New Forest Artisans: HoneyOne of the most unique noticeable features of the New Forest’s heathland is the great swathesof heather. Their changing hues colour the landscape and mark each passing year.By Suzanne AshworthThere are three species in the forest – common heather, bell heather and cross-leaved heathheather. All three are rich in nectar and pollen, enabling producers to gather honey with adistinctly dark and delicious fragrance and taste. Permits are issued for hives to be placed incertain areas of heather each year in the New Forest.The earliest known proof of humans gatheringand using honey can be seen in Spanish cavepaintings dating back 8000 years. Carefullysealed honey can keep for thousands of years.In the New Forest there were small bankedenclosures for hives to protect them fromdamage from passing stock. These “beegardens” were in small entrenched areas about5m square topped with hedges and were to befound in area such as Beaulieu, Brockenhurstand Bull Hill. At this time the honey wasgathered in “skeps”, which were beehivebaskets.take an hour to fill from the nectar of up to1000 flowers! Back in the hive the bees ingestand regurgitate the honey for about 20 minutesuntil it is ready to store. They also constantlyflutter their wings to circulate the air andevaporate water from the honey. Only when itis reduced to about 18% of its original state hasit reached its saturation point and will no longerferment. The bees then store in capped cellswithin the hive.Bees are the world’s most importantpollinators, ensuring the pollination of one thirdof food crops and 80% of all flowers.Honey is a sweet, viscous food substance madeby bees from floral nectar, which is the sugarysecretions of plants. It is stored in honeycombsand can be gathered from bee colonies in thewild or from hives of domesticated bees. Honeyis classified by its floral source, hence thedistinctive nature of New Forest honey. It isessentially pure sugar!Each individual hive will produce about 65lb ofhoney each year – many commercial honeysare blended A single colony of bees needs tocollect around 50kg of pollen and 150kg ofnectar each year, just to survive, before anysurplus honey can be harvested by thebeekeeper. Polyfloral honey is produced frommany wildflowers and has a varied flavour.Honey contains both fructose and glucose andeach tablespoon provides about 46 kilocalories.Throughout history and across the world, honeyhas been used for medicinal purposes – treatingwounds and burns, as an antibiotic and forcoughs. If honey becomes cloudy duringstorage and starts to crystallise it can be stoodin a bowl of hot water to restore its clarity. Sethoney is a good sign that its real honey, andmany seek set honey, as it is delicious on toast!Modern medicine also promotes honey asbetter than other sources of sugar for hearthealth and because of its plant compounds. It isknown to reduce blood sugar levels and bloodpressure, regulating the heartbeat and preventthe death of healthy cells. It is not to be givento under ones, however, due to a small risk ofbotulism.
