WELCOME TO THE<br />
It is with pleasure that we welcome you to the third<br />
Tynemouth <strong>Food</strong> <strong>Festival</strong> organised by the Tynemouth<br />
Business Forum. Last year’s event was again a huge<br />
success thanks to the amazing support from all of you. This<br />
year the festival has a new venue and this has enabled us<br />
to make it even bigger and better (unbelievable but true!).<br />
However, it also means that we are, unfortunately, having<br />
to charge a small admission fee, but we do feel that with<br />
the programme this year it will be fantastic value for<br />
money. As well as the usual two days of great local food<br />
and drink with even more stalls and street food vendors<br />
than before; cookery demonstrations from locally renowned<br />
chefs and chocolate tasting sessions with Davenport’s<br />
Chocolate we have a host of live entertainment all coordinated<br />
by our resident DJ Jordy from Metro Radio.<br />
This year, as we are in the grounds of English Heritage's<br />
historic Tynemouth Priory, the festival is all in one place. We<br />
have 50 market stallholders selling a wide range of local<br />
and regional artisan produce; a wide selection of street<br />
food stalls selling food from around the world to tantalise<br />
your taste buds; a food court marquee where you can<br />
enjoy your choice of street food along with a selection of<br />
drinks from Copperfields @ The Priory in association with<br />
Cullercoats Brewery; an activities marquee where various<br />
events will be taking place throughout the weekend,<br />
including chocolate workshops, magician sessions, face<br />
painting and a smoothie bike(see page 24); the cream<br />
of the region’s culinary talent turning up the heat in a<br />
state-of-the-art demo kitchen; a unique experience from<br />
Cullercoats bike and kayak hire (see page 25) plus live<br />
entertainment throughout the weekend. So much to see,<br />
do and taste for all the family!<br />
The Tynemouth <strong>Food</strong> <strong>Festival</strong> organisers have been touched<br />
by the story of a North Tyneside youngster, 4 year old Luke<br />
Collins, whose story you can find on page 6. The festival this<br />
year will therefore be raising funds to support Luke and his<br />
family through collecting donations and selling wristbands<br />
from the <strong>Food</strong> <strong>Festival</strong> stand throughout the weekend. We<br />
hope that you will all support us with this good cause and<br />
that we are able to raise much needed funds for Luke’s<br />
care.<br />
None of this, however, would have been possible without<br />
the generous support of our sponsors from the local<br />
business community, in particular North Tyneside Council<br />
and English Heritage and the enthusiastic involvement of<br />
the exhibitors and the amazing support of the local chefs.<br />
Particular mention must again be given to the steering<br />
group who have worked tirelessly over the year to ensure<br />
that this year’s festival is again a huge success. Finally, a<br />
big thank you to all of you, for again joining us over the<br />
weekend. Enjoy the sights, sounds, aromas and tastes of a<br />
celebration of fine food, drink and culinary skills. We would<br />

Luke’s Life Long<br />
Labour<br />
This year Tynemouth <strong>Food</strong> <strong>Festival</strong> is delighted to be raising money for<br />
Luke’s Life Long Labour, a group raising money for Luke Collins a 4 year<br />
old little boy from North Tyneside and his family. Money raised will be<br />
spent to improve Luke’s quality of life; to ensure Luke has access to all<br />
of the best aftercare, therapies and rehabilitation; to ensure Luke is<br />
supported to develop fully making sure all the necessary resources<br />
are made available to him at home; to support Luke to access any<br />
groundbreaking, innovative treatments that may become available.<br />
This may include treatment costs and associated expenses and to<br />
support a fulfilling family life for Luke, his parents and his older brother.<br />
On 15th July 2010, aged 7 months old, Luke was diagnosed with a<br />
visual pathway glioma (a brain tumour on his optic nerve). What was<br />
to follow was every parent’s nightmare. Luke has undergone several<br />
different types of chemotherapy over the years; he has had dozens of<br />
scans and has spent many, many months in hospital. Despite this the<br />
tumour continued to grow and then the most devastating thing<br />
happened - Luke lost his sight. He was very suddenly left with nothing,<br />
not even light/dark perception.<br />
Luke continued to receive a series of treatments including surgery to<br />
insert a shunt in his brain to ensure the normal flow of brain fluids<br />
which the tumour was blocking. However on the 4th February <strong>2014</strong><br />
the family was given the distressing news that Luke’s tumour was now<br />
too big for radiotherapy and the local hospital felt it was too risky to<br />
operate. Without an operation Luke would not survive. The family<br />
sought a second opinion from Alder Hey Children’s Hospital in Liverpool<br />
and as risky as an operation would be, they were prepared to operate<br />
on Luke.<br />
In March <strong>2014</strong> Luke had an operation and the team at Alde Hey<br />
Hospital were able to remove 20-30% of the tumour. The reduction in<br />
the tumour will allow Luke to undergo a treatment in America called<br />
Proton Beam Therapy.<br />
Luke is a remarkable little boy with an amazing family. He has suffered<br />
a lot during his short life so far but, incredibly, he keeps on smiling.<br />

the North East England Tourism<br />
Awards 2013.<br />
He has worked for Blackfriars for five<br />
years and during that time has cooked<br />
for Si King of The Hairy Bikers, Sir<br />
Bobby Robson, Craig Revel Horwood,<br />
The Futureheads, Al Murray and<br />
restaurant critic Jay Rayner so is used<br />
to high pressure! He has also gained<br />
experience from a number of high<br />
profile restaurants in the UK including<br />
The Kitchin in Edinburgh.<br />
Dan is passionate about developing<br />
good quality seasonal ingredients and<br />
turning them into dishes using<br />
modern techniques such as sous vide.<br />
His favourite cooking style is modern<br />
British and he'll be demonstrating<br />
some popular dishes from the menu<br />
at Blackfriars.<br />
He also has a claim to fame in that he<br />
played for Newcastle United's Youth<br />
Academy for five years as a goal<br />
keeper, and used to train with the first<br />
team when Alan Shearer played there.<br />

Karen is passionate about fish, how to cook it, the<br />
tradition and heritage that goes with the products<br />

When John Calton worked in a pub<br />
overlooking the River Tyne in his<br />
hometown of South Shields, he would<br />
stand at the front door and dream of<br />
one day owning his own place on the<br />
fish quay just a short distance over the<br />
water.<br />
His life has taken many twists and turns<br />
since then – including working with<br />
some of Europe’s top Michelin-starred<br />
chefs – but in November 2013 the<br />
former MasterChef: The Professionals<br />
finalist’s dream came true with the<br />
opening of his first stand-alone eatery,<br />
The Staith House, in partnership with<br />
wife Kimberley and friend and former<br />
work colleague James Laffan.<br />
Based in what was the Dolphin pub<br />
(The Staith House is the 206 year old<br />
hostelries original name before being<br />
rechristened in 1853), the historic pub is<br />
the latest addition to North Shields Fish<br />
Quay’s burgeoning high class food<br />
outlets.<br />
Specialising in “meat from the farm, fish<br />
from the quay,” John says the food isn’t<br />
“fanciful but not ordinary either. There is<br />
quite a bit of inspiration that has come<br />
from the brilliant food pubs in London;<br />

Gareth has been cooking for as long as he can remember. His two earliest<br />
memories are the 1990 football World Cup and being caught by his mum in the<br />
kitchen with a pan on the stove cooking lemonade soup! Luckily, his skills are much<br />
sharper now!<br />
He is a self taught cook and has taken part in a number of cooking competitions.<br />
He was a winner of the 2012 EAT! NewcastleGateshead Trial Shift Competition and<br />
the 2011 Masterchef Live competition at the BBC Good <strong>Food</strong> show. He then went<br />
on to win a Masterchef ‘Champion of Champions’ event at the London Studios. In<br />
2010 he was a final regional contender on ITV’s Britain’s Best Dish. Gareth also<br />
worked ‘stages’ at Rockliffe Hall with Kenny Atkinson and at Blackfriars Restaurant<br />
in Newcastle with Troy Terrington now of Jesmond Dene House.<br />
Gareth now organises pop-up restaurant events and offers private dining services<br />
to individual clients as well as working on blog and food article writing, cookery<br />
classes, event and food festival management and a street food concept to be<br />
launched in <strong>2014</strong>.<br />

Former North East Chef of the Year David Kennedy made his name at<br />
Newcastle’s Black Door, the award-winning restaurant on Clayton Street West<br />

acclaimed David Kennedy’s <strong>Food</strong> Social at the Biscuit Factory in Newcastle,<br />
where he is executive chef. His name also appears above the door at the Bib<br />

In autumn he opened David Kennedy at Vallum in the Tyne Valley where he<br />
continues to be a vocal advocate of local and seasonal produce which he<br />

The Tynemouth <strong>Food</strong> <strong>Festival</strong> is organised by the Tynemouth<br />
Business Forum (TBF) supported by North Tyneside Council. The TBF<br />
is a group of businesses in Tynemouth and the surrounding area<br />
who exist to enhance and promote Tynemouth as a destination.<br />
By connecting local business people it creates a strong voice that<br />
represents the needs and aspirations of businesses, members and<br />
local people. The Tynemouth Business Forum aims to:<br />
• Promote Tynemouth as a vibrant place to visit<br />
• Benefit membership by bringing businesses together<br />
• Increase the number of people visiting the area by<br />
holding events and festivals<br />
• Share knowledge and expertise between members<br />
• Create a vehicle to lobby and advocate for positive change.<br />
The TBF website, which is currently being built, will support these aims<br />
and will also provide each member with a free advert for their business<br />
linked to their website. This will provide a great resource for visitors to<br />

Tynemouth food festival as Davenport<br />
Chocolates once again run their series<br />
of ticket only chocolate tasting sessions<br />
taking place in the Chef Demonstrations<br />
Marquee on Saturday 10th May.<br />
The exclusive 40 minute talks were very<br />
popular last year so this year the sessions will<br />
be available for more people – a maximum of<br />
50 at each talk. Davenport’s Chocolates is run<br />
by Jane Williams and specialises in handcrafted<br />
chocolates made using traditional techniques<br />
and the finest ingredients. The company, based<br />
in North Shields, has built a richly deserved<br />
reputation not just regionally but UK wide, for<br />
creatively made chocolates. These range from<br />
classic favourites in their Vintage Collection, to<br />
innovatively fresh and vibrant new recipes<br />
developed by Jane.<br />
Chocolatier Charlie Pears-Wallace will take you<br />
through a journey of tasting chocolate from around<br />
the world, as you test your noses and tastebuds on<br />
different cocoa beans and develop your pallete to<br />
distinguish between them. You will also have the<br />
chance to try chocolate pairings you may not have<br />
experienced before as you push the boundaries of<br />
flavour combinations (chocolate paired with the likes<br />
of sundried tomatoes, fresh rosemary, black olives;<br />
what will you think?) as well as taste some of<br />
Davenport's well loved favourites, such as the<br />
Cinnamon Toffee Apple or the Raspberry & Rose<br />
Truffle.<br />
Tickets cost £5 per person and are available to buy<br />
from Tynemouth’s Deli Around the Corner or on the<br />
day, subject to availability, from the Tynemouth <strong>Food</strong><br />
<strong>Festival</strong> stand..<br />
Chocolates will be available to buy at the end of<br />
each session and are also stocked by the Deli<br />

campaign. At the food<br />
festival we will be raising<br />
awareness of two exciting<br />
campaigns; Love <strong>Food</strong> Hate<br />
Waste and the Wash,<br />
Squash and Recycle<br />
campaign.<br />
We would love you to come along<br />
and engage with us about these<br />
issues through interactive activities<br />
and demonstrations. We will have the<br />
Smoothie Bike for you to try and will<br />
be showing to how to make delicious<br />
treats out of all sorts leftovers in your<br />
average fridge. We will also advise<br />
on how to save up to £60 a month<br />
on food.<br />
We will also be asking North Tyneside<br />
residents to pledge to wash, squash<br />
and recycle their bottles with a<br />
chance to win up to £1000!<br />

Bicycle Tour<br />
To celebrate the Tynemouth <strong>Food</strong> <strong>Festival</strong>,<br />
Cullercoats Bike & Kayak are offering a special three<br />
villages, three courses culinary bicycle tour. You will<br />
meet your guide and pick up your bicycle at<br />
Tynemouth Priory & Castle before taking a short ride<br />
to North Shields Fish Quay. Your first course will be<br />
served at The Staith House, a wonderful new eatery<br />
from Masterchef finalist John Calton. Afterwards we<br />
will cycle north along the beautiful North Tyneside<br />
coastline, stopping along the way to learn a little<br />
about the history, heritage and wildlife of the area.<br />
Your main course will be served at a mystery venue<br />
along the way where we promise something<br />
seasonal and delicious. Another short hop will take<br />
us to the final stop for dessert, where Luciano Di<br />
Meo will serve you award winning ice cream at his<br />
parlour and café in Whitley Bay. We will return by<br />
bicycle to the Priory & Castle after dessert.<br />
Tours depart at 11am on both<br />
Saturday and Sunday, returning<br />
by 2.30pm. The tour costs<br />
