Two AgriFood Business Skills<br />

Workshops took place in September<br />

and October at two-day sessions at the<br />

Riverview Hotel in Brisbane. Thirty of<br />

our Independent Local Butchers and<br />

wholesalers responded to the invitation<br />

to participate in this unique opportunity.<br />

The topics covered were Planning for<br />

your Business, Marketing your Business<br />

and Business Finance.Atwodayworkshop<br />

has been followed with a half day on the<br />

job and a one-on-one coaching session in<br />

the workplace. Andrew Moore, the AgriFood<br />

trainer, provided each attendee with the<br />

tools and strategies to develop and<br />

improve current business practices.<br />

After the completion of the course,<br />

many attendees commented that given<br />

the opportunity to improve their skills<br />

they would be very open to further<br />

learning of this type. The workshops also<br />

resulted in the establishment of new and<br />

extended networks for participants. It is<br />

important in our industry to strengthen<br />

and build networks that can add value to<br />

their businesses by exchanging ideas.<br />

“Looking at the business with fresh eyes<br />

allows you to be more objective. You start to<br />

see a bigger picture, which is really important<br />

for success,” said Dominic Melrose.<br />

AMIC has worked closely with AgriFood<br />

Skills in the development and<br />

implementation of this program.<br />

Originally trialed in Bundaberg, it was<br />

developed as a general skills training<br />

package which could be applied to a range<br />

of agri food pursuits from horticulture to<br />

horse training. AMIC saw the potential of<br />

having this training adapted to retail<br />

butchers and AgriFood Skills arranged to<br />

deliver and fund the project.<br />

The enthusiastic response from the<br />

participants vindicated the AMIC<br />

conviction that such training is needed<br />

and that members will embrace it.<br />

AMIC <strong>Meat</strong> <strong>Industry</strong><br />

Awards Dinner 2010<br />

The 2010 Queensland AMIC <strong>Meat</strong> <strong>Industry</strong> Awards Night<br />

was held at Royal on the Park in Brisbane in October<br />

with 298 in attendance. <strong>Meat</strong> industry members,<br />

partners, sponsors and invited guests were treated to a<br />

sumptuous dinner – generously provided by <strong>Australian</strong><br />

Wholesale <strong><strong>Meat</strong>s</strong>, a range of fine wines (along with beer<br />

and champagne), great entertainment by MC Marco Gliori<br />

and a fun night with the music of the Retromatics.<br />

Kerry Melrose, Chairman of both the Queensland and<br />

National Retail <strong>Council</strong>s commenced the trophy<br />

presentation and congratulated all those who won<br />

awards. A new Hall of Fame was introduced this year for<br />

the National Sausage King, Smallgoods Excellence and<br />

Processor Excellence. Sausage Kings who have won at<br />

least three national titles are inducted into the Hall of<br />

Fame. John & Susanne Clarke from Bayview Butchery are<br />

the only members to qualify in Queensland and join only<br />

two others in the country. Congratulations to John and<br />

Susanne! (Please see page 5 for more on this.)<br />

The Bravehearts Charity Auction<br />

Following AMIC’s auction at the Ham Bacon & Smallgoods Competition last<br />

August that reaped $4,315 to benefit the Bravehearts Charity, another auction<br />

was held at the Awards Dinner and it was a resounding success.<br />

Our very own ‘Marilyn Monroe’ flirted and flitted from table to table adorned in dazzling diamonds<br />

that were up for auction. Thank you to all the generous members, sponsors and guests whose combined<br />

donations raised a total amount of $23,225.00 to top off this wonderful evening. A magnificent effort!!<br />

Member Services Manager Report<br />

2010 is quickly drawing to an end; and a very busy year it<br />

has been for AMIC. We are committed to providing our<br />

members with the very best customer service and this has<br />

been a high priority all year.<br />

The promotional activity for 2010 has been very successful<br />

with coverage of the Sausage King and Butchers Choice<br />

proving to be more effective than previous years. This year,<br />

many articles appeared in newspapers and magazines all over<br />

the state promoting excellence in our industry. This increased<br />

exposure across the region certainly helped to boost members’<br />

profiles and profits.<br />

Entries in the Sausage King, Butchers Choice, Ham, Bacon &<br />

Smallgoods Competitions were up 23% from last year. Our State<br />

Sausage Kings are off to the National Finals in Launceston in<br />

February 2011 and we wish them every success.<br />

An unintended outcome of the recent changes to Beef<br />

Labelling laws in New South Wales is that “Budget Beef”<br />

will now be called “Economy Beef” throughout Australia.<br />

When the New South Wales Government enacted a requirement<br />

that all Budget Beef must have the additional descriptor “low<br />

grade” or “low quality,” AMIC took the initiative to change the<br />

description at the retail counter to “Economy Beef.” No<br />

amount of pressure or argument from AMIC could get this<br />

ridiculous piece of legislation changed.<br />

There is no legal requirement for you to change the description<br />

of “Budget Beef” to “Economy Beef.” Neither is there any<br />

requirement for you to add “low grade” or “low quality” if you<br />

These include trying to sell non slip signs, hand wash<br />

instructions, OH&S pages ($49), enrollment in a business trade<br />

register ($298), and OH&S audits. Please do not participate in<br />

this type of selling and do not give your credit card details over<br />

the phone. Always ask for ID and credentials of salespersons who<br />

“Budget Beef” now called “Economy Beef”<br />

choose to keep the description “Budget Beef.”<br />

The recommendation from the National Retail <strong>Council</strong> to<br />

change to “Economy Beef” is based on commercial factors as<br />

Supermarkets will use “Economy Beef” in advertisements and<br />

point of sale labelling. The choice however, is yours.<br />

AMIC and AUS-MEAT have collaborated in the production<br />

of the Domestic Retail Beef Register which is a guide to<br />

the labeling of beef products at the point of sale.<br />

Developed to ensure compliance with the New South Wales<br />

legislation, this is a useful guide for all AMIC Retail<br />

members. A copy is available from the AUS-MEAT web site or<br />

from your local AMIC office.


Rob’s a cut above the rest<br />

YOUNG Cleveland butcher Rob Wright has been named the <strong>Australian</strong><br />

<strong>Meat</strong> <strong>Industry</strong> <strong>Council</strong> (AMIC) Apprentice of the Year.<br />

In the competition finals at the RNA Showgrounds <strong>Meat</strong> Hall, seven<br />

apprentices put their skills to the test.<br />

Each completed theory then practical exams, before being driven to<br />

the RNA show where they prepared value-added meals and prepared<br />

a rump tray for display.<br />

A big crowd gathered to encourage the apprentices as they<br />

showcased their trade for spectators and employers.<br />

Rob, of Cleveland Butchery, was announced the winner at a black tie<br />

awards dinner last week at the Royal on the Park in Brisbane.<br />

He received a trophy, which is on display at Cleveland Butchery.<br />

(next to Coles).<br />

Rob will now travel interstate to compete in the National<br />

Apprentice of the Year Competition.<br />

All the staff at Cleveland Butchery would like to extend big<br />

congratulations to Rob on this fantastic achievement.<br />

SHE is a young, vibrant cook who blends<br />

mangoes, sweet chilli and many other exotic<br />

flavours into her meals – not what you would<br />

expect behind the glass of a butchery.<br />

Allora Butchery’s time saver meals cook Melissa<br />

Ziser has been cooking up a storm since 2007,<br />

bringing zesty flavours to the Southern Downs<br />

community and has been noticed Queensland wide.<br />

Her new addition to the trophy cabinet was an<br />

Australia <strong>Meat</strong> <strong>Industry</strong> <strong>Council</strong> Awards<br />

Outstanding Achiever of the Year trophy after<br />

a gala awards night last weekend.<br />

Her managers Grant and Janette Lollback were very<br />

proud but not surprised about the important<br />

addition to their business being another big winner.<br />

“It was justification for all the hard work that<br />

she does that no-one else sees, she really<br />

deserved it,” Mrs Lollback said.<br />

Mrs Lollback said they nominated her for the<br />

award focusing what she has achieved this<br />

year and the significant contribution it has<br />

brought to their over all business.<br />

This year in the Butchers Choice Queensland titles<br />

competition Miss Ziser won the casserole section<br />

and placed second in the wet dish section.<br />

At the Butchers Choice Competition for the<br />

outback region she won the wet dish section<br />

and the casserole section as well as placing third<br />

in the wet dish section and the pie section.<br />

Mrs Lollback said due to her success Miss Ziser is<br />

now supplying an additional 60 prepared meals<br />

to a supermarket in Toowoomba on top of the<br />

usual products made for sale and special orders.<br />

Bang on bangers snag<br />

Far Northern butchers John and Suzie Clarke started<br />

experimenting with gourmet sausage recipes about 15 years ago<br />

when John’s mother moved to the Far North from Melbourne.<br />

Her gluten intolerance and appetite for the southern city’s posh<br />

nosh drove John to the butcher’s block, where he started adding to<br />

his humble range of sausages.<br />

Now his gourmet creations have snagged him a place in the<br />

<strong>Australian</strong> <strong>Meat</strong> <strong>Industry</strong> <strong>Council</strong>’s hall of fame.<br />

John and Suzie’s Bayview Heights butchery is the third butcher shop<br />

in the country - and the first in Queensland - to receive the<br />

council’s top honour.<br />

“We were very happy when we got the call,” Mrs Clarke said.<br />

“We’re the only butchers in the state to have won three national awards and<br />

now we have the hall of<br />

fame trophy too, which is<br />

something that not many<br />

other butchers can say.”<br />

The Clarkes started with<br />

a range of two or three<br />

original sausage flavours,<br />

but now their fridges are<br />

stocked with exotic<br />

combinations including<br />

sweet chilli chicken and<br />

coriander, and honey,<br />

lamb and rosemary.<br />

Save On Your Electricity Costs<br />

Recently AMIC was approached by “Make<br />

It Cheaper” to try and help Queensland<br />

members reduce their electricity costs.<br />

They are able to potentially provide a 20%<br />

discount for businesses using under 100mw<br />

pa (roughly $20-25K) in South East<br />

Queensland. That is businesses in the<br />

Energex Region, which is essentially<br />

Brisbane all the way north to Gympie, west<br />

to Toowoomba and south to the border.<br />

Unfortunately, it seems they cannot help<br />

those to the north in the region supplied by<br />

Ergon, as their tariffs are fixed with no choice of supplier.<br />

We have already passed the information on to various Retail <strong>Council</strong> members to try<br />

out the offer, but why not try for yourselves too?<br />

What we particularly liked was that you don’t have to pay them any upfront fees or<br />

incur any ongoing commissions – unlike some others. Make It Cheaper earns an<br />

introductory fee from the electricity retailer that supplies you, so it’s a completely<br />

FREE service for our members to use.<br />

<strong>Evan</strong> <strong>James</strong><br />

<strong>Evan</strong> gained his experience as an apprentice in Tweed Heads<br />

then moved on to work on Chevron Island. In 1988 he opened<br />

his first shop at Parkwood. With the move to <strong>Arundel</strong> Plaza,<br />

<strong>Evan</strong> installed new counters and TV screens to promote his meat<br />

and other products. It is a small shop with lots of character and<br />

the cabinets are always full and well presented.<br />

<strong>Arundel</strong> <strong><strong>Meat</strong>s</strong> supplies meat trays to various taverns and clubs<br />

and also sponsors sporting clubs, charities and schools on the<br />

Gold Coast. Their great products range from stir-fries, curries, BBQ<br />

meats and roasts, free range eggs and a wide range of sauces as<br />

well as dog meals and chews. They have their own coupon card for<br />

The shop often puts on cooking demos and tastings of their products to show their customers how easy it is<br />

to cook up a quick and easy meal. The clientele is made up of 90% locals and 10% tourists and with younger families<br />

moving into the area it’s a wide spread age group.<br />

Three staff works with <strong>Evan</strong> - Luke, Dave and Athol. At 65 years<br />

young, Athol is celebrating 50 years in the meat industry. He<br />

has worked in the same area all his life with 8 years providing his<br />

expert service and skills to <strong>Arundel</strong> <strong><strong>Meat</strong>s</strong>. <strong>Evan</strong>’s advice to anyone<br />

wanting to work in the meat industry is “You have to have great<br />

people skills and love working in the meat trade.”<br />

<strong>Evan</strong> doesn’t always have a great deal of time away from his shop<br />

but likes to spend time with his wife and four children; Hayden,<br />

Madison, Tyler and Trent. He also enjoys fishing and playing golf<br />

when he finds the time. He is lucky to have golf courses in the area<br />

of the highest standard with one each at Parkwood and <strong>Arundel</strong><br />

Hills and soon a third at <strong>Arundel</strong> Tee Trees Estate to experience.<br />
