The 2011 <strong>Victorian</strong> <strong>Industry</strong> Awards Dinner<br />
Approximately 280 members and sponsors gathered at Crown<br />
Promenade Conference Hall for the annual Awards Dinner.<br />
Winners of the Smallgoods and Sausage King Competitions were<br />
announced as well as recipients of other merit awards. Hosted by<br />
Mark Fine of 1116 SEN Radio, the night went off with a bang.<br />
The entertainment was provided by Melbourne Hit Parade, a six<br />
piece band that turned out to be a huge sensation with the crowd.<br />
AMIC honoured Ed Kowalski with an Outstanding Achievement<br />
award for his commitment to AMIC and the industry through<br />
his ongoing work as a <strong>Council</strong>or. The Rocky Di Salvatore Award<br />
for encouragement and achievement was won by Tom<br />
<strong>Victorian</strong> Retail Chairman Frank Russo and Mark Seymour<br />

Dargaville of Flora Hill <strong>Meat</strong>s in Bendigo. Candidates were put<br />
forward by SW TAFE and Tom was selected for his diligence and<br />
excellence in completing his workload.<br />
Paddy Maginn of Paddy’s <strong>Meat</strong>s certainly had the luck of the<br />
Irish taking out two first place categories on the night. A full<br />
list of winners and sponsors is provided in this newsletter.<br />
All in all a great night was had and we now look forward to<br />
the National Sausage King Final to be held in Melbourne on<br />
February 4th at Melbourne’s South Wharf.<br />

After discussion with AMIST Super as a sponsor of the industry<br />
they have generously offered to supply a yearly planner to our<br />
members. One is enclosed with this newsletter. We urge you to<br />
place this on your wall or fold it and keep it in your Food Safety Plan.<br />
Use it to list dates of your regulatory requirements i.e. calibrations,<br />
pest control, internal audit, management review dates and more.<br />
We thank AMIST, in particular Melinda Gibson and Royston Bennett<br />
for listening to our request and supplying these to our members.<br />
There has recently been some negligence when following the<br />
Listeria guidelines. Some members have been repackaging or<br />
cryovacing ready-to-eat meats without undergoing the required testing<br />
regime. These members have been placed on intensified audits, which<br />
can be a big cost factor and at this stage of the year can result in the<br />
banning of smallgoods sales through your shop. We have helped<br />
some members with training so if you are unsure of how to follow<br />
the mandatory guidelines for repackaging ready-to-eat meats, or<br />
require further information please don’t hesitate to contact us.<br />
The first aid course mentioned in the October newsletter is now<br />
taking shape with William Angliss providing the venue and a<br />
registered first aid trainer to present the course. This can be offered<br />
as a classroom situation and a two-day course will provide you with<br />
the certificate of qualification if completed successfully. Interest in<br />
the course should be directed to Ivon Shell of William Angliss on 03<br />
9606 2112 or contact AMIC if you would like more information.<br />
I would like to thank all of the participants in the 2011 Sausage King and<br />
Smallgoods Competitions both metropolitan and regionally for providing<br />
us with yet again superb product and outstanding support in 2011. The<br />
TAFE colleges of Victoria that allow us to use their facilities and provide<br />
us with judging panels perform an excellent service to our industry.<br />
As this will be the final newsletter for 2011 I would like to thank<br />
members for their support of AMIC and hope you that have a wonderful<br />
and profitable Christmas trading period. Your AMIC office will be open<br />

Carlton is a sausage factory, with one sausage maker bringing<br />
home the bacon from the recent 2011 Sausage King awards<br />
Gourmet division for the eastern and northern suburbs. Tony’s<br />
Gourmet Delights was far from the wurst entry, snagging first,<br />
second and third place. Their “Tuscan-inspired” pork, veal, cheese<br />
and herb offering was deemed the best. Owner Tony Tartaglia<br />
(pictured with colleague Julian Webster, left) said he was thrilled<br />
with the “meaty trifecta.” Being frank, MTW won’t mince words;<br />
chop to it and snag yourself a skinful of Tony’s sizzling hot flesh.<br />

A Word from the Auditor<br />

SGS, the appointed auditor for almost all<br />
<strong>Victorian</strong> AMIC ILB members, has a timely<br />
reminder to take note of the change of<br />
season and modify your shop accordingly.<br />
Spring is in the air and the silly season<br />
is almost upon us! It is now a good time<br />
to do a ‘Spring Clean’ and prepare for<br />
the busy months ahead.<br />
Go through your shop and check things like<br />
dry goods/flavours/marinades and ensure<br />
that they are all still within their use by<br />
date. If there is a product you haven’t used<br />
for years, it is very likely that you never<br />
will use it so get rid of it! If anything else<br />
is lying around that you won’t use again,<br />
clean up the clutter as it will make it easier<br />
to maintain the hygiene of your shop.<br />
It is also a good time to check that your<br />
fridges and displays are ready for the<br />
warmer months.<br />
• Are they due for a service?<br />
• If you changed the temperature setting<br />
for winter, lower it now for summer.<br />
• Talk to your staff about being<br />
conscious of the warmer weather and<br />
how much they should bring out of the<br />
chiller at a time to prep.<br />
• Inspect the stacking of product in the<br />
display – if it is too high it won’t keep cold<br />
• Make sure after preparation, product is<br />
chilled down in the coolroom before being<br />
put on display as if it is warm when it<br />
goes in it will not come down in<br />
temperature sufficiently. (Displays are<br />
designed to hold temperature, not chill<br />
