Today’s recipes are from the
good ladies of Rodnes Church,
rural Erskine. These recipes
sound good for these hot summer
days or lazy days spent at
the lake.
Rodnes celebrated 125 years
in 2010 with this special cookbook.
If you have a chance, buy
one. It has many pages of interesting
writings from the women
of the parish, as well as stories
from long ago, tips for baking
and cooking and, of course,
great recipes.
––––––––––––––––––––––––––
Here’s an easy summer
dessert. I’ve never tasted
this kind of dessert, but it
sounds good and so quick to
make for company too. I like
to use my glass “cake pans”
for freezer desserts like this
because they are less apt to
stick or pick up a metal flavor
when the pan thaws and
then gets put back into the
freezer again. This would be
great to keep in the fridge
for a quick summer dessert,
wouldn’t it:
CHOCOLATE CHIP
COOKIE DESSERT
Paulette (Dorr) Moe
1 tube (16-1/2 ounces) refrigerated
chocolate chip cookie
dough
8 ounce package cream cheese,
room temperature
1 cup powdered sugar
12 ounce container Cool Whip
(divided)
3 cups cold milk
1 (3 ounce) package instant
chocolate pudding mix
1 (3 ounce) package instant
vanilla pudding mix
Chopped nuts
Let cookie dough stand at
room temperature for 5-10 minutes
to soften. Press into
ungreased 9x13 inch pan. Bake
at 350 degrees for 14-16 minutes
(a little less for glass) or
until golden brown. Cool.
Beat cream cheese and powdered
sugar until smooth. Fold
in 1 3/4 cup Cool Whip. Spread
over cooled crust.
In bowl, whisk milk and pudding
mixes well. Let stand 2
minutes or until soft set. Spread
over cream cheese layer. Top
with remaining Cool Whip.
Sprinkle top with nuts. Cover
and refrigerate overnight until
firm.
––––––––––––––––––––––––––
The name of summer
cooking is “easy.” This is a
yummy cake you can put
together in minutes and it is
great with ice cream or
whipped cream. Another
yummy chocolate dessert
that is perfect for summer:
FUDGE NUT UPSIDE
DOWN CAKE
Grace Lee
1 tablespoon butter
3/4 cup sugar
1/2 cup milk
1 cup flour
1/4 teaspoon salt
1 teaspoon baking powder
1-1/2 tablespoons cocoa
1/2 cup chopped nuts
1/2 cup powdered sugar
1/2 cup brown sugar
1/4 cup cocoa
1-1/4 cup boiling water
Stir together butter, sugar
and milk.
In another bowl, sift flour,
salt, baking powder and cocoa.
Mix with butter mixture. Stir
well and place in 9x9 inch buttered
baking pan. Sprinkle nuts
over top.
Mix powdered sugar, brown
sugar and cocoa and spread
over flour layer. Pour boiling
water over all and bake at 350
degrees for 30 minutes.
Serve with whipped cream or
whipped topping.
August weddings in our
family, both of them from
2010. Anyway, if you want to
have something really summer-like
and fancy for the
wedding guests, make these:
STRAWBERRY SHAPED
COOKIES
Lesia Juve
1 pound coconut
1 pound almonds, skinless
1 can sweetened condensed
milk
2 tablespoons sugar
1 package (6 ounces) dry strawberry
Jello (not sugarless),
divided
1 to 2 tablespoons almond
extract
Red food coloring
Grind coconut and almonds
together in food processor. Add
condensed milk, sugar, 3/4 of
the Jello, almond flavoring and
food coloring. Mix well. Cover
tightly and refrigerate
overnight. (Reserve remaining
dry Jello out of the freezer.)
The next day, shape dough
into strawberries and roll each
in the reserved dry Jello and
place on waxed paper. Let dry
well.
(Green leaves may be made
by using powdered sugar and
margarine to make a paste and
dipping in green food coloring or
Jello. Form leaves and let dry
on waxed paper. Sprinkle with
sugar or Jello.)
Everybody loves bananas
and who doesn’t have a couple
that have been around
just a bit too long and
nobody wants to eat? Use
them to make these yummy
bars and there’s no problem:
BANANA BARS
Kristi Doyle
(Kristi said she received this
recipe from her neighbor,
Michelle Gunufson)
1/2 cup butter
2 cups sugar
3 eggs
3-4 bananas, mashed
1 teaspoon vanilla (I like to use
real rum in banana recipes –
SLP)
2 cups flour
1 teaspoon baking soda
Pinch of salt
Mix butter and sugar and
beat together. Add bananas,
eggs, vanilla, flour, soda and
salt and beat. Pour into greased
and floured cake pan. Bake at
350 degrees for 25 minutes.
Frosting:
1/2 cup butter
1 (8 ounce) package cream
cheese
4 cups powdered sugar
2 teaspoons vanilla
Mix all together and beat.
Frost cooled bars.
––––––––––––––––––––––––––
I would use mini chips to
make these yummy bars,
and maybe use more than
1/4 cup to swirl into batter,
too. Won’t they be easy,
made with a cake mix? Yum:
MARBLED CHOCOLATE
BARS
Judy Ness
1 German chocolate cake mix
8 ounces cream cheese, softened
1/2 cup sugar
3/4 cup milk chocolate chips
Prepare cake batter as
directed. Pour into greased
15x10x1 inch cake pan.
Beat cream cheese and sugar.
Stir in 1/4 cup chocolate chips.
Drop by teaspoons over batter,
then cut through with knife to
swirl the cream cheese mixture.
Sprinkle with remaining chocolate
chips. Bake at 350 degrees
for 25-30 minutes. Cool.
Cut into bars. Recipe makes
3 dozen bars.
