Galicia, tierra atlántica, bella y enigmática, esconde en su dieta una fuente de placer con sabor a mar, que hoy despierta la atención del mundo de la nutrición por sus cualidades saludables. The diet of the inhabitants of this beautiful, enigmatic land, located on the Atlantic Ocean, is made up of a large number of seafood specialities, dishes that have caught the attention of nutritionists for their excellent nutritional properties. Pimientos con denominación, como los de Padrón; patatas de Bergantiños; grelos en toda la comunidad; pan de Carballo y Cea; maíz o frutos como las castañas, nueces, avellanas y almendras, sin olvidar la riqueza silvestre de las setas, los arándanos o la miel de bosque, conforman una despensa admirable. De la huerta gallega salen platos como el caldo gallego, a base de verduras, navizas, acelgas, judías, repollo o grelos, patatas y alubias. En Galicia, la carne de vacuno es la estrella. Se cocina muy joven, ternera, y su nivel de máxima calidad lo alcanza con la marca Ternera Gallega. De esta carne surgen cientos de recetas para preparar el exquisito solomillo, la popular carne ao caldeiro, o parte del cocido gallego. Aunque, si lo que se prefieren son las carnes de vacuno hechas, no deje de probar el buey gallego, que ha traspasado fronteras y se ha incorporado a la gastronomía de otras comunidades españolas, como la vasca. En cuanto a los quesos, la mayoría elaborados con leche de vaca, Galicia mantiene protegidas sus denominaciones, de entre las que se pueden destacar el Tetilla, el San Simón y el queso de O Cebreiro. Además, dentro de las aves, destacan los gallos de corral, y por supuesto los capones, pollo caseros criados con esmero y una rigurosa alimentación para buenas mesas, sobre todo en Navidad. La carne de cerdo, por otra parte, se prepara en Galicia de múltiples maneras y el aprovechamiento de este animal es completo. El lacón cocido se utiliza para elaborar el típico lacón con grelos. En el interior son muy apreciados los embutidos, del que destaca por su originalidad la androlla o botelo, embutido realizado a base de costillas de cerdo troceadas, adobadas con pimentón y especies, que se come cocido una vez curado al humo. Chorizos y salchichones ofrecen muy buenas calidades. Además, otras partes del cerdo se utilizan para los cocidos gallegos (panceta, morro, carne de alrededor de las vértebras, patas…). Estos pueblos tienen en común estar rodeados por mar y una forma de comer peculiar aprendida desde niños, basada en un alto consumo de pescado. La dieta atlántica se manifiesta como una de las formas más saludables de comer, en la que a los productos de primera calidad se unen técnicas culinarias sencillas como la plancha, la cocción o el vapor. Worth mentioning are the famous Denomination of Origin Padron peppers, Bergantiño potatoes and famous turnip tops; ‘Carballo’ and ‘Cea’ bread; corn and chestnuts, walnuts, hazelnuts and almonds. Galicia is also famous for uncultivated produce. This includes wild mushrooms, blueberries and wild honey. This magnificent market garden produce is responsible for a selection of mouth-watering specialities which includes the popular Galician soup made with vegetables such as turnips, chard, beans, cabbage or turnip tops, potatoes and haricot beans. Beef is, without a doubt, Galicia’s star meat product. Veal is the most popular type of beef here, known on the market as ‘Ternera Gallega’. We would highly recommend the exquisite sirloin steak, popular ‘ao caldeiro’ veal dish and, of course, famous farmhouse stew. For those visitors who prefer other types of beef, we would suggest they try the local bullock beef. This excellent beef product has, over the years, become popular in other Spanish regions and today forms part of the Basque Country’s famous gastronomy. As far as Galicia’s cheese products are concerned, we would mention that the majority of these are made with cow’s milk. They include, amongst others, the delicious Tetilla, San Simon and O Cebreiro cheese. We would also mention the large variety of poultry such as farmyard cockerels, capons and home bred chickens, all popular food produce, especially at Christmastime. Pork is prepared in numerous ways in Galicia with each part of the pig being used. Its delicious ‘lacon’ (shoulder of ham) is part of the main ingredients of one of Galicia’s most typical dishes: ‘lacon con grelos’ (shoulder of ham with turnip tops). Sausages and cold meats are very popular in the interior of Galicia. Worth mentioning, for their originality, are the ‘androlla’ and ‘botelo’, smoked sausages made with pork ribs, paprika and other spices. Visitors will also find here a variety of excellent ‘chorizo’ (red spicy sausage) and ‘salchichon’ (salami type spiced sausage). Local stews include a variety of pork products such as belly of pork, ‘morro’ (snout), meat from around the vertebrae, pig trotters etc. ATLANTIC DIET The diet of the inhabitants of this beautiful, enigmatic land, located on the Atlantic Ocean, is made up of a large number of seafood specialities, dishes that have caught the attention of nutritionists for their excellent nutritional properties.
