FINE FOOD SHOW<br />

The Sydney <strong>Royal</strong> Fine Food Show was established in 1995, although<br />

judging <strong>of</strong> fine food products can be traced back to 1870 through the<br />

Sydney <strong>Royal</strong> Easter Show.<br />

The Show comprises 11 competitions held in Spring and Summer each<br />

year, according to the products’ seasonality. Each product is assessed<br />

by a panel <strong>of</strong> judges, who grade it on the following attributes: flavour,<br />

aroma, texture, visual presentation, condition and appearance.<br />

Over 2,000 products are judged, under the guidance <strong>of</strong> Graham<br />

Latham AM, the Show’s Chairman <strong>of</strong> Judges. Graham’s background is<br />

in food education and training and he has held roles with the School <strong>of</strong><br />

Food and Catering at the Regency Hotel School, South Australia, and<br />

at Le Cordon Bleu Australia.<br />
