Edd Kimber’s Olive Oil,
Pistachio And Lemon
Snack Cake
Introduction
Delight your afternoon tea guests with this joyous one-tin bake
from The Great British Bake Off’s first ever champ, Edd Kimber.
This simple pistachio cake is made in a food processor, so it takes
just minutes to prepare, and the machine does all the heavy lifting
for you. Serve it with a simple lemon and sugar glaze and sprinkle
with a few roughly chopped pistachios and dried rose petals.
Method
1. Preheat the oven to
180°C/160°C Fan/Gas mark 4.
Lightly grease your 15x40cm
baking tin and line with a strip of
parchment paper that overhangs
the long sides, securing it in
place with metal clips.
2. Place the pistachios in the bowl
of a food processor fitted with the
blade attachment and pulse until
they are finely ground. Tip into a
large bowl along with the ground
almonds, flour, baking powder
and salt and mix together.
3. Put the sugar, eggs and lemon
zest in the processor bowl and
process for about a minute.
With the machine still running,
slowly pour in the oil. Once
fully combined, add the mixed
dry ingredients and process for
a second or two until evenly
incorporated. Pour the batter
into the prepared tin and
spread evenly.
4. Bake for 35–40 minutes, or
until lightly browned and the
cake is set in the middle. Set
aside to cool completely in the
tin before using the parchment
paper to lift it out.
Ingredients
(10 to 12 servings)
For the cake
• 200ml olive oil, plus extra
for greasing
• 140g shelled pistachios, plus
a few extra for decoration
• 65g ground almonds
• 65g gluten-free plain flour
• 1 tsp baking powder
• 1 tsp fine sea salt
• 200g caster sugar
• 4 large eggs
• Zest of 1 lemon
For the glaze
• 200g icing sugar
• 2–3 tablespoons lemon juice
• Pinch of fine sea salt
• Chopped pistachios
• Dried rose petals
5. For the glaze, mix the icing
sugar, lemon juice and salt in a
bowl until you have a thick but
pourable paste. Pour it over the
cake, allowing it to drip down the
sides. Sprinkle with a few extra
chopped pistachios and dried
rose petals to decorate.
Top tips
• To make this cake vegan, swap
out the eggs with this alternative:
1 tablespoon of ground flaxseed
and 3 tablespoons of water for
every chicken’s egg
• If stored in a sealed container, the
cake should keep for 3–4 days

Why Dermot O’Leary is one of light
entertainment’s heaviest commodities.
Dermot O’Leary, by his own
admission, encounters his
fair share of criticism. Some
accuse him of playing a
little too much guitar music
on his Radio 2 weekend
show, and in the past the
Twitterati have suggested
his presenting voice can be
a touch monotone. However,
such observations are both
unfair and untrue. Rather,
the popular entertainment
fraternity should be thanking
the 50-year-old for delivering
a healthy dose of sanity to a
TV and radio ratings clamour
that becomes all
the more farcical with
every new reality series or
sensationalist podcast.
Dermot has lived through
well over two decades of the
madness, and emerges to
tell the tale. “Certainly, as
a competitive environment
it’s much crazier than it ever
was,” he begins. “There are
so many different options for
viewers and listeners these
days, but I
like to think
I have always
sided myself with
projects that are
tasteful, interesting
and, more than
anything else, entertaining.
“I’ve always had a lot of fun
doing live TV and radio, and
when it stops being that way, I
look for something else to do.
“Variation is key. Like most
people, I’m interested in so
many different things, and I
never lose sight of the fact I’m
lucky enough to explore these
in the public domain.”
Sean Dermot Fintan O’Leary
Jr was born and raised in
Colchester. His parents, Seán
and Maria, had landed on
these shores from Ireland.
After feeling his way through
the education system he
attended Middlesex University,
where he graduated in Media
Studies and Politics.
Returning to his home county
to work at BBC Radio Essex,
that calling was clearly in the
entertainment industry, and
he quickly progressed from DJ
tasks to TV school runner and
Channel 4 presenter, working,
notably, on Big Brother’s Little
Brother before switching to ITV.
“I think most people know me
for Big Brother and X Factor,
and they’ve been a massive
part of my life, but as in most
things, you know when the
time is right to give stuff up,
and it became important for
me to pursue other projects.”
His switch to hosting the
Saturday morning breakfast
show on Radio 2 is perhaps a
nod to future ambitions, and
undoubtedly Dermot has the
style, humility and confidence
to make a genuine assault on
larger commitments on the
airwaves.
“I think radio is an incredible
medium and it has always
excited me. It’s a very different
creature to TV… I don’t have
to dress up, for a start!”

WHAT IS ANDYS MAN CLUB?
Andys Man Club is a free peer-to-peer group that provides
a place for men to come together in a safe and open
environment to talk about the issues or problems that they
have faced or are currently facing.
HOW DOES IT WORK?
The process is about bringing men together who have been
in similar situations, to each help each other on a peerto-peer
basis, sharing advice on how they have dealt with
difficult situations. The 5 questions that are asked each
week are designed not only to encourage men to talk, but
to start to focus on the positives and on strategies to keep
moving forward. There is no pressure to answer any of the
questions and it is not uncommon for men to just listen for
the first few sessions.
The clubs all run on the same format and adhere to the
same guidelines. A key principle of Andys Man Club is
anything that is said in the club, stays within the club.

The club is open to any man 18 or over, who is going
through a storm, been through a storm or just wants to
meet a good group of people with the aim of improving one
another.

The 60th Anniversary
of the Great Train
Robbery
Looking back 60 years ago this month,
to when a gang of 15 criminals stole
£2.6million in bank notes from a Royal Mail
railway service.
On August 8, 1963, every major
news agency in every major
city around the world was
preparing to report on events
that took place at the Bridego
railway bridge in leafy Ledburn,
Buckinghamshire, as a group
of 15 robbers, led by Bruce
Reynolds, robbed the Royal
Mail train bound for London.
The gang had planned the heist
meticulously - the robbery itself
lasting for around 15 minutes
and saw £2.6million in cash
taken (equivalent to around
£50million today). While the
getaway was clean, police
quickly launched a massive
investigation, and many of
the robbers were eventually
caught (three evaded capture
completely) and sentenced to
long prison terms.
The Great Train Robbery was
one of the most daring and
audacious heists of the 20th
century and has continued to
capture the public’s interest for
decades, so much so that it
has been the subject of
numerous books, films,
and documentaries.
Ronald ‘Buster’ Edwards
managed to escape with a
share of the loot and after a
spell in Mexico returned to
the UK and settled in London.
However, he was eventually
arrested and charged with
conspiring to rob another bank,
and sentenced to 15 years in
prison. His life was documented
in the 1988 film Buster, in
which he was played by Phil
Collins – the story seen as a
nod to the allure and
the eventual downfall of
criminal life.
Nine of the 15 criminals were
arrested in South London three
weeks after the robbery and
were subsequently found guilty
- most sentenced to 30 years in
prison. Ronnie Biggs, however,
escaped from prison in 1965,
had plastic surgery and
spent many years on the run,
eventually ending up in Brazil.
In 2001, he returned to the UK
voluntarily and was arrested,
serving several years in prison
before being released on
compassionate grounds.
The legacy from the heist had
huge repercussions. Royal Mail
were forced to significantly
upgrade its security measures,
while the depth of the
investigation into the robbery
led to a need for greater
complexity in policework,
welcoming in a generation that
began to embrace methods
such as fingerprinting and,
nowadays, the ability to solve
crime using CCTV – of which
there was none in the case
of the Great Train Robbery
despite its gradual introduction
in commercial settings – and
forensic techniques, including
DNA testing.

Flower Power
When it comes to the UK’s favourite flowers,
which rank highest?
In these golden months, we
find ourselves surrounded by
the moods, smells, flavours
and essences of British
summertime.
Our gardens respond by
reaching full bloom, and in
sunflowers, lilies and roses,
we have a wonderland of
variety to explore.
The less than humble Sunflower
The sunflower became
symbiotic with adoration and
loyalty thanks to the myth
perpetuated through the water
nymph Clytie’s passionate love
for the sun god Apollo.
Unfortunately, Clytie’s love was
unrequited. This saw Apollo
worship the sun instead of
his number one fan and the
sunflower follows suit. The
famous painting of Van Gogh’s
Sunflower was due to his
fondness for the colour yellow,
and in a letter to his brother he
wrote, “The Sunflower is mine.”
Helianthus is the flower’s Latin
name – with ‘Helios’ meaning
sun and ‘anthos’ flower, and the
sunflower contains as many
as 2,000 seeds. Indeed, it is
actually not just one flower,
but thousands of tiny little
ones, with the tallest on record
growing to over 30ft in height.
The luscious Lily
Symbolising passion and
love, lilies are bright and fiery
flowers, with the red variety
perhaps the most inspiring.
Similar to sunflowers, they
have long had association with
fertility, purity and devotion, and
that means they’re perennially
popular for links with new life
and rebirth.
White lilies are the flowers
most used at funerals and
memorials in Britain, with the
colour standing for serenity
and peace. On this note, its
relatively fleeting lifespan (10-
14 days, on average), is said to
have a lot in common with that
of human existence – we are
here, then we are gone.
There are a host of other
colours that imply different
meanings and emotions: light
pink stands for elegance,
femininity and generosity;
dark pink is said to mean
prosperity, abundance and
ambition; yellow is happiness,
gratitude and healing; while
orange lilies speak confidence,
encouragement and wealth.
The Lilium (Latin) has a genus
of between 80 and 100 species,
yet they can wildly range in size
from a fairly diminutive plant
barely 25cm off the ground, to
others than scale up to 7ft tall.
The resplendent Rose
There are an amazing number
of rose varieties in the United
Kingdom - over 150 in total,
and more than 300 globally.
The UK’s favourite is the Hybrid
Tea, which is large and has
well-formed blooms, which
are pointed, yet are highmaintenance
and probably the
least enduring rose.
Polyantha are known
specifically for their bloom and
are familiar because of their
clusters of smaller flowers
coming in different shades of
white, red and pink. Floribunda,
meanwhile, are a cross
between Polyantha and Hybrid.
The botanical name for the
rose is Rosa rubiginosa and
the etymology spans through
Greek and Persian culture and
heritage. Mostly given as a
romantic gift on Valentine’s Day
and birthdays, the red rose is
the ultimate icon of love and
romance, but there are other
colours and assortments
with meanings.
Orange roses illustrate passion,
excitement and energy; yellow
indicate joy, friendship and
gladness; while a soft shade
such as peach is used to
signify gratitude or a feeling
of sincerity. Choosing a colour
which symbolises an emotion is
an art that takes practice, but
no matter what you choose to
give or grow, the pleasure is
always yours!
