In recent years tbe words "Zinfandel"';
and "Sutter .. Home" have become
synonymous to wine enthusiasts
everywhere. Sutter Home Winery is
another Napa Valley boutique, many of
which we've discussed in recent weeks.
But Sutter Home has gained distinction
in the industry by concentrating about
85 percent of production on the Zinfandel
varietal.
Suiter's Zinfandel is created exclusively
from grapes grown at a 1700-foot ^
elevation in the Shenandoah Valley of Amador "county in
the foothills of the Sierra Nevada. The granite-marl soil is
responsible for producing wines of tremendous depth with
far more of the Zinfandel's "spicy" character than in any
other part of the Sunshine State.
After fermentation, the wine is racked and settled in 50
and 60 gallon oak barrels for at least two years before
final blending and bottling.
Sutter Home also produces once a year a White Zinfandel.
At harvest, these grapes are crushed and the juice
separated from the skins, thus allowing only minimum
color and tannin extraction. The juice is then fermented
as a white wine in a refrigerated stainless steel tank and
bottled within four months for maximum fruitiness. The
result is an unusual wine with distinctive color and
varietal character. Serve it at 65 degrees with your outdoor
barbecue or even your most formal dinner. We
suggest you air for one hour before serving.

COOKING WITH WINE
Scallops a la Pierre
To make two servings, you'll need: 1 Ib. scallops, '/» Ib.
butter, 2 tspns. chopped chives or green onions, 1 tblspn.
finely chopped parsley, 'A cup white table wine, salt and
pepper.
Wash scallops thoroughly. Heat butter in medium-sized
heavy skillet. Add scallops, chives, parsley, wine, sail nd
pepper. Cover and cook about 10 minutes, until liquid is
reduced to an almost syrupy consistency. Serve with rice
pilaf and a green salad with tomatoes and cucumbers.
