Pistachio And Lemon<br />
Snack Cake<br />
Introduction<br />
Delight your afternoon tea guests with this joyous one-tin bake<br />
from The Great British Bake Off’s first ever champ, Edd Kimber.<br />
This simple pistachio cake is made in a food processor, so it takes<br />
just minutes to prepare, and the machine does all the heavy lifting<br />
for you. Serve it with a simple lemon and sugar glaze and sprinkle<br />
with a few roughly chopped pistachios and dried rose petals.<br />
Method<br />
1. Preheat the oven to<br />
180°C/160°C Fan/Gas mark 4.<br />
Lightly grease your 15x40cm<br />
baking tin and line with a strip of<br />
parchment paper that overhangs<br />
the long sides, securing it in<br />
place with metal clips.<br />
2. Place the pistachios in the bowl<br />
of a food processor fitted with the<br />
blade attachment and pulse until<br />
they are finely ground. Tip into a<br />
large bowl along with the ground<br />
almonds, flour, baking powder<br />
and salt and mix together.<br />
3. Put the sugar, eggs and lemon<br />
zest in the processor bowl and<br />
process for about a minute.<br />
With the machine still running,<br />
slowly pour in the oil. Once<br />
fully combined, add the mixed<br />
dry ingredients and process for<br />
a second or two until evenly<br />
incorporated. Pour the batter<br />
into the prepared tin and<br />
spread evenly.<br />
4. Bake for 35–40 minutes, or<br />
until lightly browned and the<br />
cake is set in the middle. Set<br />
aside to cool completely in the<br />
tin before using the parchment<br />
paper to lift it out.<br />
Ingredients<br />
(10 to 12 servings)<br />
For the cake<br />
• 200ml olive oil, plus extra<br />
for greasing<br />
• 140g shelled pistachios, plus<br />
a few extra for decoration<br />
• 65g ground almonds<br />
• 65g gluten-free plain flour<br />
• 1 tsp baking powder<br />
• 1 tsp fine sea salt<br />
• 200g caster sugar<br />
• 4 large eggs<br />
• Zest of 1 lemon<br />
For the glaze<br />
• 200g icing sugar<br />
• 2–3 tablespoons lemon juice<br />
• Pinch of fine sea salt<br />
• Chopped pistachios<br />
• Dried rose petals<br />
5. For the glaze, mix the icing<br />
sugar, lemon juice and salt in a<br />
bowl until you have a thick but<br />
pourable paste. Pour it over the<br />
cake, allowing it to drip down the<br />
sides. Sprinkle with a few extra<br />
chopped pistachios and dried<br />
rose petals to decorate.<br />
Top tips<br />
• To make this cake vegan, swap<br />
out the eggs with this alternative:<br />
1 tablespoon of ground flaxseed<br />
and 3 tablespoons of water for<br />
every chicken’s egg<br />
• If stored in a sealed container, the<br />
cake should keep for 3–4 days

Why Dermot O’Leary is one of light<br />
entertainment’s heaviest commodities.<br />
Dermot O’Leary, by his own<br />
admission, encounters his<br />
fair share of criticism. Some<br />
accuse him of playing a<br />
little too much guitar music<br />
on his Radio 2 weekend<br />
show, and in the past the<br />
Twitterati have suggested<br />
his presenting voice can be<br />
a touch monotone. However,<br />
such observations are both<br />
unfair and untrue. Rather,<br />
the popular entertainment<br />
fraternity should be thanking<br />
the 50-year-old for delivering<br />
a healthy dose of sanity to a<br />
TV and radio ratings clamour<br />
that becomes all<br />
the more farcical with<br />
every new reality series or<br />
sensationalist podcast.<br />
Dermot has lived through<br />
well over two decades of the<br />
madness, and emerges to<br />
tell the tale. “Certainly, as<br />
a competitive environment<br />
it’s much crazier than it ever<br />
was,” he begins. “There are<br />
so many different options for<br />
viewers and listeners these<br />
days, but I<br />
like to think<br />

sided myself with<br />
projects that are<br />
tasteful, interesting<br />
and, more than<br />
anything else, entertaining.<br />
“I’ve always had a lot of fun<br />
doing live TV and radio, and<br />
when it stops being that way, I<br />

many different things, and I<br />
never lose sight of the fact I’m<br />
lucky enough to explore these<br />

Sean Dermot Fintan O’Leary<br />
Jr was born and raised in<br />
Colchester. His parents, Seán<br />
and Maria, had landed on<br />
these shores from Ireland.<br />
After feeling his way through<br />
the education system he<br />
attended Middlesex University,<br />
where he graduated in Media<br />
Studies and Politics.<br />
Returning to his home county<br />
to work at BBC Radio Essex,<br />
that calling was clearly in the<br />
entertainment industry, and<br />
he quickly progressed from DJ<br />
tasks to TV school runner and<br />
Channel 4 presenter, working,<br />
notably, on Big Brother’s Little<br />
Brother before switching to ITV.<br />
“I think most people know me<br />
for Big Brother and X Factor,<br />
and they’ve been a massive<br />
part of my life, but as in most<br />
things, you know when the<br />
time is right to give stuff up,<br />
and it became important for<br />
me to pursue other projects.”<br />
His switch to hosting the<br />
Saturday morning breakfast<br />
show on Radio 2 is perhaps a<br />
nod to future ambitions, and<br />
undoubtedly Dermot has the<br />
style, humility and confidence<br />
to make a genuine assault on<br />
larger commitments on the<br />
airwaves.<br />
“I think radio is an incredible<br />
medium and it has always<br />
excited me. It’s a very different<br />
creature to TV… I don’t have<br />
to dress up, for a start!”

The 60th Anniversary<br />
of the Great Train<br />
Robbery<br />
Looking back 60 years ago this month,<br />
to when a gang of 15 criminals stole<br />
£2.6million in bank notes from a Royal Mail<br />
railway service.<br />
On August 8, 1963, every major<br />
news agency in every major<br />
city around the world was<br />
preparing to report on events<br />
that took place at the Bridego<br />
railway bridge in leafy Ledburn,<br />
Buckinghamshire, as a group<br />
of 15 robbers, led by Bruce<br />
Reynolds, robbed the Royal<br />
Mail train bound for London.<br />
The gang had planned the heist<br />
meticulously - the robbery itself<br />
lasting for around 15 minutes<br />
and saw £2.6million in cash<br />
taken (equivalent to around<br />
£50million today). While the<br />
getaway was clean, police<br />
quickly launched a massive<br />
investigation, and many of<br />
the robbers were eventually<br />
caught (three evaded capture<br />
completely) and sentenced to<br />
long prison terms.<br />
The Great Train Robbery was<br />
one of the most daring and<br />
audacious heists of the 20th<br />
century and has continued to<br />
capture the public’s interest for<br />
decades, so much so that it<br />
has been the subject of<br />
numerous <strong>book</strong>s, films,<br />
and documentaries.<br />
Ronald ‘Buster’ Edwards<br />
managed to escape with a<br />
share of the loot and after a<br />
spell in Mexico returned to<br />
the UK and settled in London.<br />
However, he was eventually<br />
arrested and charged with<br />
conspiring to rob another bank,<br />
and sentenced to 15 years in<br />
prison. His life was documented<br />
in the 1988 film Buster, in<br />
which he was played by Phil<br />
Collins – the story seen as a<br />
nod to the allure and<br />
the eventual downfall of<br />
criminal life.<br />
Nine of the 15 criminals were<br />
arrested in South London three<br />
weeks after the robbery and<br />
were subsequently found guilty<br />
- most sentenced to 30 years in<br />
prison. Ronnie Biggs, however,<br />
escaped from prison in 1965,<br />
had plastic surgery and<br />
spent many years on the run,<br />
eventually ending up in Brazil.<br />
In 2001, he returned to the UK<br />
voluntarily and was arrested,<br />
serving several years in prison<br />
before being released on<br />
compassionate grounds.<br />
The legacy from the heist had<br />
huge repercussions. Royal Mail<br />
were forced to significantly<br />
upgrade its security measures,<br />
while the depth of the<br />
investigation into the robbery<br />
led to a need for greater<br />
complexity in policework,<br />
welcoming in a generation that<br />
began to embrace methods<br />
such as fingerprinting and,<br />
nowadays, the ability to solve<br />
crime using CCTV – of which<br />
there was none in the case<br />
of the Great Train Robbery<br />
despite its gradual introduction<br />
in commercial settings – and<br />
forensic techniques, including<br />
DNA testing.

The less than humble Sunflower<br />
The sunflower became<br />
symbiotic with adoration and<br />
loyalty thanks to the myth<br />
perpetuated through the water<br />
nymph Clytie’s passionate love<br />
for the sun god Apollo.<br />
Unfortunately, Clytie’s love was<br />
unrequited. This saw Apollo<br />
worship the sun instead of<br />

famous painting of Van Gogh’s<br />
Sunflower was due to his<br />
fondness for the colour yellow,<br />
and in a letter to his brother he<br />

name – with ‘Helios’ meaning<br />
sun and ‘anthos’ flower, and the<br />
sunflower contains as many<br />
as 2,000 seeds. Indeed, it is<br />
actually not just one flower,<br />
but thousands of tiny little<br />
ones, with the tallest on record<br />
growing to over 30ft in height.<br />

White lilies are the flowers<br />
most used at funerals and<br />
memorials in Britain, with the<br />
colour standing for serenity<br />
and peace. On this note, its<br />
relatively fleeting lifespan (10-<br />
14 days, on average), is said to<br />
have a lot in common with that<br />
of human existence – we are<br />
here, then we are gone.<br />
There are a host of other<br />
colours that imply different<br />
meanings and emotions: light<br />
pink stands for elegance,<br />
femininity and generosity;<br />
dark pink is said to mean<br />
prosperity, abundance and<br />
ambition; yellow is happiness,<br />
gratitude and healing; while<br />
orange lilies speak confidence,<br />
encouragement and wealth.<br />
The Lilium (Latin) has a genus<br />
of between 80 and 100 species,<br />
yet they can wildly range in size<br />
from a fairly diminutive plant<br />
barely 25cm off the ground, to<br />
others than scale up to 7ft tall.<br />
The resplendent Rose<br />
There are an amazing number<br />
of rose varieties in the United<br />
Kingdom - over 150 in total,<br />
and more than 300 globally.<br />
The UK’s favourite is the Hybrid<br />
Tea, which is large and has<br />
well-formed blooms, which<br />
are pointed, yet are highmaintenance<br />
and probably the<br />
least enduring rose.<br />
Polyantha are known<br />
specifically for their bloom and<br />
are familiar because of their<br />
clusters of smaller flowers<br />
coming in different shades of<br />
white, red and pink. Floribunda,<br />
meanwhile, are a cross<br />
between Polyantha and Hybrid.<br />
The botanical name for the<br />
rose is Rosa rubiginosa and<br />
the etymology spans through<br />
Greek and Persian culture and<br />
heritage. Mostly given as a<br />
romantic gift on Valentine’s Day<br />
and birthdays, the red rose is<br />
the ultimate icon of love and<br />
romance, but there are other<br />
colours and assortments<br />
with meanings.<br />
Orange roses illustrate passion,<br />
excitement and energy; yellow<br />
indicate joy, friendship and<br />
gladness; while a soft shade<br />
such as peach is used to<br />
signify gratitude or a feeling<br />
of sincerity. Choosing a colour<br />
which symbolises an emotion is<br />
an art that takes practice, but<br />
no matter what you choose to<br />
give or grow, the pleasure is<br />
always yours!
