Cucumber Peanut Salad<br />

INGREDIENTS<br />

3 medium cucumbers, partially peeled<br />

1-2 green chillies, minced<br />

70 g peanuts, toasted<br />

45 g dried large-flake coconut, toasted<br />

2 tablespoons fresh lemon juice<br />

1 teaspoon sugar<br />

1 tablespoon sunflower oil<br />

1/2 teaspoon black mustard seeds<br />

1/4 teaspoon cumin seeds<br />

1/2 teaspoon salt<br />

a handful corriander, chopped<br />

METHOD<br />

1. Halve the cucumbers lengthwise, scrape out the seeds, & chop into small pieces.<br />

2. Transfer to a mixing bowl & toss gently with chilles, peanuts, coconut, lemon juice, & sugar.<br />

3. Heat the oil in a small pan, when hot stir in the mustard seeds. As they start to sputter add<br />

the cumin for 15-30 seconds, just long enough to toast the spices. Cover with a lid if needed.<br />

4. Remove from heat, stir in the salt, & immediately stir this into the salad. Sprinkle the with<br />

the corriander on top & serve.<br />
