EDIBLE OILS AND FATS As Turkish consumers like the taste of corn oil due to its aromatic components, the production and consumption of corn oil has increased over the last few years. The export of this item also showed a steady increase and reached important quantities among the exports of the edible oil sector. In 2009, major export destinations have been Israel, Libya and Saudi Arabia which have accounted for about 61% of exports. EDIBLE OILS AND FATS Parallel to the growing demand in the world, Turkey has started to produce soybean oil, which is supplied to both domestic and foreign markets. Although production is still in limited quantity, exports of Turkish soybean oil have gradually increased and new export destinations have emerged in recent years. Among other edible oils, cottonseed oil, a by-product of processed cotton, is also produced in Turkey and it has many uses such as in the kitchen for cooking purposes and in the food industry for the production of margarine, shortening, salad dressings and commercially prepared fried foods. Canola and peanut oils are other minor products of the edible oil industry in Turkey. Although the consumption and export of these items are insignificant, it seems that they have the potential to rise due to domestic and international demand for these oils. Furthermore, the oil pressed from hazelnut is also regarded as a good source of edible oil for cooking, frying or baking foods. Although the hazelnut is popular worldwide as an edible nut, which is good for health, hazelnut oil is also gaining importance due to its health aspects as well as its light and unique flavor especially in salad dressings.
