Italian Christmas Tradition<br />

In most of Italy, the protein of choice<br />

on Christmas Eve is fish. Chef Fabio<br />

wanted to continue that with a Snow<br />

fish Salmoriglio style, accompanied by<br />

sautéed vegetables and red pepper coulis.<br />

The snow fish is cooked to absolute<br />

perfection. The chef explained that it<br />

involved a multi-step process of poaching,<br />

searing and baking that maintains<br />

not only the texture of the fish but the<br />

natural flavors. The pepper coulis sauce<br />

was a perfect bridge to delicately sautéed<br />

vegetables. To add even more layers,<br />

the dish was paired with Albizzia Chardonnay<br />

from Toscana. The wine is youthful<br />

and crisp. Its crystal clear straw color<br />

has golden highlights with notes of ripe<br />

lemon and golden apple as well as tropical<br />

fruits. It’s a refreshing wine that is just<br />

bold enough to stand up to the pepper<br />

coolie while being soft and balanced<br />

enough to give the snow fish the highlight<br />

it so rightfully deserved.<br />

La Tavola & Wine Bar is running three<br />

specials around the Christmas holiday.<br />

Since the more traditional day to celebrate<br />

Christmas is actually on Christmas<br />

Eve, they will be offering a four course<br />

menu that features the Snowfish<br />

mentioned earlier and a complimentary<br />

glass of sparkling wine. The price is 2,200<br />

baht. The Snowfish will be featured on<br />

the Christmas day lunch menu as well.<br />

It will be accompanied by a pasta starter<br />

Christmas in Italy is a special<br />

time of year. The holiday season,<br />

which usually runs from<br />

the early part of December<br />

until the beginning of January<br />

is ripe with tradition. And nothing says<br />

Italy like food. La Tavola & Wine Bar,<br />

the Italian restaurant located on the third<br />

floor of the Renaissance <strong>Bangkok</strong> Ratchaprasong<br />

Hotel has created a Christmas<br />

food menu that promises to bring the<br />

homesick a holiday respite.<br />

The menu was created by their veteran<br />

Italian chef, Fabio Polidori. Chef Fabio<br />

gained his passion for cooking while<br />

helping his Mother Anna, make and<br />

shape pasta as a young boy in central<br />

Italy’s Marche region. Similar to the<br />

Tuscan and Piedmont cooking traditions,<br />

his palate was honed on white truffle<br />

from Acqualagna, Ciauscolo (soft spread<br />

salame made from wild boar) and Formaggio<br />

di Fossa cheese where the cheese<br />

is wrapped in walnut leaves and buried<br />

under-ground from August to November.<br />

After finishing culinary school in<br />

Pesaro, Chef Fabio spent time in various<br />

parts of Italy before setting off for culinary<br />

adventures in countries around the globe.<br />

While a traditionalist at heart, he can’t<br />

help but to sneak in some non-traditional<br />

ingredients and modern techniques into<br />

his mostly by-the-book recipes. One<br />

example that will be served on Christmas<br />

day is deconstructed lasagna with oxtail<br />

ragout topped with parmesan foam.<br />

While this may sound nouveau, the actual<br />

lasagna is his Mom’s original recipe (as<br />

is all the pasta and pizza dough made at<br />

La Tavola & Wine Bar). The oxtail is<br />

rendered both mouth watering and succulent<br />

after having been marinated in<br />

red wine, fresh herbs and vegetables for<br />

at least 24 hours, and then braised for at<br />

least five hours. This dish can be paired<br />

with Castigliani Chianti, a Sangiovese<br />

and merlot blend that wafts of cherry,<br />

raspberry and strawberry as well as floral<br />

notes. While light on tannins, the crisp<br />

acidity and notes of cherry on the tongue<br />

creates a pleasant and balanced partner<br />

to the rich flavors surrounding the oxtail.<br />

The menu includes a hot appetizer<br />

of pig trotter cotechino, lentil salad,<br />

potato foam, and black truffle. This is<br />

followed by a pasta course of open face<br />

lasagna with oxtail ragout, crispy mushrooms<br />

and gremolata. The main course<br />

is a selection of either Seared snow fish,<br />

sundried tomato risotto with Mediterranean<br />

flavors or Lamb Scottadito, potato<br />

gratin, artichokes in a natural jus. The<br />

dessert is a Panettone Pina Colada;<br />

toasted panettone, rum-raisins ice cream<br />

and mandarin zest.<br />

Throughout December, La Tavola &<br />

Wine Bar is also serving up a traditional<br />

holiday hamper including both homemade<br />

products from the pastry as well<br />

as some great imports. Classics include<br />

Prosecco, Panettone, traditional Tuscan<br />

panforte, Extra Virgin Olive Oil,<br />

Napoletana Red Sauce, Fresh Egg Pasta,<br />

Half a Salami and Parmigiano Reggiano<br />

cheese among other things.<br />

The restaurant is located on the 3rd<br />

address, Prime affords diners an ambiance<br />

Prepared with precision by Chef Sethasak,<br />

a master of his trade, each cut is gently<br />

smoked in our wood-fired oven, where<br />

Beechwood perfume the air.<br />

One enters the restaurant through a<br />

wonderful living room-type lounge complete<br />

with a bar, which is perfect for predinner<br />

drinks and chatter while you are<br />

waiting for members of your party to<br />

arrive.<br />

There is one private room which offer<br />

exclusivity for a private business dinner<br />

or family gathering. For those seeking<br />

something a little different, up to 12 guests<br />

may dine inside Prime’s ‘wall of wine’ -<br />

a glass wine cellar, which is home to 200<br />

bottles of the best labels. For those who<br />

fancy a gourmet experience, one may<br />

choose to dine at the exclusive Chefs’<br />

Table.<br />

If you do not quite require that level<br />

of privacy, there are a number of other<br />

interesting seating options. The central<br />

dining area has a great take on the ’open<br />

kitchen’ area with its huge counter tops<br />

and visible flames from inside the wallmounted<br />

Beachwood fire grill ovens.<br />

One side of the dining room has these<br />

cute little booths which can ensconce a<br />

party of up to six persons comfortably.<br />

In addition to providing more privacy<br />

that the central dining area, they also<br />

afford fine river views.<br />

Meanwhile, the tables by the window<br />

at the front of the dining room are great<br />

for an intimate dinner for two to four<br />

persons. The best choice if you are planning<br />

a romantic meal, this vantage point<br />

will allow you unobstructed views as you<br />

gaze in either direction up and down the<br />

river.<br />

It is no surprise that the service at<br />

Prime is in keeping with the high standards<br />

of the entire property. The entire staff<br />

appeared to be very well-trained in greeting<br />

and seating guests, taking orders,<br />

serving the food and clearing the table.<br />

The staffs were also very knowledgeable<br />

about the menu, drink list and were witty<br />

and jovial to boot! Also, all the servers<br />

wear thick leather aprons which really<br />

added to steak house ambience.<br />

Another good sign for the restaurant<br />

was that the director of food and beverage,<br />

Jean-Pierre Joncas, was walking around<br />

checking on operations and visiting diners<br />

to make sure that everyone was having<br />

a good meal.<br />

The meal started out with freshly baked<br />

bread and sparkling water followed by a<br />

salad that was prepared right before our<br />

eyes and which I even had a hand in the<br />

creation of. At Prime, the salads aren’t<br />

merely brought out to you from the kitchen.<br />

They are created and tossed table<br />

side, right before your eyes.<br />

It all begins when the ‘salad cart’ pulls<br />

up alongside your table. In the centre of<br />

the cart is a really huge wooden salad<br />

bowl. Before the leaves are even put in,<br />

the bowl is lined with a dressing which<br />

is mixed from a selection of ingredients<br />

neatly sitting in individual compartments<br />

on the sides. There is extra virgin olive<br />

oil, balsamic vinegar, mustard, freshly<br />

ground pepper, croutons, bacon bits,<br />

onions, anchovies and a slew of other<br />

herbs and garnishes.<br />

Every time a new ingredient was added,<br />

our waitress would make sure to carefully<br />

blend it into the previous ingredient along<br />

the side of the bowl by stirring in a circular<br />

motion. After a few rounds of additions,<br />

I was called up to do a little stirring<br />

myself. It’s not as easy as it looks, and I<br />

quickly returned to my seat.<br />

The Caesar salad proved to be fresh<br />

and well seasoned and a good setup for<br />

the cream of wild mushroom and bergamot<br />

soup, which followed.<br />

Then, it was on to the steaks. Open<br />

only for dinner, Prime only serves top<br />

quality imported beef from Australia and<br />

the United States. Top cuts of beef are<br />

prepared meticulously by Hilton’s<br />

renowned chefs and kitchen brigade, then<br />

cooked to the exactly the right degree.<br />

The result is a deliciously tender piece of<br />

beef that melts effortlessly in your mouth.<br />

For those who prefer seafood, the menu<br />

also includes world-class fresh catch,<br />

including snow fish, barramundi and<br />

salmon.<br />

And if you simply must ‘sauce’, there<br />

is Pommery mustard sauce, Bordelaise<br />

red wine, lemon confit butter, and Béarnaise.<br />

It should also be noted that Prime has<br />

an excellent selection of mouth-watering<br />

deserts to seal any meal. Try the New<br />

York cheesecake with fresh berries or<br />

the warm apple crumble with cinnamon<br />

and caramel ice cream and vanilla sauce.<br />

in the extensive selection of labels from<br />

old and new world wineries. In total, the<br />

Walk into the lobby of the<br />

Shangri-La Wing of<br />

<strong>Bangkok</strong>’s famous riverside<br />

Shangri-La Hotel,<br />

and veer right. Before<br />

you in all of its chocolatiness is the<br />

spaciously inclined splendour of The<br />

Chocolate Boutique. With its comfortable<br />

chairs, high ceiling and light and airy<br />

atmosphere, it has all the elements<br />

required to settle in and spend some<br />

quality moments indulging in ‘you-time’.<br />

A chocolate lover’s haven, the chocolate<br />

coloured menu, with mint pages and<br />

chocolate font colour, already has you<br />

salivating. You can choose a chair looking<br />

towards to the river, or, better still, facing<br />

the high-end retail-style chocolate display<br />

of chocolate sculptures and other goodies,<br />

to eat in, take away or gift to someone<br />

special, which includes yourself! Aside<br />

from chocolate, The Chocolate Boutique<br />

does sell other cakes, macaroons,<br />

pastries, coated fruit and nuts, as well<br />

as a whole selection of hot and cold<br />

beverages.<br />

Start out by ordering yourself one of<br />

their signature coffees (180Baht). For<br />

sugar-sweet pick-me-up, try the ‘Coffee<br />

After-Eight’, and as its name suggests<br />

this is a minty creation, made with<br />

espresso, crème de menthe syrup, white<br />

chocolate sauce, milk and a squirt of<br />

whipped cream. Definitely not for the<br />

faint of heart, do watch out for the accompanying<br />

sugar shock with this multilayered,<br />

multi-coloured coffee, and feel<br />

free to order without the cream, if you<br />

are counting the advent calendar calories.<br />

This one comes hot, but there is also a<br />

range of signature cold coffees, such as<br />

the ‘Mocha Frappé’ or the ‘Butter Rum<br />

Frost’.<br />

The Chocolate Boutique is no ordinary<br />

hotel bakery, according to Chef Braun,<br />

and it shows. Chef views the creations<br />

here as chocolate art, made from what<br />

he considers to be the best commercially<br />

available chocolate in Asia, namely<br />

French Verona Valrhona chocolate. He<br />

enjoys matching the flavours of the different<br />

chocolate - with differing variations<br />

on white, milk and dark - to other aromas<br />

and tastes, quite like a sommelier would<br />

pair wine with your meal. He noted that<br />

the trend of eating chocolate in Thailand<br />

is catching up with other parts of Asia,<br />

but that the palate in Thailand generally<br />

prefers sweeter, less alcoholic options,<br />

with some locally inspired Thai flavours.<br />

Simplicity and easily identifiable flavours,<br />

which naturally fit together, is what he<br />

focuses on for the Thai market, to innovate<br />

Now, we have all heard of retail therapy, where<br />

a bit browse around the stores and a swipe of the<br />

credit cards is supposed to do you a world of<br />

good, but down at the Shangri-La, they have<br />

brought a whole new spin to the meaning of<br />

hitting your favourite boutique for a boost<br />

quality chocolate and matching ingredients.<br />

The hottest items on their menu happen<br />

to be the assortment of pralines.<br />

You can buy individual pieces for 35Baht<br />

each, or take home a selection box of 12<br />

or 30 pieces, as a ‘Mosaic Praline Presentation’<br />

(500Baht and 900Baht respectively).<br />

Choose from such delightful flavours<br />

as Lime and milk chocolate, Crunchy<br />

Grand Marnier, Cassis royal, Coffee butterscotch,<br />

or Orange pekoe tea, among<br />

others. For a special occasion, there is<br />

also a Mosaic leather gift box with 30<br />

chocolates for 1,450Baht, and the geometric<br />

and artistic 1.5lb cakes, covered<br />

in and decorated with chocolate, at<br />

1,100Baht, including The Tube, The Disc,<br />

The Cube and The Circle, all with different<br />

fillings and configurations.<br />

Perhaps the most special and intriguing<br />

item on The Chocolate Boutique<br />

menu is ‘Art of Chocolate’. With a listing<br />

of ‘The chocolate universe’, ‘Chefs on<br />

parade’, ‘Chocolate notes’ and ‘The art<br />

of chocolate’, this section may need some<br />

explaining. These are all figures or displays,<br />

made of wonderful chocolate. One<br />

of Chef Braun’s latest creations is fashioned<br />

after an ancient Thai mask, created<br />

with the help of a custom-designed chocolate<br />

mold, or the aquatically themed<br />

red Chocolate Coral, which is formed<br />

by submerging just-melted chocolate<br />

in a vat of ice and allowing the swirls to<br />

form and freezing it, before extracting<br />

and dusting with the stunning red coating.<br />

This ingenius edible artwork is presented<br />

in a box, surrounded by decorative<br />

pralines. They even sell lipstick-shaped<br />

chocolates for the woman in your life,<br />

or chocolate tuk-tuks (550Baht), as a<br />

non-traditional souvenir-type gift, which<br />

currently sports a subtle hint of Christmas,<br />

with small seasonal decorations<br />

on the roof of the three-wheeler.<br />

Speaking of Christmas, as it draws<br />

nearer, The Chocolate Boutique has a<br />

range of hamper boxes that are composed<br />

like make-up artist cases, wooden gift<br />

crates and leather hampers, containing<br />

such fun boutique items, as chocolate<br />

jigsaw puzzles, Santas and Christmas<br />

hats, panettone and gingerbread, and<br />

much more to get you drooling in<br />

pleasure. Available in different sizes and<br />

price ranges from 1,500Baht for the simpler<br />

options, up to 5,000Baht for the<br />

more decadent, they will also be available<br />

at special seasonal stands mid-month<br />

in some of <strong>Bangkok</strong>’s major shopping<br />

malls, for added Christmas shopping<br />

convenience. If you are watching your<br />

waistline or counting your pennies, in<br />

this season of excess, then you may like<br />

to opt for a chunk of deliciousness with<br />

the lollipop fudge stick (100baht) or some<br />

raspberries covered in dark chocolate<br />

(225Baht), to lessen the feeling of guilt.<br />
