Picnic – Sunday, June 10, 11:00am – 2:00pm
at beautiful Callaway Park in Elwood. Many of
your favorite attractions, such as the children’s fair,
the fabulous Shoup’s gourmet picnic buffet and
the RG Olympics are on tap for another Red Gold
family outing. Keep a watch at your Human
Resource Department or RGi for the picnic signup
sheets and details about the wide array of
attractions that we anticipate. And remember, the
picnic will go on rain or shine! Should we have
rain there will be plenty of dry seating in the shelter
house and under the tents.
A TALE of TWO CITIES
Lucca, Tuscany, Italy, my grandfather’s hometown and
Elwood, Indiana (where I was born) produce signature
products that form the basis of Italian cuisine: tomatoes
and olive oil. This epiphany inspired me to create this
recipe: Pork Chops Cosmopolitan. Please know that
Red Gold has my highest endorsement and I always
rhapsodize about the quality of your products.
Pork Chops Cosmopolitan
Recipe Created by
Mike Micheli,
Lucca, Tuscany, Italy
MAKES 4 SERVINGS
4 tablespoons Filippo Berio
extra virgin olive oil, divided
½ cup dry red wine
1 (28 ounce) can Red Gold®
Petite Diced Tomatoes,
drained and mashed
4 center cup pork chops
1 teaspoon chopped garlic
1 large green bell pepper, cut in 2 by ¼ inch strips
½ teaspoon dried oregano
1½ cups fresh sliced mushrooms
¼ teaspoon dried thyme
In a heavy 12 inch skillet, heat 2 tablespoons oil. Brown
the chops in this oil for 4 or 5 minutes on each side and
transfer them to a plate. In the remaining fat and oil cook
the garlic, oregano and thyme for 30 seconds, stirring fre-
quently. Add the wine and boil briskly to reduce it to ¼
cup. Stir in Red Gold® Petite Diced Tomatoes and return
the chops to the skillet. Stir, cover and simmer over low
heat, basting occasionally, for 40 minutes. Meanwhile,
heat remaining oil in another large skillet. Cook peppers
for about 5 minutes, stirring frequently. Add the mushrooms,
toss them with the peppers for a minute or 2, and
then transfer them to the pan with the pork chops. Cover
and simmer for 15 minutes. To serve, arrange the chops
on a heated platter and spoon on the sauce.
