DELICIOUS RECIPES FOR THE BBQ 

I had my first English 

strawberry this week, and my 

word, it was beyond delicious 

- perfectly sweet, it was a 

very good advert for eating 

seasonally. I’ve tried to echo 

this in all my recent fruit and 

vegetable purchases, and it’s 

had a transformative effect on 

my cooking - everything just 

tastes better - more vibrant, 

needing less seasoning and 

just overall very tasty.

Poundbury 

Poundbury, the urban extension developed by the 

Duchy of Cornwall, to the West of the county town 

of Dorchester, is 30 years old. The population is now 

more than 4,900 and when the project is completed, 

over 2,700 homes will have been established... 

THE FINAL PHASES 

Work has commenced on the North West quadrant. This will 

provide 205 new homes, including further integrated affordable 

housing, together with seven commercial premises over the next 

four years. The architecture will reflect both the Arts and Crafts 

and the Queen Anne Revival styles. The Northern quadrant 

continues, together with Crown Square and Chapel Place, 

overlooking the Great Field. 

ECOLOGY AND SUSTAINABILITY 

Incorporation of evolving sustainability and habitat creation 

opportunities continues. The second array of public EV chargers, 

north of Queen Mother Square, will open in May. An increasing 

number of rooftop photovoltaic installation proposals are being 

received and approved. Bird boxes are incorporated into every 

build phase, with guidance from the RSPB and averaging at least 

one per dwelling. Other initiatives include further tree planting, 

provision for bats, hedgehogs, bees and encouraging the 

increasingly diverse flora. 

The Great Field, with over 400 trees, 35,000 shrubs, three 

wildflower meadows, a network of paths and the Pavilion café 

(Pip’s) in the centre, is well established and being enjoyed by all

magnificent timber equipment is proving especially popular since 

being opened in May last year. 

LATEST BUSINESSES NEWS 

The areas currently being completed include Crown Square; 

landscaped gardens with trees and seats, surrounded by 

an eclectic mix of homes, shops and offices. More than 250 

employment locations now exist over Poundbury, including 

shops, cafés, public houses, restaurants, offices and factories, 

providing more than 2,600 job opportunities. They are integrated 

throughout the development, with a focus on the four hubs – 

Queen Mother Square, the Buttermarket, Pummery Square and 

more recently Crown Square. Businesses range from small family 

run artisan shops, popular destination outlets such as Boos 

Toy Shop, through to the Poundbury Garden Centre and the 

Charbonnel et Walker chocolate factory (with seconds shop….)

INGREDIENTS: 

24 Small ribs of Lamb 

3 tbsp Maldon® Salt 

3 tbsp Parsley, chopped 

2 Garlic cloves 

3-4 tbsp Extra virgin olive oil 

METHOD: 

Remove the lamb chops from the fridge, 

cover them lightly with oil and leave them 

to rest at room temperature. 

Wash, dry and peel the parsley, chop 

it finely before placing it on the mortar. 

Crush it together with Maldon Salt and 

garlic until it forms a paste. Cover and 

set aside. 

Heat the grill, greasing the griddle with 

olive oil. Lightly grease the chops with 

extra virgin olive oil once the barbecue 

is hot. 

INGREDIENTS: 

4 Large, clean, frozen Squid 

1 tbsp Freshly ground black pepper 

Maldon® Salt 

Black pepper 

3 tbsp Extra virgin olive oil 

1 ½ Lemons 

METHOD: 

Defrost the squid in the fridge overnight. 

Once they have fully defrosted, wash 

and then dry on kitchen roll. Cover on all 

sides with 1 tbsp of olive oil, place them 

on a tray and leave them to rest at room 

temperature. 

Wash and dry the lemons, then slice them 

into quarters or eighths. Heat the grill to 

240º C. Close the lid and wait 

10 minutes before opening. Distribute the 

squid over the grill and cook on full heat 

for 4 minutes on each side. 

Arrange the squid on a serving dish, 

drizzle on the rest of the olive oil, season 

with Maldon Salt and pepper, and serve 

with the lemons.

ROSEMARY 

BUTTER 

THE PERFECT SUMMER DESSERT - FRESHLY BAKED 

APRICOTS COATED WITH A ROSEMARY, BUTTER GLAZE. 

SPRINKLE A GENEROUS PINCH OF MALDON SALT TO 

ENHANCE THE SWEETNESS OF THE FRESH APRICOTS. 

INGREDIENTS: 

8 Fresh apricots 

100 g Butter (room temperature) 

2 Sprigs of fresh rosemary 

3 tbsp Brown sugar 

Maldon® Salt 

METHOD: 

Cut the butter into slices, put it 

in the liquidiser together with the 

washed and prepared rosemary. Add 

the sugar and blend at maximum 

speed for 2 minutes. Put the mixture 

into a bowl, let it soften at room 

temperature. Heat the oven to 160ºC. 

Wash the apricots and cut into the 

top of each apricot. Open up the cut 

with a knife and insert a portion of 

butter into each 

cut. Spread 

the rest of the 

butter over the 

dish. 

Put the dish in 

the oven and 

bake for 20 

30 minutes on 

indirect heat. 

Once they begin 

to brown slightly, 

take out 

of the oven and serve 

with a sprinkle of Maldon 

Salt. On a hot summer’s day, 

serve with vanilla ice cream, 

cream or frozen yogurt.

Active Travel Now Accounts for 

20% of all the Activity Time taken by 

Adults in England 

3.2 million more English people used active travel in 2022 compared with 2021... A survey of 

180000 people by Active Travel England found that activity levels have returned to pre pandemic 

levels. Travel habits have seen the greatest change. Around 20% of all activity minutes were 

accounted for by walking and cycling. 

A recent Sport England survey found that 20% of adults are now 

walking or cycling rather than using the car due to cost of living 

increase. This figure comes from a “semi regular” smaller survey of 

2000 adults and 450 children. 

Active Travel England is supporting this movement towards 

walking and cycling by working alongside councils to improve the

infrastructure to deliver high quality routes and crossings to high 

streets, schools and workplaces. 

Chris Boardman, Sport England Chair and National Active Travel 

Commissioner said “it’s fantastic that more people are choosing to 

walk or ride for everyday trips. Just a few minutes of activity every day 

can make a huge difference to people’s physical and mental health 

and of course, it is free transport, so it’s saving money too.” 

Meanwhile, a German Study, where electric bike usage is greater than 

in the UK, finds that the use of Electric Bikes can drop heart rate and 

reduce cancer risks. The Director of the study Uwe Tegtbur expressed 

surprise at just how far the medical benefits went. Riding between 10 

and 12 miles a day by electric bike would have a contributory effect of 

reducing cholesterol levels. 

This data was from a study of 1879 people from Germany recording 

data. Of these 1250 rode electric bikes and the survey admits that 

they tended to be older and have a “greater body mass”. The data 

was collected over a 4 week period with a smart watch measuring 

heart rate data, cycling time and distances covered.

ON YOUR MARKS, GET SET, GO! 

We all want our children to have the best start in 

life and to fly out of the blocks. At Sherborne Prep 

School (SPS) we know how valuable a positive 

introduction to school life is. Mr Tom Briggs, Year 

1 Teacher at Sherborne Prep School tells us more... 

I was thrilled to join the team at the 

Pre-Prep in September 2022 as the Year 

1 teacher. I already knew a lot about the 

school, as both my children are in the 

Pre-Prep (my younger in Reception and 

my older in Year 2); it’s become a bit of a 

family affair! 

So I speak from experience on both sides 

of the fence when I say that at SPS we 

really do provide the best educational 

start. We keep class sizes deliberately 

small, enabling teachers to really 

understand their pupils, where they excel 

and where they need support. This close 

relationship means that we recognise 

potential and nourish it early on. 1:1 work 

is standard across the Pre-Prep, and all 

children read every day to an adult. 

We were all delighted to receive a recent 

visit from the Independent Schools 

Inspectorate (January 2023) as it gave us 

the opportunity to show the inspectors 

what a fantastic school we have. We were 

even more delighted to find that they 

agreed with us! The recently released 

report found that SPS was found to be 

excellent in ALL areas. 

Children can join us the term they turn 

three, in our self-contained Nursery. 

Outdoor learning happens daily, with 

a fantastic separate and secure play 

space just for our youngest learners. 

Overlooking our orchard (complete with 

climbable apple trees!) our three-yearolds 

quickly adapt to their first school 

setting (they eat lunch in the main Prep 

dining hall) and can see the progression 

they will make as they join Reception in 

the Pre-Prep building. 

Our light and airy classrooms in the 

modern Pre-Prep afford a perfect start 

to a child’s formal education. Reception 

has a double sized classroom, with plenty 

of room for free play in several role play 

areas; budding veterinarians have loved 

recently playing in the ‘vets’ area Grace 

Finney (our Reception teacher) spent 

part of her halfterm building! They’ll have 

the chance to put their play into action 

soon as we begin to introduce animals to 

the Pre-Prep; guinea pigs are top of the 

wish list! 

A Pre-Senior Baccalaureate school, 

we teach Pre-Prep children to be 

independent, work together, respect 

each other and to persevere to overcome 

adversity. Thus, ensuring that, from 

Nursery onwards, children grow to be 

life-long resilient, collaborative learners. 

We encourage children in Reception to 

climb the weekly ‘Challenge Mountain’ 

completing independent tasks. We 

provide those in Year 1 and 2 with an 

increasing amount of independence and 

leadership roles as they grow to be the 

biggest fish in the Pre-Prep pond. 

We give all Pre-Prep children the best 

opportunities to explore who they are and 

what they enjoy. We have an extensive 

enrichment programme that (aside from 

one or two externally provided options) 

is included within our competitive termly 

fee. Violin, recorder, samba, choir? Why 

not try them all?! Tennis, golf, dance, 

gym? Sport is covered! Coding, art, DT? 

Creativity after hours is no issue. Our 

newly introduced Head’s Awards for 

Pre-Prep could make a private education 

more affordable. 

A unique offering at SPS is provided by 

our recent merger with Sherborne School 

(SS). We are a secure school, which 

will withstand the knocks and bumps 

that inevitably come with straightened 

times. Children benefit from the fantastic 

facilities of the Sherborne Group (SPS, 

SS and Sherborne International). PE 

lessons take place either on site on our 

own sports pitches, or in the Group’s 

recently refurbished multimillion-pound 

sports centre with heated indoor 25m 

swimming pool. 

Performances regularly take place at 

Greenfields, the SS music centre and 

Sherborne Abbey. Again, the smallest at 

the beginning of their educational journey 

benefit from seeing the road ahead, laid 

out smoothly in front of them. 

Pre-Prep children love their specialised 

music, French, DT, IT, and art lessons 

(every child exhibits their artwork in 

our end-of-year gallery exhibition). The 

Pre-Prep in-class curriculum (English, 

Geography, Science and History) is 

topicbased, with many cross-curricular 

links ensuring that children really do make 

the best possible start to their education. 

Weekly Forest School visits mean that all 

children grow in understanding their role 

within nature and their responsibility for 

it. The School’s active Friends Committee 

recently refurbished our on-site pond, 

providing a superb dipping site in which 

to catch tadpoles! 

Termly external visits –highlights so far 

this year include Wookey Hole and Corfe 

Castle – broaden children’s education 

outside the classroom. 

My daughters are now in their third year 

at SPS, and I can say, without a doubt, 

that choosing the Pre-Prep for them 

was the right decision. They love going 

to school and complain when it’s the 

weekend or holidays! Fast starts? At

runway and soaring before you know

Beautiful local gardens to explore 

The National Garden Scheme gives visitors unique access to over 3,500 exceptional private 

gardens in England, Wales, Northern Ireland and the Channel Islands. In 2022 they raised 

over £3.11 million for nursing and health charities through admissions, teas and cake. 

Here are just some of the gardens you can visit in your area... 

planted with shrubs, roses, grasses, 

masses of unusual perennials and 

annuals to give vibrancy and colour into 

the autumn. Lawns and paths lead to 

a less formal area with a large wildlife 

pond, meadow, shaded areas, bog 

garden, late summer border. Orchard and

Summer is here, and our regular 

contributor Matt Biggs tells us how 

we can make the most of our gardens 

with a few helpful tips... 

Hopefully your garden is now having a lovely growing time, higher 

light levels, more heat and off it goes. That also applies to the 

weeds so a good hoe in dry weather will sort them out – and if 

the task seems too great just do a bit at a time. There are few 

things more satisfying after a bad day at work than taking a hoe 

to an unsuspecting weed and a regular ten minutes in the garden 

can produce a good result. 

Hanging baskets and pots can safely emerge now and if you 

have moved into a new house recently and are faced with a 

bare and unloved patch, adding some instant colour in pots and 

baskets will cheer things up - and when you have got your space 

sorted out you can plant out the contents of the pots. 

Manicured lawns are great – but is there space for a wildlife 

corner too? We know how hard-hit nature is just now and 

anything we can do to help adds up. Imagine a whole street 

giving up just a couple of metres each to nature, it would make a 

great wildlife corridor and bees, birds and insects would benefit 

so much from it.

This is also the time of the year for country shows and fêtes. 

Local fêtes offer the chance to meet your neighbours, check out

and a good cuppa. Shows are a fabulous family day out, lots to 

see and do, lots of educational activities and a lot of fun so do 

check to see what is going on in your area.

each resident getting a single red rose and chocolates, topped 

with a steak meal followed by a homemade strawberry he 

gateau and a glass of champagne.

Going strong 

Grassby & Sons 160 years of 

service to the community 

Grassby & Sons is a family-owned funeral 

director and memorial masons in Dorset. 

When founding father Benjamin Grassby 

moved to Dorchester in 1861 he could 

not have imagined the business would 

have been thriving six generations later – 

and still being run by family members. 

Benjamin was a renowned stone carver 

and with his family was responsible for 

a lot of masonry work during the 19th 

century in many Dorset churches during 

the Gothic revival as well as buildings 

such as the Corn Exchange, Dorset 

County Museum and Eldridge Pope 

Brewery. 

The family stonemasonry business 

continued down through the successive 

generations until Clinton Grassby, 

together with his brother Tony, opened 

Grassby Funeral Service in Princes 

Street, Dorchester in 1970. 

And how the business has developed 

since then. Peter Grassby and his brother 

David have been overseeing the funeral 

business for the last 40 years together 

with David’s son Nick who joined in 2017 

after a law career. Peter, Nick and Andrew 

Fooks now care for local families at their 

time of need at their Dorchester branch 

and Peter’s son William is emulating his 

uncle Andrew Grassby and of course his 

great-great-great grandfather Benjamin in 

carrying on with the family’s stone carving 

skills at Grimstone, Dorset - albeit with 

the help of 21st century technology. 

During the last 40 years the funeral 

business has expanded with the family 

acquiring a number of other local funeral 

directors. These include Rose Funeral 

Service and Grassby & Stockting serving 

Weymouth & Portland and the family are 

proud to work with Sam Wilding, Melody 

Hopkins and Paul Buddin in these 

branches, who look after families in south 

Dorset with dedication and a strong 

identity with the area. 

North Dorset families are served by Colin 

J Close Funeral Service in Blandford and 

Grassby & Close in Sturminster Newton. 

The family have even crossed the border 

into Devon, acquiring Potburys Funeral 

Service of Sidmouth in the early 1990s 

and Hansfords of Seaton and Beer, 

together with Norton Memorial Masons of 

Axminster. 

Although all these branches primarily 

care for the funeral needs of their clients, 

they are all supported by the original 

stonemasonry side of the business set up 

160 years ago by Benjamin Grassby. 

In recent years there have been 

interesting developments in the nature 

of funerals with a more personal style of 

service which celebrates a person’s life or 

indeed with families also able to have a 

less traditional funeral. 

An eco-friendly trend has also been 

evident in the funeral industry with 

the rise of green burial practices, 

biodegradable coffins and a growing 

sensitivity towards issues regarding 

waste, renewal and sustainability. Indeed, 

the company has recently purchased two 

hybrid hearses and a hybrid limousine. 

They hope Benjamin would be proud.
