Zucchini is one of the most versatile of all
vegetables. Those of us who "grow our own"
usually end up with a bumper crop of zucchini and
wrack, our brains trying to find various ways of
cooking and preserving this member of the squash
family.
Zucchini blends in so well with other ingredients
that it's sometimes hard to detect! Grate it and
mix in with your salads, or cut into sticks and arrange
on a vegetable dip tray. Add zucchini to
soups, stews, stir-fry, and baked goods.
CREAMY ZUCCHINI SOUP
4 cups zucchini, unpeeled, coarsely chopped .
1 large onion, chopped
2 stalks celery and leaves, chopped
2 Tbsp. margarine
2 chicken bouillon cubes
2 cups boiled water _ o
'/2 tsp. salt
1/8 tsp. garlic powder
1/8 tsp. celery salt
Dash of pepper
1 Tbsp. dried parsley or cup fresh parsley,
chopped
Melt margarine in a saucepan and saute onion
and celery until tender. Add all remaining ingredients
except parsley. Cook over medium heat until
zucchini is tender. Cool mixture slightly. Process
small amounts in a blender or food processor,
until smooth. Add parsley and gently reheat
blended soup. Serve with garlic croutons. Can be
eaten hot or cold. Yield: 4-6 servings.
Vi tsp. salt
Dash of pepper
% tsp. thyme or rosemary (optional)
1-2 Tbsp. vegetable oil
Let grated zucchini stand for a few minutes.
Drain off any excess liquid. In a mixing bowl,
combine zucchini, onion, cheese, wheat germ and
seasonings. Beat eggs in a separate bowl and add|
to the zucchini. Mix well. Heat oil in frying pan.
Our society is probably as exciting and intelligent
as Mozart's or Ghandi's. Why, then, do
the movie makers keep making brilliant movies
about the past and relatively awful movies about
the 1980's? And why are the bad ones made in
• L.A.? ;
This year at college, an argument erupted between
two of my residence floormates. One of
them was a typical engineering student — rightwing,
hard-working and serious. The other was a
typical arts student — well-travelled, opinionated
and argumentative. "Amadeus" had just won the
Best Picture category of the Academy Awards.
The engineering student wondered why allof these ,
"artsy" foreign films kept winning the Academy
Awards. "Why not more American movies?" he
asked.
. "Because American films aren't good enough,"
answered the arts student. And so the argument
began.
The big American movies, the movies that 98
per cent of North America likes, get shuffled
under the seats of Academy Awards'judges - they
are selectively ignored, to be frank. Now it's obvious
that a film Hke "Flashdance" can't compete
on an artistic level with "Amadeus", but what
about "Tootsie''? There was a film we could all
appreciate. It was funny and intelligent.
"Ghandi" won Best Movie that year - yes,
another foreign film. Are American films con-
sistently inferior to foreign films, or are Academy
Awards' judges consistently prejudiced against
American films? Who's right - the engineer or the
arts student?
I agree with both of them.. The unfortunate
truth is that American film makers aren't even trying
to create an artistic product. They, for the
most part, rely on cheap gimmicks - sloppy sentiment,
sexuality and shocking violence - in order to
sell their movies. And those movies do sell.
"Amadeus" did pretty good tOo. 1 just wish
American film makers could see, that North
America is ente!;tained by more than sex, violence
and bad language. If they ever do, we might be
surprised by the kind of movie that entertains us -
and wins Academy Awards. Maybe a great film
about Western society in the 1980s.
Nah, Even Brian DePalma wouldn't try
something that's shocking.
