Rare Breed is a barrel proof Bourbon,
meaning no water is added to reduce
the level of alcohol during the bottling
process. This method captures its rich,
pure Bourbon flavour. Medium-to-full
bodied with a nose of spring flowers
balanced by a touch of black pepper
and almonds.

in new American oak to create a
deeply mellow, rich and flavourful
Bourbon. It is medium-bodied

continues to sell in huge quantities worldwide.

A M E R I C A N W H I S K E Y
American Whiskey is the distilled product of fermented corn, barley
and rye. Primarily made in Kentucky and Tennessee, it has also been
known to be made in California, Illinois, Indiana, New Jersey, New
York, Ohio, Texas and Virginia. American Whiskey has two main
categories, both of which have specific production requirements.
K E N T U C K Y W H I S K E Y
For a Whiskey to be labelled Kentucky Straight Bourbon Whiskey,
it must be distilled and aged in the State of Kentucky. The Mash
must be made from at least 51% Corn with the other grains
generally being Rye and Barley. The distillate must then be aged
in new charred oak barrels for a minimum of two years.

101 Kentucky Straight Rye Whiskey

Distinguished from Bourbon because it must
contain at least 51% rye, Wild Turkey Rye
101 is rich and balanced with a unique
toffee and peppery taste that makes it less
sweet than Bourbon, but with similar tones
of caramel and vanilla, and a warm, smoky
flavour.

Kentucky Straight Rye Whiskey

The best selling American Straight Rye
Whiskey is made with 51% rye, so
it’s drier and spicier than its sweeter
Bourbon cousins. The nose shows
lemon zest, mint and green apple
aromas. The palate has spicy oak
characters and a dry, clean finish.

Jack Daniel’s
Old No.7 Tennessee Whiskey

Charcoal mellowed for a uniquely
smooth character and flavour. Rich
apricot with caramel and vanilla
notes and a slight minty undertone.
The finish is subtly sweet and oaky
with some hints of burnt orange.

With Lemonade, Dry Ginger

Gentleman Jack Tennessee
Whiskey 700mL
Twice charcoal-mellowed to
produce a refined style of
Tennessee Whiskey. The scent of
soft caramel, vanilla and smoke
flow through on to a rich palate,
which finishes soft and mellow.

Whilst by legal definition can be called a Bourbon, two of the
three producers in Tennessee keep their individuality as Tennessee
Whiskies by following a specific production method. Known as
the ‘Lincoln County Process’ the Whiskey is drip fed through 10
feet of sugar maple charcoal before barrelling, this process assists
in removing impurities and gives the Whiskey a distinctive taste.

is within a dry county. So Jack Daniel’s, or any other alcoholic beverage,
cannot be sold at the distillery or anywhere throughout the County.

An American icon, Wild Turkey is made
in the heart of Kentucky. The nose shows
vanilla, white pepper and lush fruits. The
palate is rich with caramel, and a hint of
nutmeg, cinnamon and cloves. Full and
clean finish.

Made with an unchanged formula
since 1795, Jim Beam White is
medium bodied, with mellow hints
of caramel and vanilla. The finish is
clean and powerful.

Jim Beam Black spends a minimum
six years in new, charred, white oak
barrels. These extra years of aging
create its full bodied flavour with smooth
caramel and warm oak notes. Well
balanced with a rich texture and a long,
smooth finish.

Buffalo Trace is made from the finest
Kentucky and Indiana corn, selected rye,
and superior malted barley. Complex
aromas of vanilla, mint and molasses.
The palate shows rich flavours of brown
sugar, spice and leather that lead to a
long and dry finish.

Mixed with Cola or on the rocks
Using the best grains and a lengthy
maturing process of six years in oak
barrels enables Old Virginia to acquire
its mellowness and fine lingering flavour.
Caramel and fruity aromas appear on
the nose, the flavour has an earthy note,
with a lovely display of gentle spices.

Mixed with Cola or Dry Ginger Ale
Special Reserve Single Barrel
Kentucky Straight Bourbon
Whiskey 700mL
Blanton’s Special Reserve is ideal for
those new to single barrel Bourbons.

The term ‘sour mash’ refers to the fermentation method rather
than the taste profile. Like making sourdough bread, a sour
mash fermentation is started by using a small portion of the
previous batch. This helps with consistency of the Whiskey
from batch to batch.
Fermentation is the process of converting the starch and sugar
from the grains to alcohol.
The mash, or ‘distiller’s beer’ is the mixture of the grain and water
which is fermented to a thick slurry of around 10% ABV. This
mixture is then placed into spirit stills to create a distillate or ‘spirit.’
