When we enter our magazine, let's first enter the legendary
world of mushrooms together.
In this study, we will learn about the history of mushrooms
from past to present, edible and inedible mushroom types
and their properties, valuable mushroom varieties and
mushroom cooking methods.
~ History of mashrooms ~
Although mushrooms are known as a plant among the
people, the fungus is not a plant, it is a realm that includes
the eukaryotic kingdom, which is divided into single-celled
and multi-celled. Fungi are found all over the world,
especially in forest areas. Our mushrooms love a humid
environment. known.
It is estimated that people's use of capped mushrooms dates
back to the Paleolithic age. As they examined other
herbaceous plants, the first people collected the mushrooms

these mushrooms as poison to kill unwanted people in the

After the discovery of mushrooms, the first people studied
how they grew and developed in nature and allowed many
types of mushrooms to be grown in church gardens. As
additional information, it was determined that mushrooms
grow better on fertilizers.

Now, the types of edible mushrooms that we are accustomed to
seeing in markets or markets will be explained. Some of these
mushrooms can be bought easily, while others are difficult to buy
as they are expensive.
1. Cultured Mushroom
This mushroom is actually the general name of all the
mushrooms cultivated and cultivated. The most consumed
mushroom in our country is 'Agaricus bisporus'.
This mushroom, which is frequently preferred in the recipes of
our dishes that decorate our most beautiful plates, has a classic
white stem and cap.
2. Oyster Mushrooms
Oyster mushrooms, like cultivated mushrooms, can be easily
obtained from markets and markets. The latin name of this
species, which is the number one choice of those who want to
barbecue, is Pleurotus ostreatus. This fungus begins to appear at
the bottom of the roots of broad-leaved trees when winter
comes. This food, which is the second most grown mushroom in
the world, has a huge fan-like hat. It also has a hard and thick
texture.

This species, which grows completely underground, can easily reveal
itself thanks to the cracks it creates in the soil when grown. If you
are going to cook, this mushroom is an excellent alternative to the
culture mushroom. It is often called desert truffle because it tastes
like a potato and resembles a truffle.

6. Şitake mushroom
Şitake mushroom, which is grown in the Mediterranean, Aegean,
Marmara and Black Sea regions in our country, is a very popular
mushroom in the Far East regions. It is also called black forest
mushroom in our country. This is another mushroom species that
is quite expensive.
7.Kanlıca Mashroom
It grows mostly in the Western Black Sea region of our country.
This mushroom is also known as 'pine mushroom' or 'sycamore
mushroom'. Kanlıca mushroom is a species that is consumed in
barbecues.
8. Tirmid Mushroom
If you have found the truffles in the forest and you want to buy
them, it should not be forgotten that the milk does not come out
of the hands easily. These mushrooms start to take a wavy shape
when they mature when they are half-moon shaped during
adolescence. They also have a cap with a diameter of 5-15
centimeters. These mushrooms, which are usually roasted, are not
used easily if they are found too ripe. It is beneficial to apply the

They usually appear in May and November. Other names are
'goose's feet' and 'chicken mushrooms'. It adds flavor to our meals

It takes its name from the color of raw steak and the red color
when cut. They grow in and around the myrtle region of our
country. This species is the most delicious mushroom on our list
of edible mushrooms. It has a sour taste. It is possible to see it in
sycamore and chestnut trees.

13. Emperor Mushroom
Its other name is caesar mushroom. These mushrooms, which
have been used since the Roman period, grow at the end of
summer and are frequently seen in oak, chestnut and linden
forests. It is useful to be careful as there are also poisonous
mushroom varieties in this species.
14. Trumpet Mushroom
Since there are poisonous mushrooms in this species, it is
necessary to make sure that it is useful before consuming it. This
delicious and expensive mushroom species is seen in the Aegean
region of our country.Its other name is trumpet mushroom.
Which mushrooms are inedible?
It is necessary to recognize and avoid mushrooms that can lead
to deadly results if eaten. Expert knowledge is required to
understand whether a mushroom is poisonous. In order to say
"don't eat mushrooms," avoid generalizations such as colorful
ones or those that are like this, so stay away from mushrooms
that you see in nature but are not sure about.

In our country, it is mostly used in sautés and roasting.
Mushrooms are actually able to make delicious meals by keeping
up with all cooking methods. As we mentioned above, it is

determined and asked them 10 questions and their answers were
tremendous. While preparing the questions, we paid great
attention to the fact that they were about cooking methods,
cutting techniques and meat sections, and to collect valuable
information on these issues.

~ DELİCİOUS RECEİPE ~
Yes, we said that we included interesting recipes in our last episode
of our magazine.Now we have a delicious recipe.
(6 Persons)
LOBSTER
90- 120 gr lobster
3 medium onions
1 medium celery
3 sprigs of sage tea
2 Liters of Water
1 glass of white wine
1/8 Muscat
½ lemon peel
1 tablespoon of parmesan cheese
3 bay leaves
5 liters of water (to boil)
3 cloves of garlic
1 red Thai chili pepper
juice of ½ lemon
2 spoons of butter
First of all, we start by preparing the
aromatic water in which we will boil
the lobster. Add white wine, amulet,
lemon peel to the water.
Insert a skewer into the spinal cord so
that the lobster meat is not tough.
Put the onion, garlic, celery, lemon
juice and cayenne pepper in a
saucepan that can hold the lobster,
then make a spice bouquet from sage
and bay leaves. After adding the spice
bouquet to the pot, boil it for 45
minutes. Then put the lobster in it and
boil it for two minutes. After boiling,
stop the cooking process by placing the
lobster in ice water. Save the water in
which you boiled the lobster for risotto.

RISOTTO
3 cups Arborio rice
1 onion
10 leaves of basil

10 cups lobster boiling water
1 teaspoon black truffle puree
250 g powdered parmesan
Cut the onion into quarters and put it in the pot. Fry the basil,
Arborio rice, oil and butter. Add water and 1 glass of wine and
bring to a boil. Take the drained rice on wax paper. Ventilate
for 10 minutes. Separate the onion and basil from it. Add the
lobster juice to the al dente rice. Cook for 10 minutes stirring.
When the water is absorbed, add 1 tea glass of white wine.
Remove from the stove so that very little water remains. Add
the black truffle puree. Combine 250 g of powdered Parmesan
with the risotto you took from the stove, mixing it quickly.

SERVICE

Yenilen ve yenilmeyen mantar türlerini inceleyelim.
1. Kültür mantarı
Bu mantar aslında yetiştirilen ve yetiştirilen tüm mantarların genel adıdır. Ülkemizde en çok tüketilen mantar 'agaricus

3. Kuzu göbeği
Genellikle ilkbahar aylarında yetişen bu tür karakteristik bir görünüme ve kendine has bir renge sahiptir. Bu nedenle diğer
mantarlar arasında kolayca tanınır. Ancak ülkemizde yaygın olarak yetiştirilen Gyromitra Esculenta zehirlidir. Bu mantarları
seçerken oldukça dikkatli olunması gerek.
4.Trüf mantarı
Evet geldik en değerli mantarımıza.
120'ye yakın mantar türünün bulunduğu bu değerli hazine, tıpkı
keme mantarı gibi toprak altında yetişiyor.Ülkemizde 'Domalan' olarak bilinen trüf mantarımız siyah renginden ve değerinin
yüksek olmasından dolayı 'kara elmas' olarak da bilinir.Ayrıca meraklananlara özel tadı kokusu ve aroması ile oldukça karakteristik
bir lezzete sahiptir.
5. Keme Mantarı
Tamamiyle yer altında yetişen bu türümüz Büyüdüğünde toprakta meydana getirdiği çatlaklar sayesinde kendini kolayca belli
edebilmektedir.Eğer yemek yapacaksanızbu mantar 'kültür' mantarına mükemmel bir alternatiftir.
Tadı patatese benzer şekli ise trüf mantarını andırdığı için çoğunlukla çöl trüfü olarak adlandırılır.
6.Şitake mantarı
Ülkemizde Akdeniz, Ege, Marmara ve Karadeniz bölgelerinde yetiştirilen şitake mantarı Uzak doğu bölgelerinde oldukça sevilen bir
mantardır.Ülkemizde kara orman mantarı da denilir.Olduça pahalı olan bir diğer mantar türümüz budur.
7.Kanlıca Mantarı ülkemizin daha çok Batı karadeniz bölgesinde yetişir.Bu mantarımız ayrıca 'çam mantarı' ya da 'çıntar mantarı'
diye de bilinir.Kanlıca mantarı da mangallarda oldukça tüketilen bir türdür.
8.Tirmit Mantarı
Tirmit mantarlarlarını ormanda bulduysanız ve almak istediğinizde sütünün ellerden kolay kolay çıkmadığını unutmamak
gerekiyor.Bu mantarlar ergen döneminde yarım ay şeklinde iken olgunlaşırtığında dalgalı bir şekil almaya başlarlar.Ayrıca 5-15
santimetre çapında bir şapkaları vardırr.Genellikle kavurma yapılan bu mantarlar eğer fazla olgunlaşmış bulunursa kullanmadan

Genellikle mayıs ve kasım aylarında kendini gösterirler.Diğer isimleri ise' kaz ayağı ve 'tavuk mantarı' dır.Yemeklerimize fındık ve
baharat aromalarıyla tat katar.Popüler bir mantar türüdür.
12. Biftek Mantarı
Adını,çiğ biftek renginde olmasıyla ve kesildiğinde kırmızı renkte olmasından alır.Ülkemizin mersin bölgesinde ve çevresinde
yetişirler.Bu tür, yenilebilen mantarlar listemizdeki en lezzetli mantardır.Tadı ekşimsidir. Çınar ve kestane ağaçlarında görmemiz
mümkündür.
13. İmparator Mantarı
Diğer adı sezar mantarıdır.Roma döneminden beri kullanılmakta olan bu mantarlar yaz aylarının sonunda yetişir ve meşe,
kestane, ıhlamur ormanlarında sıkça görünür. Bu türümüzün içinde zehirli mantar çeşitleri de bulunduğundan dikkatli olmakta
fayda vardır.
14. Borazan Mantarı
Bu türümüzde de zehirli mantarlar olduğu için tüketmeden önce faydalı olup olmadığından emin olmak gerekir.Lezzetli ve pahalı
olan bu mantarı türümüz Ülkemizin ege bölgesinde görülmektedir.
Diğer adı ise trompet mantarıdır.
Hangi mantarlar yenmez?
Yenildiği takdirde ölümcül sonuçlara yol açabilen mantarları tanıyıp uzak durulması gerekir.Bir mantarın zehirli olup olmadığını
anlamak için uzman bilgisi gerekmektedir.Mantarları yemeyin diyebilmek için böyle renkli olanlar veya bu şekilde olanlar demek
gibi genellemeler söz konusu olmayacağı için doğada gördüğünüz ama emin olamadığınız mantarlardan uzak durun.
~ Mantar Pişirme Teknikleri ~
Ülkemizde çoğunlukla sotelerde ve kavurmalarda kullanılır.Mantarlar aslında tüm pişirme yöntemlerine ayak uydurarak her
yöntem ile lezzetli yemekler yapmak mümkündür.Yukarıda bahsettiğimiz gibi tirmit mantarını bazı durumlarda haşlama yaparak
kullanılması muhtemeldir.Ana yemek olarak tüketilmesinin yanısıra sosların içinde de enfes lezzetler yakalamak mümkündür.
Mantar Kronolojisi
1651 - Fransa'da Paris çevresinde ilk mantar keşfi.
1707 - Sebze bahçesinde ilk kontrollü “yenilebilir mantar” yetiştiriciliği yapılmıştır.
1800 - İklimin sürekli nemli olmasıyle beraber mantar için doğru zaman ve yer olan yer altı taş ocaklarında mantar yetiştiriciliği.
1825 - Mantarlar, Haarlem yakınlarında kırsal bir arazide yetiştirildi.
1900 - Valkenburg’daki fluweelgrotten’de (Kadife Mağaraları) ve Maastricht yakınlarındaki St. Pietersberg mağaralarında mantar
yetiştiriciliği.
1934 - Hollanda Naaldwijk Araştırma İstasyonunda mantar kültürü üzerine ilk bilimsel çalışma yapıldı.

çektirin, Suyunu çekmiş pirinci yağlı kâğıda çıkarın . 10 dakika havalandırın . İçerisinden soğan ve fesleğenleri ayırın. Al dente
olan pirince ıstakoz suyunu ekleyin . 10 dakika boyunca karıştırarak pişirin. Suyunu çektiğinde 1 çay bardağı beyaz şarabı ilave
edin. Hafif su kalacak şekilde ocaktan alın. Siyah trüf mantarı püresini ekleyin . 250 gr toz parmesanı ocaktan aldığınız risotto ile
hızlı bir şekilde karıştırarak bağlayın.
