This is your definitive guide for discovering local food in the Southern<br />

Appalachian region, brought to you by ASAP (Appalachian Sustainable<br />

Agriculture Project). Use the listings to find Appalachian Grown farms and<br />

farmers markets, plus partner restaurants, artisan food producers, grocery<br />

stores, and other businesses that are committed to sourcing locally. Learn<br />

more about Appalachian Grown and what we mean by local on page 4. The<br />

companion online guide at appalachiangrown.org is updated throughout<br />

the year and includes more listings, details, and search capabilities.<br />

Throughout this guide you will find opportunities to connect with local<br />

food and farms, this community, and each other. The local food movement<br />

is all about building these connections and finding a sense of place.<br />

Whether you come to the table to support working farms, eat fresh food at<br />

the peak of the season, or gather with your neighbors, you are welcome.<br />

<strong>Local</strong> food is directly tied to economic, social, and physical health. Recent<br />

years have shown us how interconnected individual and community health<br />

are. Our choices matter! Visiting farms, shopping at farmers markets, sharing<br />

recipes, participating in a CSA (Community Supported Agriculture), or<br />

enjoying a meal encourages us to eat more fresh fruit and vegetables, get<br />

outside, and cook together with friends and family. These simple acts have<br />

the potential to make us healthier and happier, while also supporting<br />

strong farms, thriving local food economies, and healthy communities.<br />

ASAP calls this “Farm Fresh for Health,” and these ideas drive much of our<br />

work and programming.<br />

Farmers markets—often called tailgate markets in our region—can be<br />

community hubs. A trip to the market is more than just a chance to pick<br />

up the freshest Appalachian Grown produce, meat, cheese, eggs, and<br />

artisan products. By buying directly from the farmers growing, raising,<br />

and producing food in your community, you build relationships, support<br />

family farms, and strengthen the local food economy. You discover new<br />

foods and commit to preparing nourishing meals for yourself and your<br />

family. You contribute to a healthier community and support your own<br />

wellness. Plus, it’s often a chance to get outdoors, meet a friend, and<br />

enjoy yourself! Farmers markets are listed by region.<br />

Some markets extend their seasons for the holidays in November and<br />

December with late-season produce as well as locally made gift items. A<br />

Ingredients<br />

4 cups packed fresh arugula<br />

1 tablespoon minced garlic<br />

Salt and freshly ground pepper<br />

1 cup vegetable oil<br />

Directions<br />

• Place arugula, garlic, almonds, and cheese into a food processor and<br />

pulse until almost blended to a thick paste.<br />

• Place food processor on medium and drizzle in olive and vegetable<br />

oil until the desired consistency is achieved. (For flatbreads and other<br />

baked applications I like to leave the pesto a little thicker. For pasta, I<br />

usually thin it out a little more by adding a touch more olive oil.)<br />

• Season with salt and pepper to taste.<br />

2 tablespoons Marcona almonds<br />

4-6 ounces dry or semi-dry gruyere<br />

or Parmesan cheese, grated<br />

• Enjoy as a spread on bread, a dip for raw vegetables, as pasta sauce, or<br />

I<br />

think we’ve all been guilty of<br />

buying some beautiful arugula or<br />

other leafy green and watching as<br />

it turns to mush in our refrigerator<br />

before we ever get a chance to use<br />

it. Arugula pesto is a great answer<br />

to this problem. The versatility<br />

can’t be overlooked. I’ve used it<br />

in everything from a flavoring for<br />

house-baked breads, to mixing it<br />

Alta Vista Farm grows some<br />

of the most flavorful arugula<br />

I’ve had since my time working<br />

in California years ago. It is<br />

something special to be able to<br />

tell guests that their food was<br />

grown just 10 miles away. It’s<br />

important to utilize and support<br />

farms like Alta Vista. On a macro<br />

level it is hugely important<br />

that as a society we continue<br />

to increase the demand for<br />

nutritious, organically grown food.<br />

On the micro, day-to-day level, it is<br />

important to help support family<br />

farms as the backbone of American<br />

food and agriculture.<br />

There are some unique ingredients<br />

in this pesto. I’m a big fan of using<br />

good dry to semi-dry gruyere in<br />

pesto (if it is too “semi-soft,” it can<br />

throw off the consistency of the<br />

finished product).<br />

The nuttiness goes great with a<br />

robust, spicy arugula like Alta Vista’s.<br />

Marcona almonds add to that<br />

same profile.<br />

SUMMER<br />

Lacto Shakshuka<br />

Shakshuka is an easy, satisfying<br />

meal. You can make this using<br />

all bell peppers, but at Cultura we<br />

started experimenting with using<br />

fermented peppers. It gives the dish<br />

an extra depth of flavor. We’re using<br />

aji dulce peppers from Gaining<br />

Ground Farm and Flying Cloud<br />

Farm. Aji dulce have a quality where<br />

they smell like they’re going to be<br />

really spicy, but they’re not spicy at<br />

all. So it’s not painful to eat. They<br />

have a fruity funkiness to them. That<br />

flavor works really well with the<br />

fermentation. We ferment them with<br />

a three-percent salt brine for seven to<br />

ten days.<br />

stronger sense of community—and<br />

the products are always so much<br />

better than commodity. I go to<br />

markets twice a week and it’s great<br />

to develop a relationship with farmers<br />

I source from, who are all kind and<br />

caring people growing amazing<br />

food. I enjoy knowing what they’re<br />

planning to grow and what they’re<br />

excited about. Going to the market<br />

isn’t something I do just for work,<br />

but also time I get to share with my<br />

family. I get to watch my four-yearold<br />

daughter get excited about<br />

eating different foods and developing<br />

her favorites. She’s an expert on<br />

local peppers!<br />

Ingredients<br />

½ cup extra virgin olive oil<br />

2 onions, thinly sliced<br />

1 red bell pepper, thinly sliced (or use<br />

3-4 red bell peppers instead of aji<br />

dulce peppers)<br />

5 lacto-fermented aji dulce peppers,<br />

thinly sliced<br />

6 garlic cloves, thinly sliced<br />

2 teaspoons cumin<br />

Directions<br />

• Preheat oven to 350 degrees.<br />

• In a medium sauté pan, slowly cook onions and peppers together for<br />

approximately 20 minutes or until they begin to “melt.” Add garlic and<br />

cook until tender. Add spices and stir. Add tomatoes and continue<br />

to cook until most of their moisture has evaporated, about 10 to 15<br />

minutes. Adjust seasoning if needed.<br />

• Crack open eggs into the tomato mixture. Place the pan in the<br />

oven and bake about 8 minutes, or until egg whites are completely<br />

cooked through.<br />

• Remove from the oven. Sprinkle feta cheese, parsley, and lemon juice<br />

on top of the baked eggs.<br />

• Serve hot and enjoy with a toasted slice of bread.<br />

Yuca Fritters with Chorizo<br />

Directions<br />

• In a stainless steel bowl, combine tomato, red onion and cilantro.<br />

Season with salt, olive oil, and lime juice to taste. Set aside.<br />

• Cut yuca root crosswise into about 4-inch pieces. Cut those pieces<br />

lengthwise and remove the fibrous core. Grate the yuca on the smallest<br />

side of a box grater.<br />

• In a sauté pan, heat a generous amount of canola oil over<br />

medium/high heat.<br />

• Flatten 1 tablespoon of the grated yuca masa into 1-inch round thin<br />

patties. Fry until golden brown on both sides. Repeat in batches until<br />

all the yuca patties have been fried.<br />

• In a sauté pan cook chorizo over medium heat. Make sure to constantly<br />

stir the chorizo so it cooks evenly. It takes about 15 minutes.<br />

• Spoon a small amount of the chorizo into each yuca fritter and garnish<br />

with the veggie mixture that you set aside. Enjoy!<br />

* Cassava root is available year-round from some local growers.<br />

This recipe kind of reminds<br />

me of alcapurrias, a<br />

traditional fritter in Puerto<br />

Rico. I’ve been working with<br />

Vandele Farms now for a<br />

couple of years. It is a small farm<br />

run by a husband and wife,<br />

they sustainably raise their pigs<br />

there. They butcher based on<br />

the orders that they receive, so<br />

you know quality is great. You<br />

can also give them any sausage<br />

recipe that you would like, and<br />

they will produce it for you. The<br />

care and love that the farmers<br />

put into their craft is inspiring. I<br />

want to make sure that we can<br />

support each other in any way<br />

This restorative and comforting<br />

dish holds the flavors of<br />

early spring in Appalachia. The<br />

bright and festive colors of<br />

French breakfast radish against<br />

the verdant leaves of wilted and<br />

buttery greens is a nod to brighter<br />

days ahead. The dense nutrition<br />

of the radish greens and chard is<br />

a boost of support in the waning<br />

days of winter. White wine and<br />

splash of vinegar cut the bitterness<br />

of the chard to create a nice<br />

balance that blends with the earthy<br />

and delicate spice of the radish.<br />

We used radishes and chard from<br />

Maypop Farm. Ayrton Webb is<br />

such a fun farmer to work with<br />

because his excitement for his<br />

produce is completely palpable—<br />

as is his disappointment when<br />

something doesn’t turn out the<br />

way he thought it would. Watching<br />

a farmer grin about what they’ve<br />

grown is one of the top things we<br />

love about what we do. Watching<br />

a passionate farmer continue to<br />

do what they do despite inevitable<br />

setbacks—sometimes utterly<br />

devastating ones—is a great<br />

testament to the resiliency of the<br />

human spirit. It’s hard work and it<br />

takes a special kind of person to do<br />

it. Ayrton is an extra special<br />

kind of person, and we<br />

appreciate his passion.<br />

Bacon-Braised Radishes & Greens<br />

Ingredients<br />

1 ½ pounds french breakfast<br />

radishes with greens, rinsed and<br />

dried<br />

2 small shallots, thinly sliced<br />

6 tablespoons butter<br />

2 tablespoons dry white wine<br />

Salt and pepper<br />

1 bunch chard, rinsed and dried,<br />

chopped<br />

4 strips bacon, cooked, cooled,<br />

and chopped<br />

Splash of vinegar<br />

Directions<br />

• Trim greens from radishes and set aside. Cut radishes in half.<br />

• In a medium-sized, deep saucepan, melt 2 tablespoons of butter over<br />

medium-high heat. Add shallots and cook, stirring, until<br />

softened. Add radishes and sauté until lightly browned.<br />

• Add white wine, salt, and pepper, and toss to combine.<br />

Lower heat to maintain a simmer and cook for 3 to 5 minutes.<br />

• Add greens from radishes and chard, bacon, and remaining<br />

butter to the pan and cook for an additional 3 to 5 minutes.<br />

• Add a splash of vinegar and season to taste with salt and<br />

pepper. Serve and enjoy!<br />

CROW FLY FARMS:<br />

‘Obsessive Observation’<br />

Farmer Jake Puckett and his<br />

wife, Luna, spent last Christmas<br />

up all night caring for a sick calf<br />

inside their house. Meanwhile, the<br />

temperature plunged, waterlines<br />

went down, the tractor broke,<br />

and a new batch of ewes all<br />

started lambing at once. “There’s<br />

a commitment, physically and<br />

emotionally, to farming like<br />

this,” says Jake. “Death is an<br />

unfortunate reality when running<br />

a farm. It’s not the most beautiful<br />

side of farming, but it’s real.”<br />

Deep care and transparency<br />

are part of what sets Crow Fly<br />

Farms apart. But foremost is the<br />

way the land is managed. Cows,<br />

sheep, and pigs graze and forage<br />

happily through both pasture<br />

and forest, along a foothills<br />

ridgeline in Marion, NC. The<br />

animals are living in a way that<br />

mimics natural systems—and at<br />

the same time, they are restoring<br />

the land’s ecological health. The<br />

goal is to transition the property,<br />

which Jake and Luna purchased<br />

in February 2021, to an entirely<br />

silvopasture system.<br />

“On the most basic level,<br />

silvopasture is the integration<br />

of animals into a mixed forest<br />

grassland,” says Jake. “It’s a<br />

savannah-like system, bringing<br />

animals out of traditional pasture<br />

into areas of more diversity and<br />

complexity.” Through rotational<br />

grazing and other holistic<br />

measures the land will actually<br />

benefit from the animal impact.<br />

The animals will live their best<br />

lives and produce delicious,<br />

nutrient-dense meat.<br />

From start to finish, Jake estimates<br />

that process will take three-and-ahalf<br />

to four years. The first phase<br />

has been to run the hogs through<br />

the forested areas to clear out<br />

the understory. The hogs mulch<br />

and compost the leaf litter and<br />

provide manure to fertilize the<br />

soil as they are rotated through<br />

the forest. The next step, where<br />

they are now, is working with<br />

a logger to open up the tree<br />

canopy. Using a selective harvest,<br />

they’ll let in just enough light to<br />

get native warm-season grasses,<br />

forbs, wildflowers, and legumes<br />

established.<br />

“We’re trying to leave as many<br />

trees as possible, but open up<br />

the canopy enough to get forage<br />

growing on the forest floor,” says<br />

Jake. “We won’t graze it in the first<br />

year so that the roots can develop<br />

and grow deep. The following<br />

year we’ll be able to bring in our<br />

cattle and sheep.”<br />

They’re also working from the<br />

opposite direction, planting fastgrowing<br />

trees and shrubs in the<br />

existing pasture to provide shade,<br />

weather protection, and food<br />

for the animals. Slower-growing<br />

trees, including fruit and nut<br />

varieties, are being planted as<br />

well to meet a long-term vision.<br />

of Carbon Harvest, a regional<br />

carbon offsets platform funding<br />

agroforestry projects.<br />

“The animals struggled in hotter<br />

months on the portions of the<br />

property without trees,” says<br />

Jake. Hauling shade structures<br />

isn’t practical and can result in<br />

over-impacted areas around the<br />

structures. Trees provide natural<br />

shade as well as fodder through a<br />

process known as chop and drop.<br />

“Basically, we cut down portions<br />

of the trees, feed it to the animals,<br />

and it will regrow.” That gives<br />

them an organic feed supplement<br />

the farm can produce on its<br />

own, rather than purchase, and<br />

adds another layer of diversity.<br />

“Those deep-rooted trees will pull<br />

minerals up to the surface that<br />

grass is not able to, and both the<br />

animals and the grass will reap<br />

the benefits.”<br />

Connecting with<br />

Customers<br />

To ensure that no part of the<br />

animal would be wasted, Crow<br />

Fly began with a whole animal<br />

sales model, with minimums of a<br />

half hog, whole lamb, or quarter<br />

beef. Jake pitched his specialty,<br />

high-end product to Asheville<br />

restaurants and developed strong<br />

relationships with Chestnut<br />

and Blackbird. Animal shares<br />

were a way to connect with<br />

neighbors. But after about a<br />

year they realized they wanted<br />

a more accessible product. “We<br />

pigeonholed ourselves a little,”<br />

admits Jake. This winter, Jake<br />

and Luna started selling smaller<br />

meat boxes at farmers markets<br />

in Asheville. They worked with<br />

their processor to create custom<br />

bundles that make use of every<br />

cut. “We still know the whole<br />

animal is being used, but it’s an<br />

approachable amount of meat for<br />

someone to purchase.” Bundles<br />

vary from two to four pounds of<br />

meat to larger sampler sizes.<br />

Farmers markets are also an<br />

important place to tell their story.<br />

“The best way to sell our product<br />

is to talk to literally one person<br />

at a time,” says Jake. “We’re<br />

educating consumers about the<br />

way we manage our farm, why it’s<br />

important, and why it’s different<br />

than what you would typically<br />

see. This is a more labor intensive<br />

and expensive way to raise<br />

animals, but people are buying<br />

into what we’re doing and they<br />

believe in us.”<br />

After a calf is born, it will be three<br />

years before it’s processed. In<br />

that time, Jake will have moved it<br />

around the property five hundred<br />

or more times. He will have<br />

physically set up paddocks for<br />

each of those moves and hauled<br />

water to the animals around<br />

a thousand times. “So much<br />

care and work goes into raising<br />

animals in this system,” he says.<br />

Farm tours are another way to<br />

show that effort. “ASAP’s Farm<br />

Tour [in September 2022] was<br />

amazing for us and introduced<br />

lots of new customers,” says<br />

Jake—though he admits it<br />

strained his voice. “I spend most<br />

of my days not speaking because<br />

I’m around animals,” he laughs.<br />

The farm began offering tours<br />

by appointment this year, giving<br />

people an up-close look at the<br />

animals and a chance to hear<br />

Jake’s passionate explanation of<br />

his farm practices. “Some farms<br />

don’t want customers to see<br />

behind the scenes, but this is<br />

something we want to show off.”<br />

Embarking on a Dream<br />

All of this is a pretty recent career<br />

shift. Jake grew up outside of<br />

Charlotte, but had been in Denver,<br />

Colorado, for 10 years, where<br />

he met Luna. Jake worked as a<br />

blacksmith and a sculptural stone<br />

carver, Luna was a yoga instructor,<br />

and together they operated a<br />

sourdough bread bakery on the<br />

side. Both were feeling unfulfilled<br />

and were looking for a change.<br />

With the onset of COVID, those<br />

conversations escalated.<br />

“We are both very<br />

environmentally minded and<br />

started becoming more conscious<br />

of where our food came from,”<br />

says Jake. “Then we learned about<br />

regenerative farming practices<br />

and began to understand how<br />

much the food we eat can<br />

impact the environment. Meat<br />

production in particular gets<br />

a bad rap. We came to realize<br />

that through regenerative<br />

systems, meat production<br />

could be a means of healing<br />

the environment rather than<br />

degrading it.”<br />

Though Jake had no farming<br />

experience, his father is a<br />

veterinarian and Jake spent much<br />

of his youth around animals<br />

on farms. He wanted to learn<br />

what it would take to raise them<br />

with the best life possible and<br />

produce high-quality food—<br />

while also positively impacting<br />

the environment. That research<br />

led him to the Savory Institute, a<br />

global network promoting largescale<br />

regeneration of grasslands<br />

through holistic animal and<br />

land management. With a move<br />

back to North Carolina planned,<br />

he connected with the closest<br />

Savory Hub, the Robinia Institute<br />

in Virginia, and took a holistic<br />

management course. “That gave<br />

us the confidence and knowledge<br />

to proceed with this—I guess—<br />

dream,” he says.<br />

Finding land was a challenge.<br />

Most of what was in their price<br />

range was unusable due to<br />

topography. Getting enough<br />

acreage to raise 100-percent<br />

grassfed animals meant going<br />

up against developers making<br />

cash offers. The land they<br />

eventually purchased had no<br />

infrastructure. They were already<br />

raising a few animals on Jake’s<br />

father’s property. In what felt<br />

like excruciatingly slow motion,<br />

Jake started to put his holistic<br />

management vision into place—<br />

and recorded the results. “A lot<br />

of what I’m doing is by obsessive<br />

observation,” he says. “I learn<br />

by looking at what’s going on<br />

out there.” He began to see<br />

improvement in the soil.<br />

Jake is now an Accredited<br />

Professional with the Savory<br />

Institute and the lead Ecological<br />

Outcome Verification (EOV)<br />

monitor for the Robinia Institute.<br />

In addition to using the protocols<br />

for his own land, this past summer<br />

Jake traveled to about 30 other<br />

farms throughout the Southeast<br />

and Mid-Atlantic to conduct<br />

ecological monitoring.<br />

“It’s an amazing protocol, because<br />

you’re putting hard numbers<br />

behind the term ‘regenerative,’<br />

which is kind of a new buzzword,”<br />

Jake says. “It provides a<br />

feedback loop where you can<br />

see how your management<br />

is impacting the land by<br />

evaluating data. It includes soil<br />

sampling, water infiltration tests,<br />

species identification, forage<br />

estimates, the establishment of<br />

photographic plots, and a host of<br />

other metrics.”<br />

In addition to EOV monitoring,<br />

Crow Fly Farms offers consulting<br />

and hosts trainings in holistic<br />

management. Both are ways to<br />

bring in additional income—<br />

but also build a community of<br />

farmers.<br />

“I want there to be a network<br />

in place, a support system,”<br />

says Jake. “As a farmer it can<br />

sometimes feel like you are on<br />

an island. I want to be able to<br />

learn from each other and lean<br />

on each other. It’s an educational<br />

opportunity, but also just if you’re<br />

having a bad day being able to<br />

call another farmer and know<br />

you’re not the only person going<br />

through it. Building a community<br />

of like-minded farmers would be<br />

beneficial for all of us.”<br />

YELLOW MOUNTAIN GARDEN:<br />

Teach the World to Grow<br />

farmer Malcolm Banks, who<br />

operates Yellow Mountain Garden<br />

in Franklin, NC, with his wife,<br />

Hannah, and kids Noemi, Malik,<br />

and Lucy. “A lot of people don’t<br />

understand food right now, but<br />

they understand inflation. Our<br />

goal is to get more people to<br />

learn about where their food<br />

comes from.”<br />

As he’s tried new methods over<br />

his near-decade of farming,<br />

Malcolm has translated what<br />

he’s learned into gardening and<br />

farming education for others,<br />

including a YouTube channel<br />

(@yellowmountaingarden3865)<br />

and Spotify podcast. He also<br />

offers in-person classes and hosts<br />

events for families and kids on<br />

the farm.<br />

When flooding in the summer of<br />

2021 decimated most of the crops<br />

at Yellow Mountain Garden, the<br />

Banks family made adjustments<br />

to better protect and diversify<br />

the farm’s portfolio. In navigating<br />

those challenges and getting<br />

the hang of each new farming<br />

practice, Malcolm has shared<br />

lessons and experiences with<br />

his community. “I feel like this<br />

year is more about documenting<br />

and putting it out there so that<br />

people can really understand<br />

what we’re doing,” he says.<br />

They moved susceptible crops to<br />

raised beds, and Malcolm posted<br />

demonstrations on how to fill<br />

them. They worked on improving<br />

soil health, and Malcolm<br />

interviewed Hannah, who has a<br />

degree in horticulture, about soil<br />

science for home gardeners. They<br />

brought in animals, including<br />

chickens, sheep, goats, and cows,<br />

so they could offer meat and eggs<br />

to their CSA customers and at<br />

farmers markets. Malcolm added<br />

vlogs on how to build a fence for<br />

livestock and how to keep flies<br />

off cows.<br />

He also dropped an album. Last<br />

year Malcolm released “Cowboy<br />

Baby” under his recording artist<br />

name, Yuccie Banks. The album<br />

blends rap and country along<br />

with bits of rock and bluegrass<br />

in tracks about buying land,<br />

growing vegetables, and moving<br />

cattle—proving that music is yet<br />

another way he can spread his<br />

message and share his experience<br />

as a farmer.<br />

A Farmer Personality<br />

Malcolm grew up in South<br />

Georgia, near the Florida border.<br />

“We had to go work in the fields.<br />

A lot of us used to pick pecans,<br />

watermelons, peaches, and things<br />

like that. That kind of motivated<br />

me to be like, ‘Hey, one day I’m<br />

actually going to get a farm and<br />

operate it on my own.’”<br />

Love for rural communities and<br />

being outdoors reinforced that<br />

goal. “Even when I was playing<br />

sports and stuff like that, I wanted<br />

to live in the middle of nowhere.<br />

People looked at me crazy. So I<br />

think it fit my personality to be<br />

a farmer, because you’ve really<br />

got to live where there’s not a lot<br />

going on.”<br />

Hannah is a fourth-generation<br />

farmer. Her family has farmed<br />

land in Cashiers, North Carolina,<br />

since the late 1800s and now<br />

grows Christmas trees. Being<br />

able to tap into that background<br />

helped Malcolm and Hannah<br />

get Yellow Mountain Garden<br />

started. “It made my life a little<br />

easier because I was around<br />

people who had their feet in the<br />

industry,” Malcolm says. They<br />

began farming in the Yellow<br />

Mountain area around Cashiers,<br />

but now own land in Franklin. In<br />

addition to running the business<br />

side of the farm and applying<br />

her horticulture degree where<br />

needed, Hannah works as a real<br />

estate agent.<br />

<strong>Food</strong> access was another driving<br />

force for Malcolm to start farming.<br />

“I was doing research about what<br />

a food desert is. People have lack<br />

of nutrients because they don’t<br />

have access to fresh produce.”<br />

He makes a point of selling his<br />

produce as cheaply as possible<br />

and gives a lot of it away to<br />

neighbors or people who can’t<br />

afford it. “My biggest role in the<br />

community is to provide for the<br />

people who don’t have enough,”<br />

he says.<br />

Yellow Mountain is also<br />

connecting with schools and<br />

youth programs to make seed<br />

donations to start gardening<br />

programs. “The state’s not going<br />

to pay for it,” says Malcolm. “So<br />

we’re trying to help some of these<br />

schools and educators have extra<br />

resources so that they can teach<br />

children how to garden. Because<br />

that’s our future. If these kids<br />

don’t know how to grow their<br />

own food, it may be a bad, bad<br />

deal, especially with everything<br />

going on.”<br />

Beyond his own farm and<br />

community, Malcolm has an<br />

ambitious, far-reaching vision. He<br />

wants to connect with networks<br />

across the country—and the<br />

world—to help people set up<br />

community gardens and teach<br />

people how to grow fresh food.<br />

“I don’t care if you’re living in<br />

an apartment. You can have<br />

something in your window. I want<br />

to motivate more people to start<br />

a garden—and also get to know<br />

their local growers.”<br />

BLACK TRUMPET FARM:<br />

Spreading the Word<br />

Gwen Englebach will tell you<br />

that she and her farming<br />

partner and husband, Jay, are<br />

both shy. But talking to customers<br />

each week at farmers markets<br />

is a vital piece of their business,<br />

Black Trumpet Farm, which<br />

produces culinary and medicinal<br />

mushrooms in Leicester, North<br />

Carolina.<br />

“Connecting with community<br />

is part of our mission, the social<br />

consciousness aspect of our<br />

farm,” says Gwen. “The problem<br />

with the current food system<br />

is a lack of relationship to food<br />

and where it comes from. It was<br />

important to us at the ground<br />

level to build those relationships.<br />

We’re spreading the word about<br />

mushrooms.”<br />

That means patiently fielding<br />

questions like, “Are mushrooms<br />

safe to eat?” and “What is this?”<br />

as well as describing flavor and<br />

texture and building customer<br />

confidence with cooking tips.<br />

Most people are familiar with<br />

shiitake, but there are half a<br />

dozen other varieties they don’t<br />

know, like pink or golden oyster,<br />

pioppino, or lion’s mane.<br />

“We’re going through all that<br />

with each person, a few minutes<br />

of conversation,” says Gwen.<br />

“People have been asking about<br />

nutritional content, and it’s more<br />

than I can say in one minute, so<br />

I’ve been bringing books with<br />

me to show people scientific<br />

research on why they might be<br />

helpful. Mushrooms can be a<br />

great alternative when people<br />

are trying to cut back on meat.<br />

Mushrooms have lots of umami<br />

flavor, which allows folks to use<br />

less salt. Mushrooms are also high<br />

in fiber.”<br />

Take-home recipe cards are<br />

another way to gain mushroomeating<br />

converts. Gwen points<br />

to their most popular recipe for<br />

lion’s mane crab cakes. Lion’s<br />

mane—which look a little like a<br />

furry head of cauliflower—are<br />

shredded and mixed with herbs,<br />

seasonings, egg, mayonnaise, and<br />

bread crumbs for a convincing<br />

vegetarian version of crab cakes.<br />

“It’s a good one for people who<br />

don’t think they like mushrooms,”<br />

says Gwen. Jay, in particular, is<br />

an avid home cook, and he’ll<br />

walk through basic cooking<br />

techniques to help customers<br />

avoid slimy mushrooms.<br />

Farmers market access programs<br />

like ASAP’s Farm Fresh Produce<br />

Prescription and Double SNAP<br />

have helped bring in new<br />

customers who may not be as<br />

familiar with mushrooms. “We<br />

can get mushrooms to people<br />

in more of a sliding scale fashion<br />

and develop relationships,” says<br />

Gwen. “It’s hard work, but it’s<br />

worthwhile—especially when<br />

someone comes back to say<br />

how much they enjoyed eating<br />

mushrooms or that they feel<br />

better after changing their<br />

eating habits.”<br />

Building the Business<br />

Gwen and Jay didn’t set out<br />

to be mushroom growers, but<br />

couldn’t find suitable land for a<br />

conventional farm. They decided<br />

to figure out a niche that would<br />

allow them to make the most<br />

of sloped acreage and subpar<br />

soil. Gwen had been studying<br />

fungal ecology in a PhD program,<br />

so mushrooms seemed like a<br />

good fit.<br />

At first they tried growing with<br />

outdoor logs, but the labor and<br />

materials cost was too high for the<br />

yield. It was also unpredictable—<br />

not conducive to a weekly market<br />

schedule. “Outdoor logs didn’t<br />

make sense to do as more than<br />

a side hustle,” admits Gwen. “It<br />

was important to us that we could<br />

make a living at this.”<br />

Indoor cultivation was a newer<br />

concept, but one they realized<br />

could be more financially viable<br />

for them—even if there wasn’t a<br />

lot of information on how to set<br />

up systems. “It was hard to learn,”<br />

says Gwen. “There are some<br />

people teaching courses, but it’s<br />

mostly on YouTube.” Gwen and<br />

Jay worked off farm in 2017 and<br />

2018 as they built infrastructure,<br />

and in 2019 went full time on<br />

the farm. In addition to farmers<br />

markets, they started selling to<br />

restaurants.<br />

Most of Black Trumpet’s<br />

mushrooms are grown yearround,<br />

but they do swap some<br />

types seasonally. Pink and golden<br />

oysters do better in hotter<br />

weather, whereas king blue<br />

oysters and trumpets do better<br />

in cold. By rotating strains, they’re<br />

able to use less power, keeping<br />

the grow rooms at 58 degrees<br />

in the winter and 65 degrees in<br />

the summer.<br />

Indoor cultivation does create<br />

sustainability tradeoffs with more<br />

power usage and plastic grow<br />

bags, notes Gwen. One way they<br />

work to offset this is by using<br />

sawdust recycled from local<br />

furniture factories as a substrate.<br />

They’re also planning to launch a<br />

compost business this year.<br />

In 2022, after two years of<br />

construction, they completed a<br />

new 2,000-square-foot growing<br />

facility with more advanced HVAC<br />

and solar panels. They estimate<br />

their yield will double, or even<br />

triple, over the next several years.<br />

“We’re up to 1,000 pounds a<br />

week,” says Gwen. “It’s really a<br />

huge difference.” Plus, the new<br />

facility gives them the ability to<br />

grow new species, such as beech<br />

and maitake.<br />

With the increase in production<br />

and new business on the horizon,<br />

they’ve hired several employees.<br />

Gwen and Jay—who had a baby<br />

in January—are moving into<br />

a phase where they can think<br />

beyond the farm’s day-to-day<br />

needs. For Gwen, that’s more<br />

outreach and education.<br />

“It’s been five years of constant<br />

building things ourselves,” she<br />

says. “We made it through the<br />

pandemic, supply chain issues. I’m<br />

happy to see us in a place of more<br />

stability, but I’m ready to stop<br />

building infrastructure and start<br />

building the business.”<br />

Joining a CSA (or<br />

Community Supported<br />

Agriculture) program<br />

connects you directly<br />

with local farms in your<br />

community. Members buy<br />

a “share” of a farm’s harvest<br />

upfront and receive a<br />

weekly box of fresh produce<br />

or other farm goods. With<br />

that commitment early on,<br />

the farmer is able to invest<br />

in the growing season.<br />

Traditionally, CSAs were<br />

centered around produce,<br />

but you can also find<br />

specialty CSAs for meats,<br />

flowers, and more. As CSAs<br />

have grown in availability<br />

and popularity, different<br />

models have developed,<br />

often allowing you to<br />
