2012 <strong>at</strong> the <strong>Red</strong> <strong>Sky</strong>’s long bar which<br />

skirts the edge of an expansive rooftop<br />

terrace. Framed by a huge colourchanging<br />

arch, cre<strong>at</strong>ive bartenders mix,<br />

<strong>Red</strong> <strong>Sky</strong> <strong>at</strong> <strong>Night</strong>,<br />

Diner’s <strong>Delight</strong><br />

The recipe for a perfect New Year’s Eve in <strong>Bangkok</strong> requires a<br />

sophistic<strong>at</strong>ed setting, indulgent dining and panoramic city views.<br />

<strong>Red</strong> <strong>Sky</strong> <strong>at</strong>op Centara Grand provides all three.<br />

finest restaurants including Mirabelle and<br />

fe<strong>at</strong>uring exceptional imported produce.<br />

His deliciously me<strong>at</strong>y Tsarskaya oysters<br />

from Brittany served in their shells with<br />

a Noilly Pr<strong>at</strong> jelly and topped with caviar<br />

deliver a true taste of the sea and make<br />

a wonderful start to a memorable evening.<br />

The me<strong>at</strong>y oysters, once known as the<br />

’Pearl of the Tsars’ because there were so<br />

loved by Russian royalty, are also the<br />

perfect foil for the chilled Mumm Cordon<br />

Rouge Champagne. Bursting with citrus<br />

aromas, the elegant stream of bubbles<br />

blends Pinot Meunier with Pinot Noir<br />

and Chardonnay for a refreshing glass of<br />

celebr<strong>at</strong>ory fizz.<br />

Chef Mikko’s second dish of the evening<br />

will be black truffle tortellini with<br />

Fontina cheese and chestnuts. The distinctly<br />

festive flavours will be followed<br />

by a delic<strong>at</strong>e Bresse chicken consommé<br />

with Morel mushrooms, artichoke and<br />

sherry. Bresse chickens origin<strong>at</strong>e from<br />

the Rhône-Alpes region of France and<br />

are highly prized for their tender and<br />

tasty flesh. It is also the most expensive<br />

chicken in the world and the only one to<br />

be protected by an Apell<strong>at</strong>ion d’Origine<br />

Controlée, French certific<strong>at</strong>ion th<strong>at</strong> guarantees<br />

geographical origin. The acknowledged<br />

master of molecular gastronomy,<br />

Heston Blumenthal declared the Bress<br />

chicken to be the finest bird in terms of<br />

taste and texture. At <strong>Red</strong> <strong>Sky</strong>, Chef Mikko<br />

pays the renowned bird due respect in<br />

his beautiful dish by stuffing a wing with<br />

a chicken mousse. The gamey flavours<br />

of the chicken are complimented by<br />

autumnal Morel mushrooms and artichokes<br />

and it’s and dish th<strong>at</strong> is carefully<br />

judged and skillfully executed by the young<br />

master chef.<br />

Diners will also enjoy beautifully<br />

cooked Brittany lobster with carrot and<br />

a fennel puree. The lobster of connoisseurs,<br />

its sea sweet me<strong>at</strong> is enhanced<br />

by a subtle hint of aniseed coming through<br />

in the fennel puree and extra sweetness<br />

from the carrot. The dish will be followed<br />

by a pal<strong>at</strong>e cleansing glass of chilled Cassis<br />

and Champagne. The highlights of the<br />

evening will be the choice of main dishes,<br />

Kagoshima Wagyu beef with red wine<br />

onions and foie gras, or line-caught sea<br />

bass with Hokkaido scallop, celery root<br />

and Porcini mushroom. The exceptional<br />

beef Kagoshima Prefecture is produced<br />

by a breed of black Japanese black c<strong>at</strong>tle<br />

renowned for well-balanced marbling<br />

th<strong>at</strong> results in a mild flavor and tenderness.<br />

Back to Basics:<br />

Comfort Food Like Grandma<br />

Used to Make<br />

Tamarind Village’s Ruen Tamarind<br />

restaurant is set to launch its very<br />

own northern Thai home-style<br />

menu called ’Kong Gin Baan Hao’,<br />

(’Dishes We Like To E<strong>at</strong> At Home’) fe<strong>at</strong>uring<br />

popular regional favorites such as<br />

Gaeng Hang Lay (Pork & Ginger Curry)<br />

and Sai Oua (grilled pork sausage spiced<br />

with turmeric and herbs) alongside lesser<br />

known dishes such as ’ab’ (minced me<strong>at</strong><br />

and herbs blended and steamed in banana<br />

leaf) and ’saa’ (northern style salads)<br />

drawn from authentic family recipes<br />

While Central Thai cuisine, inspired<br />

by the refined tradition of royal court<br />

cooking, is the classic Thai food th<strong>at</strong><br />

no less delicious, northern Thai cooking<br />

is comfort food <strong>at</strong> its very best: down-toearth,<br />

unpretentious and homespun, with<br />

a heady mix of ethnic influences from<br />

around the region--much like the people<br />

of the north themselves.<br />

The contrast in cooking styles is clear<br />

right from the start of the meal, with<br />

northerners preferring ’sticky rice’ a glutinous<br />

variety, steamed in bamboo baskets<br />

and rolled into toothy balls by hand before<br />

being dipped into a variety of chilli dipping<br />

sauces and curries as their staple food<br />

over the more delic<strong>at</strong>e jasmine rice e<strong>at</strong>en<br />

with a spoon by their Siamese cousins to<br />

the south. The cooler clim<strong>at</strong>e of the region<br />

and geography has also influenced the<br />

food with cooks employing vegetables<br />

like pumpkin greens, cabbage, bamboo<br />

shoots and local spinach which grow<br />

abundantly in these parts while there is<br />

very little seafood and the curries rely on<br />

a variety of local herbs r<strong>at</strong>her than coconut<br />

milk for flavor due to the area’s mountainous<br />

terrain far from the coast.<br />

Another staple of northern Thai cuisine<br />

are the dipping sauces made by mashing<br />

grilled chillis & vegetables with shallots,<br />

garlic and herbs in a mortar before serving<br />

with sticky rice and blanched vegetables<br />

own back yards. The food is simple,<br />

healthy and wholesome. This explains<br />

the popularity of an ingredient such as<br />

bamboo shoots which are plentiful and<br />

grow wild throughout the region and<br />

can be transformed into nutritious soups,<br />

curries and salads as in Tamarind Village’s<br />

own ’Nor Mai Oua’ (Bamboo Shoots<br />

Stuffed with Minced Pork) and its ’Yum<br />

Nor Mai’ (Sliced Bamboo Shoot Salad).<br />

For the more adventurous there is ’Ab<br />

Plaa’ a grilled, curry-marin<strong>at</strong>ed fish fillet<br />

wrapped in banana leaf and ’Jor Phak<br />

Plung’ Ceylon Spinach Soup which gets<br />

its tangy kick from fresh tamarind, lime<br />

juice and grilled young green chilis and<br />

its unique texture and arom<strong>at</strong>ic flavor<br />

from the addition of Ceylon Spinach, a<br />

local green. And there is also ’Saa Hua<br />

Plee’ (Banana Blossom Salad) with the<br />

beautiful red-pink of the blossom giving<br />

color to this dish with its fresh and crispy,<br />

thinly sliced banana flower tossed with<br />

a chilli paste dressing.<br />

Northern Thai history also informs<br />

the food of the region with Chinese and<br />

Burmese influence clearly seen in a number<br />

of dishes such as the popular ’Gaeng<br />

Hung Lay,’ a rich and creamy ginger and<br />

turmeric based curry th<strong>at</strong> arrived with<br />

the Burmese invasions and Shan<br />

migr<strong>at</strong>ions of past centuries and stayed.<br />

Tamarind Village’s version boasts braised<br />

pork which is cooked until perfectly tender<br />

and freshly chopped ginger and garlic<br />

along with a dash of tamarind juice for<br />

extra depth.<br />

fitting for the festive season. As the<br />

cool air-con blows around the lobby, it<br />

distinctly reminds you of snowy<br />

mountains <strong>at</strong> Christmas.<br />

most excellent produce for this seafood<br />

smorgasbord. The Alaskan king crabs<br />

alone have travelled ten thousand kilometres<br />

to be here tonight. The New Zealand<br />

mussels have been whisked along<br />

the peripheries of the South Pacific to<br />

appear, and the Fine de Claire oysters,<br />

fast-tracked through immigr<strong>at</strong>ion, left<br />

France only yesterday.<br />

Gorging on seafood is all very well<br />

but even the most ardent ocean addict<br />

needs a change from surf to turf. Should<br />

you have the willpower to tear yourself<br />

away from the shellfish pile-up, Voilà!<br />

offers an array of intern<strong>at</strong>ional options.<br />

Europe is heavily represented in the beef<br />

tongue stew cooked in the artisanal La<br />

Voilà! is no one-trick seduction pony;<br />

her arsenal of tempt<strong>at</strong>ions extends far<br />

beyond the seafood. Deeper explor<strong>at</strong>ion<br />

of the space leads you past an Italian<br />

enclave sequestering an authentic brick<br />

pizza oven, but true Francophiles should<br />

follow their Gallic noses to the cheese<br />

room.<br />

While five-star gastronomic standards<br />

are duly met throughout the menu, Voilà!<br />

has a jewel in its crown. Slide open the<br />

door of their dedic<strong>at</strong>ed cheese room,<br />

ideally with your eyes closed, and your<br />

sensory receptors will be convincing you<br />

th<strong>at</strong> you’ve stepped into an authentic<br />

French fromagerie. The olfactory kick<br />

of the oh-so-many cheeses will transport<br />

you to the backstreets of Montmartre,<br />

but here you can simply help yourself to<br />

the selection without the infamously<br />

surly service of the Parisian propriétaire.<br />

It’s worth pausing between courses<br />

to best appreci<strong>at</strong>e the stylish décor and<br />

the warmth of the staff before <strong>at</strong>tempting<br />

to tackle the desserts. Importing ideas<br />

and quality from the best Saint-Germaindes-Prés<br />

p<strong>at</strong>isseries, the dessert kitchen<br />

overwhelms with macaroons, mousses<br />

and teetering towers of calories.<br />

Pairing any of these courses with one<br />

of the 351 types of wine browsable in<br />

the cheese room is a dilemma the waiter<br />

can help you with. When you’ve culinarily<br />

visited as many countries as your waistline<br />

cuddliest ways to help<br />

children, their families and<br />

from now until 12 January2013 <strong>at</strong> the<br />

IKEA Bangna store.<br />

"We want to give Thai families who<br />

visit IKEA Bangna the opportunity not<br />

only tobuy special soft toys for their own<br />

children, but also to don<strong>at</strong>eanother soft<br />

toy to share their joy with children in the<br />

southernmost provinces of the country,"<br />

said Ms. Edelweiss Silan, Director of<br />

Programsfor Save the Children.<br />

"Soft toys are good for hugging and<br />

cuddling, giving children a sense of<br />

warmth." said Ms.Silan. "They are helpful<br />

in providing children witha sense of security<br />

and comfort and can be used to stimul<strong>at</strong>e<br />

play, spark cre<strong>at</strong>ivity and introduce<br />

a variety of educ<strong>at</strong>ional activities". Commenting<br />

on the initi<strong>at</strong>ive, BijayaRajbhandari,<br />

said the needs of children in the<br />

South were particularly pressing.<br />

"We know from our assessments th<strong>at</strong><br />

children living in the far South of the<br />

country are especially disadvantaged,"<br />

said Mr.Rajbhandari. "The three provinces<br />

are among the country’spoorest and the<br />

situ<strong>at</strong>ion of children in these provinces<br />

is among the least favourable."<br />

The soft toy campaign runs in parallel<br />

with a global partnership betweenUN-<br />

ICEF, Save the Children and IKEA th<strong>at</strong><br />

have been in place since 2003. Proceeds<br />

from soft toys sold in IKEA stores around<br />

the world go to the IKEA Found<strong>at</strong>ion’s<br />

funding of children in care institutions<br />

and schools in communities across the<br />

globe.<br />

"This global campaignhas contributed<br />

to real change where it m<strong>at</strong>ters and also<br />

continues to build for the future in a selfsustainable<br />

manner," said Lars Svensson,<br />

The new Tudor Heritage Black Bay is steeped<br />

in the mysterious aura of a hidden bay<br />

th<strong>at</strong>gradually yields its secrets to those who<br />

venture there, a long-lost treasure returning to<br />

thelight of day. It is the l<strong>at</strong>est addition to the<br />

Tudor Heritage collection launched in 2010 which<br />

isaimed <strong>at</strong> drawing together some of the brand’s<br />

The Heritage Black Bay is a perfect embodiment<br />
