En un viñedo, la tierra, el sol y una cuidada selección de<br />

trabajo comienza desde el primer momento, incluso<br />
desde antes que la uva alcance el grado óptimo de<br />
maduración antes de ser recogida para que el producto<br />
que llegue a la mesa marque la diferencia y nos haga<br />
sentir orgullosos de nuestra labor.<br />
In a vineyard, the soil, the sun and a looked-after<br />
selection of the best grape mark the difference between<br />
any old wine and a great wine. In <strong>Bodegas</strong> <strong>Fernández</strong><br />
work commences from the very beginning, even before<br />
grapes reach their optimum maturity to be collected, in<br />
order for the product served at the table to mark the<br />
difference and make us proud of our work.

familiar arraigada en el corazón de la<br />
montaña central Asturiana. Después de<br />
acumular la experiencia y el saber hacer de<br />
varias décadas de trabajo, Roberto<br />
<strong>Fernández</strong>, un hombre pasional, soñador y<br />
emprendedor, asume el liderazgo del<br />
cambio generacional para impulsar la<br />

A principios de siglo, existió en Italia un<br />
jugador excepcional que, sin embargo, no<br />
aparece en las estadísticas ni en los libros de<br />
historia del fútbol. Un defensa central recio,<br />
astuto, con carácter duro pero de gran<br />
nobleza. Después de cada partido gustaba<br />
de invitar a sus rivales a una copa de un<br />
vermouth muy especial, cuya receta pasaba<br />
de padres a hijos. Cuando se retiró de los<br />
terrenos de juego, como homenaje se le puso<br />
su nombre a esta bebida.<br />
Este vermouth de reserva, no solo es especial<br />
por su calidad y por no tener nada que<br />
envidiar a los grandes, sino porque aparte de<br />
ser el único patentado y elaborado en<br />
Asturias, tiene consigo un personaje y una<br />
historia en la que se plasma la ilusión de su<br />
autor por preservar los momentos mágicos<br />
que aún se pueden vivir al pasar un rato<br />
agradable entre las personas.<br />
Este vermouth permanece en barrica en<br />
periodo de añejamiento un mínimo de dos<br />
años, lo que permite que se consiga un<br />
producto con solera y distinción en su aroma,<br />
color y sabor.<br />

de naranja, una aceituna con hueso y una<br />

Towards the start of the century there was an<br />
outstanding player in Italy who, unfortunately,<br />
does not appear in the statistics or the books<br />
on football history. A solid and sly central<br />
defender, with a strong nature while always<br />
noble. After each match he liked to treat his<br />
contenders to a very special glass of<br />
vermouth, whose recipe went down from<br />
father to son. As a tribute, this drink was<br />
given his name when he retired from the<br />
playing fields.<br />
Not only is this reserve vermouth special due<br />
to its quality and for being at the level of any<br />
of the big names, but also because, apart<br />
from being the only one patented and<br />
prepared in Asturias, it includes a person and<br />
a history representing the dream of its author<br />
of preserving the magical moments that can<br />
still be enjoyed during a pleasant get together.<br />
This vermouth is kept in cask for a minimum<br />
ageing period of two years, making it possible<br />
to achieve a product with character and<br />
distinction in its aroma, colour and flavour.<br />

ROBERTINI 15 MESES<br />
FASE VISUAL: Muy limpio y brillante con un bonito amarillo<br />
caoba de capa media, ligera densidad y abundante lágrima.<br />
FASE OLFATIVA: Intensidad muy alta apreciandose frutos<br />
secos avellana, nuez combinando con tonos dulces de pasas<br />
e higos, con un fondo floral y plantas medicinales, al final<br />
aparecen notas de café y vainilla de la crianza en soleras.<br />
FASE GUSTATIVA: Entrada dulce con paso estructurado y<br />
final secante, con un posgusto agradable y duradero.<br />
También aparecen toques de madera por su crianza en<br />
barrica.<br />

VISUAL STAGE: Very clean and glittering, with a pretty<br />
mahogany yellow mid-coating, light density and abundant<br />

OLFACTORY STAGE: Very high intensity with nuts and dried<br />

the sweet tones of raisins and figs, a floral and medicinal plant<br />
background and, finally, nuances of coffee and vanilla from the<br />
aging in barrels via the solera process.<br />
GUSTATIVE STAGE: Sweet entry, a structured passage and<br />
a dry finish, with a pleasant and long-lasting after-taste. There<br />

dulces de regaliz rojo, gominolas de fresa y frutas rojas en<br />
almíbar, recordándonos a todas aquellas golosinas de la niñez.<br />
En boca, entrada dulce, paso ácido, postgusto amargo y final<br />
secante, que nos incita a seguir disfrutando de este<br />
maravilloso vino. Cuatro sabores, dulce, ácido, amargo y<br />
secante difícil de conjugar y aromas a golosinas que evocan<br />
nuestra infancia, fácil de recordar.<br />

TASTING NOTES: It has a pretty poppy-red colour, very<br />

Very intense and high quality in the nose, with sweet red<br />
liquorish, strawberry gumdrops and red fruit in syrup aromas,<br />
reminding of all the sweets from our childhood.<br />
Sweet entry to the mouth, acid passage, bitter aftertaste and<br />
dry end, enticing us to continue enjoying this marvellous wine.<br />
Four difficult to blend flavours, sweet, acid, bitter and dry,<br />
together with sweet aromas evoking our childhood, easy to<br />
remember.<br />

ESENCIA DE ZAGAL<br />
Rioja Crianza<br />
VARIEDADES: 100% Tempranillo.<br />
ELABORACIÓN: Fermentación en depósitos de acero<br />
inoxidable con temperatura controlada entre 28º y 30ºC.<br />
Maceración de 15 días con remontados contínuos para<br />
obtener una óptima extracción de color.<br />
CRIANZA: Un mínimo de 12 meses en barricas de roble<br />
americano y el resto en botellas hasta su comercialización.<br />
NOTAS DE CATA: Rojo cereza brillante de capa media-alta<br />
con ribetes violáceos. Aromas de elegante crianza<br />
combinados con notas de fruta. En boca es amplio y elegante.<br />
ACOMPAÑA A: Entremeses, tablas de embutido, legumbre,<br />
pastas, arroces y quesos secos.<br />
SERVIR: Entre 16º y 18ºC.<br />

PREPARATION: Fermentation in stainless steel tanks at a<br />
controlled temperature between 28º and 30ºC. Maceration for<br />
15 days with continuous pumping over to achieve an optimum<br />
colour extraction.<br />
MATURING: A minimum of 12 months in American oak casks<br />
and the rest in bottles up until its commercialisation.<br />
TASTING NOTES: Medium-high layer shiny cherry red with<br />
purple streaks. Elegant maturing aromas combined with fruit<br />
nuances. Broad and elegant in the mouth.<br />
ACCOMPANIES: Hors d’oeuvres, cold meat platters, pulse<br />
foods, pasta, rice and dry cheeses.<br />
SERVE: Between 16º y 18ºC.<br />
ESENCIA DE ZAGAL<br />
Rioja Joven<br />
VARIEDADES: 100% Tempranillo.<br />
ELABORACIÓN: La uva, una vez despalillada, se encuba y<br />
tras 24-48 horas de maceración en frío fermenta con sus<br />
propias levaduras salvajes a una temperatura no superior a<br />
28ºC. Finalizado este primer proceso el vino se trasiega y se<br />
hacen las mezclas apropiadas de forma previa a la<br />
fermentación maloláctica que ocurre de forma natural a una<br />
temperatura entre 17 y 20ºC.<br />
NOTAS DE CATA: Se aprecian muy bien los matices de la<br />
variedad Tempranillo que le ayuda a potenciar su correcta<br />
acidez y su aroma silvestre y afrutado recordando bayas rojas.<br />
El color rojo cereza picota con matices violáceos y el tono de su<br />
capa media alta son expresión de su juventud adelantándonos<br />
una boca fresca, pero compleja y sabrosa, con una<br />
astringencia suave y un postgusto medio-largo muy vivo y<br />
satisfactorio.<br />
ACOMPAÑA A: Entremeses, tablas de embutido, legumbre,<br />
pastas, arroces y quesos secos.<br />
SERVIR: Se recomienda consumirlo alrededor de los 14ºC.<br />

VARIETIES: 100% Tempranillo.<br />
PREPARATION: Once stemmed, the grapes are put in the<br />
barrel and after cold maceration for 24-48 hours it ferments<br />
with its own yeasts at a temperature that does not exceed<br />
28ºC. When this first process ends, the wine is decanted and<br />
the appropriate mixtures are carried out previously to the<br />
malolactic fermentation that occurs naturally at a temperature<br />
between 17 and 20ºC.<br />
TASTING NOTES: The nuances of the Tempranillo variety can<br />
be fully appreciated helping it to boost its correct acidity and its<br />
wild and fruity aroma reminding of red berries. The bigarreau<br />
cherry red with purple streaks and the shade of its medium-high<br />
layer express its youth indicating the taste to come, fresh yet<br />
complex and palatable, with smooth astringency and a very live<br />
and satisfactory medium-long aftertaste.<br />
ACCOMPANIES: Hors d’oeuvres, cold meat platters, pulse<br />
foods, pasta, rice and dry cheeses.<br />
SERVIR: It is recommended this is drunk at around 14ºC.
ROBER Nº1<br />
Edición limitada<br />
VARIEDADES: Tempranillo, Mencía y Prieto Picudo.<br />
ELABORACIÓN: Vendímia manual en cajas de plástico de 20<br />
kilos. Las uvas despalilladas fermentaron en depósitos de acero<br />
inoxidable permaneciendo 21 días en maceración, con dos<br />
remontados diarios y una temperatura controlada no superior a<br />
30º C.<br />
Tras el descubado, realizó la fermentación maloláctica en<br />
depósitos de cemento de nuestra bodega subterránea, y una vez<br />
clarificado, se crió durante 12 meses en barricas nuevas de roble<br />
americano y francés, después de pasarlo a botella se conserva<br />
en bodega subterránea con humedad constante de 9º C.<br />
NOTAS DE CATA: Rojo cereza cubierto. Aromas límpios de<br />
fruta roja en licor, almizcle, tostados y especiados. Con buena<br />
estructura y taninos marcados, destacan los aromas de buenas<br />
maderas, integrados con sensaciones de frutas rojas. Final<br />
cálido y largo.<br />
ACOMPAÑA A: Entremeses, tablas de embutidos, legumbres,<br />
pastas, arroces y quesos secos.<br />
SERVIR: Entre 16º y 18º C.<br />

PREPARATION: Manual grape harvesting in 20 kilo plastic<br />
boxes. The stemmed grapes ferment in stainless steel tanks and<br />
remain macerating for 21 days, pumped over twice a day at a<br />
controlled temperature not exceeding 30ºC.<br />
After removal from the barrel, the malolactic fermentation is<br />
performed in cement tanks of our underground cellars and, once<br />
clarified, it is matured for 12 months in new American and<br />
French oak casks, to then go on to the underground cellars with<br />
constant humidity at 9ºC before being bottled.<br />
TASTING NOTES: Covered cherry red. Clean red fruit in liqueur,<br />
musk, toasted and spiced aromas. With a good structure and<br />
marked tannins, highlighting the aromas from good wood,<br />
integrated in red fruit sensations. Warm and long ending.<br />
ACCOMPANIES: Hors d’oeuvres, cold meat platters, pulse<br />
foods, pasta, rice and dry cheeses.<br />
SERVE: Between 16º y 18º C.<br />
SELENE<br />
Valles de Benavente<br />
VARIEDADES: Tempranillo y Prieto Picudo.<br />
ELABORACIÓN: Vendímia manual en cajas de plástico de 20<br />
kilos. Las uvas despalilladas maceraron a 12ºC durante 24<br />
horas, antes de su sangrado sin presión para fermentar en<br />
depósitos de acero inoxidable a una temperatura constante de<br />
16º C.<br />
NOTAS DE CATA: Frambuesa vivo. Aromas potentes y limpios,<br />
con predominio de frutas rojas como fresa y arándanos,<br />
mezclados con ligeros toques de pera en almíbar, rico en<br />
matices. En boca es ligero, fresco, con agradable carnosidad,<br />
un despegue lento pero constante de sensaciones y un final<br />
ligeramente dulce que nos devuelve frutas y flores. El ligero<br />
toque de aguja, tan característico de nuestra zona de<br />
producción, unido a su acidez muy bien ensamblada, nos<br />
conduce a un vino redondo y en equilibrio.<br />
ACOMPAÑA A: Ensaladas, menestras, quesos frescos y para<br />
untar, pescados, mariscos, arroces marineros, etc.<br />
SERVIR: Entre 8º y 10º C.<br />

PREPARATION: Manual grape harvesting in 20 kilo plastic<br />
boxes. The stemmed grapes macerate at 12ºC for 24 hours,<br />
before their discharge without pressure to ferment in stainless<br />
steel tanks at a constant temperature of 16ºC.<br />
TASTING NOTES: Vivid raspberry. Powerful and clean aromas,<br />
with a predominance of red fruits such as strawberries and<br />
cranberries, mixed with slight touches of pear in syrup, rich in<br />
nuances. Light in the mouth, fresh, pleasantly full, slow but<br />
constant unfolding of sensations and a slightly sweet end taking<br />
us back to fruits and flowers. The slightly sparkling touch, so<br />
characteristic of our production area, joined to the well<br />
assembled acidity, leads us to a rounded off and balanced wine.<br />
ACCOMPANIES: Salads, vegetable stews, fresh and<br />
spreadable cheese, fish, shellfish, seafood risottos, etc.<br />
SERVE: Between 8º and 10º C.
TR3S<br />
Rueda<br />
VARIEDADES: Verdejo.<br />
ELABORACIÓN: Fermentación en depósitos de acero<br />
inoxidable lentamente, a una temperatura máxima controlada<br />
de 17º C.<br />
NOTAS DE CATA: Color pajizo con reflejos verdosos, muy<br />
brillante. Aroma franco, con intensidad frutal. Fondo floral con<br />
notas cítricas. En boca, buena estructura, acidez equilibrada y<br />
sabroso.<br />
ACOMPAÑA A: Ensaladas, menestras, quesos frescos y para<br />
untar, pescados, mariscos, arroces marineros, etc.<br />
SERVIR: Entre 8º y 10º C.<br />

PREPARATION: Slow fermentation in stainless steel tanks, at<br />
a maximum controlled temperature of 17ºC.<br />
TASTING NOTES: Straw-like colour with greenish reflections,<br />
very shiny. Smooth aroma with fruity intensity. Floral<br />
background with citrus nuances. Good structure, balanced<br />
acidity and tasty in the mouth.<br />
ACCOMPANIES: Salads, vegetable stews, fresh and<br />
spreadable cheese, fish, shellfish, seafood risottos, etc.<br />
SERVE: Between 8º and 10º C.<br />
A DORNA<br />
DOURADA<br />
Rias Baixas<br />
VARIEDADES: Albariño 60%, Godello 20%, Caiño Blanco 10%<br />
y Treixadura 10%, procedentes de viñedos propios ubicados en<br />
O’ Rosal.<br />
ELABORACIÓN: Maceración en frío de las uvas a la recepción<br />
en bodega, con proceso de prensado bajo presión controlada<br />
realizando un desfangado para fermentar el mosto totalmente<br />
limpio a una temperatura controlada de 16º C durante 20 días.<br />
NOTAS DE CATA: Color amarillo pajizo con tonos verdosos.<br />
Potente en nariz con aromas a fruta madura (pera, manzana),<br />
hierbas aromáticas (menta, hinojo) y flores blancas. En boca es<br />
largo, goloso y persisten los recuerdos a fruta madura y hierbas<br />
aromáticas. Acidez equilibrada. Evolucionará en botella muy<br />
positivamente en los próximos meses.<br />
ACOMPAÑA A: Aperitivos, cremas frías, arroces, mariscos y<br />
pescados.<br />
SERVIR: Entre 9º y 10º C.<br />

VARIETIES: Albariño 60%, Godello 20%, Caiño Blanco 10%<br />
and Treixadura 10%, originating from its own vineyards located<br />
in O’ Rosal.<br />
PREPARATION: Cold maceration of the grapes upon their<br />
reception in the cellars, with controlled pressure pressing<br />
process performing a debourbage to ferment the totally clean<br />
juice under a controlled temperature of 16ºC for 20 days.<br />
TASTING NOTES: Straw-like colour with greenish reflections.<br />
Powerful in the nose with mature fruit aromas pear, apple),<br />
aromatic herbs (mint, fennel) and white flowers. Long, sweet<br />
taste in the mouth, with the persistence of reminiscences of<br />
mature fruit and aromatic herbs. Balanced acidity. It will evolve<br />
very positively in the bottle in the next few months.<br />
ACCOMPANIES: Aperitifs, cold creams, rice, shellfish and fish.<br />
SERVE: Between 9º and 10º C.
ATIEMPO<br />
FASE VISUAL: Rojo cereza picota con tonos muy violáceos.<br />
FASE OLFATIVA: Muy potente con tonos de fruta roja madura<br />
(moras, frambuesas, zarzamoras, etc.), procedentes de la<br />
variedad y cierto toque especiado en su final.<br />
FASE GUSTATIVA: Buena estructura, equilibrado y sabroso.<br />
Se aprecian los taninos de su media crianza. Con buena<br />

ELABORACIÓN: Este vino ha sido elaborado con uvas 100%<br />
Syrah, vendimiadas la tercera semana de septiembre en su<br />
punto óptimo de madurez. Una vez encubado, la uva<br />
permaneció dos días a baja temperatura, la fermentación se<br />
realizó a una temperatura controlada de 22º C. El tiempo total<br />
de maceración fue de 7 días.<br />
CATA: Color rojo rubí con tonos violáceos. En nariz destacan<br />
aromas a flores azules, violeta, lilas, con notas a fruta negra y un<br />
toque especiado. La boca es suave, de tacto agradable con un<br />
final goloso.<br />

PREPARATION: This wine is prepared with 100% Syrah<br />
grapes, harvested in the third week of September at their<br />
optimal point of maturity. Once in the barrel, the grape remains<br />
at low temperature for two days, the fermentation occurring<br />
under a controlled temperature of 22º C. The total time for<br />
maceration is of 7 days.<br />
TASTING: Ruby red with purplish shades. Blue, violet and lilac<br />
flower aromas stand out in the nose, together with black fruit<br />
notes and a spicy touch. The taste in the mouth is smooth, with<br />
a pleasant feel and a sweet ending.

VALDISER / FERNÁNDEZ<br />
ELABORACIÓN: Este vino se elabora con uvas<br />
Macabeo, que se vendimian de noche, la primera<br />
semana de septiembre. Para su elaboración solo se<br />
utiliza mosto flor, que fermenta con levaduras<br />
seleccionadas durante tres semanas a una<br />
temperatura que no supera 15°C. A lo largo de todo<br />
el proceso de elaboración se protege el vino con<br />
gases inertes (N2, C02) para evitar cualquier tipo de<br />
oxidación de los aromas.<br />
CATA: De color dorado con reflejos verdosos, nariz<br />
franca con profundos aromas a cítricos, flores<br />
blancas y notas minerales. En boca es amplio y<br />
fresco.<br />
rosado<br />
ELABORACIÓN: Este rosado es un sutil coupage<br />
de Monastrell, Syrah y Tempranillo. Se obtiene<br />
sangrando el mosto de nuestros mejores depósitos<br />
tras una maceración en frío de ocho horas. Se<br />
desfanga de manera estática durante 24 horas y se<br />
fermenta en tres semanas a 15º C. A lo largo de<br />
todo el proceso de elaboración se protege el vino<br />
con gases inertes (N2, CO2) para prevenir cualquier<br />
tipo de oxidación de los aromas.<br />
CATA: Precioso color rosa fresa. Nariz muy<br />
afrutada donde predominan los frutos rojos,<br />
frambuesa, fresa ácida, y recuerdos a pera. En<br />
boca es refrescante, envolvente.<br />

ELABORACIÓN: Este tinto es un delicado<br />
coupage de nuestros mejores viñedos de<br />
Monastrell y Syrah. La Monastrell utilizada procede<br />
de viñedos de más de 25 años con rendimientos<br />
que no superan 20 hl/ha. La fermentación dura<br />
unos diez días y se realiza a baja temperatura para<br />
conservar el afrutado y la tipicidad de las<br />
variedades elaboradas.<br />
CATA: Color rojo picota, con ribetes violetas.<br />
Destacan aromas de fruta negra madura, mora,<br />
casi confitada, con notas de tostado. En boca es<br />
jugoso, equilibrado y con un final especiado.<br />
white<br />
PREPARATION: This wine is prepared with<br />
Macabeo grapes, harvested at night in the first<br />
week of September. Only free run juice is used for its<br />
preparation, fermented with selected yeasts for<br />
three weeks at a temperature that does not exceed<br />
15°C. The wine is protected with inert gases (N2,<br />
C02) throughout the entire preparation process in<br />
order to avoid any kind of aroma oxidation.<br />
TASTING: Golden with greenish tinges, open to the<br />
nose with deep citrus, white flower and mineral<br />
nuance aromas. Broad and fresh in the mouth.<br />
rosé<br />
PREPARATION: This rosé is a subtle coupage of<br />
Monastrell, Syrah and Tempranillo. Obtained from<br />
discharging the juice from our best tanks after cold<br />
maceration for eight hours. It is statically debourbed<br />
for 24 hours and fermented for three weeks at 15ºC.<br />
The wine is protected with inert gases (N2, C02)<br />
throughout the entire preparation process in order<br />
to avoid any kind of aroma oxidation.<br />
TASTING: Gorgeous strawberry pink. Very fruity in<br />
the nose with the predominance of red fruit,<br />
raspberry, acid strawberry, and pear reminiscences.<br />
Refreshing, enveloping in the mouth.<br />

coupage of our best Monastrell and Syrah<br />
vineyards. The Monastrell used comes from<br />
vineyards over 25 years old with performances not<br />

temperature to preserve the fruity nature and the<br />
type of the varieties prepared.<br />

finalizó su fermentación en fase<br />
líquida a baja temperatura.<br />
CATA: Color cereza negra intenso.<br />
Aromas a fruta roja, grosella,<br />
cereza, con notas mentoladas. En<br />
boca buen ataque acido, taninos<br />
finos y bien integrados, con un final<br />

La nave de crianza de “Esencia de Zagal” se asienta<br />
sobre una superficie de 6.400 m². Un escenario único<br />
cuyo sistema totalmente automatizado de apilado,<br />
trasiega y climatización ha sido pionero en el mundo.<br />
Actualmente alberga 25.000 barricas de diversos tipos<br />
de roble: francés, americano, ruso y mixto (duelas de<br />
roble americano y fondos de roble francés),<br />
minuciosamente seleccionadas entre los mejores<br />
toneleros del mundo: Taransaud, Seguin Moreau,<br />
