causes of both blooming types. The webinar will also recommend multiple bloom preventions along <strong>with</strong><br />

recommended best practices for your production <strong>and</strong> storage of chocolate.<br />

Meet the Presenter…<br />

� Laurent Besin, Technical Services <strong>and</strong> Applications Manager, Research <strong>and</strong> Development,<br />

Barry Callebaut USA<br />

Laurent studied in both France <strong>and</strong> Belgium, gaining his Masters Diploma in Bakery, Pastry <strong>and</strong> <strong>Chocolate</strong> at “l’Institut<br />

Technique des Métiers de l’Alimentation”. Currently Head of Technical Services & Applications Manager for North<br />

America, his main responsibilities include trouble shooting at customer sites, recipe formulations <strong>and</strong> customer trainings<br />

in h<strong>and</strong>ling chocolate. Prior to that, his responsibilities were the same as now but in UK, Irel<strong>and</strong>, Sc<strong>and</strong>inavia, Far East,<br />

South Africa <strong>and</strong> Russia. Laurent has over 20 years of experience in the chocolate industry.
