Just as merlot is used to flesh out the sometimes austere character of cabernet sauvignon<br />

the world over, syrah was once used in Bordeaux to do the same thing ~ adding spice,<br />

fruit and gusto to a reserved cabernet. In Australia that blend has become a classic,<br />

finding itself the base for many of the country’s most highly regarded and serious wines<br />

and these selections, from some of Australia’s better known producers, deftly illustrate<br />
