INGREDIENTS:<br />
1 lb Ground Beef (93% lean or<br />
leaner)<br />
1 c. minced sweet onion<br />
1 c. minced green bell pepper<br />
1 can (14-1/2 oz) unsalted tomato<br />
sauce<br />
1/4 c. barbecue sauce<br />
1/4 c. ketchup<br />
1 tbsp. Worcestershire sauce<br />
2 tsp. packed brown sugar<br />
1 tsp. dry mustard<br />
4 whole wheat hamburger buns or<br />
8 slider buns<br />
Toppings: Dill pickle slices, coleslaw,<br />
American or Cheddar cheese<br />
slices (optiional)<br />
Classic Beef Sloppy Joes<br />
COOKING: Heat large nonstick skillet over medium heat<br />
until hot. Add onion, cook 3 to 5 minutes until golden<br />
brown. Add Ground Beef and bell pepper; cook 8 to 10<br />
minutes, breaking beef into 1/2-inch crumbles and stirring<br />
occasionally.<br />
Cook’s Tip: Cooking times are for fresh or thoroughly<br />
thawed ground beef. Ground beef should be cooked to<br />
an internal temperature <strong>of</strong> 160°F. Color is not a reliable<br />
indicator <strong>of</strong> ground beef doneness.<br />
Stir in tomato sauce, barbecue sauce, ketchup, Worcestershire<br />
sauce, brown sugar and mustard; increase heat to medium-high. Bring to a boil; cook 5 to<br />
10 minutes or until sauce is thickened, stirring occasionally. Season with salt, as desired.<br />
Cook’s Tip: You may add an additional 2 tablespoons barbecue sauce for sweeter, richer flavor.<br />
Divide beef mixture evenly among buns. Top with pickles, coleslaw and cheese, if desired. Close<br />
sandwiches.<br />
Cook’s Tip: You may serve <strong>the</strong> beef mixture over hot cooked whole wheat pasta instead <strong>of</strong> buns.<br />
Determining Doneness<br />
Do you know <strong>the</strong> difference between medium and medium-rare?<br />
Do you like your steak at 145ºF? A meat <strong>the</strong>rmometer<br />
and <strong>the</strong> info below will tell you all you need to know for<br />
<strong>the</strong> perfect beef doneness.<br />
STEAKS: For steaks 1/2 inch or thicker, insert an instantread<br />
<strong>the</strong>rmometer horizontally from <strong>the</strong> side, so that it penetrates<br />
<strong>the</strong> thickest part or <strong>the</strong> center <strong>of</strong> <strong>the</strong> steak, not touching<br />
bone or fat.<br />
For medium-rare <strong>the</strong> temperature should read 145°F, <strong>the</strong><br />
temperature for medium steaks should read 160°F, and well<br />
done is 170°F.<br />
After cooking, let steaks rest before serving.<br />
GROUND BEEF: Ground Beef should be cooked to a<br />
safe and savory 160ºF. Color is not a reliable indicator <strong>of</strong><br />
Ground Beef doneness. Due to <strong>the</strong> natural nitrate content <strong>of</strong><br />
certain ingredients <strong>of</strong>ten used in meatloaf, such as onions,<br />
celery and bell peppers, meatloaf may remain pink even<br />
when a 160 degree Fahrenheit internal temperature has been<br />
reached.<br />
Insert an instant-read <strong>the</strong>rmometer into <strong>the</strong> center <strong>of</strong><br />
thickest part <strong>of</strong> a meatloaf or meatball, or horizontally from<br />
<strong>the</strong> side into <strong>the</strong> center <strong>of</strong> hamburger patties for an accurate<br />
reading.<br />
ROASTS: Insert an ovenpro<strong>of</strong> meat <strong>the</strong>rmometer prior to<br />
roasting into <strong>the</strong> thickest part <strong>of</strong> <strong>the</strong> roast, not resting in fat<br />
or touching bone. Leave <strong>the</strong> <strong>the</strong>rmometer in throughout <strong>the</strong><br />
cooking process.<br />
Or, insert an instant-read <strong>the</strong>rmometer toward end <strong>of</strong><br />
cooking time (as described above) for about 15 seconds to<br />
get an accurate reading. If necessary, remove <strong>the</strong>rmometer<br />
and continue cooking until<br />
<strong>the</strong> roast reaches <strong>the</strong> temperature.<br />
Temperature will continue<br />
to rise 5ºF to 15ºF<br />
after removing from oven,<br />
to reach desired doneness.<br />
Allow 15 to 20 minutes<br />
standing time.<br />
