The Birichin is located in a downtown<br />
neighbourhood of the city, a lovely<br />
restaurant that, thanks to the recent<br />
renovations, offers a welcoming and refined<br />
atmosphere: in two cosy little rooms there<br />
are round tables, for a total of 30 places, all<br />
laid out with care. The chef, Nicola Batavia,<br />
explains that his experience began when he<br />
was 14 years old, with an internship at a<br />
hotel institute, and continued with a<br />
specialisation abroad, Reims, Paris and<br />
England, developing into a collaboration<br />
with renowned chefs from all over the<br />
world. These are some of the creations that<br />
are the result of so much experience and<br />
passion: scallops roasted in foie gras and lime<br />
with chard sprouts on cream of corn,<br />
pheasant breast caramelised with chestnuts<br />
with a soufflé of Tropea onions. On the<br />
dessert menu, which pays particular<br />
attention to chocolate, one must try the<br />
vanilla and guaranà charlotte with black<br />
Tuscan Amedei chocolate.<br />

In un quartiere centrale della città è il Birichin, un grazioso ristorante che,<br />
grazie all’ultimo rinnovamento dei locali, offre un ambiente accogliente e<br />
raffinato: in due raccolte salette i tavoli rotondi, per un totale di 30 coperti,<br />
sono apparecchiati con cura. Lo chef Nicola Batavia spiega che la sua esperienza<br />
è iniziata quando aveva 14 anni, con uno stage presso l’istituto alberghiero,<br />
ed è proseguita con una specializzazione all’estero, Reims, Parigi<br />
e l’Inghilterra, per evolversi poi in collaborazioni diverse con chef affermati<br />
provenienti da tutto il mondo. Queste alcune delle creazioni frutto<br />
di tanta esperienza e passione: capesante arrostite nel foie gras e lime con<br />
germogli di bietola su passata di antichi mais, petto di fagiano caramellato<br />
alle castagne con soufflé di cipolle di Tropea. Nella lista dei dolci, che<br />
presta particolare attenzione al cioccolato, è da assaggiare la charlotte di vaniglia<br />
e guaranà con cioccolato Amedei black toscano.<br />

Historic gem ever since 1757, the Ristorante<br />
del Cambio offers intense and delicate<br />
flavours of ancient Piedmont. Guests are<br />
welcomed amongst velvets, silver and<br />
Baroque mirrors topped by the painting of<br />
Bonelli. The restaurant, once a place<br />
appreciated by the Count Camillo Benso di<br />
Cavour and other aristocratic personalities of<br />
the Savoy kingdom, today is renowned for its<br />
welcoming style and for the kitchen’s skill, an<br />
essential ingredient in order to become part of<br />
the prestigious Associazione Locali Storici<br />
d’<strong>Italia</strong> (Association of Historical Places of<br />
Italy). Some dishes to savour include:<br />
Piedmontese gran fritto misto (mixture of<br />
fried meats, fish, vegetables and sweets) made<br />
in the del Cambio style, agnolotti (type of<br />
pasta pockets) without any type of sauce<br />
served on a tea towel, calf sweetbreads with<br />
porcini mushrooms. The Cambio’s wine cellar<br />
preserves the top vintages produced in<br />
Piedmont and the best from the vines and<br />
vineyards of Italy and France as well as other<br />
interesting wine-producing regions. The<br />
cellars may be visited upon request, an added<br />
enjoyment for authentic wine lovers.<br />

The Vintage 1997 is an elegant Turinese<br />
restaurant favoured also by the city’s most<br />
leading personalities. The atmosphere is<br />
characterised by high ceilings, crystal<br />
chandeliers, claret coloured tapestries and<br />
dark wooden furniture warmed by the soft<br />
glow of lights, everything is attended to in<br />
the slightest of detail and the tables are kept<br />
at a good distance from one another. The<br />
service, highly professional and wellmannered,<br />
never disappoints a guest. The<br />
cuisine unites, with the right amount of<br />
creativity, the Piedmontese and<br />
Mediterranean traditions. A particular<br />
attention is dedicated to ingredients that are<br />
carefully chosen keeping the territorial<br />
biodiversity in mind. Tasty dishes include:<br />
millefeuille of tripe and leeks and leek plin<br />
(stuffed pasta) with “cardi gobbi” (cardoons)<br />
all on a fondue of toma di capra (goat<br />
cheese). To top off with a pineapple and<br />
meringue cake with passion fruit sherbet.<br />
The wine list is very rich: particular<br />
attention is given to the Piedmontese labels<br />

1997<br />
Il Vintage 1997 è un elegante ristorante torinese prediletto anche dai personaggi<br />
di spicco della città. Soffitti alti, lampadari di cristallo, tappezzeria<br />
tinta bordeaux e arredamento in legno scuro riscaldato da luci tenui e<br />
soffuse caratterizzano l’ambiente, curato in ogni minimo dettaglio, in cui<br />
trovano posto i tavoli ben distanziati. Il servizio, altamente professionale<br />
e cortese, non delude mai. La cucina unisce, con la giusta dose di creatività,<br />
la tradizione piemontese a quella mediterranea. Un’attenzione tutta particolare<br />
è dedicata agli ingredienti che vengono scelti con un occhio di riguardo<br />
alla biodiversità territoriale. Tra i piatti da non perdere: cestino di<br />
millefoglie di trippa e porri e plin di porri con cardi gobbi su fonduta di<br />
toma di capra. Per finire tortino di ananas e meringa con sorbetto di frutto<br />
della passione. La carta dei vini è molto ricca: vi figurano non solo le etichette<br />
piemontesi, alle quali comunque si riserva la maggiore attenzione,<br />

The restaurant was once an old Piedmontese<br />
home of the nineteenth-century. The barrel<br />
vaults with view on the bricks and original<br />
wooden floors together with minimum<br />
furniture create a very comfortable, refined<br />
and elegant atmosphere. Alfredo Russo<br />
proposes different sample menus, both for<br />
the cuisine and for the pastries. At the Dolce<br />
Stil Novo one can feel the refusal for routine<br />
and habit, whilst there is great room for<br />
choices full of creativity whereby dishes are<br />
created based on new ideals and<br />
extraordinary creativity, with a taste for fun<br />
and surprise. Some examples are bread<br />
croutons mixed with bits of omelette and<br />
mountain bacon, The cheese game, an<br />
equilibrium of cheeses and tortelli (stuffed<br />
pasta pockets) with barbaboc (type of leafy<br />
vegetable), pecorino cheese and marjoram.<br />
Guests may also choose from vast lists of<br />
herbal teas, liqueurs and regional and<br />

Il ristorante è stato ricavato in una vecchia casa piemontese dell’Ottocento,<br />
con volte a botte, mattoni a vista e pavimenti in legno originali, il tutto<br />
rende l’ambiente, arredato in stile minimalista, accogliente ed elegante.<br />
Alfredo Russo propone diversi menù degustazione, sia per la cucina che<br />
per la pasticceria. Al Dolce Stil Novo si percepisce il rifiuto per la routine<br />
ed il consueto, mentre c’è grande spazio per le scelte ricche d’immaginazione<br />
da cui nascono piatti concepiti secondo nuovi ideali e straordinaria<br />
creatività, con un gusto per il gioco e la sorpresa. Ne sono esempio le briciole<br />
di pane con emulsione di frittata e pancetta di montagna, The cheese<br />

You’ll find the Gardenia restaurant in a<br />
beautiful nineteenth century house with a<br />
garden located on the main street of Caluso.<br />
A romantic entrance pathway will lead you<br />
to a private parking area. The restaurant’s<br />
atmosphere is sober and elegant: three little<br />
pastel coloured rooms with big, well set<br />
tables placed at a good distance from<br />
another. During the summer season it is<br />
possible to taste the wonderful dishes in the<br />
lovely outdoor settings, maybe by<br />
candlelight in the evening. The service is<br />
professional and discreet, the wine list, long<br />
and complete, boasts labels from all over the<br />
world and prestigious vintages. Four types<br />
of homemade breads are served along with<br />
great grissini (breadsticks). Some of the<br />
courses include: cannelloni of fresh pasta<br />
with caprino (goat’s cheese), ravioli stuffed<br />
with salami and oven roasted potatoes on a<br />
cream of pears and juicy grapes, little<br />
lasagne with zucchini flowers, char roll with<br />

Troverete il ristorante Gardenia in una bella casa ottocentesca con giardino<br />
situata nella via principale di Caluso. Un romantico vialetto d’ingresso<br />
vi condurrà al parcheggio privato. L’atmosfera del locale è sobria ed elegante:<br />
tre salette dai toni pastello con ampi tavoli ben apparecchiati e ben<br />
distanziati. Durante la bella stagione è possibile gustare i piatti dell’ottima<br />
cucina nel piacevole dehors estivo, magari a lume di candela. Il servizio<br />
è professionale e discreto, la carta dei vini, ampia ed esauriente, vanta<br />
etichette di tutto il mondo e annate e formati di pregio. In tavola vengono<br />
servite quattro varietà di pane fatto in casa e ottimi grissini. Tra le<br />
portate proposte possiamo citare: cannelloni di pasta fresca e caprino, ravioli<br />
di salame di patata cotto al forno su passata di pere Martine al mosto<br />
d’uva, lasagnette ai fiori di zucchina, rotolo di salmerino con gamberi<br />

The age-old residence of the Counts Merlo<br />
di Piossasco today lives on thanks to the<br />
professional management of the Chiodi<br />
Latini family. The castle has rooms able to<br />
satisfy every demand and need: large halls,<br />
for parties and receptions, smaller more<br />
intimate rooms, perfect to enjoy in all<br />
tranquillity the specialties of the kitchen,<br />
and then there is the park with the ruins of<br />
the old country house and the small church<br />
of the XIII century. During the summer<br />
season, it is possible to organise any type of<br />
event: convivial and business meetings,<br />
aperitifs, concerts or historic<br />
commemorations. The pleasures of the table<br />
are the catalyst for stopping at the Nove<br />
Merli: all the dishes served are prepared by<br />
the castle’s kitchens, from bread to dishes on<br />

places his passion and experience at the<br />
disposal of curious people and people keen<br />
on cooking by offering the possibility of<br />
spending a Saturday in his kitchen to learn<br />
the art of preparing dishes: with hands, with<br />

the evening the hotel’s rooms are available<br />
where one can enjoy an extraordinary view<br />

Merli<br />
L’antica residenza dei conti Merlo di Piossasco rivive oggi grazie alla professionale<br />
gestione della famiglia Chiodi Latini. Il castello offre ambienti<br />
in grado di soddisfare ogni esigenza: grandi saloni, per feste e ricevimenti,<br />
salette più intime, perfette per godere in tutta tranquillità delle specialità<br />
della cucina, e poi il parco con i ruderi dell’antico maniero e la chiesetta<br />
del XIII secolo. Qui, nella bella stagione, è possibile organizzare eventi<br />
di ogni tipo: riunioni conviviali e di lavoro, aperitivi, concerti o rievocazioni<br />
storiche. Il piacere della tavola è l’elemento catalizzatore della sosta<br />
ai Nove Merli: tutto ciò che viene servito è preparato dalla cucina del<br />
castello, dal pane ai piatti del menù. Lo chef Antonio Chiodi Latini mette<br />
a disposizione di amanti e curiosi la sua passione ed esperienza offrendo<br />

The Combal.zero is located in one of the<br />
most important Piedmontese historic<br />
homes: the Castle of Rivoli, prestigious<br />
home of the Museum of Contemporary Art.<br />
The restaurant’s hall is located beside the<br />
Manica Lunga, the age-old picture-gallery<br />
of the Savoy family, 116 metres long and<br />
seven metres wide with wood flooring and<br />
glazed walls giving an unbroken almost 360<br />
degree view. The kitchen is skilfully<br />
managed by the chef Davide Scabin. The<br />
menu, which is hyper creative and adapted<br />
to an environment dedicated to art,<br />
proposes extremely versatile dishes: from<br />
the more traditional dishes of rabbit tunastyle<br />
and black olives with polenta savarin,<br />
or boiled shin and calf’s head with extravirgin<br />
olive oil, to extreme creations such as<br />
watermelon with oyster or the cioccokube<br />
(small square glasses with chocolate mousse<br />
served with different sauces). Guests may<br />
choose between the à la carte menu of 16<br />
dishes, the sample menu with seven courses<br />
and the Combal.zero menu, with nine<br />
creative courses. There are over five hundred<br />
wines to choose from the wine list.<br />

Il Combal.zero trova la sua sede in una delle più importanti dimore storiche<br />
piemontesi: il castello di Rivoli, prestigiosa sede del Museo di Arte Contemporanea.<br />
La sala del ristorante è situata a lato della Manica Lunga, l’antica<br />
pinacoteca dei Savoia, lunga 116 metri e larga sette con pavimenti in<br />
legno e pareti in cristallo che offrono una visione quasi a 360 gradi. La cucina<br />
è sapientemente condotta dallo chef Davide Scabin. Il menù supercreativo,<br />
adatto ad un ambiente dedicato all’arte, propone piatti di estrema versatilità:<br />
dai più tradizionali tonno di coniglio e olive nere con savarin di polenta,<br />
o bollito di stinco e testina di vitello all’olio extravergine d’oliva, alle<br />
creazioni più estreme come l’anguria all’ostrica o il cioccokube. È possibile scegliere<br />
tra la carta, che propone 16 portate a scelta, il menù degustazione, composto<br />
da sette piatti, e il menù Combal.zero, costituito da nove piatti creativi.<br />
Nella carta dei vini vengono proposte oltre cinquecento etichette.<br />

The restaurant is set in a farmhouse built in<br />
the first half of the eighteenth century in the<br />
heart of the Valdese Valleys. The restoration<br />
works have tried to bring the building to its<br />

transformations. The cuisine of Walter<br />
Eynard and his wife Gisella offers their<br />
guests the best products which can be found<br />
on the territory: vegetables from the<br />
family’s garden, fresh water fish, meat from<br />
small local breeders, herbs, flowers and<br />
mushrooms that spontaneously grow in the<br />
area and mountain pasture cheeses. Here<br />
dishes preserve and exalt the value of raw<br />
materials such as the cappellacci (pasta<br />
squares) stuffed with duck meat and<br />
parmesan cheese aged five years, charlotte<br />
with candied pears and figs in a black cherry<br />
sauce, or the high quality sausages and<br />
cured meats which include the unobtainable<br />
mostardela (a sort of pork blood pudding).<br />
The wine cellar is very prestigious. Eight<br />
rooms are available for guests that wish to<br />
enjoy a bit of peace and quiet after a<br />

Ristorante situato in una cascina della prima metà del Settecento nel cuore<br />
delle valli valdesi. Il restauro ha cercato di riportare il locale alla sua originaria<br />
bellezza rispettandone l’antica struttura, senza trascurare l’esigenza<br />
di vivere in un mondo di continui stimoli e trasformazioni. La cucina di Walter<br />
Eynard e della moglie Gisella propone agli ospiti il meglio dei prodotti<br />
del territorio: verdure dell’orto di famiglia, pesci d’acqua dolce, carni dei<br />
piccoli allevatori locali, erbette, fiori e funghi che nascono spontaneamente<br />
nella zona e formaggi d’alpeggio. Troviamo quindi piatti che conservano<br />
ed esaltano il valore delle materie prime come i cappellacci di cosce d’oca<br />
e parmigiano riserva cinque anni, charlotte di pere e fichi caramellati in salsa<br />
di amarene, oppure salumi ed insaccati di altissima qualità tra cui l’introvabile<br />

After 28 years of activity the restaurant<br />
I Caffi was moved from the small hamlet of<br />
the Langhe region to Acqui’s historic centre,<br />
only a short distance from the cathedral, to a<br />
completely renovated fifteenth-century<br />
building. There are two rooms, the Patronal<br />
one on the upper floor, with coffered ceiling<br />
and elegant furnishings, open only during<br />
the evening, and the one on the ground floor<br />
called delle Mura, more informal, perfect for<br />
lunch. Two independent entrances give<br />
access to these two rooms with different<br />
personalities and vocation but united by the<br />
same master performances of the kitchen.<br />

frazione delle Langhe al centro storico di Acqui, a pochi passi dal duomo,<br />

Patronale al piano superiore, con soffitto a cassettoni ed un raffinato arredo,<br />
aperta solo la sera, e quella al pianterreno detta delle Mura, più informale,<br />
perfetta per servirvi il pranzo. Due ingressi indipendenti danno<br />
accesso a questi due ambienti dalla diversa personalità, e dalla differente vocazione<br />

Pisterna is the name of the prestigious<br />
neighbourhood in Acqui Terme where, long<br />
ago, the local aristocracy built their own<br />
elegant homes. The Ferretti brothers,<br />
searching for new fascinations, gave life to<br />
the Pisterna restaurant inside the fifteenthcentury<br />
Olmi palace. The rooms, that<br />
preserve the refined atmosphere of the time,<br />
with original frescoes on the ceilings,<br />
columns and capital in the entrance, are<br />
furnished in a modern and essential style.<br />
The same harmonious fusion of traditional<br />
and innovative elements characterises the<br />
cuisine, skilful mixture of typical<br />

The Casalese region is an area with many<br />
interesting elements, here the type of<br />
tourism that changes the appearance of<br />
towns has not yet arrived and for those that<br />
pass through it is fun to discover genuine<br />
things that still live-on. Immersed in a<br />
small, shady park, perched atop a hill rises<br />
the castle of San Giorgio, and inside the<br />
castle is the restaurant with its elegant halls.<br />
Here the cuisine of the Monferrato region is<br />
particularly tied to peasant gastronomy, but<br />

Il Casalese è una zona con molti elementi interessanti, qui il turismo che<br />
trasforma i volti dei paesi al momento non è arrivato e per il buongustaio<br />
diventa divertente andare alla ricerca delle cose genuine che ancora sopravvivono.<br />
Immerso in un piccolo parco ombreggiato, sulla sommità di una<br />
collina svetta il castello di San Giorgio, e dentro il castello è il ristorante<br />
con le sue eleganti sale. Qui la cucina monferrina è particolarmente legata<br />
alla gastronomia contadina, ma rivisitata con spunti creativi che sanno<br />
trasformare la semplicità degli ingredienti in ricchezza di gusti e sapori. Tonno<br />
di coniglio con robiola delle Langhe e lamponi, soufflé di fegato d’oca<br />
e verza, stracci di grano saraceno con porcini e Raschera, piccione disossato<br />

The origins of the restaurant date back to<br />
the beginning of the ’900’s when a<br />
“trattoria” was created and managed by the<br />
“Gener”, characteristic fisherman of the<br />
village set along the left bank of the river<br />
Tanaro. In 1971 the Fassi family takes over<br />
and renovates the restaurant respecting the<br />
age-old atmosphere: still today the relaxing<br />
and classy atmosphere praises, on the<br />
wooden-beamed ceilings, Bacchus’ drinks<br />
with words written in the local dialect.<br />
The cuisine, closely tied to the territory and<br />
to the seasons, proposes a choice of typical<br />
dishes: from September to December the<br />
very fragrant and rare white truffles of the<br />
Langhe and Monferrato regions enrich and<br />
exalt the culinary offers. A must taste is the<br />
bazzotto (soft-boiled) egg topped with<br />
polenta (maize porridge) and white truffles<br />
from Alba, beef “leaflets” with vegetables<br />
from greengrocers of the Tanaro and robiola<br />
(cheese) from Roccaverano and, to finish<br />
everything off, a chocolate parfait with a<br />

L’origine del locale risale agli inizi del ’900 quando nasce una trattoria gestita<br />
dal “Gener”, caratteristico pescatore del borgo sorto lungo la riva sinistra<br />
del fiume Tanaro. La famiglia Fassi subentra nel 1971 e fa rinnovare i<br />
locali rispettandone l’antica atmosfera: ancora oggi l’ambiente rilassante e<br />
di classe celebra, sulle travi del soffitto, la bevanda di Bacco con motti in dialetto.<br />
La cucina strettamente legata al territorio ed alle stagioni propone una<br />
scelta di piatti tipici: da settembre a dicembre i profumatissimi e rari tartufi<br />
bianchi delle Langhe e del Monferrato arricchiscono ed esaltano le proposte<br />
culinarie. Da assaggiare l’uovo bazzotto con polenta al cucchiaio e tartufo<br />

The Cascinalenuovo was created in 1968 like<br />
a family-run hotel restaurant for travellers<br />
passing through the town. It is in 1985 when<br />
Walter and Roberto Ferretto decide to<br />
radically change the face and soul of the<br />
restaurant making the atmosphere more<br />
refined and elegant and drastically reducing<br />
the number of tables. The menu offers the<br />
possibility of ranging from the bigger more<br />
traditional Piedmontese dishes such as knifecut<br />
raw meat and the tajarin (“tagliatelle”)<br />
with squab sauce, to the newer creations such<br />
as the thinly-sliced fresh tuna slightly cooked<br />
with spices served with mashed potatoes and<br />
radishes, duck in spicy sauce with apples,<br />
bowl of aubergines and red peppers served<br />
with Roccaverano cheese and basil pesto.<br />
During the autumn season the dishes are<br />
enriched with white truffles. The wine cellar<br />
boasts about 20.000 bottles, mostly<br />
Piedmontese, but there is also an interesting<br />
selection of wines from other regions and<br />

Il Cascinalenuovo<br />
Il Cascinalenuovo nasce nel 1968 come albergo ristorante a conduzione familiare<br />
per i viaggiatori di passaggio. È il 1985 quando Walter e Roberto<br />
Ferretto decidono di cambiare radicalmente volto e anima al locale rendendo<br />
l’ambiente più raffinato ed elegante e riducendo drasticamente il numero<br />
dei coperti. La carta offre la possibilità di spaziare dai grandi piatti<br />
della tradizione piemontese, come la carne cruda tagliata al coltello e i tajarin<br />
al ragù di piccione, alle nuove creazioni quali la tagliata di tonno fresco<br />
scottata con spezie e purea di patate e rafano, l’anatra in salsa speziata<br />
con mele spadellate, la terrina di melanzane e peperoni rossi con formaggetta<br />
di Roccaverano e pesto di basilico. In autunno i piatti si arricchiscono<br />
di tartufo bianco. La cantina vanta circa 20.000 bottiglie, per la maggior<br />
parte piemontesi, ma anche un’interessante selezione di vini di altre<br />

The restaurant Vittoria is located on the main<br />
road of Tigliole, a small town immersed in the<br />
green vegetation about ten minutes away<br />
from Asti, in an eighteenth century building.<br />
An elegant and sought-after atmosphere: in<br />
the entrance hall a partition wall made of<br />
cathedral glass of the XVIII century creates a<br />
corner dining room with a wet bar, plus other<br />
refined halls decorated with period furniture.<br />
The tables, placed at a good distance from one<br />
another, are laid out with Flanders flax<br />
tablecloths, Riedel crystal-ware and Ginori<br />
china and brightened by fresh flowers. The<br />
raw materials used come exclusively from the<br />
territory, with the exception of a few<br />
ingredients, such as the olive oil, that comes<br />
from the neighbouring Riviera area. The<br />
vegetables and herbs come directly from the<br />
restaurant’s vegetable garden, whilst the<br />
restaurants vineyard provides Grignolino and<br />
Barbera. Dishes to be tasted and certain not to<br />
be disappointed: duck breast with<br />
caramelised figs and smooth coffee parfait<br />

Sulla via principale di Tigliole, un piccolo paese immerso nel verde a dieci<br />
minuti da Asti, in un palazzo settecentesco è il ristorante Vittoria. Atmosfera<br />
elegante e ricercata: nell’ingresso un divisorio realizzato con vetri<br />
cattedrali del XVIII secolo crea un angolo salotto con servizio bar, più oltre<br />
le raffinate sale arredate con mobili d’epoca. I tavoli, ben distanziati, sono<br />
apparecchiati con tovaglie di Fiandra, cristalleria Riedel e porcellane Ginori<br />
e vivacizzati da fiori freschi. Le materie prime utilizzate provengono<br />
esclusivamente dal territorio, fatta eccezione per i pochi ingredienti, tra cui<br />
l’ottimo olio di oliva, che arrivano dalla vicina Riviera. Le verdure e le erbe<br />
aromatiche vengono direttamente dall’orto del ristorante, mentre dalla vigna<br />
di proprietà si ricavano Grignolino e Barbera. Da assaggiare certi di<br />
non restare delusi: petto d’anatra con fichi caramellati e parfait morbido al<br />

The restaurant’s entrance presents itself in all<br />
its elegance, with period furnishings, plant<br />
and flower displays and a large and well-lit<br />
banquet hall. The recipes of the chef, Marc<br />
Lantieri, combine the territorial inspiration<br />
with a pinch of transalpine influence, most<br />
probably due to his French origins: every<br />
dish is the result of high-ranking schools,<br />
they are refined and pertinent. The way the<br />
dishes are presented is a joy to the eyes, but<br />
that’s not all, also the palate will appreciate<br />
the results obtained from the careful<br />
preparation in the kitchen. The bread, in its<br />
different versions such as white, with<br />
walnuts, olives, scallions, with two types of<br />
peppers, with sesame seeds and with pinenuts,<br />
is baked daily by the restaurant’s<br />
kitchen. Dishes to try include Barbajuan<br />
made of goose foie gras liver and wild<br />
mushrooms with a Barolo and black truffle<br />
vinaigrette, breast of numida meleagris guineafowl<br />
with sesame seeds, vegetable tempura<br />

Fin dall’ingresso il locale si presenta in tutta la sua eleganza, con gli arredamenti<br />
d’epoca, le piante e fiori e una sala da pranzo ampia e luminosa. La<br />
cucina dello chef Marc Lantieri unisce all’ispirazione territoriale qualche influenza<br />
d’Oltralpe, forse memoria delle sue origini francesi: ogni piatto è frutto<br />
di interpretazioni di alta scuola, raffinate e pertinenti. La presentazione<br />
stessa dei piatti è sempre una gioia per gli occhi, ma non è mai fine a se stessa,<br />
anche il palato apprezzerà il risultato ottenuto dall’accurato lavoro in cucina.<br />
Il pane, nelle versioni bianco, alle noci, alle olive, allo scalogno, ai due<br />
peperoni, al sesamo e ai pinoli, è sfornato quotidianamente dalla cucina del<br />

Set in a superb position with a splendid<br />
view of the Barbaresco vineyards, where<br />
some of the world’s most famous wines are<br />
born, the Vecchio Tre Stelle has been<br />
completely renovated in a very elegant and<br />
refined manner in February 2006. Flavio,<br />
the chef, that manages it since 1987,<br />
proposes a particularly well-kept menu, a<br />
result of the most renowned traditions from<br />
the Alba region re-examined with creativity<br />
and passion. Dishes such as the fillet of<br />
rabbit with foie gras and fresh water<br />
shrimps cooked with champagne dressing<br />
or the knife-cut tajarin (tagliatelle) made<br />
with 30 egg yolks and served with melted<br />
biological mountain butter and white<br />
truffles from Alba are created. Magnificent<br />
desserts include drops of white chocolate<br />
and puff-pastry made with golden apples<br />
with a Calvados sauce. The rich wine list,<br />
illustrated with expertise by the sommelier<br />
Daniele, offers only Piedmontese labels<br />
with a particular attention to<br />

Stelle è stato completamente rinnovato in maniera elegante e raffinata nel<br />
febbraio 2006. Lo chef Flavio, che lo gestisce dal 1987, propone un menù<br />
particolarmente curato, frutto della più rinomata tradizione albese rivisitata<br />
con creatività e passione. Prendono così vita piatti come il filettino di<br />

One amongst the most important strong<br />

Davide Palluda. The restaurant is located on<br />
the first floor of the building that houses the<br />
Enoteca (wine shop) del Roero, an ex<br />
nursery school that was appropriately<br />
renovated: two beautiful spacious rooms<br />
and a very striking veranda. The cuisine is a<br />
significant example of how tradition and<br />
innovation can co-exist giving life to<br />
immediate and intriguing dishes. Davide<br />
constantly updates his gastronomical<br />
culture through an in-depth study of classic<br />
cooking texts and through a continuous<br />
comparing with the greatest interpreters of<br />
international culinary art during his<br />
training courses in Italy and abroad. All of<br />
this is translated in a cuisine that knows<br />
how to talk about the territory without<br />
being imprisoned in tradition. The fassone<br />
dalla testa ai piedi (beef from the horns to the<br />
hoof), tomato sorbet, tortelli (type of ravioli)<br />
with liquid pesto, cooked squab with<br />
smoked foie gras and chicory and then the<br />
excellent desserts to conclude the meal.<br />

al primo piano dell’edificio che ospita l’Enoteca del Roero, ex asilo accuratamente<br />
restaurato: due belle sale spaziose e una suggestiva terrazza. La cucina<br />
proposta è un significativo esempio di come tradizione e innovazione<br />
possano coesistere dando vita a piatti immediati ed intriganti. Davide aggiorna<br />
costantemente la sua cultura gastronomica attraverso l’approfondimento<br />
dei testi classici della gastronomia e il confronto continuo, durante<br />
gli stage di aggiornamento in <strong>Italia</strong> ed all’estero, con i più grandi interpreti<br />
dell’arte culinaria internazionale. Il tutto si traduce in una cucina che sa<br />

Tantris, journey is unusual: her authentic<br />
passion made her quit her teaching job in<br />
order to fully dedicate her time to cooking,<br />

with important chefs. Her cooking is<br />
contemporary, re-examining and modifying<br />
tradition with creativity. Every dish,<br />
preferably starting from meat or fish,<br />
strictly fresh and of good quality, is the<br />

Some of the specialties include: smoked<br />

è per autentica passione che ha lasciato la professione dell’insegnamento<br />

brevi stage con cuochi importanti. La sua è una cucina contemporanea che<br />
rivisita e modifica la tradizione con creatività. Ogni piatto, partendo preferibilmente<br />
da carne o pesce, sempre rigorosamente freschi e di ottima qualità,<br />
è frutto di un’elaborazione attenta alla ricerca dell’armonia dei sapori,<br />

every occasion: the main hall, the real heart<br />
of the restaurant, with round tables placed<br />

the right honour to tradition, choosing<br />
products that come from the lake and from<br />
Valdossola and, at the same time, welcomes<br />
the most innovative proposals of culinary art:<br />

La sala, con grandi vetrate sul lago di Mergozzo, è scaldata da un bel camino,<br />
mentre la veranda si protende discretamente sul grazioso specchio<br />
d’acqua. Marco Sacco tributa il giusto onore alla tradizione, scegliendo i prodotti<br />
provenienti dal lago e dalla Valdossola, e, nello stesso tempo, accoglie<br />
le più innovative proposte dell’arte culinaria: nascono così squisiti, inattesi<br />
accostamenti. Alcune suggestioni dello chef: hamburger di salmerino<br />
di Mergozzo affumicato con cipolle in tempura, torrone di fegato grasso d’oca<br />

At Gavi, in a silent and green scenario, rises<br />
the wine cellar Castellari Bergaglio where the<br />
love of vines has been handed down for four<br />
generations. The winery overlooks, from its<br />
300 metres of altitude, the lands of Rovereto,<br />
with its typical reddish soil rich in clay and<br />
iron, where the Cortese wine has found the<br />
perfect place to grow. The over ten hectares of<br />
vineyard produce grapes with a good sugar<br />
content, well balanced with the right amount<br />
of acidity, that allows to produce wines with a<br />
delicate and harmonious bouquet. All the<br />
grape clusters are strictly collected by hand in<br />
order not to pull off ones that are not ripe yet.<br />
The winery is run in the traditional way by<br />
Mario Bergaglio, his wife Vanda Castellari<br />
and their son Marco. The family supervises<br />
every phase of the winemaking process from<br />
the cultivation to the actual wine making, not<br />
only to monitor their own production of their<br />
wines, but also to enhance the heritage of<br />
Gavi itself, re-launching its unquestionable<br />
historical and cultural potential.<br />

A Gavi, in uno scenario silenzioso e verde, sorge la cantina Castellari Bergaglio<br />
in cui da quattro generazioni si tramanda l’amore per la vigna. L’azienda<br />
domina, dai suoi 300 metri di quota, i terreni di Rovereto, ricchi di<br />
argilla e di ferro, dal tipico colore rossiccio, dove il vitigno Cortese ha trovato<br />
il luogo ideale per crescere. Gli oltre dieci ettari di vigneto producono<br />
uve di buon tenore zuccherino, ben bilanciato da una giusta acidità,<br />
che consentono la realizzazione di vini dal profumo armonico e delicato.<br />
Tutti i grappoli vengono raccolti a mano, evitando di staccare dalle viti<br />
quelli non maturi. Con una conduzione rigorosamente familiare ed artigianale,<br />
che segue ogni fase della lavorazione, dalla coltivazione alla vinificazione,<br />
Mario Bergaglio, insieme alla moglie Vanda ed al figlio Marco,<br />
vogliono non solo seguire accuratamente la produzione del loro vino, ma<br />
anche valorizzare l’intero patrimonio del Gavi rilanciandone le indiscutibili<br />

In the municipality of Vignale Monferrato<br />
twenty hectares of land stretch out, entirely<br />
cultivated vineyards, of Cà Cima, property<br />
of the Accornero family from four<br />
generations. The cultivation of vineyards is<br />
strictly biological: neither chemical<br />
fertilisers nor herbicides are used and the<br />
use of manure and environmentally friendly<br />
products gives the land a natural phytosanitary<br />
defence guaranteeing a high quality<br />
of the product. The establishment’s wine<br />
cellar, fully equipped with every modern<br />
technology, remains faithful to the more<br />
traditional wine-making processes whereby<br />
great wines of the Monferrato territory are<br />
obtained: Barbera del Monferrato,<br />
Grignolino, Freisa, Casorzo passito and<br />
Monferrato bianco. There are also cosy<br />
rooms with bathrooms and kitchenettes in<br />

Nel comune di Vignale Monferrato si distendono i venti ettari, interamente<br />
coltivati a vigneto, di Cà Cima, proprietà della famiglia Accornero da quattro<br />
generazioni. La coltura dei vigneti è rigorosamente biologica: qui non<br />
si utilizzano né fertilizzanti chimici né diserbanti e l’impiego di concimi e<br />
di prodotti non dannosi all’ambiente consente al terreno una difesa fito-sanitaria<br />
naturale garantendo l’elevata qualità del prodotto. La cantina dell’azienda,<br />
dotata di tutte le tecnologie moderne, rimane fedele ai processi più tradizionali<br />
della vinificazione da cui si ottengono i grandi vini del territorio<br />
del Monferrato: Barbera del Monferrato, Grignolino, Freisa, Casorzo passito<br />
e Monferrato bianco. Nell’edificio aziendale, recentemente ristrutturato,<br />

The farm, established in 1995, is located in<br />
the old Giribaldi farmstead. The company’s<br />
choices all point to one goal: obtain an<br />
absolute quality and safeguard the unique<br />
and typical characteristics that distinguish<br />
the Monferrato Astigiano regions and its<br />
products, first and foremost the wine. The<br />
company’s philosophy brings a continuous<br />
improvement and care for the smallest<br />
details, from the vineyard to the wine cellar.<br />
The care for quality begins in the vineyards,<br />
with sensible pruning, limited fertilisation,<br />
thinning out of grapes and a very careful<br />
harvest, and continues in the wine cellar<br />
through a careful traditional vinification,<br />
carried out with the utmost respect for the<br />
wine, trying to limit physical or chemical<br />
modifications that may alter the naturalness<br />
of the wine. Using only grapes grown on<br />
their own estates, spread over eight hectares,<br />
the company produces about 40.000 bottles<br />

La Giribaldina<br />
L’azienda agricola, nata nel 1995, ha sede nell’antica cascina Giribaldi. Le<br />
scelte aziendali puntano tutte verso un unico obiettivo: ottenere un’assoluta<br />
qualità e salvaguardare i caratteri di unicità e di tipicità che contraddistinguono<br />
il territorio del Monferrato Astigiano ed i suoi prodotti, primo<br />
fra tutti il vino. La filosofia aziendale porta ad una continua ricerca di miglioramento<br />
e alla cura di ogni minimo dettaglio, dalla vigna alla cantina.<br />
La tutela della qualità inizia nei vigneti, con potature equilibrate, scarse concimazioni,<br />
diradamento dei grappoli ed un’attenta vendemmia, e prosegue<br />
poi in cantina con un’accurata vinificazione tradizionale, volta soprattutto<br />
al rispetto del vino, cercando di limitare al massimo tutti quegli interventi<br />
fisici o chimici che possono alterarne le caratteristiche di assoluta genuinità.<br />
Utilizzando solo uve raccolte nei propri vigneti, che si estendono per<br />

Since 1876 the Casa Contratto, with its Art<br />
Nouveau buildings, is located in the heart of<br />
Canelli. From the big wrought-iron fence<br />
visitors access the courtyard, recently<br />

comes across a gallery, that contains<br />
precious items of the long history of Casa<br />
Contratto, which leads to the innermost<br />
part, the wine-cellar dug out of the tufa<br />
rock, at thirty-two metres deep in the heart<br />
of the hill: here wine is born and evolved.<br />
It is in these impressive “underground<br />
cathedrals” that the legend of wine-making<br />
with classic methods and with those used by<br />
Casa Contratto has continued from 130<br />
years. The temperature, constant and<br />
natural, is a decisive characteristic to ensure<br />
a perfect aging of the wine in the bottle. The<br />
selection of wines produced: Barolo,<br />
Barbaresco, Barbera d’Asti, Chardonnay,<br />
Gavi, Moscato and, naturally, a large<br />

Casa<br />
Contratto<br />
Nel cuore di Canelli, fin 1876, ha sede Casa Contratto con i suoi edifici in<br />
stile Liberty. Dal grande cancello in ferro battuto si accede al cortile, che è<br />
stato restaurato con una pavimentazione in ciotoli di fiume, secondo la tradizione<br />
delle antiche strade di Canelli. Dai giardini una galleria, che contiene<br />
preziose testimonianze della lunga storia di Casa Contratto, conduce<br />
alla parte più intima, quella delle cantine scavate nel tufo, a trentadue metri<br />
di profondità nel cuore della collina: qui il vino nasce e si evolve. È nella<br />
maestosa imponenza di queste cattedrali sotterranee che la leggenda della<br />
vinificazione con il metodo classico e con quello di Casa Contratto si perpetua<br />
da 130 anni. La temperatura, naturale e costante, è una caratteristica determinante<br />
per assicurare un perfetto affinamento del vino in bottiglia. I vini<br />

The hills are those where, ever since the<br />
beginning of the 1900’s, Piero Coppo began<br />
to produce sweet sparkling wines together<br />
with great red wines of the Monferrato and<br />
Langa regions. From a tree lined path one<br />
enters a reception area rich with gadgets,<br />
bottles and books; the wine cellar is next,<br />
large and bright, with the warehouse and<br />
consignment area and a futuristic series of<br />
steel machinery. Gradually one goes deep<br />
into the hill, the ceilings lower into brick<br />
vaults, large arches with low curves, steel is<br />
replaced by the light wood of the barriques,<br />
the tones of light are warmer and the<br />
atmosphere is softened. No more forklifts<br />
and transported pallets, no more tinkling of<br />
bottles on the bottling line, but silence and<br />
semi-darkness. Whilst continuing to walk<br />
the cellar becomes a tunnel and one emerges<br />
in the belly of the land: thanks to the careful<br />
lighting of the walls one notices the layers<br />
and various century-old beddings.<br />
Coppo<br />
Le colline sono quelle dove, al principio del ’900, Piero Coppo inizia a produrre<br />
spumanti dolci unitamente ai grandi vini rossi del Monferrato e di<br />
Langa. Dal viale alberato si entra in un ambiente di ricezione ricco di gadget,<br />
bottiglie e libri; si accede poi alla cantina, ampia e luminosa, con la zona<br />
di magazzino e spedizione e le avveniristiche sequenze di acciaio delle<br />
macchine. Mano a mano che si penetra più profondamente nella collina i<br />
soffitti cominciano ad abbassarsi e si fanno volte in mattoni, archi ampi a<br />
sesto ribassato, l’acciaio lascia posto al legno chiaro delle barriques, i toni della<br />
luce si fanno più caldi e l’atmosfera più ovattata. Non più muletti che<br />
girano e pallet trasportati, non più il tintinnare delle bottiglie nella catena<br />
d’imbottigliamento, ma silenzio e penombra. Continuando a camminare<br />
la cantina si fa galleria e si immerge nel ventre della terra: grazie all’illuminazione<br />
attenta e discreta delle pareti si possono distinguere la falda e<br />
varie stratificazioni secolari.<br />

The farm Cascina Moncucchetto, located in<br />
the northern part of the Asti Monferrato<br />
region, extends on a hilly area of fifteen<br />
hectares, all cultivated vineyards. The<br />
southern exposure, the particular<br />
characteristics of the land, calcareous and<br />
clayey, together with the traditional<br />
techniques of vine cultivation, also known<br />
as guyot, all enable to obtain wines that<br />
highlight the flavours and scents of the<br />
Monferrato lands. The main products of the<br />
farm are the typical ones of the territory,<br />
Barbera d’Asti and Monferrato, Grignolino,<br />
Freisa, Cortese, and, amongst sweet wines,<br />
Malvasia, spumante (sparkling wine) a tappo<br />
raso (type of cork), and Solatìo, wine made<br />
with dried grapes obtained from the late<br />
harvest of the Malvasia grape clusters.<br />
Cascina Moncucchetto has always produced<br />
its wines strictly respecting the ancient<br />
traditions of the Piedmontese wine industry<br />
and, in the adjacent farm house, offers the<br />
possibility of tasting the pleasures of ancient<br />
and simple flavours.<br />

L’azienda agricola Cascina Moncucchetto, che si trova nella parte più a nord<br />
del Monferrato astigiano, si estende su un’area collinare di quindici ettari,<br />
tutti coltivati a vigneto. L’esposizione a mezzogiorno, le particolari caratteristiche<br />
del terreno, calcareo e argilloso, unite alla tradizionale tecnica<br />
di coltivazione della vite, detta guyot, permettono di ottenere vini che<br />
evidenziano i sapori e i profumi delle terre monferrine. I protagonisti della<br />
produzione dell’azienda sono quelli tipici del territorio, Barbera d’Asti<br />
e del Monferrato, Grignolino, Freisa, Cortese, e, tra i vini dolci, Malvasia,<br />
spumante a tappo raso, e Solatìo, passito ottenuto dalla vendemmia tardiva<br />
di grappoli scelti di Malvasia. Da sempre la Cascina Moncucchetto produce<br />
i suoi vini nel rispetto rigoroso delle antiche tradizioni vinicole piemontesi<br />

The vineyards of the Azienda Agricola<br />
San Colombano are located in Castelnuovo<br />
Belbo and are over thirty years old with low<br />
productivity yields, thus producing<br />
excellent grape clusters. The main vine is<br />
the Barbera, smaller vines are planted for<br />
Chardonnay, Cortese and Dolcetto.<br />
The farm’s exposure varies from south<br />
to south-east, with soil of a clayey nature<br />
whereby the presence of magnesium and<br />
iron may be found. The area has always been<br />
considered amongst the most suited for the<br />
production of the very best Barbera d’Asti,<br />
in the prestigious sub-zone of Nizza which<br />
represents the epitome of quality thanks to<br />
strict production regulations that, after a<br />
careful selection of the grapes during the<br />
harvest, foresees a lengthy period of refining<br />
in barrels and in bottles. The other grapes<br />
from which Cossetti-labelled wines are<br />
made come from highly prestigious crus, in<br />
vineyards laid out in the most favourable<br />
positions and soil in the Asti area and<br />
Piedmont’s other important vine-growing<br />
areas, such as Langhe, Roero and Gavi.<br />
Cossetti<br />
I vigneti dell’azienda agricola San Colombano si trovano a Castelnuovo Belbo<br />
e hanno un’età media superiore ai trent’anni e basse rese produttive, con<br />
conseguenti caratteristiche ottimali dei grappoli. Il vitigno predominante<br />
è il Barbera, piccole vigne sono impiantate a Chardonnay, Cortese e Dolcetto.<br />
L’esposizione varia da sud a sud-est, con terreni di natura argillosa<br />
di medio impasto, nei quali si rileva la presenza di ferro e magnesio. La<br />
zona è inserita storicamente tra quelle più vocate alla produzione della migliore<br />
Barbera d’Asti, nella sottozona di pregio Nizza che ne rappresenta<br />
il vertice qualitativo tramite un severo disciplinare di produzione, che, dopo<br />
accurate scelte vendemmiali, prevede lunghi affinamenti in botte e bottiglia.<br />
Le altre uve dalle quali nascono i vini firmati Cossetti provengono<br />
da cru di grande pregio di vigneti impiantati nelle posizioni più favorevoli<br />
dell’Astigiano e tra le più importanti aree viticole del <strong>Piemonte</strong>: Langhe,<br />

Today Bava is a modern business managed<br />
by the family that owns the vineyards in the<br />
town of Cocconato since the 1600’s but only<br />
in 1911 did they give life to the wine<br />
producing company. We are thirty<br />
kilometres north of Asti, almost 500 metres<br />
at sea level, on the highest hill of the<br />
Monferrato region: the wine cellar where<br />
wine is aged and bottled is located here. Up<br />
until its origins the business has paid<br />
particular attention to the production of<br />
Barbera, carefully aged, together with<br />
Malvasia, sweet dessert wine, produced, as of<br />
the 1980’s, also in the rosé spumante (pink<br />
sparkling wine) version. The more<br />
international Barolo today continues in the<br />
family’s cru vineyards at Castiglione Falletto.<br />

Bava è oggi una moderna azienda condotta dalla famiglia che possiede i suoi<br />
vigneti nel paese di Cocconato fin dal ’600, ma che ha dato vita alla casa<br />
vinicola solo nel 1911. Siamo trenta chilometri a nord di Asti, a quasi 500<br />
metri sul livello del mare, sulla collina più alta del Monferrato: qui ha sede<br />
la cantina dove avvengono vinificazione e imbottigliamento. Fin dalle sue<br />
origini l’azienda ha prestato particolare attenzione alla produzione del Barbera,<br />
fatto accuratamente invecchiare, cui si affianca quella del Malvasia,<br />
vino dolce da dessert, declinato, a partire dagli anni ’80, anche nella versione<br />
rosé spumante. Il più internazionale Barolo ha oggi una continuità<br />
nei cru dei vigneti di famiglia a Castiglione Falletto. Piccole produzioni da<br />
vitigni nativi, Dolcetto, Grignolino, Freisa e Chardonnay, completano l’offerta<br />

The small and ancient wine cellar of the<br />
Langa Astigiana region, managed by<br />
Giovanni Scaglione is located in a splendid<br />
position in the Loazzolo territory. This<br />
municipality boasts the denomination of<br />
controlled origin less widespread in Italy,<br />
that of the Loazzolo wine, a quality Moscato<br />
made of dried grapes, produced only by a<br />
small amount of little wine-making<br />
companies. The areas close by the winecellar<br />
are part of a reservation where the<br />
main attraction is the presence of<br />
spontaneous orchids: twenty one species<br />
have been registered, some of which are<br />
considered botanical rarities. In the nearby<br />
100 hectare woods there are striking paths<br />
with well marked trails and illustrative<br />
bulletin boards.<br />
Forteto<br />
della Luja<br />
La piccola e antica cantina della Langa Astigiana, gestita da Giovanni Scaglione,<br />
è situata in una splendida posizione nel territorio comunale di Loazzolo.<br />
Proprio questo comune vanta la denominazione di origine controllata<br />
meno estesa d’<strong>Italia</strong>, quella dell’omonimo Loazzolo, un Moscato passito di qualità,<br />
prodotto da pochissime aziende vitivinicole. Le zone limitrofe alla cantina<br />
fanno parte di una riserva il cui fiore all’occhiello è la presenza di orchidee<br />
spontanee: ne sono state censite ben ventuno specie, alcune delle quali<br />
sono vere rarità botaniche. Nel vicino bosco di cento ettari sono stati tracciati<br />
itinerari suggestivi con sentieri ben segnalati e bacheche illustrative.<br />

The history of the cantine Bersano begins<br />
during the first years of the previous century<br />
at Nizza Monferrato, heart of the Barbera<br />
d’Asti district. The wine firm owns,<br />
between the Langhe and Monferrato<br />
regions, some farmsteads and 230 hectares<br />
of vineyards. The latter, in expansion, are<br />
constantly followed by a team of<br />
agronomists and vine-dressers. Truly in love<br />
with these lands, the current owners,<br />
members of the Massimelli and Soave<br />
families, have given life to two museums,<br />
one on the life of the peasant folk and<br />
another on prints, whereby a collection of<br />
antique prints of wine are on exhibit. The<br />
production is extremely diverse: red wines<br />
such as Barbera, Barolo, Barbaresco,<br />
Nebbiolo, Ruché, Dolcetto, Grignolino and<br />
Brachetto, white wines such as Arneis,<br />
Cortese, Gavi and Moscato, different types<br />
of spumante, grappas, distillates and a<br />
quinine Barbera. Lovers of wine tourism<br />
may spend some days at Castagnole<br />
Monferrato, in the San Pietro inn, guests of<br />
the Bersano wine firm.<br />

La storia delle Cantine Bersano ha inizio nei primi anni del secolo scorso<br />
a Nizza Monferrato, cuore del comprensorio del Barbera d’Asti. La casa vinicola<br />
possiede, tra Langhe e Monferrato, alcune cascine e circa 230 ettari<br />
di vigne. Queste, in continua espansione, vengono costantemente seguite<br />
da un’equipe di agronomi e vignaioli. Veri innamorati di queste terre, gli<br />
attuali proprietari, i membri delle famiglie Massimelli e Soave, hanno dato<br />
vita a due musei, quello delle contadinerie e quello delle stampe, in cui è<br />
esposta una collezione di antiche stampe sul vino. La produzione è estremamente<br />
variegata: rossi, come Barbera, Barolo, Barbaresco, Nebbiolo, Ruché,<br />
Dolcetto, Grignolino e Brachetto, bianchi, quali Arneis, Cortese, Gavi<br />
e Moscato, diversi spumanti, grappe, distillati e una Barbera chinata. Gli<br />

Clemente Guasti founded the company in<br />
1946, following an ancient family tradition<br />
tied to wine. A true innovator for the<br />
quality of production, already during the<br />
1950’s he began to select the grapes coming<br />
from the best cultivations of the Nizza<br />
Monferrato area, inaugurating the cru<br />
concept for Barbera wine. Currently the<br />
farm owns four farmsteads on forty hectares<br />
of land, of which twenty-nine are vineyards.<br />
The impressive underground wine cellars<br />
hold big durmast barrels that guarantee the<br />
perfect aging of over 1200 hectolitres of<br />
wine. The climate and the soil’s<br />
composition are environmental factors that<br />
mainly influence the quality and<br />
characteristics of the grapes: if the first<br />
factor maintains itself constant and regular,<br />
the second may change within very narrow<br />
limits. Therefore nearby lands may be<br />
different in composition and exposure and<br />
thus make products of different qualities.<br />

Clemente Guasti fondò l’azienda nel 1946, proseguendo un’antica tradizione<br />
di famiglia legata al vino. Vero innovatore in tema di qualità della<br />
produzione, già negli anni ’50 iniziò a selezionare le uve provenienti dalle<br />
migliori coltivazioni del territorio di Nizza Monferrato, inaugurando il<br />
concetto di cru per la Barbera. Attualmente l’azienda può contare su quattro<br />
cascine di proprietà e su quaranta ettari di terreno, di cui ventinove coltivati<br />
a vigneto. Le imponenti cantine custodiscono nei sotterranei grandi<br />
botti di rovere che garantiscono il perfetto invecchiamento di oltre 1200<br />
ettolitri di vino. Il clima e la composizione del terreno sono i fattori ambientali<br />
che maggiormente influiscono sulla qualità e sulle caratteristiche<br />
delle uve: se il primo si mantiene uniforme e costante su vaste zone, la seconda<br />
può mutare entro limiti molto ristretti. Terreni vicini possono dunque<br />
essere diversi per costituzione ed esposizione e danno così origine a prodotti<br />

Braida<br />
La cantina Braida, situata a pochi chilometri da Asti, nel piccolo paese di<br />
Rocchetta Tanaro, è un’azienda a conduzione familiare tra le più moderne<br />
della zona. Il capostipite Giacomo Bologna ereditò dal padre sia la vigna,<br />
sia il soprannome Braida, ma soprattutto l’amore per il vino e la viticoltura<br />
che a sua volta trasmise alla moglie e ai figli, oggi appassionatamente<br />
alla conduzione della ditta. Iniziative coraggiose ed investimenti importanti<br />
in cantina e in vigna hanno fatto rapidamente evolvere quest’azienda che<br />

The Marchesi Alfieri winery is a historic<br />
wine cellar located in the Alfieri castle in<br />
San Martino Alfieri, on top of the hills<br />
between Asti and Alba. Today three sisters,<br />
Emanuela, Antonella and Giovanna San<br />
Martino di San Germano, equipping the<br />
age-old wine cellars with modern<br />
technologies, have kept and valued the<br />
historic heritage and traditional wine<br />
making of the Marchesi Alfieri. A<br />
document from the family’s files states that<br />
in 1337 the lands were already “vineati a<br />
philari” (rows of vines). Between 1696 and<br />
1703 important restructuring works were<br />
carried out in the castle’s wine cellars and<br />
still today these rooms, with the<br />
temperature and humidity kept under<br />
control, are used for wine making and aging<br />
of the wine in French durmast barrels.<br />
Currently the farm has a total vine surface of<br />
almost twenty-four hectares of which eleven<br />
dedicated to growing Barbera grapes. Inside<br />
the monumental facilities small apartments<br />
have been recently renovated in order to<br />
welcome lovers of wine tourism.<br />
Marchesi<br />
Alfieri<br />
L’azienda Marchesi Alfieri è una storica cantina che ha sede nel castello Alfieri<br />
in San Martino Alfieri, sulla sommità delle colline tra Asti e Alba. Oggi<br />
tre sorelle, Emanuela, Antonella e Giovanna San Martino di San Germano,<br />
attrezzando le antiche cantine secondo moderne tecnologie, hanno mantenuto<br />
e valorizzato il patrimonio storico e le tradizioni vitivinicole dei Marchesi<br />
Alfieri. Un documento degli archivi di famiglia attesta che nel 1337<br />
i terreni erano già “vineati a philari”. Tra il 1696 e il 1703 sono stati effettuati<br />
importanti lavori di sistemazione nelle cantine del castello e ancora<br />
oggi questi locali, con temperatura e umidità controllate, vengono utilizzati<br />
per la vinificazione e per l’affinamento in botti di rovere francese. Attualmente<br />
l’azienda ha una superficie vitata totale di quasi ventiquattro ettari<br />
di cui quindici a uve Barbera. Nelle pertinenze del complesso monumentale<br />
sono stati recentemente restaurati dei piccoli appartamenti per ospitare<br />

The Carussin farm was established in 1927 in<br />
San Marzano Oliveto, a small municipality on<br />
the hills between Nizza Monferrato and<br />
Canelli, following the settlement in that area<br />
of its founder, Ferro Maggiore, who came<br />
from nearby Calosso, whereby the name<br />
Carussin, or calossese takes its name from the<br />
Piedmontese dialect. The original company, a<br />
farmstead with four hectares of vineyards,<br />
expands with the purchase of a second<br />
farmstead with portions of more land for<br />
vineyards: today the cultivated surface has an<br />
extension of twenty-two hectares, almost<br />
entirely with Barbera vines. Upon request it is<br />
possible to visit the wine firm: the tour begins<br />
in the heart of the wine cellar, where the<br />
grandparents are at work and continues<br />
through the vinification cellars where the<br />
wine is refined in wood and in bottles, then<br />
through the machines that press and bottle<br />
the wine to conclude amongst the vineyards,<br />
in the company of the slow and peaceful<br />
donkeys bred by Carussin. It is also possible to<br />
savour the beauty of the sweet hilly landscape<br />
and, during the summer, taste, in the<br />
vineyards, the Merendino Asinino (outdoor<br />
tasty snack).<br />
Carussin<br />
L’azienda agricola Carussin nasce nel 1927 a San Marzano Oliveto, un piccolo<br />
comune sulle colline tra Nizza Monferrato e Canelli, quando vi si insediò<br />
il fondatore, Ferro Maggiore, proveniente dalla vicina Calosso; da qui,<br />
il nome in dialetto piemontese: Carussin, ossia calossese. L’azienda originaria,<br />
un cascinale con quattro ettari di vigneto, si espande con l’acquisto di<br />
una seconda cascina e con la destinazione a vigneto di porzioni sempre maggiori<br />
di terreno: la superficie oggi coltivata a vite ha un’estensione di ventidue<br />
ettari, quasi totalmente impiantati a Barbera. A richiesta è possibile<br />
visitare l’azienda: il percorso inizia dalla cantina del cuore, dove lavoravano<br />
i nonni, prosegue attraverso le cantine di affinamento in legno ed in<br />
bottiglia e di vinificazione, quindi per l’impianto di pigiatura e di imbottigliamento<br />
e si conclude tra i vigneti, in compagnia dei lenti e tranquilli<br />
asinelli che Carussin alleva. Sarà possibile assaporare la bellezza del dolce<br />
paesaggio collinare e, nella bella stagione, gustare, in vigna, il Merendino<br />
Asinino.<br />

The Marchesi di Barolo have always created<br />
their wines where the Barolo finds its ideal<br />
environment, where the land is very rich.<br />
Here, on the mountainsides overlooking<br />
south and east, the sun remains for a long<br />
time to brighten the land and to give its best<br />
rays to small, precious vines protected by<br />
wind and humidity, carefully cultivated<br />
mainly for Nebbiolo wine. The first to create<br />
the wine that is now known as Barolo, at the<br />
beginning of the nineteenth century, were<br />
the Marchesi Falletti that carefully produced<br />
it on their estates and made it known and<br />
appreciated in a few places. The winery also<br />
has a guest quarters with a large hall, a<br />
conference room and a more intimate room,<br />
ideal for business meetings, business dinners<br />
and important sample tasting. Valuable<br />
furniture, wood flooring, antique paintings<br />
and prints hung on the walls are all an ideal<br />
frame for the tables laid out with taste,<br />
perfect for enjoying a very refined dinner.<br />

Da sempre la Marchesi di Barolo crea i suoi vini là dove il Barolo trova il<br />
suo ambiente ideale, dove la terra è più ricca. Qui, sui versanti che guardano<br />
a sud e ad est, il sole rimane più a lungo a illuminare la terra e regala i<br />
suoi raggi migliori a piccoli, preziosi, vigneti protetti dai venti e lontani dai<br />
ristagni di umidità, coltivati con cura e dedicati in particolare al Nebbiolo.<br />
A creare il vino che va ora sotto il titolo di Barolo furono, al principio<br />
dell’Ottocento, i Marchesi Falletti che lo produssero con ogni cura nelle loro<br />
tenute e lo fecero conoscere ed apprezzare un po’ ovunque. L’azienda dispone<br />
anche di una foresteria dotata di un ampio salone, di una sala convegni<br />
e di un ambiente più intimo, luogo ideale per meeting e riunioni d’affari,<br />

The Estates Tenute Cisa Asinari dei Marchesi<br />
di Grésy are comprised of three farms located<br />
in the Langhe and Monferrato regions, places<br />
whereby the greatest Piedmontese wines are<br />
produced. In the Langhe region, at<br />
Barbaresco, the Martinenga estate mainly<br />
grows Nebbiolo grapes for the production of<br />
Barbaresco d.o.c.g, but also Barbera and<br />
Cabernet Sauvignon grapes. A short distance<br />
away, in the municipality of Treiso d’Alba, the<br />
Monte Aribaldo estate is home of the vineyard<br />
that grows Dolcetto d’Alba, Chardonnay and<br />
Sauvignon grapes. In the Monferrato region,<br />
in the municipality of Cassine, the La Serra<br />
and Monte Colombo estates produce Moscato<br />
d’Asti d.o.c.g, Barbera d’Asti and Merlot<br />
(Monferrato Rosso). Alberto di Grésy, current<br />
owner of the family run business, was well<br />
aware that it was a pity to sell off his own<br />
grapes to the most qualified wine-making<br />
producers of the Alba region, keeping with<br />
the tradition of the Langhe area; as of 1973 he<br />
began his own wine making: the aim is to<br />
work as best as possible respecting tradition<br />
and transferring as much as possible the<br />
character and personality of the territory from<br />
the vineyard right to the bottle.<br />
Marchesi<br />
di Grésy<br />
Le Tenute Cisa Asinari dei Marchesi di Grésy comprendono tre aziende agricole<br />
situate nelle Langhe e nel Monferrato, luoghi di produzione di grandi<br />
vini piemontesi. Nelle Langhe, a Barbaresco, Martinenga produce soprattutto<br />
uve Nebbiolo da Barbaresco d.o.c.g, ma anche uve Barbera e Cabernet<br />
Sauvignon. Poco distante, nel comune di Treiso d’Alba, Monte Aribaldo<br />
è sede di un vigneto atto a produrre uve Dolcetto d’Alba, Chardonnay e<br />
Sauvignon. Nel Monferrato, nel comune di Cassine, La Serra e Monte Colombo<br />
producono uve Moscato d’Asti d.o.c.g., Barbera d’Asti e Merlot (Monferrato<br />
Rosso). Alberto di Grésy, attuale proprietario dell’azienda di famiglia,<br />
si rende conto ben presto che è un peccato limitarsi a vendere le uve<br />
di proprietà alla più qualificata enologia albese, come vuole la tradizione langarola;<br />
dal 1973 inizia le vinificazioni in proprio: l’obiettivo è di operare al<br />
meglio nel rispetto della tradizione e di trasferire quanto più possibile il carattere<br />
e la personalità del territorio di origine dal vigneto alla bottiglia.<br />

The wines of the Oddero family were created<br />
at the end of the previous century, at La<br />
Morra, in the Langhe, hills that extend to the<br />
right of the Tanaro river. It is not possible to<br />
precisely date the beginning of their winemaking:<br />
notary deeds and photographs of the<br />
brothers Lorenzo and Luigi, born at the<br />
beginning of the Nineteenth century are the<br />
only items found. It is thanks to them that<br />
the Nebbiolo of La Morra grapes were made<br />
into wine for the first time, probably in<br />
1878, even if it was initially sold in wine<br />
casks (known as brente) instead of in bottles.<br />
The lands of La Morra, Morainic marl from<br />
the Tortona region, produce Barolo of a<br />
bouquet and body that are respectively<br />
harmonious and soft.The farm appears like a<br />
natural terrace on the hills and makes wine<br />
only from the grapes of its vineyards, just like<br />
they did in the past. There are two wine<br />
cellars, both at Santa Maria di La Morra: one<br />
for the vinification and first step of the wine<br />
production, the other, in the farm’s main<br />
offices, is used for the ageing of wines with a<br />
long shelf life.<br />
Oddero<br />
Fratelli<br />
I vini di casa Oddero nacquero alla fine del secolo scorso, a La Morra, nelle<br />
Langhe, le colline che si estendono a destra del fiume Tanaro. È impossibile<br />
indicare con sicurezza una data di inizio della vinificazione: si risale<br />
con atti notarili e fotografie ai fratelli Lorenzo e Luigi, nati all’inizio dell’Ottocento.<br />
È grazie a loro che le uve di Nebbiolo di La Morra vengono<br />
vinificate per la prima volta, probabilmente nel 1878, anche se inizialmente<br />
vendute più a brente che in bottiglia. I terreni di La Morra, marne mioceniche<br />
tortoniane, generano Barolo di profumo e corpo assai armonici e<br />
morbidi. L’azienda appare come una terrazza naturale sulle colline e, come<br />
un tempo, vinifica unicamente le uve dei propri vigneti. Le cantine sono<br />
due, entrambe a Santa Maria di La Morra: una è per la vinificazione e la prima<br />
cura dei vini in produzione, l’altra, nella sede dell’azienda, serve per l’affinamento<br />
dei vini di lunga vita.<br />

The Rocche dei Manzoni farm was created<br />
by will of Valentino Migliorini and his wife<br />
Jolanda that in 1974 decided to purchase in<br />
the Manzoni Soprani area at Manforte d’Alba<br />
an old farmstead of the 1700’s surrounded by<br />
vineyards. In the first years of activity the<br />
production was limited to traditional vines,<br />
Dolcetto d’Alba, Barbera d’Alba and Barolo.<br />
In 1976 Migliorini, that deeply believed in<br />
the potential of the territory, experimented<br />
with new vines and new wine making<br />
techniques, giving life to new products<br />
placing them with the older ones: it is thus<br />
that the Bricco Manzoni was created, first<br />
product made in the Langa region with 80%<br />
of Nebbiolo and 20% of Barbera. The<br />
product’s high quality is guaranteed not only<br />
by the meticulous vinification and<br />
continuous research, but also by painstaking<br />
work carried out in the vineyards, with short<br />
trimming and thinning of the grapes<br />
reducing production yield.<br />
Rocche<br />
dei Manzoni<br />
Il podere Rocche dei Manzoni nasce per volontà di Valentino Migliorini e della<br />
moglie Jolanda, che nel 1974 decidono di acquistare in località Manzoni<br />
Soprani a Monforte d’Alba una vecchia cascina del ’700 circondata da vigneti.<br />
Nei primi anni di attività la produzione era limitata a quella dei vitigni<br />
tradizionali, Dolcetto d’Alba, Barbera d’Alba e Barolo. Nel ’76 Migliorini,<br />
che credeva profondamente nelle potenzialità del territorio, sperimentava nuovi<br />
vitigni e nuove tecniche di vinificazione, dando alla luce nuovi prodotti<br />
da affiancare a quelli esistenti: nasceva così il Bricco Manzoni, primo assemblaggio<br />
prodotto in Langa con l’80% di Nebbiolo e il 20% di Barbera. L’alta<br />
qualità dei prodotti è garantita non solo da meticolose vinificazioni e continue<br />
ricerche, ma anche da un lavoro certosino eseguito in vigna, con potature<br />
corte e diradamento dei grappoli all’insegna di rese bassissime.<br />

The vineyards and wine cellars of the farm<br />
Negro Angelo e Figli are located between<br />
Monteu Roero and Canale: almost fifty<br />
hectares of cultivated vines favouring the<br />
traditional varieties of the area: Arneis,<br />
Favorita, Barbera, Nebbiolo, Bonarda and<br />
Brachetto. At Cascina Riveri, hamlet of<br />
Sant’Anna, there is the heart of the farm: the<br />
wine cellars where the wines are born,<br />
ferment and are refined, the rooms to<br />
welcome visitors that come to learn about<br />
the product and meet the people that create<br />
it, the offices where the production and<br />
market strategies are discussed, in a<br />

Tra Monteu Roero e Canale si trovano le vigne e le cantine dell’azienda agricola<br />
Negro Angelo & Figli, quasi cinquanta ettari coltivati a vite privilegiando<br />
le varietà tradizionali della zona: Arneis, Favorita, Barbera, Nebbiolo,<br />
Bonarda e Brachetto. A Cascina Riveri, nella frazione di Sant’Anna,<br />
c’è il cuore dell’azienda: i locali della cantina, dove i vini nascono, maturano<br />

Fontanafredda is located in the heart of the<br />
Langhe, hills that date back to very ancient<br />

growing areas for great wines, particularly<br />
red ones. The vineyards lie on mostly evencontoured<br />
hillsides and round ridges at an<br />
altitude that ranges from 200 to 400<br />
metres. The farm owns, between the<br />
municipalities of Serralunga, Barolo and<br />
Diano d’Alba, over 100 hectares of<br />
cultivated lands for Nebbiolo, Barbera,<br />
Dolcetto and Moscato grapes. The history of<br />
the wine-producing company<br />
Fontanafredda begins in 1878 and the<br />
company, that today preserves the<br />
chronicles of its noble past, its hunting<br />
lodge, its village, its large wine cellars and<br />
its vineyards, continues to experiment and<br />
move with the times in perfecting what<br />
history has handed down. The impressive<br />
nineteenth century wine cellars<br />

Fontanafredda<br />
Fontanafredda è situata nel cuore delle Langhe, colline dalle origini antichissime,<br />
da sempre votate alla produzione di grandi vini, soprattutto rossi. I<br />
vigneti si estendono su colline dai pendii a profilo per lo più regolare e dai<br />
crinali arrotondati, in una fascia altimetrica che va dai 200 ai 400 metri. L’azienda<br />
possiede, tra i comuni di Serralunga, Barolo e Diano d’Alba, oltre 100<br />
ettari di terreno coltivato a Nebbiolo, Barbera, Dolcetto e Moscato. La storia<br />
della casa vinicola Fontanafredda ha inizio nel 1878 e l’azienda, che oggi<br />
conserva intatte le testimonianze del suo nobile passato, la residenza di caccia,<br />
il borgo, le ampie cantine ed i vigneti, continua a rinnovarsi e a sperimentare,<br />
perfezionando ciò che la storia le ha tramandato. Le maestose cantine<br />
ottocentesche accolgono i nobili vini rossi per l’affinamento, mentre altre,<br />
di nuova costruzione e dotate di tutte le tecnologie oggi indispensabili,<br />
esaltano le caratteristiche dei vini bianchi e degli spumanti.<br />

Antichi Vigneti di Cantalupo is located at<br />
Ghemme, in upper Piedmont. The<br />
business, owned by the Arlunno family,<br />
today covers an entire surface of over 100<br />
hectares, of which thirty-four covered by<br />
vineyards. The rows of vines grow neatly on<br />
the morainic alluvial hills that extend from<br />
the mouth of the Valsesia to the Novarese<br />
plains, a land basically poor, not very fertile,<br />
precisely to enhance the characteristics of<br />
the vines. The species of vine mainly<br />
produced is the Nebbiolo (80% planted<br />
vines), locally called Spanna, but the<br />
development of the native Vespolina and<br />
Uva Rara and del Greco is not ignored,<br />
these are blended together with Arneis and<br />
Chardonnay. Wine aging is carried out in<br />
traditional Slavonic durmast casks and in<br />
smaller French durmast barrels placed in<br />
the remarkable wine cellar on large steps<br />
extracted in the heart of the hill.<br />
Antichi Vigneti<br />
di Cantalupo<br />
Antichi Vigneti di Cantalupo si trova a Ghemme, nell’alto <strong>Piemonte</strong>. L’azienda,<br />
di proprietà della famiglia Arlunno, oggi copre una superficie complessiva<br />
di oltre 100 ettari, di cui trentaquattro occupati da vigneti. I filari crescono<br />
ordinati sulla collina di origine morenico-alluvionale che si estende<br />
dallo sbocco della Valsesia alla pianura novarese, un terreno tendenzialmente<br />
povero, poco fertile, appunto per questo atto ad esaltare le caratteristiche<br />
della vite. La produzione si esprime principalmente nel vitigno Nebbiolo<br />
(80% dell’estensione vitata), chiamato localmente Spanna, ma non si<br />
trascurano neppure la valorizzazione degli autoctoni Vespolina e Uva Rara<br />
e del Greco, assemblato con Arneis e Chardonnay. L’invecchiamento dei vini<br />
avviene sia in tradizionali botti di rovere di Slavonia, sia in piccoli fusti di<br />
rovere francese posti nella suggestiva cantina a gradoni ricavata nel cuore<br />

Travaglini is a family-run company and the<br />

passed on from Arturo Travaglini, who was<br />
already producing Gattinara way back in<br />

produced, wine of great structure, with<br />

Travaglini<br />
Giancarlo<br />
L’esperienza e la passione per il vino di Arturo Travaglini, che già nel 1958<br />
produceva Gattinara, sono state ereditate dal figlio Giancarlo e dalla sua famiglia:<br />
oggi è infatti sua moglie Liliana, con le figlie e il genero, a dirigere<br />
l’attività. L’azienda, collocata nel cuore delle colline di Gattinara, comprende<br />
cinquantacinque ettari di proprietà, di cui quarantadue attualmente<br />
a vigneto ed altri in fase di impianto. Dal vitigno Nebbiolo, localmente<br />
denominato Spanna, si produce il Gattinara docg, vino di grande struttura,<br />
con inconfondibili caratteristiche organolettiche che lo rendono unico:<br />
colore rosso granato, profumi di rosa e viola, con note di liquirizia, di<br />
vaniglia, di spezie e di sottobosco. In azienda il processo di vinificazione<br />

The Lingotto building, example of<br />
architectural functionalism and Turin’s<br />

The Tenuta del Castello di Razzano, located<br />

powerful marquisate of the Natta family,<br />

A national monument, built in the second<br />
half of the 1700’s, represents a very rare<br />
example of a country villa that has entirely<br />
preserved the farm, main attraction. The<br />
estate, the most important of the Gavi<br />
region, extends on a surface of about 80<br />
hectares. The guestrooms are set in the<br />
middle of a large vineyard, in a building<br />
built at the end of the 1600’s, with big<br />
halls, 9 rooms furnished with period<br />
furniture and spacious bathrooms. One’s<br />
gaze crosses entire 59 hectares of vineyards<br />

Monumento nazionale, costruita nella seconda metà del ’700, costituisce<br />
un rarissimo esempio di villa di campagna che ha conservato integra l’azienda<br />
agricola di cui è il centro. La tenuta, la più importante della zona del<br />
Gavi, si estende su una superficie di circa 80 ettari. In mezzo ad un grande<br />
vigneto, in un immobile della fine del ’600, è la foresteria, con grandi<br />
saloni, nove camere arredate con mobili d’epoca e ampie sale da bagno. Il<br />
paesaggio su cui lo sguardo spazia è quello disegnato dai 59 ettari di vigneto<br />
a corpo unico in cui si integrano un lago, boschi secolari, il giardino<br />
all’italiana, il giardino di frutta ed erbe aromatiche, una bellissima limonaia<br />
e, in posizione dominante sui coltivi, la grande piscina. Gli ospiti<br />

in Rosignano, village in the heart of the<br />
Monferrato region a few kilometres from<br />
Casale. Once a religious convent, now the<br />
summer residence of the family who has<br />
been living in it for generations. Guests<br />

Il bed & breakfast I Castagnoni sorge a Rosignano, borgo nel cuore del Monferrato<br />
a pochi chilometri da Casale. Un tempo convento religioso e poi residenza<br />
estiva della famiglia che da generazioni la occupa a tutt’oggi, offre<br />
ai suoi ospiti due camere con cucinino, saletta per prima colazione e ingresso<br />
indipendente, ristrutturati e arredati con gusto discreto. La vista dalla piscina,<br />
posta sulla sommità della collina, consente di ammirare le vallate e i<br />

In the hilly region between Bormida and<br />
Orba, on a little rise that overlooks the town<br />
where the castle takes its name, rises the castle<br />
of Trisobbio. The village boasts noble and<br />
ancient origins: the first records date back to<br />
the Middle Ages when, around the year 1000,<br />
the village became the Church’s possession.<br />
The castle, built much later, in the XIII<br />
century, during the passing of time was<br />
subject to numerous destructions and was<br />
rebuilt in the beginning of the twentieth<br />
century. The only remains of the ancient<br />
fortification is the high battlemented tower.<br />

Il borgo vanta origini nobili e antiche: le prime notizie risalgono al Medioevo<br />
quando, intorno all’anno Mille, il villaggio entra a far parte dei possedimenti<br />
della Chiesa. Il castello, edificato più tardi, nel XIII secolo, nel corso<br />
del tempo subì numerose distruzioni e venne ricostruito agli inizi del Novecento.<br />
Dell’antica fortificazione resta solo l’alta torre merlata. Ogni camera,<br />

The farm house La Corte is located in<br />
Calamandrana, municipality of the Basse<br />
Langhe region, between Acqui Terme,<br />

capital of the sparkling wine. In the quiet<br />
and gentle landscape, completely<br />
characterised by neat rows, rises the building<br />
built at the end of the Eighteenth Century<br />
and named Casa del Podestà (Home of the<br />

The Golf Club Le Fronde is set on the<br />
northern side of Mount Cuneo and has an<br />
excellent view: from the tees of holes 2 and 12<br />
spectacular views of the Rocciamelone peak<br />
can be seen along with the entrance to the val<br />
di Susa and, on the lower part, the<br />
unmistakable outline of the church Sacra of<br />
San Michele. The course is relatively short,<br />
little less than 6,000 metres, with a par 71,<br />
which does not pose as a problem if it weren’t<br />
for the “traps” placed by nature on the<br />
ground that the designers knew how to use:<br />
woods everywhere, century-old trees,<br />
fairways designed inside a thick and<br />
flourishing vegetation. It is not difficult to<br />
understand the origins of the club’s name. It<br />
is advisable to be precise and never leave the<br />
course, always paying attention and to clearly<br />
think on the starting tees of holes 2 and 15.<br />

Adagiato sul versante nord del monte Cuneo nasce il percorso del Golf Club<br />
Le Fronde che gode di un’ottima posizione dal punto di vista panoramico:<br />
ne sono testimoni i tee della buca 2 e della buca 12, da dove si vedono in lontananza<br />
la vetta del Rocciamelone, l’ingresso della val di Susa e, più in basso,<br />
l’inconfondibile sagoma della Sacra di San Michele. Il campo è relativamente<br />
corto, poco meno di 6.000 metri, con un par di 71 colpi, il che non<br />
rappresenterebbe un problema se non vi fossero le insidie che la natura ha<br />
posto sul terreno e che i progettisti hanno accortamente sfruttato: boschetti<br />
ovunque, alberi secolari, fairway disegnati all’interno di una natura fittissima<br />
e rigogliosa. Non è difficile dunque capire l’origine del nome del club.<br />
È consigliabile essere precisi e non abbandonare mai le piste, facendo sempre<br />
attenzione e ragionando a lungo sui tee di partenza della 2 e della 15.<br />

amanti del golf, dai meno esperti ai veri campioni. Gli architetti hanno lavorato<br />
con fantasia ottenendo uno stimolante risultato: dai tiger tee il gioco<br />
diventa veramente impegnativo per via della lunghezza delle buche. La Club<br />
House, sobria ed accogliente, consente di trascorrere ore distensive al bar o<br />
negli ambienti dedicati alle attività del club. Al secondo piano sono: un’ampia<br />

The thirty-six holes of the Circolo Golf<br />
Torino form a remarkable golfing area,<br />
perfectly set in the ex royal estate of the<br />
Mandria (hunting estate of the Savoy<br />
family). In the background of the foothills<br />
of the Alps, set between age-old woods and<br />
furrowed by natural streams, the two<br />
courses unwind. They are identified by the<br />
club’s colours, blue and yellow. The first,<br />
the traditional championship tee, was<br />
designed by the British architect John<br />
Morrison, built in 1956 and remodelled by<br />
the Canadian Graham Cook, author of the<br />
Master Renovation Plan. The course is<br />
substantially flat, modified by the inclusion<br />
of a fair number of fairway bunkers and<br />
mounds on the sides of the course and at the<br />
same time some greens were also enlarged<br />
and shaped in a more modern way. The<br />
yellow course instead was created by the<br />
addition of a third set of nine holes, built in<br />
1974 with John Harris’ intervention, with<br />
the fourth set of nines created in 1986 by<br />
Franco Rivetti based on the plan made by<br />
Marco Croze.<br />

Le trentasei buche del Circolo Golf Torino formano un comprensorio golfistico<br />
d’eccezione, perfettamente inserito nell’ex tenuta reale della Mandria.<br />
Sullo sfondo delle Prealpi, tra boschi secolari e ostacoli d’acqua, si snodano<br />
i due percorsi identificati dai colori del circolo, il blu e il giallo. Il primo, il<br />
tradizionale tracciato di campionato, è stato realizzato nel 1956 su disegno<br />
dell’architetto britannico John Morrison e rimodellato dal canadese Graham<br />
Cooke, l’autore del Master Renovation Plan. Sostanzialmente pianeggiante,<br />
il percorso è stato movimentato dall’inserimento di un maggior numero<br />
di fairway bunker e di mound ai lati delle piste e al contempo alcuni green<br />
sono stati ampliati e sagomati in maniera più attuale. Il percorso giallo nasce<br />
invece dall’unione delle terze nove buche, costruite nel 1974 con l’intervento<br />

Villa Carolina sorge nel cuore di un parco secolare tra le verdi colline del Monferrato<br />
ed offre ai suoi soci il massimo confort. La sede del club è situata nelle<br />
antiche scuderie, completamente restaurate, in cui sono anche l’elegante<br />
foresteria, con le sue venti camere doppie, un’ottimo ristorante, il bar, il campo<br />

progettato dal Cornish & Silva Inc, detto la Marchesa, è inserito in un’area<br />

Paradiso, le prime nove buche sono state progettate da Graham Cooke mentre<br />
le altre sono ancora in costruzione. Sono poi a disposizione dei soci la piscina<br />

In 1770 water with a particular odour was<br />
discovered in a field in Agliano. This water<br />
was considered miraculous by the<br />
inhabitants of the town. Since the<br />
beginning of the 1900’s, thanks to the<br />
entrepreneurial initiatives of the spring’s<br />
owner, a chemical-bacteriological analysis of<br />
the acqua marcia, called rotten water for its<br />
unmistakable sulphur and egg fumes, was<br />
carried out and the spring became famous.<br />
In 1991 Agliano Terme was established.<br />
The sulphur-magnesium water, which flows<br />
at a temperature of 12.8 °C, is periodically<br />
certified and is ideal to restore the body and<br />
for its crenotherapeutic treatments of the<br />
respiratory system; as a drink it is used to<br />
fight inflammatory diseases. The Thermal<br />
baths are not only for health, but also for<br />
relaxation and cuddles: here, besides taking<br />
water aerobics, tone-up, step and swimming<br />
courses, guests can enjoy the modern health<br />
spa with sauna, Scottish showers, hot-tubs,<br />
beauty and holistic treatments.<br />

Nel 1770 venne scoperta in un campo di Agliano un’acqua dall’odore particolare<br />
ritenuta miracolosa dagli abitanti del luogo. A partire dai primi del<br />
’900, grazie all’iniziativa imprenditoriale del proprietario della sorgente, fu<br />
effettuata un’analisi chimico-batteriologica dell’acqua marcia, così detta per<br />
l’inconfondibile esalazione di zolfo e di uovo, e la fonte divenne famosa. Nel<br />
1991 nasce Agliano Terme. L’acqua salsa-solfo-magnesiaca, che sgorga ad una<br />
temperatura di 12,8 °C, viene certificata periodicamente ed è ideale sia per<br />
ritemprare l’organismo, sia per le cure crenoterapiche delle affezioni delle prime<br />
vie respiratorie; assunta come bevanda è inoltre utile per combattere le<br />
malattie infiammatorie. Le Terme non sono solo salute, ma anche relax e coccole<br />
per il proprio corpo: qui, oltre a poter praticare corsi di acquagym, toneup,<br />
step e nuoto, si può godere del moderno centro benessere con sauna, doccia<br />
scozzese, vasca idromassaggio, cure estetiche e trattamenti olistici.<br />

The Golf Club Cuneo, stretched out along<br />
the Gesso river that runs in the Eastern part<br />
of the city of Cuneo, was designed by the<br />
Canadian architect Graham Cooke: eighteen<br />
hole course, 6,018 metres, with a par 72<br />
respects the natural characteristics of the<br />
area. Streams, little lakes and bunkers are<br />
harmoniously set in the scenery of the<br />
Maritime Alps. Great attention was given to<br />
the aspect of the Golf Club’s building: the<br />
restoration works of the splendid Albertasse<br />
Vecchia farmstead, leaving the original<br />
structure untouched, have allowed to build<br />
the prestigious premises of the club. The<br />
Club House consists in: restaurant, bar,<br />
conference centre and health spa; the<br />
building also houses an outdoor pool with a<br />
playground for children. A small and cosy<br />
guesthouse, with nine rooms each with<br />
private bath, is perfect to welcome golfers<br />
that wish to stay at the Club.<br />

Il Golf Club Cuneo, esteso lungo l’alveo del torrente Gesso che scorre nella<br />
zona orientale della città di Cuneo, nasce da un progetto dell’architetto<br />
canadese Graham Cooke: un campo di diciotto buche, 6.018 metri, per un<br />
par di 72 colpi, nel rispetto delle caratteristiche naturali dell’area. Ruscelli,<br />
laghetti e bunker si inseriscono così armoniosamente nello scenario delle<br />
Alpi Marittime. Notevole attenzione è stata dedicata all’aspetto immobiliare<br />
del Golf Club: il restauro della splendida cascina Albertasse Vecchia,<br />
conservando inalterate le caratteristiche architettoniche della struttura, ha<br />
consentito di farne la prestigiosa sede delle attività del circolo. La Club House<br />
comprende: ristorante, bar, sala congressi e centro benessere; la struttura<br />
è dotata anche di una piscina scoperta con area giochi riservata ai bambini.<br />
Una piccola ed accogliente foresteria, nove camere con servizi privati,<br />

The Golf Club Cherasco is located in<br />
Southern Piedmont, in the province of<br />
Cuneo, at the foot of the age-old city of<br />
Cherasco, where the Tanaro river meets the<br />
Stura river. Playing on the course it is easy<br />
to be attracted by the stupendous scenery<br />
that surrounds it: from the sweet hills of the<br />
Langhe, famous for its great wines and<br />
truffles to the distant Alps with the<br />
imposing peak of Mount Monviso. The 18<br />
hole course winds on two altimetric levels<br />
giving it both a hilly and flat aspect.<br />
Numerous little lakes and streams make the<br />
holes more difficult and scenic. The original<br />
trees have been supplemented by more than<br />
4,000 other species such as pines, maples,<br />
hornbeams and oaks making the course<br />
more rich and challenging with some very<br />
long and sheltered par 3 and par 4 holes.<br />

Nel sud del <strong>Piemonte</strong>, in provincia di Cuneo, ai piedi dell’antica città di Cherasco,<br />
dove il fiume Tanaro incontra lo Stura, sorge il Golf Club Cherasco.<br />
Giocando sul suo percorso è facile lasciarsi attrarre dallo stupendo scenario<br />
che lo circonda: dalle dolci colline delle Langhe, famose per i grandi vini e<br />
per il tartufo, o più lontano dalla catena delle Alpi con l’imponente cima del<br />
Monviso. Il tracciato di diciotto buche si snoda su due piani altimetrici che<br />
gli conferiscono il duplice aspetto di collina e di pianura. Numerosi laghetti<br />
e corsi d’acqua rendono più scenografiche ed impegnative le buche. Agli<br />
alberi originali sono stati aggiunti più di 4.000 esemplari tra pini, aceri, carpini<br />
e querce che rendono il percorso ricco e impegnativo con alcune buche<br />
par 3 e par 4 decisamente lunghe e ben difese. La Club House, armoniosa e<br />
funzionale, si inserisce perfettamente nell’ambiente circostante ed ospita in<br />
ambienti caldi ed accoglienti tutte le attività del circolo.<br />

metri sono il più alto stabilimento termale d’<strong>Italia</strong>. L’incantevole bellezza del<br />
paesaggio conferisce alle terme caratteristiche uniche: qui i benefici delle cure<br />
si uniscono a quelli del clima che gode della vicinanza del mare. Le Terme<br />
fanno parte dell’associazione Ecoturismo in Marittime che ha aderito alla Carta<br />
Europea per il Turismo Sostenibile e si prefigge di sviluppare un turismo<br />
rispettoso dell’ambiente e delle comunità locali. Le acque solfuree solfatocloruro-sodiche<br />
ipertermali (50-75 °C) presentano un pH nettamente alcalino<br />
(9.4), il loro principio attivo è lo zolfo, la cui attività antinfiammatoria,<br />
antalgica, antisettica, antiessudativa ed eutrofica è indicata nel trattamento<br />
di affezioni dell’apparato locomotore, otorinolaringoiatriche, broncopneumologiche,<br />

The thirty-six holes of Bogogno form a<br />
happy oasis that extends for over 240<br />
hectares on the sweet hills silhouetted<br />
against the majestic peak of the Mount<br />

d’Orta, al lago Maggiore e al parco del Ticino. Il tracciato dei due percorsi<br />
da golf ha salvaguardato il bosco che cresce rigoglioso nell’area del club: il<br />
microclima favorevole per l’assenza di nebbie, il limitato grado di umidità<br />
e la purezza dell’aria concorrono a creare un particolare effetto di luminosità<br />
che esalta forme e colori della natura. La Club House sorge in una zona<br />
centrale rispetto ai due percorsi e si affaccia, con la sua ampia terrazza, sui<br />
dolci rilievi. Le grandi vetrate della sala ristorante e i confortevoli spazi comuni<br />

The Des Iles course is set about 600 metres<br />
above sea level, in the upper Vergante area, a<br />
plateau above Stresa and Lesa, and from its<br />
holes one can enjoy a breathtaking scenery:<br />
from the green of the ninth hole, before<br />
going back to the Club House, the views of<br />
the Sempione and Val Grande mountains<br />
can be admired, from the starting tee of the<br />
18 th hole, on a clear day, one can clearly see<br />
the skyline of Milan’s skyscrapers, four lakes,<br />
that of Maggiore, Varese, Monate and<br />
Comabbio and, further on, the entire Alps<br />
of the Canton Ticino. But it is the flora that<br />
takes your breath away: the age-old birch<br />
trees, between silver and blue colours,<br />
follow the golfer for the entire course.<br />
Eighteen holes placed along the natural<br />
course indicate that the difficulty, the slopes<br />
and the obstacles were not built for artistic<br />
purposes. The course is open all year round,<br />
except for one month of closure: January.<br />
During the summer temperatures do not<br />
rise above 28 degrees and it is always breezy.<br />
During the winter the sun heats the holes,<br />
almost all of them exposed towards South.<br />

Iles Borromées<br />
Il percorso del Des Iles è a circa 600 metri d’altitudine, nell’Alto Vergante,<br />
un altopiano sopra Stresa e Lesa, e dalle sue buche si gode un panorama<br />
eccezionale: dal green della 9, prima di rientrare in Club House, si può<br />
ammirare la vista delle montagne del Sempione e della Val Grande, dal tee<br />
di partenza della buca 18, nelle giornate più terse, si vedono ad occhio nudo<br />
lo skyline dei grattacieli di Milano, quattro laghi, quello Maggiore e quelli<br />
di Varese, Monate e Comabbio, e, più oltre, tutta la catena delle Alpi del<br />
Canton Ticino. Ma è la flora che incanta: le betulle secolari, fra l’argento e<br />
l’azzurro, seguono il giocatore per tutto il percorso. Diciotto buche disposte<br />
lungo un tracciato naturale come si intuisce dal fatto che difficoltà, dislivelli<br />
e ostacoli non sono stati costruiti ad arte. Il campo è aperto tutto<br />
l’anno, con un solo mese di riposo: gennaio. In estate, la temperatura non<br />
supera i 28 gradi ed è sempre ventilato. In inverno il sole riscalda le buche,<br />
quasi tutte esposte a sud.<br />
