Fish Cakes<br />

INGREDIENTS<br />

2 cans of tuna, drained<br />

1-2 packets of instant mashed potatoes<br />

Salt & pepper to taste<br />

Flour<br />

Bread Crumbs<br />

2 Eggs, beaten<br />

METHOD<br />

1. Cook your instant potatoes using the box directions, however reduce some of the liquid<br />

as creamy potatoes will make it hard to form the cakes. Take the tuna and add it to a<br />

large bowl, flake it and add your seasonings.Add the potatoes to your tuna mixture, cover<br />

and put in fridge until slightly cooled and easier to handle.<br />

2. Place parchment paper on baking sheets, form the mixture into cakes and place back<br />

into the fridge until ready to use (at least 30 mins).<br />

3. Put the flour in one bowl, the beaten eggs in another and the bread crumbs in another.<br />

Dip the cakes into the flour and shake off the excess, then dip into the egg and finally<br />

into the bread crumbs. Heat some oil in a non stick pan and cook until golden and heated<br />

through. Serve with a leafy salad and home made tartar sauce (see recipe below).<br />

TARTARE SAUCE<br />

Ingredients: 200ml mayonnaise, 3 tbsp capers (drained & chopped), 3 tbsp<br />

gherkins (drained & chopped), 1 small shallot (finely chopped), squeeze of<br />

lemon juice, 3 tbsp chopped fresh parsley, salt & freshly ground black pepper.<br />

Preparation: Mix together all of the ingredients in a small bowl and serve<br />

straight away or store in the fridge until needed.<br />
