These are legumes with a humidity content lower than 14%. For example beans,
chickpeas, peas, lentils, etc.
Beans
Mainly Salta, and other provinces of the Argentine Northeast like Tucumán, Jujuy,
and in a minor degree, Santiago del Estero; And in a much lesser scale, Catamarca
and other provinces and regions like Córdoba, Chaco and Formosa are producers
of beans, and with some colors are among the first exporters at a worldwide scale.
White Bean
Particularly popular in the United Kingdom and the United
States, the small, white navy bean, is typically featured in
such dishes as baked beans and pies, and various soups.
Consumption of navy beans has been shown to lower total
cholesterol levels and low-density lipoprotein cholesterol
due to their high saponin content.

Black Bean
Vastly produced in the Argentine Northwest and with a
production reaching up to 300 thousand metric tons a year,
despite that in 2012 due to climate reasons there’s been
a great decrease in production leaving a stock of just 150
thousand metric tons.
Markets for this bean variety are mainly Brazil, Mexico and
Venezuela, the two first being the top consumers.

Red Bean
From this variety we can separate 2 classes; if its color is
dark and intense we call these Dark Red Kidney Beans;
light red coloured ones are called Light Red Kidney Beans.
15 to 20 thousand metric tons are produced yearly in the
Argentine Northwest. Its main market is in Brazil, Venezuela,
Mexico, Central America, Spain, Italy, Portugal, Frace,
Germany and former Sovietic Union countries.
