von den Percebes-Fischern verwendet wird, und<br />
lässt sich ins Wasser. Innerhalb von nur wenigen<br />
Sekunden wird er von einer großen Welle erfasst,<br />
die ihn in Richtung einiger spitzer Felsen hebt.<br />
Überraschend wendig landet er dort auf seinen<br />
Füßen und beginnt umgehend damit, die Percebes<br />
von den Steinen zu schaben. Dabei blickt er in<br />
ständiger Erwartung der nächsten Welle immer<br />
wieder über seine Schultern nach hinten.<br />
Als Tiago ins Boot zurückkehrt, hält er mir<br />
triumphierend eine Handvoll Entenmuscheln<br />
entgegen. Voller Neugier endlich zu erfahren, was<br />
an den Tieren so besonders ist, nehme ich einen<br />
Bissen. Natürlich gibt es elegantere Arten, die<br />
seltenen Delikatessen zu genießen – üblicherweise<br />
werden sie für eine Minute in kochendem Meerwasser<br />
gegart. Den Percebes-Fischern in Villa del<br />
Bospo zufolge ist dies sogar die einzig zulässige<br />
Zubereitungsart. Als ich ihnen erzähle, dass der<br />
britische Starkoch Gordon Ramsay Percebes in<br />
Stücke schneidet und sie mit Sauce serviert, werfen<br />
die Männer entsetzt die Arme in die Luft und<br />
beschimpfen ihn unter anderem als „Idioten“.<br />
Was den Geschmack der Percebes angeht,<br />
so stelle man sich einen langen Nachmittag am<br />
Strand vor. Die Sonne geht langsam unter und<br />
eine Brise kommt auf, die einen Hauch Meeresgeruch<br />
vor sich her treibt. Man atmet ein und riecht<br />
das Beste, was die See zu bieten hat – genau so<br />
schmecken Percebes.<br />

“Even a bad day on the sea is better than a good<br />
day in the office,” he smiles. But what about the<br />
dangers? “That’s why we dive in pairs – to watch<br />
each other’s backs,” he explains. Damas has been<br />
diving with Craca (36) for more than four years and<br />
they make a good team. “He is half my age and has<br />
already saved my life,” Damas says. “That day my<br />
head was full of other thoughts. You cannot be in<br />
the ocean worrying about stuff. It’s dangerous if you<br />
lose focus. I did not see a large swell and my foot got<br />
stuck in a crevice. Tiago spotted that I’ve been under<br />
the water too long and came looking for me.”<br />
The enormity of the risks hits home when we<br />
reach a 80-metre cliffhang stretching down into<br />
the waves. Tiago dives in armed with his arlhada,<br />
a large chisel-like tool used by percebes divers over<br />
many generations. Within a couple of seconds a<br />
large wave lifts him straight onto a stack of spiky<br />
rocks. For a large man he skilfully lands on his feet<br />
and instantly starts chiselling away at the percebes,<br />
constantly glancing over his shoulder to brace<br />
himself against the impact of the next surge of water.<br />
Soon he returns, triumphantly holding up a<br />
handful percebes. He hands them to me. Eager<br />
to taste what all the fuss is about, I bite some open.<br />
There are, of course, better ways to savour the<br />
rarity, typically cooked for one minute in boiling<br />
sea water. Indeed, this is the only way to cook it,<br />
say the fishermen back in Villa do Bispo. When I<br />
mention that British celebrity chef Gordon Ramsay<br />
prepared percebes cut into pieces served with<br />
sauce, the men throw their arms in the air and<br />
shout profanities, loosely translated as, “what<br />
an idiot!” As for the taste, well imagine a lazy<br />
afternoon on a beach. The sun is starting to set<br />
and a breeze ushers the scent of the ocean lightly<br />
towards you. You inhale and smell the best the<br />
seaside can offer. That is the taste of percebes.
