The unique<br />
cuisine<br />
One of the must-taste<br />
dishes in Nakhchivan is a<br />
large omelette traditionally<br />
cooked in the historic<br />
town of Ordubad. It looks<br />
like a puffy cake and is<br />
made by whisking together<br />
about two litres of butter<br />
and 18-20 eggs in a pot or<br />
saucepan. A sweet sauce<br />
of golden honey and ginger<br />
is then added. The dish is<br />
usually cooked on special<br />
occasions such as birthdays<br />
and weddings.<br />

Nakhchivan is a beautiful and little-explored<br />
region of south-west<br />
Azerbaijan which is separated from<br />
the mainland. There are many<br />

the region’s climatic diversity and<br />

ARZUMAN<br />
KOFTE<br />
This is the biggest and heaviest of all<br />
the kofte (Turkish meatball) meals in<br />
Azerbaijani cuisine – too much for just<br />
one person. The dish consists of a full<br />
chicken stuffed with a boiled egg and<br />
covered with a mix of minced beef and<br />
fatty mutton, which is all rolled into a<br />
massive meatball. This is then cooked<br />
in a broth for 20-30 minutes before<br />
being served with chopped herbs, vegetables,<br />
boiled potatoes, sumac and<br />
lavash bread.<br />
