baked apples and a tossed green salad<br />
go well with this dish.<br />
A lot <strong>of</strong> people miss a great deal <strong>of</strong><br />
pleasure because outdoor cooking scares<br />
<strong>the</strong>m. They think <strong>the</strong>y have to have fancy<br />
equipment such as grills with rotisseries<br />
and o<strong>the</strong>r doodads featured in ultra<br />
modern sporting goods stores.<br />
Not so. All you really need is a shovel,<br />
some good hardwood, a Dutch oven, <strong>the</strong><br />
makin's for dinner and all outdoors to<br />
cook it in.<br />
Go ahead and try it. You'll find closedpit<br />
cooking a wonderful experience. Its<br />
basic characteristic is that it is extremely<br />
slow, gentle, thorough cooking which,<br />
especially in <strong>the</strong> case <strong>of</strong> meats, is carried<br />
on almost entirely in <strong>the</strong> food's own<br />
juices. The flavor achieved by a good<br />
closed-pit cook are <strong>the</strong> very esssence <strong>of</strong><br />
nature's flavoring, accented by a little<br />
spicing.<br />
For those that would ra<strong>the</strong>r use <strong>the</strong>ir<br />
modern gas or electric oven, you can<br />
make your ham casserole for Easter<br />
Sunday supper by a very similar recipe.<br />
Ham and Potato Scallop<br />
1 fully cooked ham slice, cut at least 1<br />
inch thick (about 1VS pounds)<br />
5 or 6 cups thinly sliced potatoes<br />
V* cup chopped onion<br />
Vi cup chopped green pepper<br />
2 tablespoons butter<br />
black pepper and salt to season<br />
1 10 oz. can condensed cream <strong>of</strong> mushroom<br />
soup<br />
Vi cup milk<br />
Cut ham in small pieces. Use a twoquart<br />
casserole and place half <strong>the</strong> potatoes<br />
on top <strong>of</strong> <strong>the</strong> ham. Combine soup,<br />
milk, onion, green pepper and seasonings;<br />
pour over potatoes. Dot with<br />
butter. Cover and bake in moderate oven<br />
350 degrees for about one hour. Then remove<br />
cover and bake 30 minutes longer,<br />
or until potatoes are done.<br />
Any canned fruit goes well with ham<br />
casserole, such as pineapple or applesauce.<br />
Spiced whole peaches prove a<br />
winner when chilled for several hours<br />
before dinner. •<br />

and always with a commitment to<br />
improve. It is this philosophy that projects<br />
<strong>the</strong> San Dimas Festival as a mustsee<br />
attraction <strong>of</strong> national significance.<br />
The City government encourages and<br />
helps wherever possible to make <strong>the</strong><br />
show successful.<br />
There are contemporary men and<br />
women who have made lasting and<br />
beneficial contributions to life in <strong>the</strong><br />
American West. The AICA and Festival<br />
each year honors a person recognized as<br />
having made such contributions. The<br />
honor is "Man <strong>of</strong> <strong>the</strong> West," and is presented<br />
at <strong>the</strong> Exhibition award banquet.<br />
A bronze sculpture, by Richard Meyer,<br />
AICA, depicting an Indian and a Cowboy<br />
looking out toge<strong>the</strong>r upon <strong>the</strong> West,<br />
will be presented to John Wayne, this<br />
year's "Man <strong>of</strong> <strong>the</strong> West." He joins Roy<br />
Rogers and Olaf Weighorst, honored in<br />
1977 and 1978 respectively.<br />
Bruce Hezlep, President <strong>of</strong> <strong>the</strong> Festival,<br />
views <strong>the</strong> operation in <strong>the</strong> total. The<br />
1979 exhibition will see <strong>the</strong> involvement<br />
<strong>of</strong> <strong>the</strong> school district as <strong>the</strong>y join <strong>the</strong> exhibition<br />
by producing <strong>the</strong>ir own western<br />
art show. Following will be western art<br />
competition for <strong>the</strong> non-pr<strong>of</strong>essional,<br />
also literature, music, etc.<br />

has now vaulted into <strong>the</strong> development <strong>of</strong><br />
a western art museum and historical academy.<br />
There is a need in Sou<strong>the</strong>rn California<br />
for a facility that will dynamically<br />
address itself to <strong>the</strong> specific area <strong>of</strong> total<br />
western United States in art and history.<br />
This is by no means an ordinary undertaking.<br />
But, <strong>the</strong>n again, given <strong>the</strong><br />
dream and leadership, <strong>the</strong> people <strong>of</strong> San<br />
Dimas are not ordinary people. They fit<br />
<strong>the</strong> mold for great accomplishments.<br />
If Don Ignacio Palomeres could see his<br />
land grants now, he would be pleased<br />
that <strong>the</strong> color and activity <strong>of</strong> <strong>the</strong> West<br />
still live through <strong>the</strong> artist historian.<br />
May <strong>the</strong> artists' skills be an inspiration<br />
to generations yet unborn to keep alive<br />
our history and our place in <strong>the</strong> world. •
