A native of Finland, Chef Mikko’s talent 

led him to work in some of London’s 

finest restaurants including Mirabelle and 

the Orrery. With a passion for premium 

quality ingredients, he has created a menu 

featuring exceptional imported produce. 

His deliciously meaty Tsarskaya oysters 

from Brittany served in their shells with 

a Noilly Prat jelly and topped with caviar 

deliver a true taste of the sea and make 

a wonderful start to a memorable evening. 

The meaty oysters, once known as the 

’Pearl of the Tsars’ because there were so 

loved by Russian royalty, are also the 

perfect foil for the chilled Mumm Cordon 

Rouge Champagne. Bursting with citrus 

aromas, the elegant stream of bubbles 

blends Pinot Meunier with Pinot Noir 

and Chardonnay for a refreshing glass of 

celebratory fizz. 

Chef Mikko’s second dish of the evening 

will be black truffle tortellini with 

Fontina cheese and chestnuts. The distinctly 

festive flavours will be followed 

by a delicate Bresse chicken consommé 

with Morel mushrooms, artichoke and 

sherry. Bresse chickens originate from 

the Rhône-Alpes region of France and 

are highly prized for their tender and 

tasty flesh. It is also the most expensive 

chicken in the world and the only one to 

be protected by an Apellation d’Origine 

Controlée, French certification that guarantees 

geographical origin. The acknowledged 

master of molecular gastronomy, 

Heston Blumenthal declared the Bress 

chicken to be the finest bird in terms of 

taste and texture. At Red Sky, Chef Mikko 

pays the renowned bird due respect in 

his beautiful dish by stuffing a wing with 

a chicken mousse. The gamey flavours 

of the chicken are complimented by 

autumnal Morel mushrooms and artichokes 

and it’s and dish that is carefully 

judged and skillfully executed by the young 

master chef. 

Diners will also enjoy beautifully 

cooked Brittany lobster with carrot and 

a fennel puree. The lobster of connoisseurs, 

its sea sweet meat is enhanced 

by a subtle hint of aniseed coming through 

in the fennel puree and extra sweetness 

from the carrot. The dish will be followed 

by a palate cleansing glass of chilled Cassis 

and Champagne. The highlights of the 

evening will be the choice of main dishes, 

Kagoshima Wagyu beef with red wine 

onions and foie gras, or line-caught sea 

bass with Hokkaido scallop, celery root 

and Porcini mushroom. The exceptional 

beef Kagoshima Prefecture is produced 

by a breed of black Japanese black cattle 

renowned for well-balanced marbling 

that results in a mild flavor and tenderness.

the result is melt-in-the-mouth beef that

With over 300 wine displayed in the 

two storey glass walled cellar, diners at

line-caught sea bass is a rare treat. 

Imported from France, the wild sea bass 

is amongst some of the best quality available. 

Cooked to succulent perfection, the 

firm, large flaked, juicy white flesh is 

enlivened by a richly flavoured Porcini 

mushroom. Red Sky’s special New Year’s 

Eve Dinner Degustation Menu ends on 

a high note with a decadent Valrhona 

chocolate surprise with Cognac and berries. 

A visual feast for the eyes and the 

appetite, the artistic creation is made

Back to Basics: 

Comfort Food Like Grandma 

Used to Make 

Tamarind Village’s Ruen Tamarind 

restaurant is set to launch its very 

own northern Thai home-style 

menu called ’Kong Gin Baan Hao’, 

(’Dishes We Like To Eat At Home’) featuring 

popular regional favorites such as 

Gaeng Hang Lay (Pork & Ginger Curry) 

and Sai Oua (grilled pork sausage spiced 

with turmeric and herbs) alongside lesser 

known dishes such as ’ab’ (minced meat 

and herbs blended and steamed in banana 

leaf) and ’saa’ (northern style salads) 

drawn from authentic family recipes 

passed from generation to generation. 

While Central Thai cuisine, inspired 

by the refined tradition of royal court 

cooking, is the classic Thai food that 

most of us have come to know and love, 

the food of the north has its roots in 

more humble origins. Less famous but 

no less delicious, northern Thai cooking 

is comfort food at its very best: down-toearth, 

unpretentious and homespun, with 

a heady mix of ethnic influences from 

around the region--much like the people 

of the north themselves. 

The contrast in cooking styles is clear 

right from the start of the meal, with 

northerners preferring ’sticky rice’ a glutinous 

variety, steamed in bamboo baskets 

and rolled into toothy balls by hand before 

being dipped into a variety of chilli dipping 

sauces and curries as their staple food 

over the more delicate jasmine rice eaten 

with a spoon by their Siamese cousins to 

the south. The cooler climate of the region 

and geography has also influenced the 

food with cooks employing vegetables 

like pumpkin greens, cabbage, bamboo 

shoots and local spinach which grow 

abundantly in these parts while there is 

very little seafood and the curries rely on 

a variety of local herbs rather than coconut 

milk for flavor due to the area’s mountainous 

terrain far from the coast. 

Another staple of northern Thai cuisine 

are the dipping sauces made by mashing 

grilled chillis & vegetables with shallots, 

garlic and herbs in a mortar before serving 

with sticky rice and blanched vegetables

Northerners have a reputation for economy 

and for making delicious dishes 

from whatever they have growing in their 

own back yards. The food is simple, 

healthy and wholesome. This explains 

the popularity of an ingredient such as 

bamboo shoots which are plentiful and 

grow wild throughout the region and 

can be transformed into nutritious soups, 

curries and salads as in Tamarind Village’s 

own ’Nor Mai Oua’ (Bamboo Shoots 

Stuffed with Minced Pork) and its ’Yum 

Nor Mai’ (Sliced Bamboo Shoot Salad). 

For the more adventurous there is ’Ab 

Plaa’ a grilled, curry-marinated fish fillet 

wrapped in banana leaf and ’Jor Phak 

Plung’ Ceylon Spinach Soup which gets 

its tangy kick from fresh tamarind, lime 

juice and grilled young green chilis and 

its unique texture and aromatic flavor 

from the addition of Ceylon Spinach, a 

local green. And there is also ’Saa Hua 

Plee’ (Banana Blossom Salad) with the 

beautiful red-pink of the blossom giving 

color to this dish with its fresh and crispy, 

thinly sliced banana flower tossed with 

a chilli paste dressing. 

Northern Thai history also informs 

the food of the region with Chinese and 

Burmese influence clearly seen in a number 

of dishes such as the popular ’Gaeng 

Hung Lay,’ a rich and creamy ginger and 

turmeric based curry that arrived with 

the Burmese invasions and Shan 

migrations of past centuries and stayed. 

Tamarind Village’s version boasts braised 

pork which is cooked until perfectly tender 

and freshly chopped ginger and garlic 

along with a dash of tamarind juice for 

extra depth.

smorgasbord. The Alaskan king crabs 

alone have travelled ten thousand kilometres 

to be here tonight. The New Zealand 

mussels have been whisked along 

the peripheries of the South Pacific to 

appear, and the Fine de Claire oysters, 

fast-tracked through immigration, left 

France only yesterday. 

Gorging on seafood is all very well 

but even the most ardent ocean addict 

needs a change from surf to turf. Should 

you have the willpower to tear yourself 

away from the shellfish pile-up, Voilà! 

offers an array of international options.

While five-star gastronomic standards 

are duly met throughout the menu, Voilà! 

has a jewel in its crown. Slide open the 

door of their dedicated cheese room, 

ideally with your eyes closed, and your 

sensory receptors will be convincing you

French fromagerie. The olfactory kick 

of the oh-so-many cheeses will transport 

you to the backstreets of Montmartre,

Pattani provinces. The campaign runs

only tobuy special soft toys for their own 

children, but also to donateanother soft 

toy to share their joy with children in the 

southernmost provinces of the country," 

said Ms. Edelweiss Silan, Director of 

Programsfor Save the Children. 

"Soft toys are good for hugging and 

cuddling, giving children a sense of 

warmth." said Ms.Silan. "They are helpful 

in providing children witha sense of security 

and comfort and can be used to stimulate 

play, spark creativity and introduce 

a variety of educational activities". Commenting 

on the initiative, BijayaRajbhandari, 

UNICEF Thailand’s Representative, 

said the needs of children in the 

South were particularly pressing. 

"We know from our assessments that 

children living in the far South of the 

country are especially disadvantaged," 

said Mr.Rajbhandari. "The three provinces 

are among the country’spoorest and the 

situation of children in these provinces 

is among the least favourable." 

The soft toy campaign runs in parallel 

with a global partnership betweenUN- 

ICEF, Save the Children and IKEA that 

have been in place since 2003. Proceeds 

from soft toys sold in IKEA stores around 

the world go to the IKEA Foundation’s 

funding of children in care institutions 

and schools in communities across the 

globe. 

"This global campaignhas contributed 

to real change where it matters and also 

continues to build for the future in a selfsustainable 

manner," said Lars Svensson, 

Regional Sustainability Manager Ikano 

(Thailand) Limited. "Since we operate in 

Thailand and we also have our global 

partners working locally, we think it is 

just natural to extend that global collaboration 

in a local Thai context." Svensson 

said that "for every soft toy customers 

buy and place in the drop box for Thai

The eleventh new series launched 

by the Issey Miyake Watch Project 

is "W," a Japanese chronograph 

watch created through collaboration with 

the renowned Japanese car designer, 

Satoshi Wada, who worked for Audi in 

Germany and made remarkable achievements 

in designing many series. The 

powerful and dynamic case is inspired 

by an aluminum wheel of a car and the 

long hands indicate the time on its precise 

gauge-like dial. The concept is explained 

by the designer - "I designed this watch 

to reflect the minimal mind based on 

the traditional aesthetic sense of Japan. 

Aiming for returning to basics of Japanese 

traditional arts, I proposed a new type 

of chronograph watch started in Japan". 

Its design was created by a leading 

Japanese car designer, Satoshi Wada. 

With his design philosophy described 

as "design is born to link the past, the 

present and the future," he made an 

approach not only to go back to the 

principle of measuring time but also to 

produce a watch conveying a message 

to the future through the design. To 

succeed in the basic watch requirement 

of good legibility, this design combines 

a hand and a scale that give the impression 

of highly-accurate meters and 

gauges, while exuding allure that fuses 

dynamism and elegance. There, one can 

also find the brand’s spirit that values 

purity and simplicity.

Sansiri Collectible has previously

The new Tudor Heritage Black Bay is steeped 

in the mysterious aura of a hidden bay 

thatgradually yields its secrets to those who 

venture there, a long-lost treasure returning to 

thelight of day. It is the latest addition to the 

Tudor Heritage collection launched in 2010 which 

isaimed at drawing together some of the brand’s 

emblematic models, inspired by its past andrevisited. 

The Heritage Black Bay is a perfect embodiment 

of Tudor’s vintage spirit. 

While it is a comprehensive response to today’s 

stylistic aspirations, the Tudor HeritageBlack Bay 

is inspired by a diving model that first appeared 

in 1954 and continually evolveduntil the 1980s. 

Its domed dial - an exquisite vintage detail - 

unusual burgundy colour bezeland "snowflake" 

hands all helped build the reputation of this iconic 

model during a period thatsaw the emergence of 

the very first divers’ watches. 

Although it temptingly retains a small part of 

mystery, like any treasure emerging from thebottom 

of the sea, the Heritage Black Bay model 

does yield many of its secrets. Starting withits 

lines, inspired by the 1954 model, and its slender, 

elongated lugs, reworked and resizedto produce 

a contemporary steel case with a diameter of 41 

mm, waterproof to 200 metres(660 feet) and 

enhanced by a domed crystal. The black dial, 

which is also elegantly domed,displays generous 

luminescent hour markers for perfect visibility. 

Like that of the hourmarkers, the pink gold of the 

hands represents a gentle hint of nostalgia, suggesting 

thecharacteristic patina of older timepieces. 

The burgundy colour of the unidirectional rotatablebezel,
