Sweet Roasted Vegetables<br />
This versatile side dish is enhanced by the natural golden<br />
color <strong>and</strong> sweetness <strong>of</strong> these scrumptious vegetables. A favorite<br />
that compliments the most simple or elaborate meal.<br />
1 lb. sweet potatoes, 3 cups, peeled, cubed<br />
1 1/2 cups parsnips, cut in 1/2” slices<br />
1 1/2 cups butternut squash, peeled, cubed<br />
1 fennel bulb, sliced in thin wedges<br />
1 cup baby carrots, whole or sliced<br />
1 cup pearl <strong>on</strong>i<strong>on</strong>s or shallots, sliced<br />
1 Tbs. soy butter or oil<br />
1/2 tsp. sea salt; 1/4 tsp. paprika<br />
1 Tbs. maple syrup or h<strong>on</strong>ey<br />
1 tsp. lem<strong>on</strong> juice<br />
Preheat oven to 450⁰F. Combine first 8 ingredients in a<br />
large bowl; toss well. Spread vegetables in a prepared<br />
n<strong>on</strong>-stick roasting pan or dish. Bake at 450⁰ for 50 minutes<br />
or until vegetables are tender. Drizzle with maple<br />
syrup <strong>and</strong> lem<strong>on</strong> juice; <strong>and</strong> bake an additi<strong>on</strong>al 5-10 minutes<br />
until golden <strong>and</strong> glazed. Servings: 4-6<br />
