lich haben die Ludeschers Schollen aus dem Lauteracher<br />
Ried zum Heizen verk<strong>auf</strong>t, heute werden Kartoffeln aus<br />
dem eigenen Anbau angeboten, wie Valéry, eine rotschalige<br />
festkochende Sorte oder Desirée, eine mehlige Variante<br />
fürs Püree.<br />
Neben dem Kartoffelacker hat Elfriede Ludescher 250<br />
Stück Vieh zu versorgen. Mit ihrem Mann, ihrer Tochter und<br />
ihrem Schwiegersohn bewirtschaftet sie zwei Höfe in Lauterach.<br />
Man sieht ihren Händen an, dass das keine leichte<br />
Arbeit ist. Trotzdem macht sie hinter dem Kartoffelwagen<br />
einen zufriedenen Eindruck, besonders als ein netter Herr<br />
eine Leberkäsesemmel als „Znünar“ vorbeibringt.<br />

Federkohl Die guten Zutaten sind beim Kochen die halbe<br />
Miete, ist <strong>Karin</strong> K<strong>auf</strong>mann überzeugt. Deshalb k<strong>auf</strong>t sie gerne<br />
direkt bei den Produzenten ein. „Ich weiß oft nicht, was ich<br />
k<strong>auf</strong>en werde. Das ist das Schöne am Markt. Du stolperst immer<br />
über etwas drüber, was dich anlacht.“ Bei Markus Lämmle<br />
aus Höchst hat sie eine Rarität entdeckt, den federförmigen<br />
Grünkohl, der hierzulande üblicherweise nicht angebaut<br />
wird. „Der Federkohl ist eine norddeutsche Spezialität. Er<br />
eignet sich für Eintöpfe, ein richtig deftiges Winteressen.<br />
Man sollte ihn möglichst spät k<strong>auf</strong>en. Je mehr Fröste drüber<br />
gehen, desto intensiver wird er im Geschmack.“<br />
Zahlenakrobatik „Bekomm ich was bei euch?“ fragt <strong>Karin</strong><br />
K<strong>auf</strong>mann am Stand der Gebrüder Rauch, wo eine große<br />
Auswahl von frischem Gemüse den Kunden in allen Farben<br />
entgegenleuchtet. Markus Rauch kontert gut gelaunt. „Hast<br />
du bei uns schon einmal nichts bekommen?“ Kopfsalat, Lollo<br />
rosso, grüne Bohnen, Karotten, Rucola, Lauch und Tomaten<br />
wandern in den Eink<strong>auf</strong>skorb, und zum Drüberstreuen noch<br />
ein paar Zinien in verschiedenen Rottönen für den Tisch.<br />
Die Gärtnerei Rauch aus Rankweil baut in dritter Generation<br />
Gemüse, Setzlinge und Blumen an. Alles wird direkt<br />
vermarktet, entweder ab Hof oder <strong>auf</strong> dem Markt in Dornbirn<br />
und in Feldkirch, wo der Familienbetrieb schon seit fünf<br />

used to sell peat from the Lauteracher Ried for heating, now<br />
she sells her own farm-grown potatoes with varieties such as<br />
Valery, a red, firm-cooking variety, or Desiree, a floury variety<br />
good for mashing.<br />
As well as growing potatoes, Elfriede Ludescher also<br />
tends 250 head of cattle. Together with her husband, her<br />
daughter and son-in-law, she looks after two farms in Lauterach.<br />
You can tell from her hands that this isn’t easy work.<br />
Nonetheless from behind her potato stall she gives the impression<br />
of contentment, in particular when a nice gentleman<br />
brings her a slice of hot spicy luncheon meat in a breadroll as<br />
a “Znünar” [mid-morning snack].<br />
Feathery cabbage × <strong>Karin</strong> K<strong>auf</strong>mann is absolutely convinced<br />
that good ingredients are essential for good cooking. That’s<br />
why she always buys directly from the producer. “I often don’t<br />
know what I’m going to buy. That’s the beauty of the market.<br />
You always come across something that you want to buy.”<br />
No sooner has she said this, we come across a real rarity for<br />
these parts on the stall of Markus Lämmle from Höchst, kale,<br />
the feathery form of cabbage that is not often cultivated in the<br />
region. “Kale is normally a north-German speciality. It’s great in<br />
stews, it’s a real winter food. It gets better the later you buy it.<br />
The more frost it sees, the more intensive the taste becomes.”<br />
Playing with numbers × “Do you have anything for me?” <strong>Karin</strong><br />
K<strong>auf</strong>mann asks upon approaching the stall of the Rauch<br />
brothers, which is surrounded by customers all admiring the<br />
colourful display of fresh vegetables. “Have you ever not had<br />
anything from us?”, retorts Markus Rauch jovially. Lettuce,<br />
lollo rosso, French beans, carrots, rocket, leek and tomatoes<br />
all get placed in the shopping basket, and to sprinkle over the<br />
top a few zinnias in varying shades of red for the table.<br />
The brothers are the third generation of the Rauch family<br />
cultivating vegetables, seedlings and flowers at the Rauch<br />
nursery in Rankweil. Everything is marketed directly, either at<br />
the nursery itself or on the markets in Dornbirn and Feldkirch,<br />
