Elderly Hale residents<br />
saved from eviction<br />
THE Wellgreen Lodge in Hale –<br />
home to many residents in their 80s<br />
and 90s – has escaped the threat of<br />
possible closure that has been<br />
hanging over the scheme for the<br />
last few months.<br />
A packed meeting of residents and<br />
concerned members of the local community<br />
was informed by Rodger Cairns, a<br />
spokesman for the Trafford Housing<br />
Trust, that the decision had been taken<br />
to keep the scheme open.<br />
This follows intense pressure from the<br />
Wellgreen defence committee which had<br />
recruited the support of the local MP,<br />
councillors and the Hale, Altrincham<br />
and Sale Independent.<br />
Rodger Cairns announced that the<br />
Trust had listened to the concerns<br />
expressed by the local community, consulted<br />
the Wellgreen residents, and had<br />
taken into account the important role<br />

the Lodge played in providing social<br />
activities locally, before making its decision.<br />
The Trust had also addressed the key<br />
issue of financial viability and found<br />
that with certain provisos, Wellgreen<br />
could reverse the predicted loss.<br />
Whereas this is likely to involve an<br />
increase in rent and service charges<br />
from next April , this is unlikely to have<br />
much impact on the residents as most of<br />
them receiving Housing Benefit.<br />
The decision was received with obvious<br />
enthusiasm by the elderly residents,<br />
many of whom have lived there for years<br />
– and wish to see out the rest of their<br />
lives there.<br />
“We can only say we are all delighted,”<br />
says Geoff Swindells, spokesman for the<br />
Wellgreen defence committee.<br />

This year the event is incorporating<br />
Armed Forces Day and the Great<br />
Poppy Weekend, celebrating the 90th<br />
anniversary of the Royal British<br />
Legion. The presentation of the Veteran’s<br />
badges is now in its third year<br />
with sixty veterans having received<br />
their badges over the past two years.<br />
It will be held at Sale Waterside’s<br />
Robert Bolt Theatre on 23 June at<br />
2pm, the week before Armed Forces<br />
Day which is on 25 June. Mayor of<br />
Trafford, Cllr Mrs Jane Baugh, will<br />
present the lapel badges to all Trafford<br />
Veteran’s registering to attend the ceremony.<br />
Anyone who has served in the<br />
UK armed forces is entitled to claim<br />
and wear the veterans’ badge.<br />
Former merchant marine workers<br />
may also apply for them if they were<br />
involved in a war zone. Trafford Council<br />
has a limited number to distribute<br />
during the ceremony so the requests<br />
for badges will be processed on a first<br />

Britain’s Got Talent body-popping<br />
sensation lives in Brooklands<br />

Razy Gogonea became an<br />
overnight sensation when he<br />
appeared on the chart topping<br />
Britain’s Got Talent TV Show.<br />
Yet what most people watching<br />
from Trafford didn’t realise is that<br />
the future star lives in Brooklands<br />
with his girlfriend Ruth Lee and her<br />
family – and can even be found helping<br />
out in her sister Octavia’s Baby<br />
Play Café in Altrincham’s King’s<br />
Court.<br />
The 28-year-old was born in Roumania<br />
but came to the UK in 2008<br />
after meeting Ruth in Cyprus –<br />
where he was performing in venues<br />
round the island – and a holiday<br />
romance led to her inviting him to<br />
return home with her.<br />
It was Ruth’s family who persuaded<br />
him to enter “Britain’s Got Talent”<br />
after he’d landed a contract to appear<br />
at Pontins.<br />
The end result was seen by millions<br />
as he ran onto the stage on his knees<br />
dressed as the Keanu Reeves character<br />
from the cult sci-fi movie Martrix.<br />
Watched by Ruth , Razy amazed<br />
the judges with his unique performance,<br />
which saw him bend and<br />
move his body like nobody else to<br />
wow the celebrity judges.<br />
Afterwards, judge Michael McIntyre<br />
said: “I loved you Razy, there<br />
were things I never seen humans do.<br />
I thought it was excellent, I really<br />
enjoyed watching it. You are Neo from<br />
The Matrix.”<br />
Amanda Holden said: ‘I found it<br />
exciting, you used the whole stage<br />
which is very good. Beautifully<br />
choreographed, excellent job. Well<br />
done!’<br />
Even David Hasselhoff added:<br />
‘You’re like a real life videogame,<br />
very very entertaining. Well done.’<br />
A tearful Razy struggled to contain<br />
himself as all three judges voted to<br />
send him through to the next round.<br />
Razy developed his unique dance<br />
style as a child spending hours each<br />
day in front of a mirror. And he is<br />
still practising three hours each<br />
evening at the home he shares in<br />
Brooklands with Ruth and her parents<br />
Kenneth and Elizabeth Lee.<br />
“He rehearses each evening in the<br />
kitchen,” says 27-year-old Ruth who<br />
is a Housing Assistant with a local<br />
Housing Trust.<br />
But how has Razy been affected by<br />
his new found fame?<br />
“There is really no change in him<br />
at all,” says Sarah. “Naturally, he’s<br />
very excited but that’s as far as it<br />
goes.”<br />
Adding to Razy’s excitement is<br />
that his success has sparked coverage<br />
on Romanian TV which has<br />
been seen by his retired father and<br />
brother but not by his mother who<br />
has been forced to work in Italy to<br />
help support the family.<br />
Both Razy and Ruth have little<br />
else on their minds at the moment<br />
apart from Britain’s Got Talent and<br />
the glittering future that potentially<br />
awaits– apart from one thing.<br />
“We are planning to get married<br />
next year,” says Ruth.<br />

than accustomed to public speaking.<br />

from Timperley won the Morton Trophy<br />
at the CheshireSpeech and<br />
Drama Festival for his word perfect<br />

Raman, who is also a keen cricketer,<br />
said: “I had practised the piece<br />
for at least three months before the<br />
festival but was still very nervous.<br />
However, you can overcome your<br />
nerves if you just remember to do<br />
your very best.<br />
The Timperley youngster who<br />
would like to become a Mathematics<br />
teacher, added: “It was great fun<br />
learning the piece and standing up in<br />
front of the judges, but it was even<br />
more fun to win the award. It’s a great<br />
honour.”<br />
Nuala Thompson commented:<br />
“Practice makes perfect and Raman<br />
gave a rendition that delighted<br />
everyone in the auditorium.”<br />
Home to school transport falls<br />
under spotlight<br />
TRAFFORD Council’s Executive is<br />
studying a report recommending a<br />
Borough wide consultation on a<br />
proposed new Home to School<br />
Transport Policy.<br />
If approved, the intention would be<br />
to hold a formal consultation from<br />
Monday, 6 June until Wednesday 13<br />
July 2011.<br />
Currently free transport is given to<br />
some pupils because their parents<br />
choose to send them to schools other<br />
than their nearest qualifying school.<br />
This type of transport is at the discretion<br />
of the local authority and over and<br />
above statutory requirements.<br />
The total cost of providing home to<br />
school transport for mainstream pupils<br />
and those with special educational<br />
needs has been increasing year on year<br />
and now costs £3.4m.<br />
The Ipsos Mori survey carried out as<br />
part of Trafford’s spending challenge<br />
identified this as the lowest of the Children<br />
and Young People’s Service priorities.<br />
The youth cabinet and neighbourhood<br />
forums also identified it as an area<br />
where savings should be made.<br />
Trafford’s Corporate Director of Children<br />
and Young People’s Service Deborah<br />
Brownlee said that the proposed<br />
policy is designed to support and protect<br />
those local families on the lowest<br />
income and those children with special<br />
educational needs.<br />
Residents can now<br />
recycle food waste<br />
TRAFFORD residents can now recycle<br />
their food waste using their green<br />
bin after a new bio-waste composting<br />
facility opened in Trafford Park<br />
which can compost both garden and<br />
food waste.<br />
Food waste includes: meat and fish,<br />
raw and uncooked including bones;<br />
dairy products, such as yoghurt and<br />
cheese; raw and cooked vegetables<br />
and fruit; bread, cakes and pastries;<br />
rice, pasta and beans; tea bags and coffee<br />
grounds and plate scrapings. No<br />
liquids should be put into the green<br />
bin, such as milk, juice or cooking oil.<br />
All other refuse and recycling bin collections<br />
will remain the same.<br />

Adoption by step parents<br />
A COMMON issue raised<br />
by many parents is “My<br />
son or daughter would<br />
like to be adopted by<br />
their stepmother or stepfather”,<br />
and often it’s the<br />
case where a child has<br />
little or no contact with<br />
the other birth parent,<br />
having been brought up<br />
by the stepparent often<br />
from a young age.<br />
So what’s the process?<br />
Stepparent adoption is<br />
provided for, under the<br />
Adoption and Children Act<br />
2002, and it is a requirement<br />
that the child has lived with<br />
the stepparent for at least<br />
six months prior to the<br />
application being made.<br />
Laws have changed allowing<br />
the stepparent to apply<br />
to adopt without their partner<br />
having to also apply.<br />
However normally, the consent<br />
of both natural parents<br />
is required unless a Court<br />
orders otherwise or unless<br />
one parent is no longer alive.<br />
Consent may also be waived<br />
if the other natural parent<br />
cannot be found, as long as<br />
enquiries have been made to<br />
locate them.<br />
A Notice of Intention to<br />
Adopt must be sent to the<br />
Local Authority which is<br />
valid for two years, with a<br />
waiting period of three<br />
months from the date of the<br />
notice before an application<br />
can be made to the Court.<br />
The Local Authority will<br />
liaise directly with you as a<br />
family, including home visits<br />
where questions are raised<br />
about family life and the<br />
reasons behind the application.<br />
The child’s wishes are<br />
also considered, but of<br />
course this factor is dependent<br />
on their age. The Local<br />
Authority has a duty to<br />
ensure it is in the best interests<br />
of the child for the adoption<br />
to take place. They will<br />
then submit a report to the<br />
Court which will ultimately<br />
decide whether to grant an<br />
Adoption Order.<br />
All parties should be prepared<br />
for the process to<br />
take some time, however a<br />
good solicitor will always<br />
be on hand to advise along<br />
the way.<br />

MGS producing record number of doctors<br />
YOUNG doctors from The Manchester<br />
Grammar School have<br />
produced a perfect 10 as a<br />
record number of students have<br />
gained entry to Britain’s top<br />
Medical schools.<br />
And these include students from<br />
Sale, Altrincham, Bowdon, Old Trafford,<br />
Hale and Hale Barns.<br />
This year a total of 39 MGS Sixth<br />
Form students have received offers<br />
with 33 students reading medicine,<br />
five choosing dentistry and one for<br />
veterinary medicine.<br />
The numbers are up from last year’s<br />
record total of 31 Sixth Form students<br />
who went on to read Medicine and<br />
Dentistry, up from 23 in 2009 and 16 in<br />
2008. The figure is an astonishing 21%<br />
percent of the year group.<br />
Head of Sixth Form, Patrick Thom,<br />
said: ‘This is a record for MGS and in<br />
today’s increasingly competitive<br />
environment this represents a fantastic<br />
success story.<br />
“It is a tribute to the talent and<br />
hard work of these young men and to<br />
the dedication and skill of those who<br />
teach them.We are not just a regional<br />
but a national centre of excellence in<br />
preparing students for entry to medical<br />
school.”<br />

are from Cambridge and Admissions<br />

Crime figures<br />
drop dramatically<br />
LATEST crime figures show<br />
that the Safer Trafford Partnership*<br />
(STP) has significantly<br />
reduced crime and<br />
anti-social Behaviour in Sale<br />
and Altrincham over the<br />
past year.<br />
In Sale, violent crime has<br />
fallen by 67 per cent since<br />
last year and less serious<br />
assaults have fallen by<br />
almost a quarter. This has<br />
undoubtedly saved lives<br />
and livelihoods and represents<br />
the largest reduction<br />
in violent crime in Trafford.<br />
At the same time, robbery<br />
has reduced by half, and<br />
theft of motor vehicle has<br />
reduced by 37 per cent.<br />
Meanwhile it was also<br />
good news in Altrincham.<br />
Anti-social behaviour has<br />
fallen by 30 per cent with<br />
over a 1000 fewer incidents.<br />
In addition serious violent<br />
crime has fallen by 21 per<br />
cent since last year, robbery<br />
has reduced by a quarter<br />
and household burglary has<br />
reduced by 21 per cent.<br />

Vote of Thanks for the Independent<br />
follows saving of Wellgreen Lodge<br />
WITHIN minutes of the threat of<br />
closure being lifted from Wellgreen<br />
Lodge in Hale, The Independent<br />
was receiving a vote of thanks for<br />
its support of the pressure group<br />
behind the successful campaign.<br />
Geoff Swindells, the spokesman for<br />
the defence group was the first to<br />
express his gratitude, soon followed by<br />
many of the elderly residents whose<br />
plight became a matter of public concern<br />
after being featured in this paper.<br />
“Our committee has worked tirelessly<br />
to prevent the axe from falling<br />
but I believe it was the coverage from<br />
your paper which highlighted our concerns<br />
– and got them noticed by the<br />
people who count,” says Geoff<br />
Swindells.<br />
Geoff revealed that members of the<br />
action committee had worked tirelessly<br />
to canvas support not only from the relatives<br />
of the residents of Wellgreen but<br />
from the surrounding community.<br />
People had pounded the streets<br />
delivering leaflets calling for the threat<br />
of closure to be lifted until the momentum<br />
reached a pitch where it simply<br />
couldn’t be ignored.<br />
Such activities brought to the attention<br />
of the Trafford Housing Trust that<br />
closing the doors at Wellgreen would<br />
not only result in suffering for the residents<br />
but also the surrounding community.<br />
This was because Wellgreen has been<br />
an unofficial community centre for<br />
older people in the locality for many<br />
year – offering line dancing, hot pot<br />
suppers, and even getting groups<br />
Residents and friends of Wellgreen<br />
Lodge wait to hear the final decision<br />
together go on holiday.<br />
Much of this has been down to<br />
Libby Swindells, the scheme manager,<br />
who more than anyone was responsible<br />
for ensuring that Wellgreen was not<br />
seen as a place where people went to<br />
die but to enjoy themselves in their<br />
declining years.<br />
However the final word has to go to<br />
Geoff Swindells: “I imagine there were<br />
a lot of people who questioned the way<br />

face with a prickly subject<br />
when they were told about<br />
the precarious future of the<br />
great British Hedgehog.<br />
Although Hedgehogs<br />
have been in the U.K. for 15<br />
million years, far longer<br />
than man and stretching<br />
back beyond the Jurassic<br />
period, they are now on<br />
endangered species list.<br />
Rochdale environmentalist<br />
Sue Lewis, labelled Mrs<br />
Tiggywinkle, for her tireless<br />
fight to protect the Hedgehog,<br />
told APS infant pupils<br />
of the dangers caused by<br />
mankind.<br />
Sue said: “It is estimated<br />
that the number of garden<br />
hedgehogs has declined by<br />
more than 50% in the last<br />
decade alone. Climate<br />
change may be confusing<br />
the animals, garden habitats<br />
are changing with less<br />
areas left to nature and<br />
then sadly there is the danger<br />
of litter and even sheer<br />
cruelty.”<br />

prestigious University Social<br />
Responsibility Award<br />
AWARDS are almost always<br />
well deserved, but sometimes<br />
they find their way to<br />
people who deserve them<br />
more than most! Ann Johnson,<br />
a resident at Sunrise of<br />
Hale Barns, has just been<br />
awarded the prestigious<br />
‘University of Manchester<br />
Social Responsibility Award<br />
for 2011’.<br />
Ann, back this week from<br />
speaking to Trinity College<br />
Dublin, was diagnosed with<br />
Alzheimer’s disease at the age<br />
of 52 and exhibits all of the<br />
symptoms of short-term memory<br />
loss.<br />
This has, however, not<br />
stopped her giving much of her<br />
time to speaking out to the<br />
wider community, both in the<br />
UK and abroad, about living<br />
with Alzheimer’s.<br />
In her desire to spread the<br />
message about the possibility<br />
of living a full life with<br />
Alzheimer’s, Ann dedicates<br />
much of her time to the<br />
Alzheimer’s Society and Manchester<br />
University speaking to<br />
professionals, nurses in training<br />
and the public. Due to the<br />
role she has undertaken, she<br />
has become a leading<br />
spokesperson for those who<br />
have dementia but no longer<br />
have the voice to speak out.<br />

for 10p<br />
THERE are now ninety additional<br />
parking spaces available<br />
at Oakfield Road car park in<br />
Altrincham, less that a 10 minute<br />
walk to the centre of town, following<br />
the demolition of Oakfield<br />
House.<br />
The area, previously taken up by<br />
the building, has been made suitable<br />
for use as car parking, adding<br />
to the number of spaces available at<br />
Oakfield Road.<br />
The new parking tariffs were<br />
introduced in April following a consultation<br />
with residents, local businesses<br />
and key groups and are<br />
designed to support local businesses<br />
in the borough’s town centres. Feedback<br />
from the consultation showed<br />
consultees were in favour of a low<br />
initial charge to encourage people to<br />
make better use of the town centres<br />
and that all day parking prices in<br />
off-street car parks should be<br />
increased slightly.<br />
The charges are now 10p for one<br />
hour, 30p for two, 70p for three<br />
hours and all day at £3.<br />

Mitchell said: “There has been a positive<br />
response to our new parking<br />
tariffs and I am delighted that there<br />
is now even more space for people to<br />
park to shop and visit Altrincham.”<br />

me! I was born and have lived and<br />
worked here all my life. I am one<br />
of the owners of a business<br />
employing over 20 people in the<br />
town.<br />
Accordingly, in my year as President<br />
of the Chamber of Commerce – and<br />
more particularly as its 100th President<br />
– I want to make sure that the<br />
people of Trafford know more about<br />

rates, the need for a unified short term<br />

the town, as well as strategies for<br />
the medium and long terms. We will<br />
continue to make sure that our MP<br />
and local councillors are aware that<br />
change for the better is needed now<br />
and not in five years time and we will<br />
continue to make them aware that we<br />
will be holding them to account!<br />

some 200 people who<br />
turned out for the Bicycle<br />
Village Fun Day<br />
which is now likely to<br />
become an annual event.<br />

Sarah to provide funds for<br />
their forthcoming charity<br />
bike ride taking in three<br />
European cities, the event<br />
raised in the region of £1,000.<br />
Free to enter, the money<br />
came from a series of raffles<br />
and auctions held during the<br />
event which centred on the<br />
theme of everything you<br />
ever wanted to know or<br />
experience on a bicycle.<br />
Highlights of the event<br />

Excellence’ status from<br />
the International Federation<br />
for the Surgery of<br />
Obesity and Metabolic<br />
Disorders (IFSO) for its<br />
high-quality weight loss<br />
surgery service.<br />
The accreditation means<br />
that Spire Manchester Hospital<br />
has met rigorous standards<br />
for the effective and<br />
safe treatment of morbidly<br />
obese patients.<br />
The hospital had to prove to<br />
an independent committee<br />
that its bariatric surgeon’s<br />
each had a minimum of five<br />
years’ experience performing<br />
weight loss procedures, as<br />
well as its investment in specialised<br />
facilities and a dedicated<br />
team who effectively<br />
treat and manage morbidly<br />
obese patients from initial<br />
consultation to providing lifelong<br />
aftercare.<br />

Surgery for weight loss prompted nurse’s dedication<br />
KATH Rothwell has made<br />
weight loss surgery her<br />
life after she experienced<br />
first-hand the health benefits<br />
it can offer after<br />
undergoing a gastric<br />
bypass procedure in 2005.<br />
It was the toughest decision<br />
that she ever made,<br />
but one that spurred her<br />

A FREE weight management<br />
group is being set up for<br />
young people and their families<br />
in Trafford who are concerned<br />
about their health<br />
and want to make lifestyle<br />
changes – and residents can<br />
request one being set up in<br />
their immediate area.<br />
The group, aimed at children<br />
aged seven to 13 who have<br />
weight problems and their parents<br />
and carers, is being run as<br />
part of the Change 4 Life programme,<br />
which aims to help<br />
families eat well and move more<br />
to give them a healthier outlook<br />
for the future. The 12-week<br />
course will be held on Wednesday<br />
evenings at Firswood Community<br />
Centre in Stretford from<br />
families in Trafford<br />
4.30pm to 5.30pm. During the<br />
sessions, attendees will learn<br />
how to eat a balanced diet and<br />
will be able to pick up practical<br />
tips on how to make healthy<br />
food choices. They will also be<br />
able to take part in a variety of<br />
physical activities. Follow up<br />
sessions will be available after<br />
the group has finished to ensure<br />
that families are fully supported<br />
while working towards a<br />
healthier lifestyle.<br />
The groups have been<br />
arranged by Fit for Life programme<br />
manager Sam Hammond,<br />
community dietitian<br />
Judith Williams and school<br />
nurse Lisa Webster.<br />
Sam commented: “We know<br />
that taking the first step to<br />
tackling weight management<br />
issues can be intimidating, but<br />
the groups provide a supportive<br />
environment where parents can<br />
meet other parents who share<br />
the same concerns, and children<br />
can encourage each other and<br />
have fun while learning about a<br />
healthy lifestyle.”<br />
Families can self-refer to the<br />
programme or speak to a health<br />
professional about being referred.<br />
A dietitian will then carry out a<br />

THE Azores form an enchanting<br />
archipelago of nine emerald green<br />
islands set in the Atlantic ocean<br />

Because of their remote location,the<br />
traditional lifestyle of the Azores,outside<br />
of the main towns, has remained<br />
virtually unchanged. The pace of life is<br />
slow and tourism is in its infancy.<br />
The volcanic formation of the islands<br />
has endowed them with a spectacular<br />
natural beauty. Vast craters, blue<br />
lakes,sheer black cliffs falling in to the<br />
ocean, lush rolling valleys, rugged<br />
mountains and hot mineral springs<br />
and geysers combine to form a truly<br />
diverse scenery found nowhere else in<br />
the world.<br />
The Azores are accessible and<br />
rewarding all year round due to their<br />
favorable climate. The Azores enjoy<br />
pleasant temperatures all year round<br />
with mild winters and warm summers.<br />
There is a weekly flight from Manchester<br />
to Ponta Delgado (Sao Miguel)<br />
outbound flight via London Gatwick<br />

The Azores is a nature lover's paradise.<br />
Each of the nine Islands offers a<br />
wealth of activities to suit all interests<br />
and abilities. My personal favorite has<br />
to be The Caldeira das Sete Cidades<br />
which is one of the most beautiful and<br />
imposing lakes on the Island of São<br />
Miguel, nestling in a crater with a<br />
sweeping 12-kilometre perimeter. The<br />
unforgettable picture of the Verde<br />
(green) lake and the Azul (blue) lake<br />
set off by their surrounding trees and<br />
flowers. The shores and small Azul<br />
peninsula are ideal for walks and picnics<br />
in the most natural of environments.<br />
Legend has it that the lakes<br />
have differing colours due to the tears<br />
shed by a princess and a shepherd.<br />
After finding their love forbidden, they<br />
cried until the lakes at the crater bottom<br />
were filled.<br />
FOOD&DRINK<br />
Wildlife is in abundance throughout<br />
the year in The Azores. Various species<br />
of w<strong>hale</strong>s and dolphin, including a pod<br />
of male sperm w<strong>hale</strong>s, call the Atlantic<br />
waters surrounding the archipelago<br />
their home. If you enjoy relaxing on<br />
the beach for an average of 8hrs a day<br />
drinking pina coladas on a hourly basis<br />
then The Azores is not for you but for<br />
everyone else who enjoys somewhere<br />
a little off the beaten track and has an<br />
interest in the great outdoors then<br />

Pan-fried plaice with<br />
cauliflower purée and<br />
butter sauce<br />
INGREDIENTS<br />
For the plaice<br />
• 75ml/3fl oz white wine<br />
• 50g/2oz sultanas<br />
• 25g/1oz butter<br />
• 8 small plaice fillets, skin and<br />
pin bones removed<br />
• 1 punnet mustard frills<br />
For the cauliflower purée<br />
• 1 cauliflower, cut into florets<br />
• 50g/2oz butter<br />
• 110ml/4fl oz double cream<br />
• salt and freshly ground black<br />
pepper<br />
For the butter sauce<br />
• 1 shallot, finely diced<br />
• 1 tbsp white wine vinegar<br />
• 1 tbsp cold water<br />
• 225g/8oz salted butter, cut into<br />
cubes<br />
PREPARATION<br />
METHOD<br />
1. For the plaice, warm the<br />
white wine in a saucepan, then<br />
add the sultanas and set aside<br />
to soak for a couple of minutes.<br />
2. Drain the raisins, reserving<br />
the wine and set aside.<br />
3. For the cauliflower purée,<br />
cook the cauliflower florets in a<br />
pan of salted boiling water for<br />
4-5 minutes, or until just tender.<br />
4. Drain the cauliflower and<br />
blend in a blender with the<br />
butter and cream until<br />
smooth. Season with salt and<br />
freshly ground black pepper<br />
and keep warm.<br />
5. For the butter sauce, heat<br />
the shallot, vinegar and<br />
reserved white wine in a<br />
saucepan until boiling. Continue<br />
to cook until the volume<br />
of the liquid is about two tablespoons.<br />
Add the water and<br />
continue to cook until the volume<br />
of the liquid is one tablespoon.<br />
6. Reduce the heat and<br />
whisk in the butter, a cube at a<br />
time, until well combined.<br />
Pass the sauce through a sieve<br />
into a clean saucepan and season<br />
with salt and freshly<br />
ground black pepper.<br />
7. Season the plaice with a<br />
little salt.<br />
8. Melt the butter for cooking<br />
the plaice in a frying pan<br />
until foaming, add the plaice<br />
fillets, presentation-side down<br />
and cook for 1-1 1 ⁄2 minutes, or<br />
until just cooked. Turn over<br />
and cook for another 45 seconds.<br />
9. Remove the plaice fillets<br />
from the pan and set aside to<br />
rest for a couple of minutes.<br />
10. To serve, spoon the cauliflower<br />
purée into the centre of<br />
serving plates. Top each plate<br />
with two of the plaice fillets<br />
and spoon the soaked raisins<br />
around the edge.<br />
11. Spoon the butter sauce<br />
over them and finish with a<br />
scattering of the mustard<br />
frills.<br />

IT WILL be a case of<br />
‘Who Dares Wins’ for Sale<br />
this summer, with Sharks<br />
supremo Steve Diamond<br />
calling in the SAS to help<br />
prepare his new-look<br />
squad for next season.<br />
He intends to use the<br />
training skills of the toughest<br />
military outfit in the<br />
world to help pound the<br />
Sharks into shape when<br />
they return for pre-season<br />
training next month.<br />
Diamond revealed he<br />
has a contact within the<br />
elite fighting unit and visited<br />
the SAS HQ in Hereford<br />
earlier this month to<br />
discuss fostering a close<br />
working relationship with<br />
the unit.<br />
“I went to meet the SAS<br />
after the Gloucester game<br />
the other weekend along<br />
with Pete Anglesea, Mark<br />
Cueto and Dwayne Peel,”<br />
Diamond said.<br />
“I’ve got a mate who is a<br />
senior member of the regiment<br />
and they are going to<br />
do some team building with<br />
us in the summer.<br />
“Whether it means them<br />
coming to us or us going<br />
down to Hereford we’re still<br />
working on but one way or<br />
another we will be working<br />
with them.<br />
“The thinking behind<br />
using the SAS is that working<br />
with them will help take<br />
us out of our usual environment.<br />
Like any job, rugby<br />
can get boring if you constantly<br />
do the same things<br />
day in and day out.<br />
“It’s good to see how people<br />
do things differently and<br />
they have got an understanding<br />
of high performance<br />
at the highest level<br />
and we are coming from an<br />
environment of non high<br />
performance. I just thought<br />
given the contacts I’ve got,<br />
why not use the best and see<br />
what we can get.<br />
“The first sessions will<br />
take place over the summer<br />
and, hopefully, we can build<br />
up a relationship with the<br />
military and take things<br />

SALE Sharks have announced a<br />
two-game pre-season programme<br />
for 2011-12, with Edinburgh<br />
Rugby and Glasgow Warriors visiting<br />
Edgeley Park in August.<br />
The new-look Sharks assembled<br />
by Steve Diamond will take the<br />
field against the Celtic League outfits<br />
on successive Fridays:<br />
Friday 19th August<br />
v. Edinburgh Rugby<br />
Friday 26th August<br />
v. Glasgow Warriors<br />
Kick Off times have to be confirmed,<br />
but are likely to be 7.45<br />
p.m. Sharks Executive Director of<br />
Sport Steve Diamond commented,<br />
“Both Edinburgh and Glasgow will<br />
provide good competition. It’s<br />
important, with a new squad, that<br />
we play at home.”<br />
Both teams are seasoned European<br />
campaigners and will provide<br />
stern tests for the Sharks. Fraser<br />
McKenzie is likely to be facing his<br />
former playing colleagues when<br />
the men from Murrayfield come to<br />
Stockport on August 19th, whilst a<br />
week later, Glasgow will be looking<br />
to avenge their pre-season 23-22<br />
defeat at Firhill last year. Tom<br />
Brady won that game with a try in<br />
the corner, and he was to score<br />
again on his Aviva Premiership<br />
debut against Newcastle Falcons a<br />
fortnight later.<br />
Season Tickets have been selling<br />
well this week, and Season Ticket<br />
holders are reminded that they<br />
have the choice of which of these<br />
two pre-season games they attend,<br />
as part of their Season Ticket package.<br />
Sharks have no plans to play a<br />
pre-season match away.
