Cauliflower and Pea Soup<br />
Serves: 6<br />
2 teaspoons oil<br />
1 onion, chopped<br />
1 celery stalk, chopped<br />
3 potatoes (500g), peeled, chopped<br />
500g cauliflower florets<br />
1.5 litres water<br />
½ cup frozen peas<br />
1. Heat oil in a large saucepan; add onion<br />
and celery. Cook, stirring occasionally, until<br />
brown.<br />
2. Add potatoes, cauliflower and water to<br />
the same pan; bring to the boil, reduce<br />
heat and simmer, uncovered, for about 20<br />
minutes or until potatoes and cauliflower<br />
are tender.<br />
3. Remove from heat; cool to room<br />
temperature.<br />
4. Using the SLOW START button, blend<br />
soup, in 2 batches, on speed 2-3 until<br />
smooth. Place soup and peas in a clean<br />
saucepan.<br />
5. Stir over low-medium heat until soup is hot<br />
and peas are cooked. Season well with salt<br />
and pepper.<br />
