Today’s recipes are from the<br />
good ladies of Rodnes Church,<br />
rural Erskine. These recipes<br />
sound good for these hot summer<br />
days or lazy days spent at<br />
the lake.<br />
Rodnes celebrated 125 years<br />
in 2010 with this special cookbook.<br />
If you have a chance, buy<br />
one. It has many pages of interesting<br />
writings from the women<br />
of the parish, as well as stories<br />
from long ago, tips for baking<br />
and cooking and, of course,<br />
great recipes.<br />

Here’s an easy summer<br />
dessert. I’ve never tasted<br />
this kind of dessert, but it<br />
sounds good and so quick to<br />
make for company too. I like<br />
to use my glass “cake pans”<br />
for freezer desserts like this<br />
because they are less apt to<br />
stick or pick up a metal flavor<br />
when the pan thaws and<br />
then gets put back into the<br />
freezer again. This would be<br />
great to keep in the fridge<br />
for a quick summer dessert,<br />
wouldn’t it:<br />
CHOCOLATE CHIP<br />
COOKIE DESSERT<br />

1 tube (16-1/2 ounces) refrigerated<br />
chocolate chip cookie<br />
dough<br />
8 ounce package cream cheese,<br />
room temperature<br />
1 cup powdered sugar<br />
12 ounce container Cool Whip<br />
(divided)<br />
3 cups cold milk<br />
1 (3 ounce) package instant<br />
chocolate pudding mix<br />
1 (3 ounce) package instant<br />
vanilla pudding mix<br />
Chopped nuts<br />
Let cookie dough stand at<br />
room temperature for 5-10 minutes<br />
to soften. Press into<br />
ungreased 9x13 inch pan. Bake<br />
at 350 degrees for 14-16 minutes<br />
(a little less for glass) or<br />
until golden brown. Cool.<br />
Beat cream cheese and powdered<br />
sugar until smooth. Fold<br />
in 1 3/4 cup Cool Whip. Spread<br />
over cooled crust.<br />
In bowl, whisk milk and pudding<br />
mixes well. Let stand 2<br />
minutes or until soft set. Spread<br />
over cream cheese layer. Top<br />
with remaining Cool Whip.<br />
Sprinkle top with nuts. Cover<br />
and refrigerate overnight until<br />
firm.<br />

yummy cake you can put<br />
together in minutes and it is<br />
great with ice cream or<br />
whipped cream. Another<br />
yummy chocolate dessert<br />
that is perfect for summer:<br />
FUDGE NUT UPSIDE<br />
DOWN CAKE<br />

1 tablespoon butter<br />
3/4 cup sugar<br />
1/2 cup milk<br />
1 cup flour<br />
1/4 teaspoon salt<br />
1 teaspoon baking powder<br />
1-1/2 tablespoons cocoa<br />
1/2 cup chopped nuts<br />
1/2 cup powdered sugar<br />
1/2 cup brown sugar<br />
1/4 cup cocoa<br />
1-1/4 cup boiling water<br />
Stir together butter, sugar<br />
and milk.<br />
In another bowl, sift flour,<br />
salt, baking powder and cocoa.<br />
Mix with butter mixture. Stir<br />
well and place in 9x9 inch buttered<br />
baking pan. Sprinkle nuts<br />
over top.<br />
Mix powdered sugar, brown<br />
sugar and cocoa and spread<br />
over flour layer. Pour boiling<br />
water over all and bake at 350<br />
degrees for 30 minutes.<br />
Serve with whipped cream or<br />
whipped topping.<br />

and fancy for the<br />
wedding guests, make these:<br />
STRAWBERRY SHAPED<br />
COOKIES<br />
Lesia Juve<br />
1 pound coconut<br />
1 pound almonds, skinless<br />
1 can sweetened condensed<br />
milk<br />
2 tablespoons sugar<br />
1 package (6 ounces) dry strawberry<br />
Jello (not sugarless),<br />
divided<br />
1 to 2 tablespoons almond<br />
extract<br />
Red food coloring<br />
Grind coconut and almonds<br />
together in food processor. Add<br />
condensed milk, sugar, 3/4 of<br />
the Jello, almond flavoring and<br />
food coloring. Mix well. Cover<br />
tightly and refrigerate<br />
overnight. (Reserve remaining<br />
dry Jello out of the freezer.)<br />
The next day, shape dough<br />
into strawberries and roll each<br />
in the reserved dry Jello and<br />
place on waxed paper. Let dry<br />
well.<br />
(Green leaves may be made<br />
by using powdered sugar and<br />
margarine to make a paste and<br />
dipping in green food coloring or<br />
Jello. Form leaves and let dry<br />
on waxed paper. Sprinkle with<br />
sugar or Jello.)<br />

Everybody loves bananas<br />
and who doesn’t have a couple<br />
that have been around<br />
just a bit too long and<br />
nobody wants to eat? Use<br />
them to make these yummy<br />
bars and there’s no problem:<br />
BANANA BARS<br />

1/2 cup butter<br />
2 cups sugar<br />
3 eggs<br />
3-4 bananas, mashed<br />
1 teaspoon vanilla (I like to use<br />
real rum in banana recipes –<br />
SLP)<br />
2 cups flour<br />
1 teaspoon baking soda<br />
Pinch of salt<br />
Mix butter and sugar and<br />
beat together. Add bananas,<br />
eggs, vanilla, flour, soda and<br />
salt and beat. Pour into greased<br />
and floured cake pan. Bake at<br />
350 degrees for 25 minutes.<br />
Frosting:<br />
1/2 cup butter<br />
1 (8 ounce) package cream<br />
cheese<br />
4 cups powdered sugar<br />
2 teaspoons vanilla<br />
Mix all together and beat.<br />
Frost cooled bars.<br />

I would use mini chips to<br />
make these yummy bars,<br />
and maybe use more than<br />
1/4 cup to swirl into batter,<br />
too. Won’t they be easy,<br />
made with a cake mix? Yum:<br />
MARBLED CHOCOLATE<br />
BARS<br />

1 German chocolate cake mix<br />
8 ounces cream cheese, softened<br />
1/2 cup sugar<br />
3/4 cup milk chocolate chips<br />
Prepare cake batter as<br />
directed. Pour into greased<br />
15x10x1 inch cake pan.<br />
Beat cream cheese and sugar.<br />
Stir in 1/4 cup chocolate chips.<br />
Drop by teaspoons over batter,<br />
then cut through with knife to<br />
swirl the cream cheese mixture.<br />
Sprinkle with remaining chocolate<br />
chips. Bake at 350 degrees<br />
for 25-30 minutes. Cool.<br />
Cut into bars. Recipe makes<br />
3 dozen bars.<br />
