Type of Milk: Ewe's Milk (60% min.), Goat's Milk (30% min.)<br />

Treatment: Raw or Pasteurized Milk.<br />

Characteristics: The cheese is a reddish white colour depending on the time in the oil, it changes<br />

when cut like all good raw milk cheese that has been ripened for several months,<br />

strong aroma characteristic of all good cheese in oil.<br />
