Rare Breed is a barrel proof Bourbon,<br />

A M E R I C A N W H I S K E Y<br />

American Whiskey is the distilled product of fermented corn, barley<br />

and rye. Primarily made in Kentucky and Tennessee, it has also been<br />

known to be made in California, Illinois, Indiana, New Jersey, New<br />

York, Ohio, Texas and Virginia. American Whiskey has two main<br />

categories, both of which have specific production requirements.<br />

K E N T U C K Y W H I S K E Y<br />

For a Whiskey to be labelled Kentucky Straight Bourbon Whiskey,<br />

it must be distilled and aged in the State of Kentucky. The Mash<br />

must be made from at least 51% Corn with the other grains<br />

generally being Rye and Barley. The distillate must then be aged<br />

in new charred oak barrels for a minimum of two years.<br />

Wild Turkey<br />

101 Kentucky Straight Rye Whiskey<br />

Distinguished from Bourbon because it must<br />

contain at least 51% rye, Wild Turkey Rye<br />

101 is rich and balanced with a unique<br />

toffee and peppery taste that makes it less<br />

sweet than Bourbon, but with similar tones<br />

of caramel and vanilla, and a warm, smoky<br />

flavour.<br />

Kentucky Straight Rye Whiskey<br />

The best selling American Straight Rye<br />

Whiskey is made with 51% rye, so<br />

Whilst by legal definition can be called a Bourbon, two of the<br />

three producers in Tennessee keep their individuality as Tennessee<br />

Whiskies by following a specific production method. Known as<br />

the ‘Lincoln County Process’ the Whiskey is drip fed through 10<br />

feet of sugar maple charcoal before barrelling, this process assists<br />

in removing impurities and gives the Whiskey a distinctive taste.<br />

vanilla, white pepper and lush fruits. The<br />

palate is rich with caramel, and a hint of<br />

Made with an unchanged formula<br />

since 1795, Jim Beam White is<br />

medium bodied, with mellow hints<br />

of caramel and vanilla. The finish is<br />

Jim Beam Black spends a minimum<br />

six years in new, charred, white oak<br />

barrels. These extra years of aging<br />

create its full bodied flavour with smooth<br />

Buffalo Trace is made from the finest<br />

Kentucky and Indiana corn, selected rye,<br />

The term ‘sour mash’ refers to the fermentation method rather<br />

than the taste profile. Like making sourdough bread, a sour<br />

mash fermentation is started by using a small portion of the<br />

previous batch. This helps with consistency of the Whiskey<br />

from batch to batch.<br />

Fermentation is the process of converting the starch and sugar<br />

from the grains to alcohol.<br />

The mash, or ‘distiller’s beer’ is the mixture of the grain and water<br />

which is fermented to a thick slurry of around 10% ABV. This<br />

mixture is then placed into spirit stills to create a distillate or ‘spirit.’<br />
