contaminated 

surfaces.” 

Unacast applied geospatial 

human mobility insights with its

map showing mobility 

trends by county or by state as a 

way to raise awareness of and reinforce 

the importance of social 

distancing in relation to slowing 

the spread of COVID-19.

Maria K. Kammerer 

CORNWALLVILLE―Maria K. 

Kammerer, age 80, of Cornwallville, 

NY passed away on March 

25, 2020 in Catskill, NY. 

Maria was born on July 31, 

1939 in Romania and was the 

daughter of the late Nikolaus and 

Agatha (Wagner) Zimmermann. 

In addition to her parents she 

is predeceased by her husband 

Richard Kammerer. 

Survivors include her sister 

Anneliese Hartman of Missouri, 

her brother Walter Zimmermann 

of North Carolina, and her 

nephew Walter Zimmermann of 

Texas. Also survived by her loving 

English Shepherd Dog companion, 

Wizzard. 

Maria was a former owner and 

chef at the Mountain Brauhaus 

where she enjoyed one of her 

many passions of cooking. She 

also worked many years as a 

secretary with the Cairo-Durham 

School District. She enjoyed 

sewing, was an avid gardener, 

painter and artist and will be 

missed and forever cherished by 

all who knew and loved her. 

Due to the current Coronavirus 

pandemic, a private burial will 

take place at this time. A Celebration 

of Maria’s Life will take 

place at a later date. Maria’s 

family thanks you for your understanding.

Dr. Dorothy Urschel 

HUDSON – Columbia Memorial 

Health last week announced 

the selection of Dorothy M. Urschel 

as its new chief operating 

officer. 

Dr. Urschel is an experienced 

health care executive who has 

held senior clinical and administrative 

leadership posts in numerous 

health care organizations, 

most recently at St. Peter’s Health 

Partners as vice president of operations 

and chief nursing officer at 

Albany Memorial Hospital, and 

vice president of Cardiac and Vascular 

Services. 

An accomplished clinician, 

administrator and academic, Urschel 

is an acute care and family 

nurse practitioner. She also holds 

a master’s degree in business administration. 

She replaces Karen 

Tassey, who retired after serving 

as CMH’s chief operating officer 

for the past seven years.

leader and highly experienced 

caregiver who has consistently

Maynard, 82, formerly of Greenville 

was led by angels to peace 

on March 30, 2020. 

Born Shelva J. Lane on March 

7, 1938, in Endicott, to the late 

Delbert and Josephine Lane. 

Shelva was also predeceased 

by siblings, Arthur, William and 

Elizabeth Lane and daughter, 

Tammy Zacchio, of Cairo. 

She is survived by her children, 

daughter, Deborah Ann Morris, 

Chenango Forks, son, Barry Lane 

White and wife, Robin, Lynnville 

TN, daughter, Barbara Lynn 

Hogan and husband, Joseph, 

Greene; sister, Beverly and husband

Farms while living in Greenville 

and Eckerds Pharmacy in Greene 

until her retirement. 

To honor her request, there will 

be no public services. A private 

graveside service for family will 

be held at a later date at the 

Riverhurst Cemetery, Endwell.

Egeziaca ‘Jessica’ Rufa 

WESTERLO―Egeziaca “Jessica” 

Rufa, 106, passed away 

peacefully on Monday, March 

9, 2020 at the Community Hospice 

Inn at St. Peter’s Hospital. 

She was born in Frosinone, 

Italy on November 20, 1913 

to the late Peter and Dominica 

Perciballi. 

She was raised in Italy and 

in 1929, she married Vincent 

Rufa. 

She raised her family in 

Italy before the family moved 

to America in 1954. They all 

settled in the Bronx, where she 

worked as a seamstress. 

In 1988, she moved to Westerlo, 

where she joined St. John 

the Baptist Church and became 

a member of the Rosary Society. 

Jessica enjoyed cooking, 

crocheting, and gardening. In 

addition to her parents, she is 

predeceased by her children, 

Maria Rufa, Josephine Cestra, 

and Benny Rufa; and her siblings, 

Peter Cerquiddi and Nena 

Perciballi. 

Egeziaca is survived by her 

children, Ida Pironi and Peter 

Rufa, fifteen grandchildren, and 

several great and great-great 

grandchildren.

March 12 at the A.J. Cunningham 

Funeral Home, 4898 State 

Route 81, Greenville. A Funeral 

Mass was March 13 at St. John 

the Baptist Church, 4987 State

Dr. Martin Luther King 

Jr. is one man who saw a 

vision of the future so 

clearly and believed in 

that vision long enough 

that he was able to make 

possible what seemed 

impossible. 

Dr. King’s external 

reality was that he grew 

up when Black people 

were openly considered 

inferior by the local, state 

and federal governments. 

His internal reality, his 

vision for the future, was 

quite the opposite. 

He grew up in the Jim 

Crow era, at a time when 

government laws, mainly 

in the South, openly mandated 

tyranny and hatred 

against black people. 

Dr. King once said, 

“Never forget that everything 

Hitler did in Germany 

was legal.” 

Segregation, lynchings, 

church burnings, 

police brutality, attack 

dogs, powerful fire hoses 

spraying protesters to 

the ground and citizens 

attending protests, holding 

signs that read, “We 

don’t want negroes in our 

schools!” were the circumstances 

Dr. King was 

expected to rise above if 

he was to accomplish his 

dream. 

Dr. King came into the 

public eye when Rosa 

Parks famously refused 

to sit at the back of the 

bus. He came to her aid 

and helped organize the 

Montgomery Bus Boycott, 

which lasted 385 

days. During the boycott, 

Dr. King’s house was 

firebombed! This only 

served to strengthen his 

resolve. 

King said, “It all boils 

down to the fact that we 

must never allow ourselves 

to become satisfied 

with unattained goals.” 

Despite constant threats 

against his life and many 

telling him his dream 

was impossible, he knew 

and acted otherwise. The 

power of his vision eventually 

convinced millions 

to join him in the Civil 

Rights Movement. 

He went on to win 

a Nobel Peace Prize, 

helped put an end to the 

era of Jim Crow and saw 

the beginning of desegregation. 

Tragically, he was 

assassinated in 1968 at 

the young age of 39. 

Becoming greater than 

your circumstances will 

always come with opposition, 

obstacles, much 

hard work, and in some 

cases, death. 

He once said, “Courage 

is an inner resolution 

to go forward despite 

obstacles; cowardice is 

submissive surrender to 

circumstances.” 

Dr. King’s life is a testament 

that we can rise 

above our present circumstances 

and achieve 

the impossible. 

If Dr. Martin Luther 

King was able to rise 

above ignorant beliefs 

about skin color, tyrannical 

government laws, 

endure the constant 

threat of death and still 

accomplish his dream, 

what excuse do we have 

not to accomplish ours?

production line gives TCI the ability to expand their services to their customers,

utilities and private business. Now Jobs that used to go out of state will be created in 

Coeymans New York.

Zoltan “Sol” Lefkovits 

Cofounder, TCI of NY 

1933 - 2021 

It’s with a heavy heart and great 

sadness that TCI announces the passing 

of our beloved co-founder, Zoltan “Sol” 

Lefkovits. He, along with Gaby Newmark, 

together formed G&S Technologies in 

1963. Today G&S has grown to over 175 

employees directly, and more than 600 

employees across eight companies that 

comprise the G&S family of companies 

including TCI of NY. 

Sol was deeply loved by his family and 

friends. He led by example through his 

exceptional work ethic, commitment to his customers, strong financial practices, and 

striving to always do the right thing. He was truly one of a kind. 

It is a true American success story. Started by two Hungarian brothers-in-law who 

came to America in 1956. They both along with their wives survived the Holocaust. 

Over the next 60 years, Gaby and Sol went on to build a successful, now in its thirdgeneration 

business that has benefited many lives and protects the environment. 

Through an innovative and environmentally focused approach, more than 99 

percent of the material processed today is salvaged for beneficial re-use rather than 

landfilled. TCI goes to the utilities with specialized trailers to pick up transformers and 

then off loads them at the plant where they go onto highly modernized production lines 

to separate the materials. 

“The transformers are systematically dismantled,” says John Barr, Operations 

Manager. “The process requires highly skilled workers who are trained and educated. 

There needs to be strict attention to detail.” 

The company employs a reverse manufacturing process that prepares materials 

that are refined according to stringent specifications and prepares them to be mill

Runners gear up for 105th Troy Turkey Trot

participants each year. The annual Troy Turkey Trot raises funds for local charitable organizations and lets runners burn 

some calories before sitting down to Thanksgiving dinner. 

TROY — Officials at the 

Troy Turkey Trot, presented 

by Pioneer, have opened registration 

for the event’s 105th 

anniversary on Thanksgiving 

morning, Thursday, Nov. 25, at 

TroyTurkeyTrot.com. 

The Trot is the nation’s 12th 

oldest road race and attracts 

thousands of runners and 

spectators to historic Troy for 

the Capital Region’s largest 

Thanksgiving Day road race. 

A signature event of the Collar 

City’s holiday festivities, the 

Trot begins at 8 a.m. with the 

Capital Region’s only Thanksgiving 

Day 10K. The 10K 

course will close at 9:30 a.m. to 

facilitate the start of the Grade 

School Mile and Turkey Walk 

at 9:30 a.m. 

The shorter 5K distance kicks 

off at 10 a.m. Both the 10K 

and 5K feature “out and back” 

course configurations, which 

start at Fourth and Fulton streets 

and finish at River Street’s Monument 

Square. Family members 

are invited to show their support 

by cheering on loved ones. 

“Since its humble beginnings 

in 1916 when six runners 

entered, the Trot has grown 

to become one of America’s 

largest road races with more 

than 7,000 participants,” said 

longtime Event Director George 

Regan. “It’s important for people 

to recognize this event is 

steeped in history and tradition 

and they can experience that 

during our anniversary year.” 

Besides offering a welcome 

return to in-person racing, this 

year’s Trot will again feature 

a virtual option for those concerned 

about being around others 

or who plan to be away. 

Virtual participants will use 

a custom mobile app, which 

allows them to race with others 

in real time, regardless of their 

location. 

Last year, 14 other Troy 

communities across the nation, 

including elected officials from 

Troy, Kansas; Troy, Michigan; 

and Troy, Illinois took 

advantage of the app during the 

event’s three-day virtual running 

window. 

While registering online, 

participants are encouraged to 

donate to the event’s two main 

charities, the Regional Food 

Bank of Northeastern New York 

and Joseph’s House & Shelter, 

a Troy-based not-for-profit 

whose mission is to prevent 

and alleviate homelessness in 

the Capital Region. They can 

also support 15 local non-profits 

participating in the event’s Volunteer 

Incentive Recruitment 

Program, an initiative in which 

local charities receive a cash 

donation in return for supplying 

the event with volunteers. 

“Although the Trot drew 41% 

of its 2019 field last year, runners 

donated a record total of 

$18,500 to support the Regional 

Food Bank of Northeastern 

New York and Joseph’s House 

& Shelter,” said Troy Mayor 

Patrick Madden. “We hope 

Trotters’ giving spirit continues 

this year as the event returns 

to in-person this Thanksgiving. 

This year’s fundraising goal of 

$20,000 will help support these 

organizations that play a vital 

role feeding hungry families 

and providing warm shelter to 

homeless men, women and children.” 

For those looking to stretch 

out their muscles before their 

event takes place, Choice Physical 

Therapy will offer a series 

of warm-up sessions at Fourth 

Street and Broadway at the 

following times: 9-9:15 a.m. 

(Grade School Mile/Turkey 

Walk), and 9:20-9:40 a.m. (5K). 

Free event parking is available 

at a number of Front and 

River Street parking lots. A

“Using science, research 

and public input, DEC is 

increasing fishing opportunities 

while advancing 

responsible trout management 

in order to ensure 

trout reach their fullest 

ecological and recreational 

potential,” Seggos said. 

“New York state’s new

RCS school district. 

Registration for junior 

varsity and varsity sports 

is open and will continue 

through Monday, Nov. 22. 

Athletes signing up for

Monday, Nov. 29, according 

to the district. 

Winter sports physicals 

will be held Tuesday, 

Nov. 9, during the school 

day at the middle and high 

schools for students who 

do not have sports physicals 

for the winter season 

and cannot be seen by 

their own doctor. To make 

an appointment, contact 

the appropriate school 

nurse. 

All junior varsity and 

varsity winter sports can 

begin on or after Nov. 

15, with modified winter 

sports beginning on or 

catch-and-release season 

in trout streams expands 

opportunities for anglers 

so they can enjoy the 

state’s trout stream fishing

The new catch-and-release 

trout stream season 

is a product of DEC’s 

Statewide Trout Stream 

Management Plan, developed 

to improve and modernize 

the state’s management 

of its trout stream 

fishing resources. 

The new season, which 

runs from Oct. 1 to March 

31, requires anglers to use 

only artificial lures and 

immediately release trout 

after Nov. 22. 

This fall the district 

implemented a new 

sports registration process 

for the 2021-22 school 

year, which will also be 

in effect for winter and 

spring sports. 

RCS families must register 

students for sports 

online through FamilyID 

at www.familyid.com. 

This is the only registration 

process for athletics 

in the district moving 

forward, according to the 

they catch. The catch-andrelease 

season applies to 

trout streams only. 

Fishing for trout in 

lakes and ponds is prohibited 

after Oct. 15, unless 

these waters are managed 

under a special regulation 

that allows for angling. 

Anglers should consult 

DEC’s regulations guide 

for regulations associated 

with lakes and ponds 

that harbor trout before 

fishing. 

This time period was 

traditionally closed to 

trout stream fishing as a 

precautionary measure 

during the reproductive 

district website.

registration platform tat

easy, user-friendly way 

to register for our programs, 

and helps us to 

be more administratively 

efficient and environmentally 

responsible,” according

for that reason. He also tends to be a little overwhelming for 

certain dogs, but likes others with similar energy. He’s super smart

SUNY unveils plan to combat declining enrollment

New York officials plan 

to increase alternative 

course schedules for adult 

students seeking a career 

change and propose legislative 

changes to the 

federal financial aid system 

as one of the nation’s 

largest university systems 

faces historic enrollment 

decline exacerbated by 

the COVID-19 pandemic. 

SUNY’s total enrollment 

is down 4.7%, or 

18,600 students across its 

64 campuses, from fall 

2020, according to preliminary 

fall 2021 enrollment 

figures. SUNY has 92,386 

fewer students than it did 

10 years ago — a change 

of —19.7%. 

Applications were 

down 9%. Only SUNY’s 

doctoral program showed 

gains of 0.2% year-overyear 

and up 1% since fall 

2019 before the start of 

the COVID pandemic. 

“We have to do things 

differently,” SUNY Chancellor 

Jim Malatras told 

SUNY’s Board of Trustees. 

Malatras stressed the 

need to present more 

enrollment opportunities 

to prospective students 

and posed examples of 

other education models 

where a person can start 

their degree at any point 

during the year. 

“Our students don’t care 

about our schedule — we 

should care about their 

schedule,” Malatras said. 

“This is a wholly different 

concept than what we do.” 

Columbia-Greene 

Community College in 

Greenport, Columbia 

County, had an enrollment 

of 1,316 students, or a 

decrease of 8.9%, according 

to SUNY’s preliminary 

fall 2021 data. 

The college was down 

about 6% for the current 

fall semester as of Monday, 

Columbia-Greene 

Community College President 

Carlee Drummer 

said. 

The southern Capital 

Region SUNY community 

college enrollment is 

down 37.4% over the last 

decade, or down 786 students 

total since fall 2011. 

C-GCC’s ongoing 

enrollment decline is 

not expected to cause a 

reduction of college staff, 

classes or services, said 

Drummer, who anticipated 

fewer students and 

budgeted for a worst-case 

9% reduction. 

“We were very, very fiscally 

prudent,” Drummer 

said. “We were looking at 

trends ... and I am a very 

cautious person. I said 

to our [Chief Financial 

Officer], ‘If we think it’s 

going to be a 5% decline, 

we should make it higher.’ 

“...It’s not that we’re 

not worried — I worry 

all the time — but wanted 

to be realistic about 

where we were going to 

be. Once we get COVID 

in the rearview mirror, I 

think we’re going to be 

holding our own.” 

An increased number of 

students decided to take a 

gap year, or break in their 

academic studies, or opted 

to continue their college 

learning virtually since 

the COVID-19 pandemic 

began. 

“That’s a national phenomenon 

— that’s not just 

Columbia-Greene Community 

College,” Drummer 

said. “It’s happening 

across the country.” 

Drummer also noted the 

lower birth rate contributing 

to fewer high school 

and college students. 

“The population is definitely 

declining,” Drummer 

said. “We are very 

eager to see what’s going 

to happen with so many 

new people coming to our 

counties from the city. 

We’re certainly hoping 

we have school-aged children, 

but if they’re enrolling 

in grade school, it’s 

going to take them awhile 

to get to college.” 

C-GCC’s enrollment 

woes are not unique, especially 

among SUNY’s 30 

community colleges. 

The 10-year enrollment 

trend at SUNY’s 30 community 

colleges has also 

reached new lows, following 

a consecutive reduction 

over the last decade. 

SUNY has 10,671 or 

6.1% fewer students 

enrolled in its community 

colleges over one year, or 

since fall 2020, according 

to preliminary fall 

2021 data — and is down 

84,408 students or 34.1% 

over 10 years since fall 

2011. 

“We have worked hard 

at the system and campus 

levels to engage prospective 

students,” SUNY 

Provost-in-Charge Shadi 

Shahedipour-Sandvik 

said during the Academic 

Affairs meeting with the 

Board of Trustees. 

The college has seen an 

increased number of parttime 

students in the pandemic’s 

wake. 

Drummer also stressed 

the need to offer alternative 

course delivery, or 

more opportunities outside 

the typical 16-week 

semester to attract 

post-traditional students 

or professionals looking 

for additional skills. 

“There are no boundaries,” 

she said of pivoting 

to more flexible learning 

options to accommodate 

student work schedules or 

family responsibilities. 

Drummer is speaking 

with other Capital Region 

campuses and organizations 

to share resources 

and ideas to creatively 

attract more students, 

in addition to increased 

advertising. 

“We will continue to try 

to be as flexible as we 

can,” Drummer said. “We 

are the community’s college 

and we want to do 

what we can to help the 

community.” 

SUNY cannot rely on 

altered marketing strategies 

alone, Malatras said 

last week to trustees, adding 

SUNY officials at all 

campuses need to work 

together to fight the ongoing 

enrollment decline, 

including Educational 

Opportunity Programs in 

mid-year and appealing 

to 25-44-year-old learners 

— SUNY’s growing 

demographic for students 

in the middle of a career 

transition. 

“They’re going to go to 

a labor training center or 

they’re going to go to us,” 

Malatras said. 

A new approach to the 

federal financial aid system 

must also be posed to 

legislators, Malatras said. 

The current model discourages 

part-time attendance 

or students who

“I am hopeful the fact 

our campuses are more 

fully reopened now and

will go a long way in 

demonstrating to people 

that we’re back,” Malatras 

said. “We’re in this weird 

period over the last several 

months where students 

were waiting to see how 

it’s going to go.” 

Officials also noted students 

may have been hesitant 

to return to in-person 

classroom instruction 

during the spring application 

period. 

SUNY boasts a 97% 

student vaccination rate. 

In May, SUNY mandated 

the COVID-19 vaccine for 

all students taking in-person 

classes in SUNY’s 

64-campus higher education 

system this fall.

The Social Security 

taxes paid while you and 

your wife were working 

weren’t deposited into a 

personal account for each 

of you; rather, they were 

used to pay benefits to 

those collecting Social 

Security at the time. 

That’s the way the program 

has worked since 

enacted in 1935 and the 

way it still works today. 

The money you contributed 

has already been 

used to pay benefits to 

others. However, hopefully 

you and your wife will 

live to claim your own 

benefits, and what you get 

when you claim will be 

based upon your earnings 

record over your entire 

lifetime (up to earnings 

you paid Social Security 

FICA payroll taxes on). 

Those historical earnings 

are adjusted for inflation 

and your lifetime average 

monthly earnings amount 

is determined, from which 

your base benefit is calculated. 

Just as you and your 

wife helped pay for those 

getting SS benefits while 

you were working and 

paying into Social Security, 

those now working and 

paying into the program 

will help pay benefits to 

you and your wife. 

You may be interested 

to know that studies 

show most workers get 

back everything they’ve 

personally contributed 

to Social Security within 

about three to five years 

of starting their benefits. 

One study I’m familiar 

with looked at how long 

it would take the average 

Social Security recipient 

who starts benefits at full 

retirement age (FRA) to 

get back money equal to 

what they paid into SS. 

That study looked at four 

different hypothetical 

earners – one who earned 

only half of the national 

average wage index 

(AWI) for their lifetime; 

another who earned 100% 

of the national AWI for 

their lifetime; another 

who earned 150% of AWI 

for their lifetime; and yet 

another who earned the 

maximum annual payroll 

tax cap for their entire 

lifetime. 

The study then figured 

how much each of those 

individuals would have 

paid in Social Security 

payroll taxes over their 

35 highest-earning years 

(which is what SS benefits 

are computed from). 

Then, the study looked 

at what their SS benefit 

would be at full retirement 

age and calculated 

how long it would take for 

each to recover the Social 

Security FICA taxes paid 

over their lifetime. 

The analysis revealed 

that the lowest-earning 

beneficiary would get 

back everything paid into 

Social Security within 

about 34 months, and the 

highest earning beneficiary 

would get back everything 

paid within about 63 

months. 

For clarity, this study 

looked at employed workers 

who pay Social Security 

FICA taxes; those who 

are self-employed and 

who must pay both the

Cravings and sweet freedom 

Do you get cravings? 

Of course you do! And 

it’s really hard to ignore 

a craving, especially 

when your mind is fixated 

on something sweet, 

salty, creamy, crunchy or 

fried. 

Some cravings (especially 

sugar) can feel so 

powerful and intense 

that you think the only 

way to make it go away 

is to just give in. 

And then you feel 

guilty because you 

weren’t strong enough. 

But there is good news 

because cravings aren’t 

necessarily a bad thing. 

Cravings are your body’s 

way of telling you that 

your diet is lacking in 

certain vitamins and 

minerals. 

In today’s post we’ll 

look at some of the most 

common cravings as 

well as the possible reasons 

behind them. 

I don’t know about you 

but there are some days 

when I get such a strong 

craving for chocolate 

that it feels like I got 

hit by a truck! However, 

a chocolate craving is 

simply an indication that 

your body is in urgent 

need of magnesium. 

Magnesium is involved 

in more than 300 chemical 

reactions in your 

body and is necessary 

for regulating your heart 

rate and immune system. 

High blood pressure, 

muscle cramps, irregular 

heartbeat and osteoporosis 

are some of the 

symptoms of a magnesium 

deficiency. Dark 

chocolate (75% or more) 

is a rich source of magnesium, 

along with green 

leafy veggies, legumes, 

nuts and seeds. 

And there are days 

when all I want for dinner 

is a juicy steak or 

a cheeseburger. If this 

weird craving for red 

meat is a familiar one, 

then it may be an indication 

your body has an 

iron deficiency. Symptoms 

of an iron deficiency 

are a lowered 

immune system, fatigue 

and overall weakness. 

Dark chocolate, spinach, 

clams, wild caught fish, 

organ meat, beans and 

pasture-raised red meat 

are all great sources of 

iron. 

When you find yourself 

wanting a big bucket 

of fried chicken, French 

fries or other fried foods, 

what your body is trying 

to tell you is that it 

is in desperate need of 

omega 3’s. Dry or scaly 

skin, brittle or soft nails 

and frequent urination 

are signs your body is 

craving fatty acids, not 

fried food. Avocado, 

salmon, nuts, nut butters, 

olive oil, coconut 

oil and flax seed are all 

rich in omega 3 fatty 

acids. You can also supplement

And there are times 

when I just can’t get 

enough salt on my food, 

especially pink sea salt. 

This overwhelming urge 

for salt is the result of 

the stress hormone (cortisol)

foods are essential, so 

stock up on nuts, seeds, 

coconut water, legumes, 

fruits and vegetables.

You are already an 

expert in eating to lose 

weight, gain weight, 

improve your immune 

system and maintain glucose 

levels. Right? 

Well, maybe not an 

“expert,” but in truth, 

you can’t turn on the TV, 

flip through a magazine 

or ignore the people at 

the next table in the diner 

talking about whether 

they should have fries 

or salad with their burger. 

We’re literally all in 

this conundrum together 

and becoming experts in 

every “diet” imaginable. 

Or we’ve become confused 

as heck as a society 

about what to eat and why 

no matter how much we 

try, we’re gaining excess 

pounds while losing our 

grasp on good health 

practices. 

I honestly do not 

remember my Grandma 

focusing on the nutrient 

labels of the food we ate. 

I’m pretty sure we’re no 

healthier now than my 

folks were back in the 

day when we based our 

meals on the seasons and 

the availability of food at 

the market. Meals in 20 

minutes? Ha! 

Dinner was planned and

begun right after breakfast 

dishes were cleared. 

Fancy bone broths? 

That was called chicken 

soup with the old hen. 

Beef bones were added to 

vegetables for a luscious 

beef soup and stews were 

the culmination of all the 

small bits left over and 

added to one pot later in 

the week. 

This wasn’t thought of 

as a time of lack. It was 

how we ate. 

Portion sizes, back 

in the day, were never 

thought of as inadequate. 

By today’s standards of 

how much is doled out 

at restaurants out you’d 

think this was tantamount 

to our last meal on earth. 

Didn’t anyone consider 

overeating for us was 

just as bad as not having 

enough food to eat? 

I recently had the pleasure 

of spending time 

chatting with Therese, a 

wonderful, knowledgeable 

dietician affiliated 

with CDPHP about the 

ongoing weight issues of 

many who experienced a 

gain during the darkest 

days of the pandemic. 

She explained that our 

metabolism had slowed, 

keeping in line with the 

lockdowns and closures 

due to COVID outbreaks. 

Best laid plans to keep 

active were thwarted by 

ongoing anxieties every 

time we stepped out the 

door. 

I had indeed experienced 

this increase in 

unwanted weight gain 

despite trying to keep as 

active as possible and eating 

well. 

I asked her to offer what 

she had learned in her 

profession about a possible 

solution. She said 

this: In order to stimulate 

our metabolism, it was 

imperative to really focus 

in on everything that we 

consumed in the day. She 

even wanted me to measure 

out the half-and-half 

for my coffee. 

Why? Because, as a

and thinking like we were 

before the pandemic. She 

suggested that our chemistry 

had changed. But 

our thought process was 

still very much stuck in 

the past. I’ve said this 

several times in my previous 

columns as well: 

“We’re NOT going back 

but FORWARD, and so 

our thinking about being 

healthy and fit had to shift 

into an alignment that 

would yield the results we 

wanted in today’s world. 

Therese’s suggestions 

made sense. I was no longer 

achieving my goal of 

10K a day on my fitness 

tracker, but I was still eating 

like I was. Remember, 

calories need to be 

burned off or you’re going 

to store them in unwanted 

parts of your physical 

body. So, that being 

said, Therese helped me 

to find a better daily calorie 

intake to match my 

activity level and goal to 

drop that excess weight. 

I was definitely resistant 

at first, but I couldn’t 

ignore the facts that she 

presented. 

She mentioned that as 

a whole we are not moving 

nearly as much as we 

did before the pandemic. 

We order food for pickup 

rather than shop at the 

grocery store. 

We might get out to 

shop but often make 

errands much shorter in 

an attempt to have the 

least contact with the 

community. 

Many are still working 

from home and no longer 

have a need to walk down 

the hall of their office or 

park farther away from 

the building. All of this 

has contributed to the 

decrease in physical activity. 

And she’s totally correct. 

So much food for 

thought. 

The bottom line is to 

stay focused on everything 

you eat: portion 

sizes, extras like butter 

or some extra oil to cook 

your food. Measure your 

portions. Keep measuring 

cups handy and be 

accountable based on 

food labels and serving 

potions. Eat less. Trick 

your metabolism back 

into high gear by exercising 

more, perhaps even 

tracking your food intake 

on one of the many tracking 

programs available for 

little to no cost at the App 

Store. Get out of your seat 

more frequently and read 

this column while walking 

around the room. 

“Healthy and Fit” needs 

to be redesigned for this 

pandemic world we’re 

living in. 

We’ve given up so 

much already because 

of this global situation, 

we can move forward by 

aligning our goals with 

being the best we can be 

at any age and no matter 

when we start.

Baked Stuffed Pasta Shells

Servings: 6-8 

6 ounces jumbo pasta shells 

2 tablespoons olive oil 

1 tablespoon fresh garlic 

1 medium onion, diced 

5 portobello mushroom caps, gills removed then diced 

1 pinch sea salt, plus additional, to taste 

1 pinch pepper, plus additional, to taste 

2 cups shredded kale 

3 tablespoons water 

15 ounces skim milk ricotta cheese 

4 tablespoons pesto 

1 tablespoon The Fit Cook Land spice blend 

1 1/2 cups reduced-fat marinara, divided 

1 1/2 cups reduced-fat mozzarella 

fresh herbs, for garnish 

Baked Stuffed Pasta Shells 

Preheat oven to 420 F. 

Bring pot of salted water to boil. Cook pasta shells according to 

package instructions. Drain then set aside. 

Heat pot or cast-iron casserole dish over medium heat. Once hot, 

add oil, garlic, onion and mushrooms. Add pinch of sea salt and 

pepper as it cooks. Cook until onions turn brown and mushrooms 

shrink in size, about 3-5 minutes. Empty contents and set aside. 

Place pot back over heat. Add shredded kale and water to create 

steam. Toss kale in pot until it turns vibrant green; set aside to cool. 

In large bowl, mix ricotta cheese with mushroom mixture, kale, 

pesto and spice blend. 

In casserole dish, spread about 1/2 cup marinara on bottom. 

Then one-by-one, stuff each pasta shell with approximately 

2 tablespoons ricotta mixture and add to casserole dish. Repeat 

with remaining shells. 

Cover shells with remaining marinara and mozzarella cheese. 

Cover casserole dish with foil and bake 20 minutes. During final 

5 minutes, remove foil so mozzarella can brown. 

Garnish with fresh herbs and salt and pepper, to taste.

Servings: 10-12 

Caramel Sauce: 

1 cup granulated sugar 

1/4 cup water 

Cake: 

1 1/2 cups all-purpose flour 

1 teaspoon baking 

powder 

1/4 teaspoon baking soda 

1/4 teaspoon salt 

3/4 cup unsalted butter, at 

room temperature 

3/4 cup granulated sugar 

2 large eggs 

1/2 teaspoon vanilla extract 

3/4 cup buttermilk 

3 tablespoons rainbow 

sprinkles (optional) 

Flan: 

4 large eggs 

1 can (14 ounces) 

sweetened condensed 

milk 

1 can (12 ounces) 

evaporated milk 

1 tablespoon vanilla 

extract 

ground cinnamon, 

to taste 

In saucepan, heat granulated 

sugar and water over mediumlow 

heat until melted. 

Preheat oven to 350 F. 

Grease and flour 9-inch Bundt 

pan. Set aside. 

When sugar liquifies and turns 

golden brown, remove from heat 

and use silicone spatula or whisk 

to stir. While stirring, quickly 

pour into prepared Bundt pan. 

To make cake: In large bowl, 

sift flour, baking powder, baking 

soda and salt. Set aside. 

In another bowl, use hand 

mixer on medium speed to beat 

butter and sugar, about 3 minutes, 

until fluffy. Add eggs and vanilla. 

Beat well. 

On low speed, gradually beat 

in flour mixture and buttermilk 

until combined. 

Fold in rainbow sprinkles, 

if desired. 

Pour batter into pans over 

caramel sauce. 

To make flan: In blender on 

high speed, blend eggs, sweetened 

condensed milk, evaporated milk 

and vanilla until well combined. 

Gently pour through strainer 

and onto prepared cake batter. 

Sprinkle cinnamon on top. 

Place pan in water bath 

by putting it in larger baking 

dish, roasting pan, hotel pan or 

similar. Pour hot water halfway 

up sides to create water bath. 

Bake approximately 1 hour. 

Cake should be golden brown and 

jiggle when shaken when done. 

Remove cake from water bath 

and cool on rack 10 minutes. 

Run knife or spatula carefully 

around edges to separate. Place 

plate on top of cake and, while 

holding it, flip over carefully 

and quickly. 

Refrigerate at least 1 hour or 

overnight before serving.

2 cups fresh spinach 

1 cup water 

1 tablespoon vegetable oil 

2 tablespoons green curry paste 

8 ounces skinless, boneless chicken, 

beef or pork, sliced thin 

1 small Japanese purple eggplant 

2 cups coconut milk 

4 teaspoons granulated sugar 

1/2 teaspoon salt 

1/2 cup bamboo shoots, sliced 

1/4 medium red bell pepper, sliced thin

8-10 Thai basil leaves, plus additional, 

for garnish, divided 

2 cups cooked jasmine rice 

In blender, blend spinach and water until mixture 

turns green and no leaves are visible. 

In medium saucepan over medium-high heat, 

heat oil. Add green curry paste and stir to release 

fragrance, about 10 seconds. 

Add protein and cook 3-5 minutes. 

Add blended spinach water, purple eggplant, 

coconut milk, sugar and salt. Bring to boil. Add 

bamboo shoots and red bell pepper. Simmer 

10 minutes. 

Stir in basil leaves and turn off heat. 

Serve with jasmine rice and garnish with 

additional basil leaves.

Dave MacLauchlin 



One year ago this month, Dave MacLauchlin, started as manager 

of the Lafarge cement plant in Ravena – an opportunity that enabled 

him both to utilize his two decades of industry expertise and realize a 

dream of returning to his home state of New York. 

But the job also presented significant challenges to MacLauchlin, 45, 

a Western Mohawk Valley native and Clarkson University graduate. He 

arrived five months after the coronavirus pandemic forced the closure of 

everything but essential businesses across the state. 

The Lafarge Ravena plant, MacLauchlin said, shuttered briefly in April, 

but otherwise “operated successfully” throughout the Covid-19 crisis and 

never experienced an outbreak. 

“That’s a testament to the workforce,” he said. 

Now that the Covid restrictions have eased, MacLauchlin is focused 

on getting into the community and forging relationships. He is working 

to highlight how the local team has “evolved as an organization” and the 

plant has “evolved as a site.” 

“Our goal is to be a good member of the community, to be a respected 

member of the community,” he explained. The plant is the largest employer 

in Southern Albany County, with 150 workers, and the largest contributor 

of local property taxes. 

MacLauchlin often points to Ravena plant’s multimillion-dollar 

modernization project completed in 2017. He notes it has produced 

cement for many projects, including the GlobalFoundries site in Malta, 

which announced a significant expansion; and looks forward to playing a 

key role in helping New York reach its ambitious renewable energy goals.
