Editorial Drinking your Daily Dairy Even in the middle of today’s trends to vegan and vegetarian products, there is still a central role for dairy products and ingredients. Consumers are very aware of dietary influences on their health and well-feeling. Milk remains a nutrientdense food which gives benefits beyond a basic nutrition. Inherently nutritious, milk - and food & beverages made with milk and dairy ingredients - are very appealing. Consumers understand that milk is a rich source of calcium, which reduces the onset of osteoporosis, while proteins intrinsic to milk can refuel muscles after exercise in sports nutrition products. Food and beverage processors and manufacturers have also embraced dairy as an attractive delivery vehicle for functionally beneficial dietary components that work behind the scenes to mitigate disease, as well as providing other benefits ranging from anti-ageing to inducing satiety. These antioxidants and prebiotic fibres are increasingly added to milk beverages, encouraging consumers to drink their daily dose of dairy. Lactose-free, reduced fat and increased protein beverages are all available and produced through ultrafiltration, cold filtration and other methods. Traditional products from the industry’s big players are continually changing as high-protein versions or breakfast drinks with extra fibers and other nutrients are being tried out. This includes cocoa drinks, but also yoghurts, smoothies and yoghurt drinks. The more sophisticated the science, the more options become available. Equipment and machinery in the dairy sector have also continued to develop in the past few years, as hygienic cleaning and sterilization have grown in importance. Machines have become more openly designed so that the hidden corners are more easily accessible. Packages and milk cartons and bottles are currently being redesigned to become more sustainable and environmentally friendly.
