preparations for <strong>the</strong> Town's Golden Anniversary in 1978.<br />

With <strong>the</strong> bikini season here, <strong>the</strong> time to shed a few<br />
extra pounds has come.<br />
The basic rule when dieting is to meet aU nutritional<br />
needs, but to eat sriialler amounts of food.<br />
Fad diets, which concentrate on one type of food and<br />
exclude o<strong>the</strong>rs,.do not,succeed because <strong>the</strong> diet is not<br />
nuticitionally balanced and does riot teach new eating<br />
habits.<br />
With planning, a reducing diet can be enjoyable as<br />
small portions of a wide variety of foods are combined.<br />
Pasta, such as spaghetti or macaroni, can be used as<br />
<strong>the</strong> basis for a nutritious, filling and low-calorie meal. The<br />
meal can be varied by using different types of pasta,<br />
always remembering that two ounces of uncooked pasta<br />
will make one cup cooked pastal<br />
A cup of cooked pasta contains under 200 calories.<br />
MEAT BALLS WITH NOODLES<br />
8 ounces (4 cups) egg noodles<br />
V4 pound ground lean beef<br />
'A cup chopped parsley<br />
2 tablespoons chopped onion<br />
1 teaspoon salt<br />
Vz teaspoon paprika<br />
2 tablespoons olive oil<br />
2 cups water<br />
1 chicken bouillon cube<br />
Salt and pepper<br />
Combine ground beef, parsley, onion, salt and paprika.<br />
Mix well. Shape into 1-inch balls. Heat olive oU in skiUet.<br />
Add meat balls and cook until browned on all sides. Stir<br />
in water and bouillon cube and bring to a boil. Cover and<br />
simmer 20 minutes.<br />
Cook noodles as directed on package. Drain. Arrange<br />
in serving dish. Lift meat balls from liquid and place on<br />
top of noodles. Season liquid with salt and pepper to<br />
taste. Pour over noodles. Serves 4.<br />

MACARONI ORIENTAL<br />
8 ounces (2 cups) elbow macaroni<br />
1 10-ounce package fresh or frozen leaf spinach<br />
1 4-ounce can whole mushrooms<br />
2 beef bouillon cubes<br />
1 pound thinly sliced beef sirloin, cut in strips<br />
2 tablespoons butter<br />
1 small onion, sliced<br />
6 green onions, cut in 1-inch pieces<br />
2 cups diagonally slices celery<br />
1 5-ounce can water chestnuts, drained and sliced<br />
1 tablespoon cornstarch<br />
'/4 cup soy sauce<br />
Prepare fresh spinach for cooking, or defrost frozen<br />
spinach in hot water. Measure liquid from mu.shrooms.<br />
Add enough water to make 1 cup. Heat to boiling and stir<br />
in bouillon cubes. Start cooking macaroni as directed on<br />
package. Drain. Meanwhile, in a large skUlet, saute beef<br />
in butter until lightly browned. Add drained spinach,<br />
mushrooms, onions, celery, water chestnuts and bouUlon.<br />
Cook covered 3 minutes. Blend cornstarch with soy<br />
sauce. Stir into skillet and boil 1 minute. Serve over hot<br />
macaroni with additional soy sauce, if desired. Serves 6.<br />

1 teaspoon brown sugar<br />
V2 teaspoon celery salt<br />

Salt and pepper<br />
3 tablespoons grated Parmesan cheese<br />
Cook pepper, olives and onion in 1 tablespoon butter<br />
for 3 minutes. Add tomatoes, sugar and seasonings.<br />
Cover and simmer 20 minutes. Meanwhile, cook<br />
spaghetti as directed on package. Drain. Circle hot<br />
serving platter with spaghetti. Spoon most of <strong>the</strong> herb<br />
sauce over spaghetti leaving small amount in pan. Keep<br />
platter hot in low-temperature oven. Season steaks with<br />
salt and pepper. Stir remaining butter into pan and<br />
quickly cook steaks, browning on both sides. Arrange<br />
steaks in center of platter. Sprinkle cheese over<br />
herb-sauced spaghetti. Serves 4.<br />

government offers prizes to<br />
, selected departments. The<br />
winning departments are<br />
those which come up with<br />
<strong>the</strong> most bizarre and least<br />
sensible programs.<br />
Obviously, competition<br />
for <strong>the</strong>se prizes must be fi<br />
erce. None<strong>the</strong>less, <strong>the</strong> Un-.<br />
employment Insurance Com<br />
mission deserves to hold a<br />
substantial .share of <strong>the</strong><br />
awards.<br />
The U.l.C.'s intention is<br />
admirable: to case <strong>the</strong> pain-<br />
caused by involuntary lack,<br />
o f w ork. The e f fee t, h owe ve r,<br />
is different from <strong>the</strong> intent;<br />
often, it seems <strong>the</strong> U.l.C. is<br />
responsible for creating un<br />
employment. Certainly, this<br />
has been a frequent com-'<br />
plaint voiced by members of<br />
<strong>the</strong> small business commu<br />
nity.<br />

manufacturers shut down to<br />
retool <strong>the</strong>ir factories for <strong>the</strong><br />
new models. The shut-down<br />
can carry on for .6 weeks or.<br />
more. During this period,<br />
workers are laid off.<br />

who is seeking unemploy<br />
ment insurance benefits is re-,<br />
quired to register first with<br />
Canada Manpower. Any<br />
worker who is not available-<br />

arranged by Manpower -<br />
loses all unemployment in<br />

Auto workers are differ<br />
ent, tlioiigh. They are not re<br />
quired to register with Man<br />
power. For <strong>the</strong> first two<br />
weeks of <strong>the</strong> annual layoff,<br />
<strong>the</strong>y collect holiday pay. The.<br />

weeks' duration: under <strong>the</strong>se<br />
conditions, <strong>the</strong> Commission<br />
is allowed to waive <strong>the</strong> re<br />
quirement of registration for<br />
employment.<br />
This arrangement has seri<br />
ous implications for ail Cana<br />
dians, not <strong>the</strong> least being <strong>the</strong> - .<br />
gift of paid holidays compli<br />
ments of <strong>the</strong> Canadian ta.x-<br />
payer for certain classes of.<br />
