AgriFood Business Skills
Training Workshops
Two AgriFood Business Skills
Workshops took place in September
and October at two-day sessions at the
Riverview Hotel in Brisbane. Thirty of
our Independent Local Butchers and
wholesalers responded to the invitation
to participate in this unique opportunity.
The topics covered were Planning for
your Business, Marketing your Business
and Business Finance.Atwodayworkshop
has been followed with a half day on the
job and a one-on-one coaching session in
the workplace. Andrew Moore, the AgriFood
trainer, provided each attendee with the
tools and strategies to develop and
improve current business practices.
After the completion of the course,
many attendees commented that given
the opportunity to improve their skills
they would be very open to further
learning of this type. The workshops also
resulted in the establishment of new and
extended networks for participants. It is
important in our industry to strengthen
and build networks that can add value to
their businesses by exchanging ideas.
“Looking at the business with fresh eyes
allows you to be more objective. You start to
see a bigger picture, which is really important
for success,” said Dominic Melrose.
AMIC has worked closely with AgriFood
Skills in the development and
implementation of this program.
Originally trialed in Bundaberg, it was
developed as a general skills training
package which could be applied to a range
of agri food pursuits from horticulture to
horse training. AMIC saw the potential of
having this training adapted to retail
butchers and AgriFood Skills arranged to
deliver and fund the project.
The enthusiastic response from the
participants vindicated the AMIC
conviction that such training is needed
and that members will embrace it.
Awards Dinner 2010
The 2010 Queensland AMIC Meat Industry Awards Night
was held at Royal on the Park in Brisbane in October
with 298 in attendance. Meat industry members,
partners, sponsors and invited guests were treated to a
sumptuous dinner – generously provided by Australian
Wholesale Meats, a range of fine wines (along with beer
and champagne), great entertainment by MC Marco Gliori
and a fun night with the music of the Retromatics.
Kerry Melrose, Chairman of both the Queensland and
National Retail Councils commenced the trophy
presentation and congratulated all those who won
awards. A new Hall of Fame was introduced this year for
the National Sausage King, Smallgoods Excellence and
Processor Excellence. Sausage Kings who have won at
least three national titles are inducted into the Hall of
Fame. John & Susanne Clarke from Bayview Butchery are
the only members to qualify in Queensland and join only
two others in the country. Congratulations to John and
Susanne! (Please see page 5 for more on this.)
Thank you to all sponsors and industry representatives
who joined AMIC in the celebration. Photos from the event
will soon be on our AMIC website for members to access.
The Bravehearts Charity Auction
Following AMIC’s auction at the Ham Bacon & Smallgoods Competition last
August that reaped $4,315 to benefit the Bravehearts Charity, another auction
was held at the Awards Dinner and it was a resounding success.
Our very own ‘Marilyn Monroe’ flirted and flitted from table to table adorned in dazzling diamonds
that were up for auction. Thank you to all the generous members, sponsors and guests whose combined
donations raised a total amount of $23,225.00 to top off this wonderful evening. A magnificent effort!!
Sponsor donations from Devro, SCI Industries and Kemp Meats from Sarina helped create a flurry
of bidding and were much appreciated.
Thank you to Hetty Johnston of Bravehearts and her wonderful team in promoting an organization dedicated to providing therapy,
support and advocacy services to survivors of child sexual assault.
Member Services Manager Report
By Gail Butler
2010 is quickly drawing to an end; and a very busy year it
has been for AMIC. We are committed to providing our
members with the very best customer service and this has
been a high priority all year.
The promotional activity for 2010 has been very successful
with coverage of the Sausage King and Butchers Choice
proving to be more effective than previous years. This year,
many articles appeared in newspapers and magazines all over
the state promoting excellence in our industry. This increased
exposure across the region certainly helped to boost members’
profiles and profits.
Entries in the Sausage King, Butchers Choice, Ham, Bacon &
Smallgoods Competitions were up 23% from last year. Our State
Sausage Kings are off to the National Finals in Launceston in
February 2011 and we wish them every success.
An unintended outcome of the recent changes to Beef
Labelling laws in New South Wales is that “Budget Beef”
will now be called “Economy Beef” throughout Australia.
When the New South Wales Government enacted a requirement
that all Budget Beef must have the additional descriptor “low
grade” or “low quality,” AMIC took the initiative to change the
description at the retail counter to “Economy Beef.” No
amount of pressure or argument from AMIC could get this
ridiculous piece of legislation changed.
There is no legal requirement for you to change the description
of “Budget Beef” to “Economy Beef.” Neither is there any
requirement for you to add “low grade” or “low quality” if you
In Queensland we have a number of telemarketers targeting
our ILBs to purchase a number of products and services.
These include trying to sell non slip signs, hand wash
instructions, OH&S pages ($49), enrollment in a business trade
register ($298), and OH&S audits. Please do not participate in
this type of selling and do not give your credit card details over
the phone. Always ask for ID and credentials of salespersons who
enter your establishment. Please ring AMIC on (07) 3352 4600
if you are unsure if someone actually represents a legitimate
company or if you are unsure of whom you are dealing with.
Thank you to all our sponsors for their wonderful support in
2010. Without this support we would not be able to experience
growth and present an exciting year of events.
I would like to wish all members a prosperous and happy
holiday season with best wishes for a successful New Year.
“Budget Beef” now called “Economy Beef”
choose to keep the description “Budget Beef.”
The recommendation from the National Retail Council to
change to “Economy Beef” is based on commercial factors as
Supermarkets will use “Economy Beef” in advertisements and
point of sale labelling. The choice however, is yours.
AMIC and AUS-MEAT have collaborated in the production
of the Domestic Retail Beef Register which is a guide to
the labeling of beef products at the point of sale.
Developed to ensure compliance with the New South Wales
legislation, this is a useful guide for all AMIC Retail
members. A copy is available from the AUS-MEAT web site or
from your local AMIC office.

YOUNG Cleveland butcher Rob Wright has been named the Australian
Meat Industry Council (AMIC) Apprentice of the Year.
In the competition finals at the RNA Showgrounds Meat Hall, seven
apprentices put their skills to the test.
Each completed theory then practical exams, before being driven to
the RNA show where they prepared value-added meals and prepared
a rump tray for display.
A big crowd gathered to encourage the apprentices as they
showcased their trade for spectators and employers.
Rob, of Cleveland Butchery, was announced the winner at a black tie
awards dinner last week at the Royal on the Park in Brisbane.
He received a trophy, which is on display at Cleveland Butchery.
(next to Coles).
Rob will now travel interstate to compete in the National
Apprentice of the Year Competition.
All the staff at Cleveland Butchery would like to extend big
congratulations to Rob on this fantastic achievement.
Cleveland Butchery, and Byron Alsopp,
Allora Butchery’s time saver meals cook Melissa
a gala awards night last weekend.
Her managers Grant and Janette Lollback were very
proud but not surprised about the important
addition to their business being another big winner.
“It was justification for all the hard work that
she does that no-one else sees, she really
deserved it,” Mrs Lollback said.
doing so well in the meat industry especially
a young female.”
Mrs Lollback said they nominated her for the
award focusing what she has achieved this
year and the significant contribution it has
brought to their over all business.
This year in the Butchers Choice Queensland titles
competition Miss Ziser won the casserole section
and placed second in the wet dish section.
At the Butchers Choice Competition for the
outback region she won the wet dish section
and the casserole section as well as placing third
in the wet dish section and the pie section.
Mrs Lollback said due to her success Miss Ziser is
now supplying an additional 60 prepared meals
to a supermarket in Toowoomba on top of the
usual products made for sale and special orders.
Bang on bangers snag
spot in hall of fame
Far Northern butchers John and Suzie Clarke started
experimenting with gourmet sausage recipes about 15 years ago
when John’s mother moved to the Far North from Melbourne.
Her gluten intolerance and appetite for the southern city’s posh
nosh drove John to the butcher’s block, where he started adding to
his humble range of sausages.
Now his gourmet creations have snagged him a place in the
Australian Meat Industry Council’s hall of fame.
John and Suzie’s Bayview Heights butchery is the third butcher shop
in the country - and the first in Queensland - to receive the
council’s top honour.
“We were very happy when we got the call,” Mrs Clarke said.
“We’re the only butchers in the state to have won three national awards and
now we have the hall of
fame trophy too, which is
something that not many
other butchers can say.”
The Clarkes started with
a range of two or three
original sausage flavours,
but now their fridges are
stocked with exotic
combinations including
sweet chilli chicken and
coriander, and honey,
lamb and rosemary.
“She provides over and above the basic meat
products in our counter,” Mrs Lollback said.
“We have had many comments on her extra
detail she puts into every meal.”
AMIC Working for You
Save On Your Electricity Costs
Recently AMIC was approached by “Make
It Cheaper” to try and help Queensland
members reduce their electricity costs.
They are able to potentially provide a 20%
discount for businesses using under 100mw
pa (roughly $20-25K) in South East
Queensland. That is businesses in the
Energex Region, which is essentially
Brisbane all the way north to Gympie, west
to Toowoomba and south to the border.
Unfortunately, it seems they cannot help
those to the north in the region supplied by
Ergon, as their tariffs are fixed with no choice of supplier.
We have already passed the information on to various Retail Council members to try
out the offer, but why not try for yourselves too?
What we particularly liked was that you don’t have to pay them any upfront fees or
incur any ongoing commissions – unlike some others. Make It Cheaper earns an
introductory fee from the electricity retailer that supplies you, so it’s a completely
FREE service for our members to use.
If Make It Cheaper can potentially save you 20%, why don’t you contact Make
It Cheaper for yourself and see if they can help you? Get a copy of your last bill
and give them a call on 1300 95 77 21 for some personal service. Alternatively, go
to their website at www.makeitcheaper.com.au
Evan James
Evan gained his experience as an apprentice in Tweed Heads
then moved on to work on Chevron Island. In 1988 he opened
his first shop at Parkwood. With the move to Arundel Plaza,
Evan installed new counters and TV screens to promote his meat
and other products. It is a small shop with lots of character and
the cabinets are always full and well presented.
Arundel Meats supplies meat trays to various taverns and clubs
and also sponsors sporting clubs, charities and schools on the
Gold Coast. Their great products range from stir-fries, curries, BBQ
meats and roasts, free range eggs and a wide range of sauces as
well as dog meals and chews. They have their own coupon card for
customers as a bonus for buying in the shop and they also deliver!
Arundel Plaza is a one-stop shopping centre for the day-to-day
needs of local residents with a supermarket, 34 speciality
stores and a food mall. Evan James has owned Arundel Meats in
the Plaza for 10 years, having previously had a shop in nearby
Parkwood for 13 years. Arundel is located only 10 minutes drive
from the Gold Coast, Broadwater and Central Southport with easy
access to the Pacific Highway to Brisbane. Arundel Meats was
nominated for best butcher on the Gold Coast in 2001.
The shop often puts on cooking demos and tastings of their products to show their customers how easy it is
to cook up a quick and easy meal. The clientele is made up of 90% locals and 10% tourists and with younger families
moving into the area it’s a wide spread age group.
Three staff works with Evan - Luke, Dave and Athol. At 65 years
young, Athol is celebrating 50 years in the meat industry. He
has worked in the same area all his life with 8 years providing his
expert service and skills to Arundel Meats. Evan’s advice to anyone
wanting to work in the meat industry is “You have to have great
people skills and love working in the meat trade.”
Evan doesn’t always have a great deal of time away from his shop
but likes to spend time with his wife and four children; Hayden,
Madison, Tyler and Trent. He also enjoys fishing and playing golf
when he finds the time. He is lucky to have golf courses in the area
of the highest standard with one each at Parkwood and Arundel
