A beginner’s guide to one of the world’s oldest art forms
“I learnt Cantonese Opera at 13. I quit school
in P3 and helped my father [an advertisement
and art designer] on film sets. Soon after, I
followed my eldest sister and learnt Cantonese
Opera at the Ngai Lam Cantonese Opera
Aademy and began my 53-year career.
“I only play the sheng role. The most difficult
part about Cantonese (or Chinese) Opera is
memorising the script, familiarising myself with
the setting and the way to vocalise the lyrics
with just the right amount of emotion.
“I got to learn from some real virtuosos, like
the late Sun Ma Sze Tsang and Chan Kam Tong.
When we went to perform in Singapore and
Malaysia in 1966, Sun Ma Sze Tsang assigned
Happenings Scene
History
Chinese opera originated at the Liyuan (Pear
Garden) opera school founded by Tang
Emperor Taizong, becoming a popular form
during the Qing Dynasty. The current 30-plus
forms include Beijing, Shanxi, Shanghai, and
Cantonese, all performed in different dialects.
roles
The primary roles are Sheng (the man), Dan
(the woman), Jing (a painted-face male role)
and Chou (the clown); sub-categories vary by
character traits. Gender swaps are common.
Make up
Chinese opera makeup is an art form and a way
to cue the characters: Red conveys bravery and
loyalty; ambition is yellow; fierceness is blue
impulsiveness is green, an so on. Villains are
tradtionally made up in white.
plots
Wen performances are generally low-key
romances, ghost stories or classic myths, and
wu performances are marked by warfare.
me to replace Chan Kam Tong, who was injured.
That was when my career began to take off.
“Chinese Opera is rich in historical value
and it’s my goal to keep learning about it as long
as I can. As an actor I’ve learnt to do everything
with earnestness, to give it my best, and that
opportunism only makes you miserable.
“It takes a lot to be a good Cantonese Opera
actor. You need to be passionate about the art
form, and you need to be persevering. When
learning Cantonese Opera, be prepared not to
have much time and money to spare.
“Chinese Opera is now flourishing, with
technology ... However, the quality of Cantonese
Opera needs improving – new, timely scripts
and performances are needed to instill some
positive vibes and preserve this tradition.
“When I’m not practising or acting, I read
about history, literature, music, arts and other
kinds of Chinese Opera. I also compose songs
for new scripts, and lately I’ve picked up Taichi
and Qigong.
“If I weren’t a Cantonese Opera actor, I’d
probably have been an art designer, drama
instructor or music professor.”
Mention architectural
conservation in Asia, and David Lung’s
name is inevitably the first one to pop up.
Currently deputy dean at the University of
Hong Kong’s Faculty of Architecture, Lung
has been a professor there since 1983. He is a
founding member of UNESCO-ICCROM Asian
Academy for Heritage Management, founding
director of HKU’s Architectural Conservation
master’s programme and worked with Macau
and Kaiping to obtain their respective UNESCO
world heritage status. A trained architect with a
master’s degree from the University of Oregon,
he was previously an associate partner with
Taoho Design Architects in Hong Kong. For his
dedication to the Hong Kong community, Lung
was honoured with a Silver Bauhinia Star by the
Hong Kong SAR Government in 1999.
see Scene
Lung remembers visiting Mandarin’s House
soon after Macau’s Cultural Affairs Bureau
completed its acquisition of the site more than
10 years ago. “It was a complete derelict,” he
sighs. “The Zheng family had rented out the
estate to hundreds of people over the decades,
and the place was divided and subdivided into
numerous apartments. What wasn’t taken away
to be pawned was abused. The Cultural Affairs
Bureau will need many, many years to track
down the furniture and accessories again. Right
now, it is a beautiful shell.”
Zheng Guanying’s ancestral estate is an
important complement to Macau’s UNESCO
World Heritage status, and well deserves its
MOP43 million restoration price tag. “Zheng
was a notable industrialist – a Shanghai
businessman,” explains Lung. “His house is a
reflection of his status. In Chinese Han culture,
the home is a reflection of an official’s place in
society – even though, politically, it is wrong to
call the place Mandarin’s House since he was
not really a Mandarin. Zheng was also a very
influential and effective scholar, whose writing
inspired Sun Yat Sen and Mao Zedong.” Visitors
Warning in Times of Prosperity, on display in a
rear room within Mandarin’s House.
As Mandarin’s House is situated near
the Inner Harbour, Lung believes that it may
have afforded sea views before urban sprawl
surrounded its stone walls. “I don’t know this for
sure, but the house must have had good feng
shui,” he notes. “Its axis is rotated 90 degrees
from the traditional Chinese south-north
orientation, and its main entry faces east instead
of south. Instead of a vertical layout, the estate
is horizontal. Perhaps this also has to do with the
site’s topography.”
Mandarin’s House is a traditional upper class
Chinese courtyard home. In many Guangdong
estates, a moon gate stands opposite an
inscription that references the moon. A similar
Another decorative feature found throughout is
oyster shell in all of the windows. Set within an
ice-splitting abstract pattern, these flat elements
let in subtly diffused sunlight and were frequently
used in traditional sub-tropical Asian residential
construction. Portions of salvaged doors featuring
delicate engravings were touched up with colour
to hint at their prior grandeur. Turquoise glazed
tiles with the Buddhist swastika symbol doubled as
good luck emblems and helped to ventilate fresh
air throughout. Rainwater pipes were fired in short
cylindrical sections, vertically assembled on site
and rendered with lime mortar to resemble stalks
of bamboo.
“Mandarin’s House represents Zheng as a
modern man at a time when China was under
imperial rule,” says Lung. For visitors to fully
appreciate Zheng’s legacy, the Inner Courtyard
near the on-site museum may be converted into
SaY cheeSe
Taking the perfect holiday snap need not be complicated.
So why does it always become such a faff, ponders Andrew Stone.
Photography and
alcohol simply do
not mix
Digital cameras are getting better and
cheaper all the time, offering to make a coffee
table travel photographer out of any of us. It is
an offer we ignore of course, mocking our new
high-tech toys by continuing to render horizons
crooked and cutting the tops off heads grinning
goofily in front of clichéd monuments.
Following a few simple rules, however,
make all the difference. Apparently.
More than anything the clothes you wear
will define whether your holiday portraits will be
a source of fond memories or of quiet shame.
Avoid fanny packs, muffin tops and any kind of
plaid. Only those raised on the beach (such as
Polynesians and Australians) can safely carry
off shorts or sarongs. Hair is another stylistic
comment Scene
minefield. Mullets, perms and comb-overs will
date you badly.
Hats offer a good solution unless they are
the jester-style ones sported by festival
goers, and Rugby Sevens fans. Such
headgear tells the viewer two
things: 1) That you thought you
were wacky and fun-loving and: 2)
That you thought wrong.
Remember also that
photography and alcohol
don’t mix. Portraits under the
influence blur with flushed
faces and glassy eyes. On the
other hand, a digital camera
can help create a visual guide
on your way out to the nightspots.
Just show it to the taxi driver when
you’re too well oiled to remember the
district you’re staying in/your hotel room
number/who you are.
Sober or not, you should never smile for a
digital camera. The agonising delay in taking a
shot will give you the frozen smile of a National
Geographic ice mummy. Far better instead to
pose stiffly and cheerlessly for your portrait
like a corset-wearing Victorian lady or top hat
wearing gent of yore.
Or opt for a mysterious Mona Lisa half
smile or a hand (Oscar Wilde-style) over
your mouth. This lends you an air of mystery,
intriguing viewers and distracting them from
the ugly truth. Were you sharing a risqué joke,
they will ask themselves, or did you just have
chives in your teeth?
Trying to capture everything you see on
your travels isn’t easy but don’t worry. The
best holiday snaps can be studies in miniature.
Close-ups evoke time and place perfectly.
Good examples include ancient tree roots
embracing stone gods in abandoned temples,
the creamy head settling on a pint in a Dublin
pub or the stripes on that souvenir tiger skin rug
you picked up for a small bribe.
And the bonus in those pictures? Nobody
has to look at your mug.
Singer/actor Pakho Chau on style, stage and song
Text hey Jude
In the eyes of 25-year-old Pakho Chau, it
may not always be a good thing to be blessed
with a pretty face. In showbiz, catching attention
initially is one thing but maintaining a viable
career is quite another. Which is why Chau tries
to dip his finger into as many pies as he can. He
composes music, keys in the lyrics and stars in
theatrical performances, just to show he’s an
artist worth his salt – a triple threat as it were.
“I had a lot of fun and learnt a lot during
my time playing in the stage drama I Don’t
Want to be Remembered by You. Stage drama is
in many ways different from films – there’s no
cue from the director and it really tests your
ability to react instantly. I learnt to arrive at
the theatre well prepared. The experience
made me a more confident person on stage.
“The camera is like a time machine, as it
captures the present moment that soon becomes
the past. I like to take pictures, especially of
scenery as it tends to be fickle and unpredictable.
happenings is like writing a diary. I normally
carry an SLR camera with me; I once brought
three cameras on a business trip overseas.
“I was a fashion model. I’m not a fashion
buff, it’s just that I like to try new and bold styles.
I like clothes with quirky cutting by American
fashion designer Rick Owens, who made harem
pants a big hit.
“I like a simpler, easier way of life. When
work gets to me or I get the blues for whatever
reason, I like to put on an outfit in vibrant colours
to lift my mood. Life in Hong Kong is very hectic,
and there needs to be a work/life balance. I used
to prioritise work over my health, but now I make
time to play basketball, go swimming or go to the
gym. Playing sports is a great source of energy.
“I live on my own, but my mother comes
over and tidy up the place and make soup for me.
If I get a day off, I spend it with my family. I’ll take
my mother for a ride as she likes taking pictures of
people and things as much as I do.
“Four years into my career and I’ve been
profiled as some sort of sunshine boy for each
of my previous albums. But I have my dark
side too, so I suggested to my record company
that we get people who know me inside out to
create the cover of the upcoming album, from
photography to styling. Some of my friends have
already agreed to help out with it; the concept
behind which is memories.”

Cucumber
Mint Coolers
The Lounge
Syrupy Sangria, silky coconut ice cream,
chilled serradura pudding… these are just
some of Macau’s favourite summer treats, and
whether you’re eating that calorific Portuguese
dessert from a street stall with a plastic spoon
or savouring the biscuit-topped cream sweet at
one of the city’s best restaurants using the finest
silver, it’s all about indulgence.
At the Westin Resort – a fabulous summer
location due to its sea views and access to a
beach – health-conscious guests are also well
catered for with Cucumber Mint Coolers, and
Executive Chef David Halliday says the hotel
the sun, the waves and the fresh air of the south
As for his favourite summer dish, he
strong flavour and contrasting texture of creamy
cheese, crisp green leaves and slightly bitter
walnuts, epitomises that summer feeling for me.
At Aux Beaux Arts, we serve it with crispy bacon
In hot weather, I look forward to lighter meals
and often make a couscous salad with lots of
01
NAUI scuba diving, and first-aid instructor
Jonn Lu has been diving since 1995. He also
teaches freediving, drown-proofing and water
confidence. He sounds off on diving hotspots.
for Scuba diving (limited to 40 metres):
Sipadan, Malaysia, the undisputed mecca of
tropical water diving known for its sheer volume
of marine life. Mong Kok on a Sunday afternoon
is the closest analogy I can think of when it
comes to the variety ... in Sipadan. There is
no other place in Asia with this much. Advice
to new divers: Sipadan is a proverbial dessert
buffet and it can potentially ruin your diving
palate. Work your way through modest starters
and mains first before you dive Sipadan.
02
for Technical diving (for dives that go
beyond 40 metres and involve multiple tanks,
exotic gas mixtures and blends, in overhead
environments such as cave systems and
shipwrecks): Coron in the Philippines is home to
several mammoth Second World War wrecks,
most in excess of 100 metres in length. What’s
magical about diving a big wreck is taking
something that we are all familiar with size-wise,
and then having the surreal pleasure of “floating”
down on it, and then “flying” through it.
03
for freediving (apnea diving in just a wet
suit, mask and fins): Mactan in Cebu, is known
for crystal clear waters (you can see the bottom
through 30 to 50-metre-deep water from the
surface) and gentle sloping into the deep blue
abyss. Mactan makes it easy for freediving buddy
pairs to safely monitor each other for episodes
of shallow water blackouts. Clear waters also
mean that one can float face-down in about 30
to 50 metres of water and be able to see the
bottom, and all the marine activity going on.
3 D Comes Home
A yeAr Ago at this time, James Cameron —
director of Avatar — was expounding on the
future of cinema and 3D filmmaking. He also
made the effort to explain a 3D “ecosystem” that
started at the production level and trickled all the
way down to the consumer sitting at home. It
seems Cameron was on to something.
Early in 2010, at the International Consumer
Electronics Show in Las Vegas, Toshiba, Sony,
LG, Panasonic and a raft of other electronics
behemoths showed off the first generation of 3D
televisions, putting to rest the movies’ boast that
the 3D experience was something you simply
couldn’t get at home. As slow as CD may have
been to overtake vinyl, MP3 and HD television
and broadcasting were quick; expect 3D to move
almost as fast. Faster if they can do something
about the unwieldy glasses that are still part and
parcel of 3D viewing.
Want to be the first to boast about how you
had 3D TV “way back in ’10?” At the moment
only a handful of manufacturers actually have a
unit for sale, but that’s enough to help you stay
ahead of the curve.
Samsung C7000/8000
This is the model of the moment, the only one
dual-function LED 3D units come 40-, 46- and 55inch
是B2C(企業對消費者)的平台,我們可以直
At the symposium held by the Macao
Trade and Investment Promotion Institute’s
(IPIM) Small and Medium Enterprises (SME)
Service Centre, Stanley Lee, a loyal punter of
eBay Hong Kong, explained how the online
auction website helped drag his electronic
accessories business out of the red. As soon
as the talk ended, Lee was surrounded by
representatives of Macau’s SMEs, all eager
to seek advice on e-commerce. Although
e-commerce in Macau is still at a rudimentary
stage, its potential is palpable.
Lee’s case is a good example of how
e-commerce has the potential to turn things
around for SMEs. Lee is a retailer and
distributor, who sold his Mainland-made
products from a traditional shop at a computer
mall in Hong Kong. He saw his business take
a nosedive as the market changed and an
increasing number of competitors seemed to
spring up overnight. It was through eBay that
Lee figured out a way to save his business.
“EBay is a B2C (business to customer)
portal through which products can be directly
delivered to the end user, so as to increase
the profit margin,” said Lee. “Hong Kong may
have a shorter product cycle, but with eBay, I
can sell the remaining stock overseas, where
products enjoy a longer cycle.”
report SUCCESS
EBay’s global network has also
enhanced cash liquidity for Lee’s business.
“As transactions are done in cash via PayPal,
there’s less pressure on cash flow, and I don’t
have to worry about the piling up of unwanted/
unclaimed stock.” Naturally, Lee thinks it’s wise
for SMEs to take their market share through
e-commerce. However, a PayPal account
can only be opened in Hong Kong as it’s not
supported in Macau just yet.
Seeing as e-commerce is still a novel
concept to SMEs in Macau, IPIM launched the
e-commerce incentive measures in November
last year to help promote the brands, products
and services of local SMEs. The successful
applicants who use designated services
provided by Eligible E-Commerce Operators,
such as hktdc.com (the Hong Kong Trade and
Development Council portal), Alibaba and
eBay Hong Kong, are entitled a subsidy of up
to 70 percent of relevant expenses (an annual
maximum of MOP20,000).
There are currently 61 applicants vying
for the incentive measures, and among those,
22 applied through the chambers of commerce.
Many of those chambers in turn have become
e-commerce partners, such as the Macao
Chamber of Commerce, Industrial Association
of Macau, the Macau Importers and Exporters
On top of the financial subsidy, IPIM has
local SMEs understand website maintenance,
upgrade online retail methodologies as well as
offer support services.
Casa de Artesanato Nam Fan Lou, an
China didn’t go down quite so well. “We were
clueless about web operation, and it certainly
didn’t help that our Mandarin wasn’t fluent
enough to communicate with the people at the
Alibaba China site. So naturally, we didn’t give
the portals any more thought.”
AS I SEE IT
Which brand are YoU from?
Tessa Chan
Tessa Chan ponders the current obsession for labelling destinations
「Uniquely Yours」
「Where the bloody hell are you?」
「There’s nothing like Australia」
How do you sum
up Hong Kong’s
diversity with one
small graphic?
Everybody’s got one. Malaysia is “Truly Asia,”
while Singapore is “Uniquely yours.” New Zealand
is “100% Pure.” Greece? “A masterpiece you can
afford.” There’s nothing like a magic tagline to
keep tourists pouring through immigration. At
least, that seems to be the reasoning behind the
branding frenzy that has developed over recent
years as countries compete for tourism and
investment against a tough economic backdrop.
Some are doing it better than others.
Tourism Australia made global headlines in 2006
when it asked the world, “Where the bloody hell
are you?,” a controversial line that was replaced
this year by the safer, and far less memorable
“There’s nothing like Australia.”
Meanwhile, Macau’s ongoing awardwinning
“Experience Macau” campaign has
gradually helped position the island as a major
Asian destination, as opposed to a mere
gambling stopover for tourists from Hong
Kong and the Mainland. And while the glitz and
glamour of the casinos still form a fundamental
part of the island’s appeal, the challenge Macau
faces now is how to best leverage its rich
European heritage, and preserve that unique
East-meets-West charm that drew visitors
in the first place; from the plazas, churches,
and cobbled streets of the historic centre,
to its museums, temples, tasty Macanese
cuisine and tranquil Chinese gardens.
And what about “Brand Hong
Kong?” In March “Asia’s World City”
underwent a makeover, with the revision
of the 2001 flying dragon logo. Although
huge emphasis was placed on getting
feedback from the public on their vision of Hong
Kong, the final design got mixed reviews.
Perhaps the lesson here is that there’s no
such thing as pleasing everybody; for in
trying to, the result is usually either overdiluted,
or overcomplicated. The dragon logo
is consequently a mindboggling visual laundry
list of key words that popped up in the survey
results as Hong Kong’s attributes: cosmopolitan,
free, secure, connected, dynamic ...
It’s always easy to criticise, but how can
one express Hong Kong’s diversity and the entire
population’s feelings with one small graphic? If
you ask me, you can’t. In fact, if that coveted
brief had fallen into my lap, I’d probably have
challenged Hong Kong’s best designers to come
up with one strong, simple insight, and chosen
the one that best showcases our city’s talent.
I’d listen hard to the “aspirational values”
that the Hong Kong people voiced in the surveys.
After all, we like to network and travel, which
makes us millions of potential global brand
ambassadors. What did we say we cherish, and
see the need for more of? Innovation, creativity,
tolerance, work/life balance, and above
all, sustainability. Among the dragon logo’s
many symbols are the blue and green ribbons,
representing the city’s blue sky and sustainable
environment. As I see it, marketing only
becomes effective when it’s based on reality. If
our goal is to present Hong Kong as a worldclass
destination, surely the first step is to work
on making these “aspirations” come true?
