Whatmakes a pairing event fun is how people react toacid, savory, bitter, salty and umami, the flavorsthat make foods taste good. Wine makes thesefoods more expressive by enhancing and balancingfood,” said owner Scott Ellenbecker. “A winelover is usually a foodie. Trying something new orprepared in a new way based on the flavor profileof a wine is the reason we love the food discoveryprocess. That’s really what a wine/food lover isabout; we want to experience new foods!”While the Wine Pairing dinners focus on theexperience of wines and foods together, the barreltasting is all about the wine itself.“At a Barrel Tasting we pull a dozen or so barrelsfrom the cellar and take wine directly from thebarrel into a guest’s glass. We’ll try young winesand others aged and ready to bottle,” Ellenbeckersaid. “Guests can have the same experience wedo as winemakers to put various wines togetherto make something unique because of the differencesof a grape and barrel. A grape comes out ofthe vineyard and once it becomes wine beginsto evolve as it ages. Tasting vintages next to eachother gives the guest an education into the artistryof making wine.”You don’t have to have a degree in red wine toenjoy a barrel tasting — in fact it’s all about theprocess of education.“It’s not just about the wine but the educationof wine. What does a barrel do to a red wine? How does age change a wine? What is tannin? What is acid? What do those things mean to balanceand finish of a wine,” Ellenbecker said. “Ifyou like red wine, I don’t know why you wouldn’twant to experience this event.”This Barrel Tasting is indeed a special event. It’ssomething that doesn’t happen often at wineriesaccording to Ellenbecker.“This is special because this experience doesn’thappen in the Midwest. It’s a very rare opportunityto experience a barreled wine. There arevery few wineries in our region that age wine ina barrel, and in areas where they do age in barrel, customers aren’t allowed in the barrel vault,” Ellenbeckersaid. “Wineries around the world agewine in a barrel, but it’s usually a function thatonly happens behind closed doors. We are givingpeople a peak behind the ‘curtain of Oz’ to seehow it’s done.” FRound Lake | Minnesota
