and has written a book on the place.
Many of you know all about the President’s
Mystery run because most of the club went on it.
But for those of you who would like to know all
about it, here goes.
We piled 43 in a chartered motor coach and headed
out Friday morning October 4 th for Yosemite
National Park. Bob and Peggy Cook followed
behind in their vehicle because they had to head
home earlier than the rest of us. We picked up a
great picnic lunch at Tenaya Lodge. Upon entering
the park we were told not to stop and continue
driving through. That ruined my plan to have our
picnic at Tenaya Lake, so we continued over Tioga
Pass and ate out lunch at the Mono Lake Park. By
the way, less than half of the people raised their
hand when I asked if they had ever gone over
Tioga. Our first night’s destination was Bridgeport
along the Walker River. Before heading out to
dinner the group consumed numerous margaritas,
courtesy of Freida Null and Debbie Garrison.
After grabbing another outstanding picnic lunch to
take with us on Saturday morning, we headed to
California’s official ghost town, “Bodie.” It was
because of the rough unpaved roads why we
chartered the coach. Ninety percent of the people
on the run said they had never been to Bodie before.
We had an outstanding private two-hour tour from a
Following our picnic lunch we motored north on
Highway 395 up to Topaz Lodge at the Nevada
state line where we enjoyed a complete dinner of
prime rib and or roasted chicken. Our room
overlooked the lake and again the margaritas were
of unlimited quantity. Pam purchased several great
raffle prizes and that meant everyone came out a
winner. Later that night some folks gambled,
listened and danced to a classic rock band or retired
to their room.
Sunday morning October 6th, we took the group
over Monitor Pass on State Route 89 and then over
to Carson Pass on SR 88 before connecting on
Highway 49 at Jackson. Twenty miles later we
stopped for lunch in San Andreas at one of my
favorite restaurants, the “Pickle Patch.” The folks
opened the place just for us and many CVC
members ordered pesto BLT’s which have won first
place at the Calaveras County Fair for the last 12
consecutive years. What a beautiful indoor and
outdoor setting followed by yet another outstanding
meal.
Following an ice cream stop in Angels Camp, we
arrived back home just before 6pm on Sunday
October 6 th . The weather was perfect, everything
worked out beautifully and I think everyone had a
stellar time together. Pam and I want to thank
everyone who participated.
Before closing, here is a reminder to attend our
general meeting this month on November 19. You
will be voting in your officers for 2014 and we need
your thumbs up or down on some important
potential revisions to the bylaws.
Craig
and $1.25 during tonight's General meeting.
In the absence of our "In the News" reporter Jan
Pflepsen, Pam reported the news concerning our
Corvette families.
Parliamentarian Linda Laningham reported the
nominees for the board. She will also be forming a
committee for the proposed changes to the by-laws,
which will meet at after the first of the year.
Meanwhile, the cards, phone calls, and
hospital visits were and are much
appreciated. THANK YOU.
Patricia Garrahan reports:
I got a call from Terrie. She said Fred's
surgery went very well. He now has two
new knees! At the time she called, she was
in his room waiting for him to come back
from recovery. Terrie was at the club
meeting and gave us a good update. Terrie
reports Fred continues to do well. Therapy
is tough but Fred is tougher. Hoping to see
him at the next meeting.
MaryAnn Whitson reports:
Since mid-August Roy has had two
emergency room visits and four
hospitalizations with surgeries for
cardiac-related situations.
Mid-August – Roy was seen in St. Agnes
ER for severe vertigo, sudden onset. No
specific cause identified. (High BP? Low
BP? Inner ear disturbance?)
08/20 - Had a pacemaker inserted.
09/20 - Had angioplasty, 2 stents placed,
now total of 12 in chest.
09/27 - Pacemaker incision problems.
Admitted to St. Agnes for antibiotics
10/04 – Fri pacemaker pocket revised
(while club was on Mystery Trip!)
10/05 - Sat. Discharged. (This was a very
long week for Roy.)
10/08 - St. Agnes ER again - for gash on
nose. (Lost “head-butting contest”
with dog.)
10/11 Friday - Hospitalized again -
pacemaker pocket hematoma drained.
Great to see both of them at the meeting
on 10/15!
Joyce (the snitch) Kroeker reports: If
you ever go to a 3-D movie with Skip (the
bad one) Severance, please help him when
he leaves the theater. You know they ask
you to return your 3 D glasses to be
recycled. He is so generous he put his
prescription glasses in the barrel too! They
had to go thru the container to retrieve
them. Help him so he won’t do that again.
(didn’t realize he had done that til he got to
his car)
Chuck Lanningham felt badly that Linda
wasn’t able to attend the movie, but he left
the theater with 2 buckets of popcorn for
her. What a guy! I hear he spilled much of
it on the lawn getting in to the house. I
swear he was only drinking Pepsi during
the show.
Linda Lanningham reports Chuck found
the CVC flags in the garage rafters. Good
job Chuck.
Gordon Capurro reports he has lost 51
pounds after dental surgery. The silver
lining in the cloud? Grandpa Gordon also
reports his granddaughter was invited to
compete in her gymnastics in Hawaii.
1 bay leaf
1 tablespoon all-purpose flour
2 to 2 1/2 cups chopped or shredded
roast turkey (white and/or dark meat)
1 1/4 cups chicken stock or canned
chicken broth
1/2 cup green peas
4 cups leftover mashed potatoes or
Basic Mashed Potatoes, recipe
3/4 cup grated sharp or medium
Cheddar
Chopped parsley leaves, for garnish
Preheat the oven to 400 degrees F. Lightly
sauté pan or skillet, heat the oil over
Essence, salt, and pepper and cook, stirring,
until the onions are soft, about 3 minutes.
Add the garlic and cook, stirring, for 20
seconds.
Add the mushrooms, thyme, and bay leaf
and cook, stirring, until the mushrooms are
soft, 3 to 4 minutes. Add the flour and cook,
stirring, until thick, about 1 minute. Stir in
the tomato paste and cook, stirring, for 1
minute. Add the meat and stir well to
combine. Gradually add the stock and then
the peas, and bring to a boil. Reduce the heat
to medium-low and simmer until the mixture
is thickened, 6 to 8 minutes.
Remove from the heat and discard the bay
leaf. Carefully transfer to the prepared dish
and spoon the potatoes over the meat
mixture, spreading to the edges. Sprinkle
with the cheese and bake until the cheese is
bubbly and the potatoes are crisp around the
edges, 22 to 25 minutes. Let set for 10
minutes before serving. Garnish with
chopped parsley and serve.
Basic Mashed Potatoes:

2 pounds potatoes, peeled, quartered,
cut into 1-inch wedges
3/4 teaspoon salt
1/2 cup milk
4 tablespoons unsalted butter
3 tablespoons heavy cream
1/4 teaspoon ground black pepper
Place the potatoes in a medium, heavy
saucepan with enough salted water to cover
by 1-inch. Bring to the boil, reduce the heat
to medium-low, and simmer until the
potatoes are fork tender, about 25 minutes.
Drain in a colander and return to the
saucepan. Over medium-low heat, cook the
potatoes for 1 minute to dry. Add the milk,
butter, cream, salt and pepper and mash until
smooth, 3 to 4 minutes. Serve immediately.
Yield: 4 to 6 servings
ESSENCE (Emeril's Creole
Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly and
store in an airtight jar or container.
Yield: about 2/3 cup
Ingredients
2 quarts chicken broth
1 turkey carcass, all meat removed
1 onion, halved, plus 1 onion,
minced
1 carrot, halved lengthwise, plus 1
carrot, minced
1 whole stalk celery, plus 1 more
stalk, minced
2 bay leaves
3 cups dark turkey meat
2 garlic cloves, smashed
2 tablespoons olive oil
3 cups leftover cooked Thanksgiving
side vegetables (Brussels sprouts,
sweet potatoes, mashed potatoes ,
green beans, frozen peas,
mushrooms, steamed cabbage, etc.)
1 tablespoon chopped fresh sage
leaves ( or 1 teaspoons dried sage
leaves)
Directions
Put chicken broth, turkey, onion halves,
carrot halves, 1 celery stalk, and 1 bay leaf
in a large stock pot. Bring to a boil, then
simmer about 1 1/2 hours. Finely dice the
remaining onion, carrot and celery and
reserve. Dice the turkey meat. Make sure
meat pieces are no larger than the size of a
soup spoon. (If preparing soup the next day,
be sure to store leftover turkey meat in an
airtight container before placing it in the
refrigerator, top with 1 or 2 ladles full of
broth to keep meat moist.)
Before straining broth, remove large bones
and carcass with tongs. Strain the broth
through a sieve, covered with wet cheese
cloth. Discard the solids. Transfer broth to a
bowl set in a bath of ice water, which will
cool the broth quickly and help keep it
fresher longer. This can be done the night
before and stored in the refrigerator until the
next day.
In a large soup pot, heat garlic cloves in the
olive oil. Allow to brown slightly and add
minced carrots, celery, and onion. Sweat
over medium-low heat until softened, about
7 or 8 minutes.
Dice the leftover vegetables (here Brussels
sprouts, sweet potatoes, and green beans).
Add the chopped sage to the soup pot along
with the turkey broth and the remaining bay
leaf. Bring to a simmer. When simmering,
add Brussels sprouts, green beans and diced
turkey meat to the soup. Bring it back up to
