Making sure your property passes as you 

choose, with a life interest trust 

Creating a will with a life interest 

trust over your property allows you 

to ensure that your home passes to 

those you choose, whilst also allowing 

you to provide for another loved one 

during their lifetime. 

‘Life interest trust wills are particularly 

popular with couples who have children 

from previous relationships, such as 

those in second (or third) marriages. 

They can also be useful to couples who 

have married later in life having already 

established independent lifestyles, and 

those with dependent siblings or elderly 

parents. 

What exactly is a life interest trust? 

A life interest trust is an arrangement 

whereby your will provides for one 

beneciary during their lifetime 

but, once that person passes away, 

your assets are transferred over to 

someone of your choosing, rather 

than in accordance with your lifetime 

beneciary’s wishes. 

A life interest trust can be created 

in respect of your entire estate, or 

in relation to only one (or several) 

specic assets. For example, if you have 

children from an earlier relationship 

and a property that you purchased 

before meeting your current partner, 

you might be keen to ensure that your 

children ultimately benet from your 

home whilst being happy for your 

partner to receive the rest of your estate. 

As the name suggests, a life interest 

trust typically remains in place for the 

remaining life of your initial beneciary. 

You can, however, create a life interest 

trust for a set period, such as ve years, 

or until a certain event occurs. 

Benets of a life interest trust 

Life interest trusts afford you greater 

control over the distribution of your 

estate. If you want to ensure that your 

partner has access to your assets during 

their lifetime, you could simply leave 

your estate to them absolutely. However, 

you also give away total control of those 

assets. When your partner passes away, 

they could leave their estate, including 

the assets they inherited from you, to 

someone else entirely. 

Trusting your partner to adhere to your 

wishes might not be enough. There 

are circumstances in which their estate 

could pass without their own control, 

such as if they were to die intestate. 

If your partner marries after having 

received your estate, that marriage 

would typically revoke any will they 

made previously, meaning they could be 

left intestate without even realising. 

Aside from the effects of intestacy, 

life interest trusts are a useful tool 

in protecting your assets from the 

bankruptcy or divorce of beneciaries. 

If you leave assets directly to someone 

who later becomes bankrupt, or who 

later divorces, those assets would be 

deemed their own for the purpose of 

bankruptcy or divorce proceedings. It 

may be your lifetime beneciary who 

you have concerns about in this regard, 

or it could be those you intend to leave 

your assets to ultimately. For example, 

if one of your children is going through 

a divorce, any assets held for their 

benet in a life interest trust cannot be 

considered as part of the proceedings. 

Some life interest trusts are created 

not to save assets for children, or other 

loved ones, but to protect vulnerable 

beneciaries. You might want to 

leave your estate to a sibling who is 

unable to manage their own nances 

independently, or who is in receipt of 

means tested benets. Placing your 

estate in a life interest trust, with that 

person as the lifetime beneciary, allows 

the trustees to provide for their needs, 

without that person having to manage 

the money or risk losing their benets. 

Disadvantages of a life interest trust 

Any trust arrangement does, by 

its nature, require a greater level 

of administration. Trusts can also 

attract complex tax rules. It is always 

important that your trustees ensure 

they are complying with all the legal 

and tax requirements of your trust 

arrangement. For example, the trust 

must be registered with HMRC. With 

this in mind, it is equally important 

that you ensure you appoint suitable 

trustees. 

Before making a will with a life 

interest trust, you should always seek 

professional advice as to the various tax 

and compliance implications. Similarly, 

if you are the trustee of a life interest 

trust, you should seek advice to ensure 

that you are always acting within your 

remit.

Over the past two years it has been the lack 

of big family celebrations that we have all 

missed most. Coming together with multiple 

generations of grandparents, mums and dads, teenagers 

and toddlers, all under one roof, is one of life’s ultimate 

pleasures. But finding the perfect home from home that 

can accommodate lots of people with different needs, 

well that is always the issue. International humanitarian 

Madlin was searching for just such a house when she 

happened upon Lower Standen Farm, near Tenterden. 

“I come from a family of four kids, between us we now 

have thirteen children. My husband also has siblings,

dark and hadn’t been touched since the ’80s, I instantly 

knew how to make it work. The house was surrounded by 

the most beautiful rolling countryside, yet it had all these 

small windows, so I knew opening up the views and taking 

out some internal walls would transform the space.” 

However, whilst Madlin had initially bought and designed 

the house as her family’s escape route from London, little did 

she realise that a new job in Manhattan and a relocation to 

the US, would mean that the house would become essential 

in their family life back in the UK. “This house has saved 

us, literally. Suddenly moving to New York was a huge 

upheaval. One minute I thought I would be baking bread 

in Kent, the next minute I was working in the middle of 

New York. This house has become like the heart of my

everyone has a comfy bed and we all get to spend quality time 

together, which has made the move to the US workable.” 

When Madlin first visited the five-bedroom house, a 17 th 

century barn conversion, it was surrounded by dilapidated 

outbuildings and a small rental cottage, wrapped around the 

central circular drive. By refurbishing the cottage Madlin 

gained a further three bedrooms as well as a self-contained 

kitchenette, living area, shower and bathroom. Just before 

Covid she also began work on converting the old dairy, where 

the calves had been kept. Now completed, the dairy offers a 

very generous one bedroom en suite hideaway annexe, perfect 

for any tired grandparents needing a few hours’ escape!

“I designed the house so that it would be the perfect 

backdrop to any family gathering. When you have 

multiple generations it’s important to understand that 

everyone has different needs. Those with younger children 

might need to have early bedtimes, which is where the 

granary cottage works, as you can be a bit separate from 

the main house. There is an open garage where the 

teenagers can play ping-pong and darts, there’s a den 

where you can kick back and snuggle up on a large sofa 

in front of movies, there’s a good-sized swimming pool 

and a new pool house with a shower, toilet and changing 

room so you don’t have wet kids running around the 

whole house. We’re also very lucky to have an amazing 

property manager and landscape gardener, Lindsay Todd. 

Lindsay has complemented the house with beautiful 

cottage garden beds, planters, water features and sweeping 

lawns. Her attention to detail means the gardens are as 

beautifully designed and maintained as the house itself.” 

However, Madlin thinks it is the new kitchen extension 

that has really been her best decision. “We are all big 

foodies in our family, I feel that you can really show 

love through the food you cook. It’s been two years 

and it took longer than expected due to Brexit, Covid 

and the supply chain issues we have all been enduring, 

but now it’s finished, I’m delighted – especially as

oak dining table by James Ransley

open-plan kitchen and island. “I 

love Poggenpohl,” says Madlin. 

“But I also love the classic work 

of Tom Howley. We decided to 

create something unique, with 

local carpenters, that would nod 

to both. We have a wonderful 

traditional pantry and a simple 

contemporary kitchen – it’s 

the best of both worlds!” The 

blending of the old and the new 

is something that is apparent 

throughout Madlin’s sensitive 

refurbishment of the property.

The house has a combined nine bedrooms and can sleep 

up to 24 people, with the children’s bedrooms sleeping three 

to a room thanks to some cunning convertible armchairs. 

The house’s interior also reflects Madlin’s sense of fun and 

quirkiness, almost like a journal of her and her family’s 

travels around the world. “I am lucky to have a job that 

takes me all over the world, often to conflict zones. I always 

pick up special things when I am away. I don’t like formal 

antiques, I love pieces that have been used by real people 

in the real world. I got some amazing three-foot-long

warmth and fun, there’s lots of colour and pattern – we even 

have elephants and rainbows in some of the upholstery by 

Emma J Shipley. There’s some great Cole & Son wallpapers 

that really bring the wow factor and fabulous tiles from

The renovation of an early nineteenth century house was 

a labour of love for Caroline, Stephen and their family, 

who strove to keep the integrity of the building, whilst 

sensitively updating the interior for modern living 

If you’ve found an old house that has been well looked after, its structural 

integrity preserved and all the internal features intact, then you are fortunate 

indeed. This is one such cherished home, built in the Arts and Crafts style 

at the turn of the 19th century – solid, elegant and perfectly proportioned. 

Meeting Caroline at the threshold of her handsome home, it’s easy to 

see why she and her husband wanted to take the utmost care over their 

renovation. They called on the services of designers Luxe by Andrew Henry 

Interiors – specialists in creating both show homes and interior schemes – to 

help them enhance and celebrate the fine features of this period property. 

“We wanted something that would fit with the age of the house, but it 

also needed to be a comfortable family home with a contemporary feel," says 

Caroline. “With an old house like this you only want to renovate once, but 

you need to take the time to do it properly – you can destroy all the beauty 

by following the latest trends. We want to keep the integrity of the house.” 

Having outgrown their previous home in nearby Ewell, they knew that 

they wanted to stay in the area – after all, Ewell and Epsom have been 

voted among the top ten places to live in the country. With great schools, 

shops and easy access to both the countryside and the city, the position of 

this house couldn’t be more perfect. “You just have to walk through a little 

alley at the end of the avenue and you are straight onto the downs.”

“Back at the beginning of the last century the whole avenue was part of the grounds of 

a huge old manor house,” Caroline explains, “but gradually the owners sold off plots 

of land – apparently to keep the daughter of the manor living a life at the Savoy.”

a life at the Savoy.” Houses began to spring up and this 

one was one of the first, built in 1902 by the architect. 

“We are only the third owners,” she continues, “and we 

wanted to sensitively update the interior.” A fact that brings 

with it a weight of responsibility. “The original features were 

left unspoilt and we wanted to keep them. It’s the fashion 

these days to knock the kitchen through into the dining 

room and have it all open plan. We thought about it – and 

even had some plans drawn up – but it would have meant 

changing the layout of the ground floor completely and 

spoiling the look of the interior with its arches and cornicing.” 

One thing they did do, that changed the dynamic of the 

layout without messing with it, was to swap the kitchen and 

dining room around, relocating the former into the heart of 

the house and creating a separate dining room to the front. 

Both these rooms are light and airy, thanks to the high 

ceilings and big windows – and the kitchen now benefits 

from having French windows that open out into the garden. 

The brief for the kitchen was to create a contemporary 

look, but for it to feel traditional enough to fit with the classic 

lines of the house. Choosing a kitchen for the space was 

complicated and they looked at several kitchen companies. 

“The only people that really listened to the customer brief 

and understood what we wanted were Roundhouse. They 

just seemed to get it and delivered what we wanted.” The 

end result has a timeless quality, but with state-of-the-art 

elements, including a streamlined extractor balcony above 

the cooker. There is plenty of space for the island unit – 

something that all the other companies had said there was no 

room for. This unit also houses the sink and Quooker tap, 

a gadget that Caroline thought she wouldn’t like. “I would 

never have chosen one. In fact I was quite anti-Quooker,” she 

admits. “I wanted a kettle. Now I could sell them. They save 

so much time – and are probably quite energy saving too.” 

Luxe by Andrew Henry Interiors provided the 

finishing touches in the kitchen, sourcing warm, suedeeffect

and look after,” says Caroline. There are subtle differences 

in each room, but the overall scheme is a united one. Warm 

tones of rust, brown and orange are teamed with cooler 

shades of grey and pops of bright blue. The walls are painted 

in Cornforth White by Farrow and Ball, a wonderful colour 

that seems to change with the variations of light through the 

house, enhancing the high ceilings and spacious hallway. 

The focal point of the living room is the fireplace, rather 

than, as is often the case, the television. Here the TV is 

hidden behind the door so that it isn’t seen at all until you 

are in the room with the door pushed to. It is a calm room, 

accented with earth tones and suffused with light from the 

large and very deep bay window. “I would never have put the 

greys with brown,” says Caroline, “but it really works.” There 

are electric blinds on the windows, rather than curtains, 

which bring a streamlined, unfussy look. “Curtains would 

be too much and wouldn’t work, as the bay is a weird shape. 

We tend to leave them up anyway, in case they don’t fall 

into the right folds, but also we’re not overlooked at all.” 

No draughts come through the windows anyway now, 

because they’ve all been replaced, and the whole house, 

once so cold that Caroline’s father would automatically 

light a fire as soon as he arrived, is now much warmer. 

A huge chandelier hangs at the perfect height above the 

dining room table, an elegant and functional centrepiece in 

this sophisticated room. Caroline is pleased that they kept 

dining separate – it’s a civilised space and works really well 

for Christmas and more formal occasions. Again there are 

the rust and earth tones in here, underpinned by neutrals 

and enlivened by a splash of blue in one of the paintings. 

Luxe by Andrew Henry Interiors commission bespoke 

paintings for their interiors and use them to highlight 

colour schemes and to provide both focal points and 

atmosphere. “We asked them to use some of our 

artworks too,” says Caroline. “How you hang them is a 

complete art in itself. They just know how to position 

them – and to make them work, they’ll even reframe 

them – mixing and matching existing in with new.” 

There is a great example of the art of styling and display 

in the small room that used to be the library – now the 

snug. A floor to ceiling shelving system has been artfully 

dressed with the family’s objects and ornaments.

“and although it is at the front of the house and near 

the road, it is so quiet – a cosy space to escape into.” 

If the kitchen is the heart of the home, then – here at least 

– the hallway, staircase and landings must be its lungs.

The centre of this house is like a breathing space, perfectly 

proportioned, suffused with natural light and painted in 

that ever-changing magical Cornforth White. You feel that 

you could almost float up the wide and generous staircase. 

The makeover odyssey started on the top floor where the 

children’s rooms are situated – a sensible move, because it 

meant that they could stay in the house, while work went 

on overhead. Caroline explains, “It’s important to take 

your time and live in a property for a while when you are 

planning to make changes. Some of our decisions were 

not what we would have gone for in the beginning. We’ve 

kept things separate and not made ensuite bathrooms, or 

compromised the building at all. Maybe it will affect the 

resale value, but it has preserved the integrity of the house.” 

The children’s rooms have been cleverly styled for the 

transition from child to teenager and are nicely grown 

up spaces, while still allowing some self expression and 

personalisation. There was a sixth bedroom on this 

floor – “but it was so small that we’ve turned it into 

a games room.” A popular move I’m imagining. 

Farrow and Ball’s Dead Salmon is a soft dark neutral, 

not quite pink, not really brown, but a restful, warm shade 

somewhere in between. It wasn’t Caroline’s automatic 

first choice for the master bedroom on the floor below. 

“We’d have gone for blue colours in here, but I really 

like this,” she says. “We’d have probably just chosen a 

kingsize bed too, rather than the super king. It’s all about 

proportion and scale though – and this really works.” 

This is a large room and can easily accommodate a giant 

bed, in fact anything smaller would change the room’s

but – true to the preservation ethos – the 

original wall units have been moved upstairs. 

The main bathroom oozes period glamour, 

with a contemporary twist. It has panelled walls 

and a gleaming nickel-coated bath with elegant, 

functional Burlington basins situated on the 

opposite panelled wall, with large framed mirrors 

above. Classical, careful lighting completes the look. 

One of the guest bedrooms now doubles up as 

an office. It makes a tranquil bi-functional space, 

with a lovely aspect looking out onto the garden. 

The other smaller guest bedroom is simple and 

elegant, with smoky blue walls and just enough 

room for a French inspired wardrobe, chair and 

queen sized bed. It is Caroline’s favourite.

your budget and what you want,” says Caroline, “and be 

realistic about what things cost. Do it in a logical sequence, 

so that you don’t have to come back in and make a mess.” 

Wise words from the owner of this immaculate revamp. 

This is a seamless update of a beautiful period property, 

that stands as an elegant testament to the combined talents 

and resources of both the people who live here and the 

company who helped them create a dream family home.

There’s something gloriously 

evocative about the scent and taste 

of a freshly picked, perfectly ripe 

tomato – and if you are lucky 

enough to be picking some of 

your own right now, they’ll be so 

delicious that you might not need 

a recipe, but tomatoes are generous 

plants and don’t keep for long. 

So it’s good to have a few quick 

and easy ways to make the most 

of any surplus. The health giving 

benefits of lycopene, an important 

antioxidant found in tomatoes, 

increase during cooking, too. 



Tomato Sauce 

Preparation time: 5 mins 

Cooking time: 40 mins 

Having an easy and delicious tomato sauce 

on hand, or in the freezer, means that you 

will always be able to rustle up a quick 

pasta dish, pizza, or even a flavoursome 

tomato base for a ratatouille or caponata. 

Large ripe plum (or a beefsteak like 

‘Brandywine’) that melts in the pan is 

the ideal tomato, but good quality tins of 

plum tomatoes work well too. The secret is 

in the simmering, because the sauce needs 

time to reduce and draw out its flavour. 

• 800g tomatoes – fresh or good 

quality tinned plum tomatoes 

• 1 med onion, finely chopped 

• 2 garlic cloves, crushed 

• 1tbsp red wine vinegar 

• 1tsp soft brown sugar 

• 2tbsp good quality olive oil 

1. Gently sauté onions and 

garlic in olive oil. 

2. Add the rest of the ingredients 

and simmer for around 35-40 

minutes until the sauce has reduced 

and thickens in texture. 

3. Use or store – it will keep in a sealed 

container in the fridge for a week, or 

in the freezer for several months. 

Tomato Tarte Tatin 

Prep time: 10 mins 

Baking time: 25 mins Serves 4-6 

This is just an upside down tart, most 

often found in apple form, but for a 

simple – and it really is simple – savoury 

version, it works brilliantly with tomatoes, 

because (in theory at least), the pastry will 

stay crisper when baked on top of the tart. 

• 10-12 medium tomatoes (i.e. enough to 

pack into a shallow 24cm heat proof tin) 

• 250g pack Feta cheese, diced 

• 2tsps oregano 

• 1 pack ready rolled puff pastry 

• 50g butter 

1. Cut the tomatoes in half. 

2. Melt butter into tarte tatin 

tin or pan that can be used on 

the hob and in the oven. 

3. Place tomatoes cut-side down 

in the pan and cook gently 

for around 5 minutes. 

4. Pre-heat the oven to 180°C (gas 

5) remove from hob and scatter 

Feta cheese over the tomatoes. 

5. Top with rolled out puff pastry and 

bake in the oven for 25 minutes. 

6. When the pastry is brown 

remove from the oven and place 

your serving dish over the pastry 

top. Gripping both sides, carefully 

invert the tart and lift off the tin. 

7. Sprinkle with oregano and serve.

Stuffed Tomatoes 

The risotto in this recipe is a worthy 

dish on its own, but stuffing it into 

a big beefsteak tomato and baking 

in the oven turns it into something 

special. A stuffed tomato make a good 

starter, light lunch or supper dish. 

• 4 large beefsteak tomatoes 

• 75g pancetta – in small cubes* 

• 200g risotto rice 

• 100ml white wine 

• 500ml chicken or vegetable stock (be 

prepared to add more liquid if necessary) 

• 1 med onion, finely chopped 

• 2 cloves garlic, crushed 

• 2 tbsp green pesto 

• 150g finely grated Parmesan cheese 

• 1tbsp olive oil 

for 15-20 minutes until rice is cooked 

and has absorbed most of the stock – 

add more if the risotto seems dry 

6. Stir in pesto, tomato and Parmesan 

cheese and fill the tomatoes 

7. Replace tomato ‘lids’, place on a baking 

tray, cover with foil and bake in a preheated 

oven (160/gas 4) for 20 minutes. Serve. 

*Omit pancetta for vegetarians, use olive 

oil to sauté onions and season with a little 

salt, as the bacon provides some to the dish. 

1. Cut the tops off and scoop 

out the insides of the tomatoes, 

reserve the flesh and juice of two 

(use the rest in tomato sauce) 

2. Gently fry pancetta for 5 

mins or so until crispy 

3. Add onions and sauté in the 

bacon fat for 5 mins until soft 

4. Add rice, stir and cook for 1 

minute, coating rice in oil 

5. Mix in white wine and bring to a 

simmer, then add stock and simmer

Chef’s table 

Meet The Stile Bridge’s South American chef, Oscar Fonseca Volkmar, who 

gives British produce an exciting twist, cooking on an open fire and seasoning 

with charcoal and a generous sprinkle of inspiration from around the globe 

Who taught you to cook? 

It’s a bit of a mix of things really, I don’t have a 

mentor. It has been an empirical process. Working in 

different places, with people from around the world, 

travelling, eating delicious food and remembering 

my life back in Colombia has made me the chef I am 

today and my food is a reflection of this. 

Who has been the biggest influence 

on your career so far? 

I wouldn’t be able to say that there is one person 

who has had the most influence on my career as a 

chef, but there are many chefs who I look up to and 

admire including Jason Atherton, David Chang, 

David Muñoz, Sean Brock and Liam Tomlin. 

What’s your favourite kind of cuisine? 

I don’t really have one favourite, but I really like 

flavour profiles found in South-American, Asian, 

African and Middle-Eastern cuisine. 

Do you have a signature dish? 

Not one dish but I like to cook seasonal ingredients 

using fire. 

Where are your favourite places to eat locally? 

The Poet in Matfield, Tallow in Tunbridge Wells and 

Birchwood in Flimwell. 

What’s your favourite dish on your current menu? 

Our house dry aged beef Chuleta to share – 1kg 

of meat cooked over charcoal, soy glaze, jalapeño 

chimichurri and patatas bravas. It’s something that we 

do really well here. 

What couldn’t you live without in your own kitchen 

at home? 

A mortar and pestle. 

Are there any ingredients you can’t bring yourself to 

cook with? 

Happily, not that I know of. 

If you could dine in any restaurant in the world, 

where would it be and why? 

Burnt Ends in Singapore. It’s a fire cooking restaurant 

serving modern food, nice wines, and spirits in a fun, 

relaxed atmosphere. That’s all I want! 

You’re allowed to invite three guests to dinner – who 

would they be and why? 

My wife, daughter and son – family time is short 

when you work as a chef.

Meet Daniel Lee – Executive Chef at Seasons, a beautifully bright space in 

Windlesham, Surrey that champions local ingredients with modern and fresh menus 

What’s your favourite cuisine? 

Asian, French, Italian and Middle Eastern 

flavours are all firm favourites. But my 

heart lies with Modern British Cuisine 

– classic dishes, seasonal ingredients, 

sourced as locally as possible, and 

innovative flavours. It’s the basis of every 

Seasons Kitchen menu I create. 

What’s your signature dish? 

My wife Hannah would say my Beef 

Wellington. My three-year-old son Alfie, 

would say my Pasta Bake. But the kitchen 

team at Seasons Kitchen would all agree 

it’s my take on Steak Tartare. On the 

menu now, it combines raw Surrey Rump 

Cap, burnt onion, blue Millie cheese, 

pickled egg yolk and nasturtium leaves. 

Who taught you to cook? 

Professionally, my first role was at the 

Brooklands Hotel under Nick Sinclair, 

who I worked with for five years. But I 

grew up cooking with my mum (Maria) 

and nan (Mavis). My mum has genuinely 

been the biggest influence on my career 

so far. My childhood was full of delicious, 

homemade family meals that she cooked 

from scratch most evenings, and she 

always involved me – getting me to peel, 

chop and grate vegetables while still 

wearing my primary school uniform! 

What makes the South East so brilliant 

for foodies? 

Surrey has some of the best producers, 

makers and growers in the whole of 

the UK. In both Seasons Kitchen and 

our on-site Seasons Farm Shop, we 

champion as many local products as 

possible. Our pork is sourced from 

Little Ellis Pork Farm in Chobham, we 

work closely with Surrey Hills Butcher, 

enjoy mind blowing charcuterie from 

Tempus in Weybridge, cheese from 

Cheese on the Wey in Frensham and 

have daily deliveries of fresh fruit and 

veg from Boz in Woking. 

What couldn’t you live without in your 

own kitchen at home? 

My coal barbecue. I love cooking 

outside, over flames. When I’m home 

you’ll find me outside in all weathers! 

Are there any ingredients you don’t use? 

Are you ready? It is… black pepper! 

Let me explain. Most people season 

their cooking with salt and pepper. But 

while salt enhances the flavour of an 

ingredient and a dish, black pepper IS 

a flavour and cooking with it changes 

the taste of your dish. So at Seasons 

Kitchen we omit it from 90% of the 

dishes on our menu! 

What’s your favourite dish on your menu? 

The Fisherman’s Catch Seafood Platter, 

the Sussex Lamb, and the Truffle 

Mac’n’Cheese are all favourites. But 

on our current menu (we update it 

with the seasons) it’s our Smoked 

Tuna Carpaccio with Dill, Fennel and 

Orange Salad. 

If you could dine in any restaurant where 

would it be and why? 

Les Halles (New York) in the Anthony 

Bourdain era. Amazing French food, 

amazing chef. If only I could have been 

in New York in the 1990s! 

You can invite any three guests to dinner 

– who would they be and why? 

First, Anthony Bourdain – he had 

such a rare passion for food, culture 

and hospitality. Number two would be 

Jeremy Clarkson for what he has done 

for British Farming, bringing much 

needed awareness to an incredibly 

vital British industry. And lastly, Keith 

Floyd – his enthusiasm for eating, 

drinking, cooking and sharing was 

palpable. I’d love to have shared a 

bottle of red (or two) with him!

Balfour Winery is one of England’s 

leading wine producers, pioneers

he Dysart Petersham is a family owned and run restaurant 

in Petersham, countrified south west London. In the family for 

18 years, The Dysart has evolved a great deal over the years, and 

during the last decade has taken its place amongst London’s top 

fine dining restaurants, since the arrival of head chef Kenneth 

Culhane, winner of the prestigious Roux Scholarship in 2010. 

The approach is simple, yet surprisingly rare these days – the real meaning of the 

word ‘hospitality’ – a warm welcome, comfortable and spacious surroundings 

inside, with beautiful country scenery outside, the finest ingredients and cooking 

that cuts no corners. Tables are never rebooked or reset so guests can settle down 

and relax with no pressures at all. The kitchen makes use of many local ingredients, 

including herbs and vegetables from their own garden, and takes influence from 

French classical cooking alongside the lightness of Asian cooking.

These eateries prove local ingredients make for the finest dining 

he Rose Inn has been brought to life by Chef and Publican Billy Stock, 

who vowed to bring his passion for food and community to the village of 

Wickhambreaux, in the heart of Kent. Overlooking the quaint village green, 

The Rose Inn is a charming and unspoilt 13th century pub, serving up humble but 

technically brilliant dishes that celebrate the best of Kentish produce. 

The menu is ever-changing, depending on which ingredients Billy comes across 

through his network of hyper-local suppliers, makers and bakers. On any day you 

may find fish from the south coast (via Hastings PH Fish), glorious greens from 

organic farmers Walmestone Growers, sweet English berries from neighbouring

Walk it off 

Round off a tasty pub meal with a circular countryside walk 

Enjoying a big hearty meal in a country pub is one of the great joys of 

British summertime, but it can leave you sat feeling weighed down by all 

that good food! In these situations what you need is a scenic countryside 

walk filled with fresh air and natural beauty. To fit this bill, the team at The 

Pepperbox Inn, a Kentish pub and restaurant, are sharing just such a route 

that begins and ends at their door. They have a classic British pub menu 

with European & Asian influences, and they are dog friendly in 

the main bar, lower bar and patio, so you can bring your four 

legged friends along on your walk! 

The 30 minute route 

• From the car park at the rear of the pub, follow the farm track 

to the right and walk along the hedgerow roughly 200 yards 

until you pick up a footpath. 

• To your right, at a signpost for the Greensand Way, turn left and follow the 

footpath that runs along the edge of the poplar trees to the end of the field 

where you come to a gap in the hedge. 

• Cross over the narrow lane and the footpath cuts diagonally across the next 

field or you can turn left and follow the perimeter for a longer walk. 

• Cut through some old hazel coppice, interspersed with cobnuts and apple 

trees. Through the spring the ground here is a carpet of bluebells. 

• At the stile at the end of the path, cross the road diagonally and into the 

next field. There is game cover to your left and hazel to your right. 

• At the next row of trees, pass into an orchard. From here you can 

follow the field’s perimeter and retrace your steps back to the pub 

for a gentle walk or... 

Add an extra 30 minutes 

• Following the hedge line, on your right you’ll come to a stile set in the 

hedge that takes you on to a narrow lane. Turn right and double back 

along this lane, following it down the winding hill to Elmstone Farm. 

• Turning right at Elmstone, follow the drive to the gate ahead, passing 

through the gate along the track into a field that slopes upwards. 

• Follow the posts across the field to a stile in the hedge signposted as a 

footpath. This leads on to a path through the woods and to another field. 

• Walking up the slope with woodland on your right, turn right into the 

woods and up along the top of a wooded ridge. You’ll come out on 

a corner of a field near Green Hill Farm, turn left and go along the 

headland to the south western left hand corner of the field. 

• Pass through the gap in the hedge, picking up the track that leads to an 

open field. Following the track around a curve, another track joins from 

the slope on your left and there are amazing views south from this point. 

• Go straight along the farm track and, at the end, follow the road straight 

ahead past Knowle Hill. From the T junction at the end of the road, turn 

right to head back up Windmill Hill, past Upper Hill Farm to the pub.

The other day a beauty editor colleague 

and I were reminiscing about how lucky 

we were to have spent time right at the 

start of their journeys with people whose brands 

have become leading names in the beauty universe. 

Think: Laura Mercier, Terry de Gunzburg (of ByTerry 

fame), Eve Lom, Marcia Kilgore (I had a facial from 

her when she had a New York salon, long before she 

launched Soap & Glory, FitFlop, Beauty Pie), Charlotte 

Tilbury, Bobbi Brown… in fact, I was the first UK journalist 

to write about Bobbi, when she launched here, and readers of 

YOU Magazine broke the Harrods switchboard as they called 

to place their orders for her make-up. I feel incredibly privileged 

to have met these amazing women, and learned so much from 

them. About skincare, make-up AND business, as it happens. 

Right now, however, is also a very exciting time in beauty 

– and what I love is that some of the most dynamic brands 

out there are British. In almost every case, again I’ve been 

lucky enough to meet the founders and watched them grow 

their skincare and makeup brands. So, this month, I thought 

I’d flag them up, some you may know, others you may 

not, but they’re all worthy of having on your radar – and 

from each, I’ve picked ‘star’ products that I really rate. 

Little Soap Company 

Cotswolds-based 

Emma Heathcote- 

James has grown 

this brand from 

her kitchen 

table – literally 

– into a force 

to be reckoned 

with, in the 

soap world. Returning to the traditional methods of soapmaking, 

using beautifully fragrant oils to up her products’ 

pleasure factor, Emma tapped into a desire to simplify our 

lives, and to become more sustainably minded: packaging is 

minimal, and there’s literally nothing left to recycle, once it’s 

sudsed its last. My favourite: Organic Pure Rose Geranium 

Soap Bar, £3.99, with its wonderfully nostalgic scent. 

OSKIA 

Notching up an incredible 13 wins in this year’s Beauty 

Bible Awards, it’s been inspiring to watch this ‘nutricosmeceutical’ 

skincare brand grow. OSKIA was born 

out of founder Georgie Cleeve’s challenges with her 

own complexion; she now works with teams of doctors, 

nutritionists, cosmetics scientists and general skin 

wizards, with everything produced at their factory 

in Wales. My favourite: Renaissance Mask, £68 for 

50ml, enzyme-powered and rose-scented, brightening 

and plumping skin in as little as 10 minutes. 

Neal’s Yard Remedies 

Ah, lovely Neal’s Yard Remedies – pioneers of natural 

beauty in the UK, originally founded by Romy Fraser (who 

sat on the committee I chaired, setting organic beauty 

standards for The Soil Association). Neal’s Yard Remedies 

are now in the safe custody of the Kindersley family, with 

everything hand-crafted in their eco-factory in North 

Dorset. They’ve done a huge amount to champion fairly 

traded beauty ingredients, and to raise awareness about the 

plight of our bees. My favourite: Garden Mint & Bergamot 

Hand Cream, from just £10 for 50ml, which is properly 

softening and (slightly embarrassingly) has me sniffing 

my hands compulsively for a hit of its aromatic scent. 

Delilah 

Brit make-up artist Rupert Kingston 

– honestly one of the nicest and downto-earth 

people I’ve ever encountered in 

the make-up world – co-founded this 

brand after years in the industry, bringing 

us products that deliver the signature 

‘glow’ now associated with Delilah, 

garnering legions of fans among 

make-up artists and red carpet 

A-listers. (The brand scooped seven 

Beauty Bible Awards this year.) 

My favourite: Colour Blush, £26, 

in Clementine: a pop of peachy, 

summery colour with a whisper of

Temple Spa 

Based in West Sussex and owned by husband-and-wife team 

Liz and Mark Warom after years of working in beauty for 

other brands, Temple Spa is a brand that deserves to be on 

everyone’s radar. Describing themselves as ‘A British brand 

with a Mediterranean soul’, everything smells divine, with 

aromatic and citrus notes a particular signature; they also like 

to harness luxury ingredients like truffle and real gold for the 

range (yet the prices aren’t OTT). My favourite: could have 

chosen several, but Easy On The Eye Eye Make-up Remover, 

£18 for 150ml, simply the most effective I’ve found. 

GAIA Spa 

Gaia Spa at Boringdon Hall, just outside 

Plymouth, really should be top of your 

self-care bucket list – I’ve had some of my 

most enjoyable treatments there. At the 

same time as opening her spa, though, 

Diane Nettleton worked with one of the 

beauty world’s most gifted formulations 

of natural products to come up with 

a face and body skincare range. My 

favourite: Mini Body Oil Trio, £27 for 

three x 30ml, a great way to try their

Understanding frozen 

shoulder and how 

to alleviate the pain 

At the Nuffield Health Guildford Hospital we understand pain or 

limited function can be debilitating and affect your quality of life. 

We caught up with our specialist Orthopaedic Consultant, Mr Richard 

Sinnerton, around your diagnosis journey and treatment options. 

Frozen shoulder isn’t just a painful shoulder and 

it isn’t just a shoulder that you can’t move. It is 

defined as a global loss of passive movement 

with normal x-rays. And that means that not 

only can you not move it but your doctor can’t 

move it for you. 

In it’s early stages a frozen shoulder can be 

a difficult thing to diagnose because the 

symptoms can be identical to tendonitis – 

painful when you move it but still moving 

reasonably well – this is stage one: ‘freezing’. 

Usually by the time you get to see me the 

condition has progressed and you will be in 

stage two: ‘frozen’. This is where the shoulder 

simply doesn’t move. 

The final stage is ‘defrosting’ where the capsule 

slowly and steadily recovers and the movement 

returns to normal or nearly normal. Left to their 

own devices most frozen shoulders get better 

which, on average, takes about 18 months. 

Caught in the freezing-up stage then injections 

of steroid and hydro-dilatation to the ball 

and socket joint might help with the pain. 

Physiotherapy does not help and can make the 

condition last longer. 

Frozen shoulder is a very common condition 

which all too often, is misdiagnosed. It will get 

better by itself, but if you can’t cope with the 

loss of movement and function then a keyhole 

operation will get you better quicker.

of blue health coaching 

At this time of year, many 

of us take to the water in 

one form or another. I 

love water (when it’s warm) but 

my swimming technique leaves 

a lot to be desired. That was 

until I met Camilla Golledge. 

Camilla, who is actually a 

Mermaid – yes really – is also 

an aquatic specialist, an STA 

Ambassador and recently qualified 

in blue health coaching (promoting 

mental and physical wellbeing 

through connection to water). I 

was really interested how Camilla 

had evolved in all aspects of water 

training over the last few years. 

As times change and we all relish 

spending more time outdoors, she has 

begun to take her business outside, 

open water coaching, spending time 

on her paddle board and helping 

people through challenging times 

in our beautiful blue spaces. 

For those who prefer their blue 

space to be inside, she is currently 

developing water play, mindful 

swimming and aqua sensory sessions 

for aquaphobics, SEND participants, 

and those who want to strengthen 

their bond with the water. 

Camilla advises that to be able to 

safely enjoy the blue, you must first

opportunities to push ourselves out of our comfort 

zone, to wild swim, to take on a charity challenge 

in a pool or to brave an ice bath! I’m going to 

opt out of the ice bath but I really want to have 

mermaid lessons with Camillla! Remember you 

are only one swim away from a good mood. 

Why water? 

The benefits of being in water are tremendous 

– equally so is staying hydrated. Our bodies are 

made up of around 60% water and by making sure 

we are hydrated we can increase our energy and 

concentration levels. Flushing out waste products 

and bacteria naturally hydrates our skin, too. 

This month, why not up your water intake 

as well as taking a dip into the blue. Gradually 

increase your daily water intake to around 1.5 

litres (more if you are exercising). I carry around 

a 500ml water bottle and keep refilling. If you’re 

not a fan of plain old water, add a squirt or 

wedge of lemon, lime, some mint leaves, a little 

cucumber... experiment to see what you really like. 

Food can count towards your hydration, too 

– especially strawberries, melon (cantaloupe and 

watermelon), lettuce, celery and spinach. Fruit and 

veg which have at least a 70 percent water content

to protect your heart’s health 

through healthy lifestyle choices 

Heart disease is still one of the leading causes of 

death in the UK and worldwide. Encouragingly, 

however, the death rate from heart disease has 

reduced by more than three quarters since the 1960s. 

The British Heart Foundation estimates that more than 

half of UK adults will suffer from a heart or circulatory 

condition in their lifetime, which is a shocking statistic, 

so it is important to know how to best take care of 

your heart. There are a number of different issues that 

can impact the heart and circulatory system, including; 

cardiovascular disease, coronary heart disease, heart 

attack, heart failure and stroke and unfortunately there 

are risk factors for heart disease that we can’t change, 

including genetics, age and sex (men have a higher risk). 

However, there are some things we can control to help 

minimise the risk including prioritising a healthy diet, 

not smoking, taking regular physical activity, getting 

enough sleep, managing stress levels, attending medical 

appointments and taking recommended medication. 

Give it a go… PRIORITISE 

HEART HEALTHY FATS 

There has been much conflicting advice over the 

years when it comes to healthy fats and it can make it really 

difficult to know what is best when it comes to looking after 

our hearts. Although all types of fat play a role in our body, 

it is best for heart health to consume more unsaturated fat, 

compared with saturated fat. This is because unsaturated fat 

can improve blood cholesterol levels, reduce inflammation 

and support healthy blood vessels and blood pressure. So 

focus on including plant oils, like olive and rapeseed oil and 

choose avocados, nuts and seeds over fatty meats, pastries 

and fried foods. Don’t forget about oily fish which has a 

great source of Omega-3 fats. These are essential for normal 

functioning of the heart and regulating blood pressure, so 

try to consume two portions of fish a week, one of which 

should be oily such as salmon, herring, kippers or mackerel.

Learn to… BE KIND TO YOUR HEART 

A heart-healthy diet, such as the Mediterranean diet, has 

been seen to help with reducing or maintaining healthy 

cholesterol and blood pressure levels along with the risk 

of type 2 diabetes, which is another risk factor for heart 

disease. A strong emphasis on eating a plant-based diet 

is beneficial to the heart. Fruit and vegetables provide 

vitamins, minerals, antioxidants and fibre and wholegrains, 

such as; oats, bulgar wheat, quinoa and brown or wild 

rice have also been associated with a lower risk of heart 

disease. It’s never too early to be kind to your heart.

Step away from… TOO MUCH SALT 

A high intake of salt can increase blood pressure. Many 

foods we consume probably contain more salt than we 

realise, so it is wise to reduce our salt intake to 3g per 

day which, for many, would have a positive effect on 

blood pressure. The key message is that it is best for our 

heart to limit the amount of salt we eat by adding less 

to our food and being aware of foods that can be high 

in salt like crisps, salted nuts, salted crackers, soy sauce, 

stock cubes, processed meat and powdered soup. Being 

more aware and checking the salt content on the labels 

of readymade products is also a good habit to get into.

think I might have taken 

Charlotte too literally when she 

suggested an early meeting in her 

garden last Saturday morning. And 

I must say that my dogs too seemed 

a bit bemused to find themselves 

down in the woods for an earlier 

than usual morning constitutional. 

But it was worth it, as arriving in 

Benenden around the Green and then 

meandering along the unmade track 

to Balmoral Cottage, my visit was 

heralded by a veritable cacophony 

of bird song; a fabulous start to any 

morning, let alone that of a glorious 

July day. And so on through an old 

metal gate topped by a hornbeam 

arch and along the path, lined with 

substantial ball topped boxwood 

hedges, there was Balmoral Cottage 

almost completely enveloped by 

surrounding greenery. And now a 

gentle greeting by a friendly, rather 

elderly dog and then Donald was 

at the door whilst Charlotte was 

already out in the garden watering 

the plants in their poly tunnel. 

Charlotte and Donald bought the 

house and about five acres of land 

soon after their marriage in the early 

eighties. For years it had been the 

gardener’s cottage to The Grange, the 

‘big house’ next door, which was home 

to Collingwood ‘Cherry’ Ingram from 

1919 until 1981. Plantsman, plant 

hunter and ornithologist, ‘Cherry’ 

Ingram had, by the 1930s amassed a 

collection of more than 79 varieties 

of his particular passion, cherry trees, 

at The Grange and of course many of 

them are still in the gardens there. 

I like the sound of ‘Cherry’ Ingram’s 

gardeners who previously occupied 

the cottage. There was Mr. Wart who 

grew his own tobacco and hung it out 

to dry in the kitchen and the Locks 

who too lived and worked the land for 

about forty years. It boded well for the 

Molesworths that the land was fertile, 

having been a kitchen garden, but on 

their arrival the house had been empty 

for a couple of years and the site was 

overgrown by flowering vegetablesand 

the usual weeds such as giant 

thistles, nettles, bindweed and docks. 

They had arrived on Christmas 

Eve 1983 with an entourage of 

potted plants, two dogs, two cats, 

seven chickens and their ancient 

donkey who initially had free 

range. (We can relate to that as we 

arrived here with pots, dogs, cats, 

and donkeys!) But finding that the 

house was dry and that the Rayburn 

still worked, as well as waking up 

to the Christmas bells at the

nearby church the following morning, 

must have been a joy. They soon set 

to work clearing the site and then 

covering the ground with anything 

they could find which would prevent 

the weeds from taking over again. 

Donald had trained in Horticulture 

at Plumpton College and began work 

at the Grange and Charlotte has 

horticultural running through her veins 

as well as being a hugely talented artist. 

Her father was a farmer up on the 

North Downs and her mother, Greta 

Cox, had a nursery growing and selling 

choice plants like the double, pure 

white primula, Primula ‘Alba Plena’, 

said to be centuries old and a particular 

favourite of Charlotte’s. She also grew 

rare and fancy leafed Pelargoniums, 

along with other favourites such as 

old roses, ferns and Paris polyphylla, 

which is one of the most exquisite and 

exotic hardy perennials imaginable. 

Her mother loved box and yew, 

as did her aunt, and it was they 

who first instilled in Charlotte her 

love of topiary. So whilst others 

were asking for dinner services and 

saucepans for their wedding presents, 

first on their list were bare root 

yew plants, which could then be 

planted out in rows to grow on. 

So these yews became the backbone 

to what is now a magical garden of 

rare trees and of yew and boxwood 

topiary. The exuberant borders are 

full of really wonderful plants and 

plant combinations in particular all 

bordered by great hedges cut into 

fantastical shapes. There are over 

thirty species of box in the garden, 

collected from other gardens over 

time. Many were bought originally 

from Langley Boxwood Nursery, 

which was set up by Elizabeth and 

Mark Baynbridge, when plants 

used to cost about £1.50 each!

with wonderful shiny rounded 

leaves and everything in between. 

Charlotte makes lots of cuttings 

and swaps cuttings with friends, 

knowing the provenance of each 

plant. Indeed, almost all of the 

box came as cuttings from her 

previous garden. She has rescued 

plants that were about to end 

up in a skip down in the village. 

Can you believe that anyone 

would throw out a tree peony? 

And a table outside Charlotte’s 

studio, built as a result of a 

commission for a mural she took 

on down in the West Country, 

is a perfect place to sit and take 

in her collection of scented 

pelargoniums (reminiscent of 

her mother’s collection) and 

some great pots of succulents. 

One of my favourite areas – 

one of many – is what Charlotte 

called ‘child’s garden’ with a 

Victorian fern seat at one end 

and then a central border with 

a planting of tall verbascums 

combined with the soaring yellow 

umbellifer flowers of the parsnip, 

Ammi and another favourite 

of mine this time, Eryngium 

giganteum, or Miss Willmott’s 

Ghost, which draws in all manner 

of pollinating insects. Also there 

is that little treasure, Dianthus 

carthusianorum, the Carthusian 

Pink, with its slender stems 

and sparkling magenta flowers. 

There was also an old sink 

filled with pebbles, shells and a 

collection of sempervivums. 

As the years went on the 

garden continued to develop 

organically and Charlotte and 

Donald acquired more land 

and dug a pond. This was also 

a wedding present and integral 

to the garden’s layout as it came 

early on and they had a difficult 

task deciding where to put it. 

It is now surrounded by an 

area of wild flowers and lots of 

interesting trees. There is a sense 

of a borrowed landscape from 

the great trees that edge the 

garden such as Scots pines, Pinus 

radiata and Malus hupehensis, 

some grown from seedlings from 

the old ones in the Grange. 

Amongst all the other 

interesting trees and shrubs is a 

large specimen of Heptacodium 

miconioides AGM, also known 

as the Seven-sons flower of 

Zhejiang, which has the most 

extraordinary and distinctive 

wavy leaves which are large and 

curl downwards. The tree flowers 

in late summer into autumn 

and has seven scented flowers 

growing from the panicles at the 

end of its branches. Native to 

China, luckily it was reintroduced 

into the horticultural world 

before it became extinct in 

the wild in the 1980s. 

Shady areas are full of lovely 

native ferns, saxifrages, silver 

leaved pulmonarias and more 

plants than I could take in all in 

one go. I notice Rosa x odorata 

‘Mutabilis’, grows in several 

parts of the garden. This year we 

have released ours from its life 

in a large pot and it has been 

rewarding us with a constant 

display of its extraordinary single 

flowers which change from 

orangey yellow to copper pink 

with a final display of red. 

Charlotte and Donald open 

their garden to the public through 

the National Gardens Scheme 

(NGS) and charities such as St. 

Michael’s Hospice. I recommend 

a visit so that you can see this 

enchanting topiary garden and 

its treasures for yourselves.

in a Topiary Garden 2022. It will

Pick of 

the Crops 

Jo Arnell explains why it’s not 

too late to get growing for 

autumn and winter harvests

If you’ve been growing your own this year, then this 

month all that hard work could be about to pay off, 

although sometimes the job of harvesting can be as tricky 

as growing the crop itself. Produce is ripening by the minute 

and it can be hard to keep up with the harvesting sometimes. 

But don’t worry if you haven’t managed to grow anything so 

far this year, because there’s still time to grow some healthy 

and delicious vegetables for autumn and winter harvests. 

Gluts… 

This is the time of year when tender spring sown crops that 

produce pods and fruits will be ready to pick. You may 

already have been harvesting broad beans and peas – now 

these are joined by runner and French beans, courgettes, 

cucumbers and tomatoes. These are fabulously generous 

crops – the more you pick, the more there will be. Marvellous! 

Until you run out of recipes, or people start crossing the 

road to avoid you and your armfuls of courgettes. They 

will require some care too. Watering and feeding will be 

needed to keep them in tip top condition. If you dare to go 

on holiday – actually if you turn your back for a moment 

– some of them will turn into monsters. Make a note for 

next year that two courgette plants is enough (probably one 

too many) and that August isn’t the only harvesting month 

– but it might be the only time you can go on holiday. 

…And Gaps 

Early potatoes, beetroot, spring cabbage, calabrese, hearting 

lettuce (as opposed to loose-leaved, cut and come again types), 

broad beans and peas may have finished and have been dug 

up, leaving you with gaps in the patch. Remember to leave the 

roots of peas and broad beans in the ground, as these contain 

nitrogen-fixing nodules that will help feed future crops. 

Late summer is the perfect time to fill any gaps with 

autumn and winter vegetables. It is also safe to sow those that 

might have bolted in earlier weeks – leafy crops like spinach 

and rocket are renowned for rushing into flower – and tasting 

bitter when sown in late spring or early summer. It is too late 

to sow those that take an age to get going but Swiss chard 

and kale are ideal and are also very hardy, so should provide 

you with vitamin-packed leaves all through the winter. If 

you haven’t already had enough of green beans, you might 

still have time to sow some dwarf French beans, which are 

quicker to start producing, as they don’t have to climb. 

Quick Crops to Sow Now for Autumn Picking 

The key to choosing which edibles to grow at this time 

of the year is to look at the sowing to harvest time. 

Anything that will crop in around 12 weeks or less will 

be a contender for an autumn harvest, and there are a 

few things that have a longer growing period, but are 

hardy enough to make it through the winter too. 

Tiny carrots, such as Chantenay or Rondo are ideal 

for growing in pots, as they’ll be out of reach of carrot

stubby, they’ll develop quickly and 

be ready to harvest in around 7 to 

8 weeks. Beetroot is another tasty 

root crop, that tastes much better 

when harvested young. Radishes 

and spring onions are also speedy 

and don’t take up much room, so 

can even be squeezed in between 

rows of other vegetables – but not 

too close – edibles will always do 

better given generous spacing. 

Salad leaves, rocket and spinach 

are better grown at the top and 

tail of the growing season, because 

they are prone to bolt (run to 

seed) when grown in conditions 

that are too hot and dry. 

This is also the perfect time to plant oriental greens 

– mustards like ‘Red Frills’, pak choi, mizuna and 

mibuna are quick and easy, but may need netting 

to protect them from flea beetles – that make 

tiny holes in the leaves, and slugs, who will still 

be active until the cold autumn days arrive. 

Bottling the Summer 

Screw top glass jars at the ready everyone, as pickles 

and chutneys are a perfect way to preserve excess 

produce – and if you hit upon a winning recipe, they 

can make great Christmas presents too. Simmering 

in sugar and vinegar is the traditional way to

make chutney, but fermenting is better for intestinal health 

and boosting our micro-biomes. Fermenting involves 

adding salt to sliced vegetables to make a brine, encouraging 

the proliferation of beneficial bacteria and lactic acid, 

which gives the tangy flavour. The important thing is to 

keep everything scrupulously clean during the process to 

avoid contamination with the not so beneficial bacteria. 

Whichever pickling method you use, It can be a satisfying 

and deliciously frugal way of maximising the harvest. 

Covering the Ground 

Once your crops have been lifted from the ground, you must 

not leave it empty. Nature hates bare soil, and will call on 

something to cover the ground – most likely weeds. Any 

bare areas left over the winter will be prone to erosion and 

nutrient loss, so it’s important to grow something new or to 

smother the ground with a layer of organic matter until the 

following spring. If you don’t have plans for new crops in the 

space, then the most cost effective and environmentally thing 

to do is to sow a green manure. These are grown like a crop 

from seed sown in the autumn or spring and then dug into 

the soil several weeks before you want to grow some edibles. 

A green manure will be cheaper than buying in organic 

matter (unless you have animals that 

are providing it for you), it will keep 

the weeds down, stop soil erosion 

and when it’s been dug in, will add 

nutrients to the soil and improve the 

soil structure. If you are using animal 

manure, make sure it is well rotted 

and that you know its provenance 

– i.e. that the animals haven’t been 

eating grass treated with herbicides. 

And be aware that not all the weed seeds 

will be digested in the mulch creating process. 

So, although it is the season of harvest, there are plenty of 

things to sow and grow. In the words of T S Elliot, ‘To make 

an end is to make a beginning. The end is where we start 

from.’ This month is definitely both an end – but hopefully 

a fruitful and rewarding one – and a beginning, for some 

nutritious and tasty new crops, to grow in the spaces where 

the others left off – and start the whole cycle again.

a well-earned holiday 

For most people going on holiday 

involves packing, sending the cat 

or dog off to kennels and giving the 

goldfish an extra pinch. If only it were so straight 

forward with a farm. We have lots of enthusiastic 

friends volunteering their services and really at this 

time of year it should be quite uneventful. All the lambs 

and calves have been born and are out grazing in the fields. 

The bull has finished ‘working’, the rams are yet to get 

going and the hay is made, so a simple list should do the 

trick. But as I’ve just discovered dealing with everyone’s 

foibles makes it rather more complicated. Here it is: 

Dogs – easy. Feed them in the evening. 

Chickens – usually straight forward. Three 

handfuls of pellets in the morning when 

you let them out, a couple more when 

they crowd round the back door around 

dusk, check their water, collect the eggs 

and shut them up at night. The latter now 

rather protracted as they see no reason 

to turn in much before nine which is 

dull for anyone wanting to enjoy a pub 

supper. But more annoying still is that 

Barbara the black hen who in three years 

has never shown any maternal instincts 

decided to go broody just before we left. This means she 

intends to become a mum and sit tight in the hen house 

on all and any available eggs. But we already have two 

clutches of chicks running round and don’t want any more, 

so the intrepid farm sitters will now have to retrieve the 

day’s eggs (laid by the other hens) from under Barbara 

who won’t approve and will peck them as they try!

with a couple of steers (castrated males). But I took a couple 

of the cows to the summer shows in May and June which 

can be disruptive on their reproductive cycle and just to be 

sure I have left Basil with them while we are away. So the 

farm sitters have to keep an eye out for any 

action – being large beasts it’s pretty obvious 

– and then rather intrepidly (if you’re not 

used to it) get close enough to the action 

to scribble down the ear tag number of the 

cow concerned. I’m sure they’ll manage. 

Sheep – hmm. Sheep are the most 

annoying of all the creatures on the farm. 

They love to escape and they love to die 

and if they can die escaping even better. 

It’s impossible to count sixty ewes and 

their lambs to ensure everyone is present 

and correct, so the farmsitters will just have to make sure 

all the fences are good, the gates are shut and that no one 

is lying on their back with their legs in the air. Then our 

helper Thomas will come every couple of days to look 

for afflictions such as Fly Strike, an especially gruesome 

condition that sheep suffer from in the summer. No point 

spoiling the dream and detailing that to our urban chums. 

Cows – medium easy. The cows all calve in February and 

March and Basil the bull went in with them in May so they 

should all have come back into season and he should have 

done what he came to do. Normally he would now be in 

a separate field living a batchelor existence for another year 

Apart from that I checked the bees to ensure they 

wouldn’t swarm, fed Gerald (the sourdough culture 

who lives in our fridge) a super helping of flour and 

water, packed the bags and went. So far, they seem 

to be managing perfectly. I’m off for a swim.
