The Hairy Bikers’<br />

Steak and Ale Pie<br />

Introduction<br />

Treat your old man this Father’s Day with a recipe from<br />

the ultimate creators of comfort food: The Hairy Bikers.<br />

Rich, flavoursome and pretty simple to make, this steak<br />

and ale pie will earn you ultimate parent points.<br />

Method<br />

1. Preheat the oven to 220°C/Gas<br />

Mark 7. Tip the flour into a bowl<br />

and season well. Coat the meat<br />

with seasoned flour.<br />

2. Add the vegetables, herbs,<br />

ale, and stock. Bring to a<br />

simmer, then cover with a lid<br />

and gently simmer for one hour.<br />

When cooked, season, add the<br />

remaining butter, and pour into<br />

an ovenproof serving dish.<br />

3. Brush the edge of the dish<br />

with the beaten egg. Roll out<br />

the pastry using as little flour as<br />

possible and place it over the<br />

dish. Pinch the edges of the dish<br />

so that the pastry will stick to it<br />

and trim off any remaining pieces<br />

of pastry from around the edge.<br />

Brush the pastry top thoroughly<br />

with the remaining beaten egg<br />

and place on a baking tray.<br />

4. Bake for one hour and<br />

20 minutes until the filling is<br />

bubbling and the crust is<br />

golden brown.<br />

Ingredients<br />

(serves 4-6)<br />

For the filling<br />

• 900g stewing steak, diced<br />

• 25g flour, plus extra for<br />

dusting<br />

• 100g butter<br />

• 2 onions roughly chopped<br />

• 2 cloves of garlic, roughly<br />

chopped<br />

• 2 medium carrots, roughly<br />

chopped<br />

• 150g button mushrooms<br />

• 2 sprigs fresh thyme<br />

• 400ml good-quality ale<br />

• 500ml beef stock<br />

• Salt and pepper<br />

For the pastry<br />

• 300g ready-made rolled puff<br />

pastry<br />

• 1 egg, beaten for glazing<br />

Top Tips<br />

• Remove your pastry from the<br />

fridge at least half an hour before<br />

you want to use it and let the pie<br />

filling cool a little before placing<br />

the pastry over the top as the<br />

heat may cause it to tear.<br />

• You can also prepare the pie<br />

filling in a slow cooker for a<br />

richer, deeper flavour.<br />

An end to<br />

discord?<br />

As James Corden’s hugely successful stint as<br />

host of The Late Late Show draws to a close<br />

this year, the ebullient Brit looks ahead<br />

to future projects, with his three children<br />

centre-stage.<br />

year of perfect PR for James<br />

Corden. Never one to shy<br />

away from the limelight he<br />

has skilfully positioned in front<br />

of over the past two decades,<br />

his retirement from presenting<br />

duties on CBS staple The Late<br />

Late Show coincided with a<br />

rather unfortunate episode at<br />

high-end New York restaurant<br />

Balthazar – an impromptu<br />

performance of culinary<br />

discontent that earned him<br />

a ban from the Manhattan<br />

establishment, although the<br />

44-year-old made peace with<br />

irate owner Keith McNally.<br />

So with an eye on mending<br />

his reputation further, in <strong>2023</strong><br />

he may well look to pursue<br />

what has been a skilful run of<br />

voiceover work on animated<br />

projects, something that’s<br />

understandable when you<br />

consider his home life<br />

revolves around wife<br />

Julia and three children<br />

- Max, 11, Carey, eight,<br />

and Charlotte, five.<br />

“Obviously I’m glad to<br />

have maintained the<br />

work I have,” he begins.<br />

“Voice work is a lot<br />

easier to slot in and I’ve<br />

loved it as it works for<br />

the time I’ve had in my<br />

schedule. In this next<br />

phase, I’m excited about<br />

just really going after<br />

something, rather than<br />

having to try to squeeze<br />

it in awkwardly.”<br />

While Corden is<br />

portrayed as someone<br />

who has cracked the US<br />

with a slightly brazen, arrogant<br />

attitude, the truth could not<br />

be much different. Even when<br />

it comes to straight drama,<br />

he expresses hesitancy and<br />

caution. “I think people believe<br />

that with modern filmmaking<br />

anything is possible, and<br />

everything can be made to look<br />

good. Yet on so many occasions<br />

you go through lines or rock up<br />

on set with profound doubts<br />

about a project. Even Peter<br />

Rabbit felt like an absolutely<br />

huge thing to take on.”<br />

And while one would believe<br />

Corden continues to earn<br />

some serious cool dad points<br />

with his focus on child-centric<br />

entertainment, he admits<br />

that often his brood couldn’t<br />

care less!<br />

“It glosses over them quite<br />

quickly,” he says. “They don’t<br />

really equate you doing a silly<br />

voice in the front room any<br />

differently to them hearing you<br />

speak on the telly.<br />

“If one day I’m Peter Rabbit<br />

and the next I’m the Gruffalo,<br />

and then next I’m in a car<br />

driving around LA engaged in<br />

a rap battle with Dame Helen<br />

Mirren, then so be it, I guess!”

A thoroughly<br />

Modern Monarch<br />

Everything we know about His Majesty’s upcoming coronation.<br />

King Charles III’s coronation will<br />

take place on Saturday <strong>May</strong> 6th<br />

<strong>2023</strong>, at Westminster Abbey.<br />

Eyes around the world will<br />

focus their attention once more<br />

on this magnificent London<br />

institution where the King<br />

will be crowned – alongside<br />

Camilla, the Queen Consort –<br />

in a ceremony overseen by the<br />

Archbishop of Canterbury.<br />

This opulent ritual is the last<br />

of its kind in Europe and has<br />

remained largely unchanged<br />

for the past 1,000 years. It is an<br />

honour of course, but for a King<br />

who wants to be a modern<br />

monarch there are a few<br />

wrinkles that must be ironed<br />

out with Buckingham Palace<br />

confirming that although the<br />

Coronation will be ‘rooted in<br />

long-standing traditions’, it<br />

will also reflect the monarch’s<br />

role today and look towards<br />

the future.<br />

For starters, it will be<br />

a relatively modest<br />

affair, even compared<br />

to Queen Elizabeth’s<br />

coronation that came<br />

in the recent aftermath<br />

of World War II. The<br />

ceremony itself is<br />

expected to last around<br />

two hours – rather<br />

than the three for Liz’s<br />

ascension to the throne<br />

– and guests will be<br />

limited to 2,000 due<br />

to health and safety<br />

restrictions. That’s<br />

considerably less than<br />

the 8,000 dignitaries<br />

from 129 nations who<br />

were crammed into<br />

Westminster Abbey<br />

in 1953.<br />

There will also be less pomp<br />

and formality. Prince William is<br />

the only Duke expected to carry<br />

out the traditional gesture of<br />

kneeling and swearing<br />

allegiance to the King,<br />

and His Majesty has<br />

apparently decided to<br />

swap the stockings<br />

and breeches worn<br />

at coronations by his<br />

male predecessors<br />

for a military uniform,<br />

possibly that of<br />

Admiral of the Fleet,<br />

which he wore for<br />

the State Opening of<br />

Parliament last <strong>May</strong>.<br />

As for the crown,<br />

Charles will wear<br />

the solid gold<br />

Edward’s Crown.<br />

It is exceptionally heavy<br />

and contains the Cullinan II<br />

diamond, sometimes called<br />

the Second Star of Africa.<br />

At its heart however, the<br />

ceremony must fulfil its key role<br />

as being the symbolic religious<br />

ceremony during which a<br />

sovereign is crowned, as well<br />

as fulfilling the physical act of<br />

placing a crown on a monarch’s<br />

head. And despite cementing<br />

His Majesty’s role as Head of<br />

the Church of England, it is<br />

thought that representatives<br />

of different faiths will also be<br />

present – to uphold the King’s<br />

wish to reflect the ethnic<br />

diversity of modern Britain.<br />

He will also still pledge to be<br />

“Defender of the Faith”, but<br />

further words will be added<br />

that allow the King to show<br />

he serves all religious faiths.<br />

He’s a brilliant presenter,<br />

accomplished gardener,<br />

talented novelist, and allround<br />

horticultural inspiration.<br />

This month, Alan Titchmarsh<br />

discusses garden design and<br />

spontaneity.<br />

of those, for me, is to<br />

ensure the inspiration<br />

for the style of my<br />

garden comes from the<br />

feel of my house, and I<br />

think this is true for any<br />

They say that a builder’s<br />

home is always unfinished,<br />

and much the same is true<br />

of any gardener in regards<br />

to his or her outside space.<br />

We have been in our current<br />

home for almost 20 years,<br />

and I am still evolving,<br />

adding, altering – every<br />

day. And that’s what makes<br />

each passing year so<br />

special – the fact you never<br />

go back to a blank canvas,<br />

but each spring there are<br />

new opportunities, ideas and<br />

spaces that emerge here and<br />

there, that can be formed into<br />

whatever takes your fancy at<br />

that particular time.<br />

While variety and versatility are<br />

definitely important in a garden,<br />

I do find it’s necessary to follow<br />

some familiar boundaries. One<br />

outside space. The<br />

two must complement each<br />

other or you may find you<br />

end up with an awkward<br />

juxtaposition between the<br />

Remember, gardening<br />

is very different to<br />

architecture, because<br />

what you are dealing<br />

with isn’t just shape and<br />

form, it’s time as well –<br />

it’s a rapid adjustment<br />

and change between<br />

how something looks<br />

on day one and how it<br />

will look on day 100.<br />

And while I know you’ll hear<br />

gardeners talking all the time<br />

about planning out an area, the<br />

types of plants you’ll have, and<br />

the tone and feel of a space;<br />

very often the reality is you are<br />

inspired by something off the<br />

cuff, and it is that instinctive<br />

appeal that’s exciting.<br />

Whatever you’re going to<br />

do in your garden space, I<br />

would suggest it is gradual<br />

and over time. It really pays to<br />

observe and watch how nature<br />

embraces things – see what<br />

grows and what outgrows, and<br />

only when you are absolutely<br />

sure you want to adjust a<br />

certain area, only then proceed.<br />

It’s about a steady progression<br />

rather than the wholesale<br />

demolition… such is life!<br />
