VARIEDADES: Tempranillo, Mencía y Prieto Picudo.<br />
ELABORACIÓN: Vendímia manual en cajas de plástico de 20<br />
kilos. Las uvas despalilladas fermentaron en depósitos de acero<br />
inoxidable permaneciendo 21 días en maceración, con dos<br />
remontados diarios y una temperatura controlada no superior a<br />
30º C.<br />
Tras el descubado, realizó la fermentación maloláctica en<br />
depósitos de cemento de nuestra bodega subterránea, y una vez<br />
clarificado, se crió durante 12 meses en barricas nuevas de roble<br />
americano y francés, después de pasarlo a botella se conserva<br />
en bodega subterránea con humedad constante de 9º C.<br />
NOTAS DE CATA: Rojo cereza cubierto. Aromas límpios de<br />
fruta roja en licor, almizcle, tostados y especiados. Con buena<br />
estructura y taninos marcados, destacan los aromas de buenas<br />
maderas, integrados con sensaciones de frutas rojas. Final<br />
cálido y largo.<br />
ACOMPAÑA A: Entremeses, tablas de embutidos, legumbres,<br />
pastas, arroces y quesos secos.<br />
SERVIR: Entre 16º y 18º C.<br />

PREPARATION: Manual grape harvesting in 20 kilo plastic<br />
boxes. The stemmed grapes ferment in stainless steel tanks and<br />
remain macerating for 21 days, pumped over twice a day at a<br />
controlled temperature not exceeding 30ºC.<br />
After removal from the barrel, the malolactic fermentation is<br />
performed in cement tanks of our underground cellars and, once<br />
clarified, it is matured for 12 months in new American and<br />
French oak casks, to then go on to the underground cellars with<br />
constant humidity at 9ºC before being bottled.<br />
TASTING NOTES: Covered cherry red. Clean red fruit in liqueur,<br />
musk, toasted and spiced aromas. With a good structure and<br />
marked tannins, highlighting the aromas from good wood,<br />
integrated in red fruit sensations. Warm and long ending.<br />
ACCOMPANIES: Hors d’oeuvres, cold meat platters, pulse<br />
foods, pasta, rice and dry cheeses.<br />
SERVE: Between 16º y 18º C.<br />
SELENE<br />
Valles de Benavente<br />
VARIEDADES: Tempranillo y Prieto Picudo.<br />
ELABORACIÓN: Vendímia manual en cajas de plástico de 20<br />
kilos. Las uvas despalilladas maceraron a 12ºC durante 24<br />
horas, antes de su sangrado sin presión para fermentar en<br />
depósitos de acero inoxidable a una temperatura constante de<br />
16º C.<br />
NOTAS DE CATA: Frambuesa vivo. Aromas potentes y limpios,<br />
con predominio de frutas rojas como fresa y arándanos,<br />
mezclados con ligeros toques de pera en almíbar, rico en<br />
matices. En boca es ligero, fresco, con agradable carnosidad,<br />
un despegue lento pero constante de sensaciones y un final<br />
ligeramente dulce que nos devuelve frutas y flores. El ligero<br />
toque de aguja, tan característico de nuestra zona de<br />
producción, unido a su acidez muy bien ensamblada, nos<br />
conduce a un vino redondo y en equilibrio.<br />
ACOMPAÑA A: Ensaladas, menestras, quesos frescos y para<br />
untar, pescados, mariscos, arroces marineros, etc.<br />
SERVIR: Entre 8º y 10º C.<br />

PREPARATION: Manual grape harvesting in 20 kilo plastic<br />
boxes. The stemmed grapes macerate at 12ºC for 24 hours,<br />
before their discharge without pressure to ferment in stainless<br />
steel tanks at a constant temperature of 16ºC.<br />
TASTING NOTES: Vivid raspberry. Powerful and clean aromas,<br />
with a predominance of red fruits such as strawberries and<br />
cranberries, mixed with slight touches of pear in syrup, rich in<br />
nuances. Light in the mouth, fresh, pleasantly full, slow but<br />
constant unfolding of sensations and a slightly sweet end taking<br />
us back to fruits and flowers. The slightly sparkling touch, so<br />
characteristic of our production area, joined to the well<br />
assembled acidity, leads us to a rounded off and balanced wine.<br />
ACCOMPANIES: Salads, vegetable stews, fresh and<br />
spreadable cheese, fish, shellfish, seafood risottos, etc.<br />
SERVE: Between 8º and 10º C.
