Sobering times. The Gulf oil disaster is gushing ever outward, spreading harm and 

heartbreak. The economy is still hurting. We’ve seen this as friends have lost jobs and 

businesses have struggled. It’s hitting home as Andy has been laid off from his job. There’s 

little comfort knowing that so many other good, honest, talented people are in the same 

situation. -- including the many dependant on the Gulf for their livelihood. Add to that 

our June heat wave which has droned on and on... “Africa hot,” my friend Holly calls this 

late-summer heat that came too soon. Sobering and sweltering. 

Yet, as I sit at my computer to write, I watch a storm roll in. It promises to bring some relief 

– break up the weather pattern. I take heart in this cosmic metaphor. The dark clouds, the 

lightning strikes promise a cleansing. The darkness of our sobering times and the jolts of 

life events stir things up, and offer an opportunity for some introspection and clarity. 

I’ll look to our contributors this issue for some inspiration. There is lots of good in the 

world, and lots of work to be done and joy to be had. Mark Steiner of Cultivating 

Connections has given us a wise piece on the Gulf disaster. If we don’t shut down, he 

counsels, we can gain “a greater capacity for care and a standing up to help make things 

right.” We have advice from Terry Edwards, UofL Prof from the Department of Justice 

Administration/Southern Police Institute. Environmental criminals can be dealt with. 

Alyson Goldberg of Project Warm tells us of the efforts and amazing results of an army 

of volunteers whose warm hearts are keeping people cool . Project Warm wants to reach 

farther and celebrate everyday energy heros with their newest project, The Green Spark 

Awards and Green Trade Show. 

Many of our contributors focus in on the personal. It’s through our own growth and selfcare 

that we are our best selves. Kimberly Hillerich of Skipping Fish Boat School teaches 

young people and adults to build their own kayaks and to competently navigate the KY 

waterways. Along with building a boat, Kimberly’s students build character. They learn 

that “with a little sweat and dedication they can accomplish extraordinary things.” Rae 

Hatherton ND introduces an ancient system of health care –Tibetan Acupressure – that 

is pure pleasure to give and to receive. Jenny Boice of Divine Creationz continues our 

education in using the herbs that grow freely beneath our feet – this time to take care 

of our children’s everyday ailments. And Maria Whitley of Shine invites us to dance for 

the joy of it and for the health of it. Ever heard of Nia I just might run into you in one of 

Maria’s classes. 

Enjoy this newest collection. Our contributors are our neighbors. We’re fortunate to have 

so much wisdom in our community and I am grateful to have this platform to celebrate it.

World Breastfeeding Week 

In celebration of World Breastfeeding Week, La Leche League of Southern 

IN will host an art opening for The Womanly Art: Works of Art Inspired by 

Breastfeeding during their World of Good Festival on Aug 21st from 10am to 

2pm at the Green Tree Mall. The art show will travel to several different locations, 

staying at each for two to four weeks. The goal with the exhibit is tri-fold: to 

promote breastfeeding among expectant and new moms, normalize breastfeeding and the

Orca Intern 

Nature lovers may want to enjoy a vicarious adventure. We’ve followed, Emily Goldstein, 

Polar Bear champion who has now won three trips to the Arctic for her activism. She’ll be a 

sophomore at UofL this fall but just now she’s interning in a new locale. This just in from her 

mom: I wanted to catch you up on Emily’s newest adventure, and give you her new blog address. 

She is now on a tiny island in the Pacific studying orcas (killer whales). The living conditions are 

very rough, with no hot water, tents, cooking on a propane stove, and washing out of a bucket. 

But she doesn’t care. The orcas aren’t quite there yet, but she sees humpback whales everyday, 

and all sorts of other wildlife. She’s in her version of seventh heaven. They have 

internet, but it has a small bandwidth, whatever that means, and so she can 

only use it once a week or so. She’s using her time on it to keep a blog, which is

Organics Demystified: An Internet Radio Show 

with Lessons from the ‘Ville was launched near the 

end of May on VoiceAmerica’s GreenTalk Network. 

VoiceAmerica is a pioneer in internet-based radio, and 

the GreenTalk Network is devoted to everything green. Hosts Sandee Corlett and Jason 

Tucker serve as translators and ambassadors for the organic community as they deconstruct 

the organic agriculture movement for the consumer. The shows are available in archive form

Gulf Oil Spill Can Ignite Compassion 

While the Gulf Coast Oil Spill is a crisis of 

historic proportion, in reality we have been 

living amongst an environmental crisis for 

quite some time. Most of us have been able 

to distance ourselves from the severity of this 

reality in part because of the delusion much 

of our species has about being separate from 

the natural world. It is also true that for many 

of us - “out of sight means out of mind”.

emerging disaster - - despite our desire to 

shut down, then there remains the possibility 

of something good coming out of this crisis. 

There remains the possibility that the severity 

and horror of the Gulf Coast Oil Spill disaster 

will be enough to wake us from our comfort 

and slumber igniting each of us into deeper 

engagement with the world and our role in 

creating a sustainable and healthy future. 

It is true that should we allow the extent of 

this crisis into our hearts, it will surely break 

them, but in that breaking will come, not a 

shattering or breaking down, but the creation 

of a greater capacity for care and a standing 

up to help make things right. The concern and 

pain in our hearts will ignite our compassion 

providing us with fuel and energy as we put 

our minds, hearts and hands to the work of 

changing the world. 

The Gulf Coast Oil Spill Disaster, thanks to 

modern media, has been anything but out of 

sight. The print and electronic mediums have 

been filled with images of oil slick-covered 

ocean and beaches, horrifying pictures of 

oil-soaked, dead and dying birds, sea turtles, 

crabs, dolphin, and fish. It’s starting to look 

exactly like what it is, the worst environmental 

disaster in U.S. history. 

And these are the just the images BP is 

allowing to be distributed. The scope and 

reality of the situation may well be far worse. 

And, frighteningly, it is not going away. 

The damage both visible and invisible is 

something we will be living with, at the very 

least, for decades to come. The impact on 

migrating birds and fish population alone are 

likely to be devastating. There are also social 

and economic impacts that are weighing 

heavily during this already challenging time. 

If we can avoid turning away from these 

painful images, this difficult reality, if we 

can stay tuned to and engaged in this still 

 

And while the changes we are called to 

make are many, the single most important 

one may be a simple but powerful shift in 

consciousness. A shift, that should we fully 

embrace it, would transform our way of 

being in the world. I refer to the profound 

scientific and spiritual understanding that 

we are not separate from the natural world, 

the understanding that - Everything is 

Connected. Everything is Connected and as 

such, you cannot have healthy humans on an 

unhealthy planet. It’s that simple. Our fates 

are tied to the fate of our mother planet. What 

we do to the web of life we do to ourselves.

Environmental Crime: Why Don’t Those Folks 

Ever Go to Jail 

“In America today, you can murder the land 

for private profit, leave the corpse for all to 

see, and nobody calls the cops.”

Love Canal…Maxey Flats…Bhopal…Chernobyl… 

the Exxon Valdez. These historical “lightning 

rod” environmental disasters drew both 

national and international headlines for 

months, sometimes years. Each event pushed 

the public’s interest in the environment to 

new heights—everyone wanted to save the 

whales and hug a tree. The inevitable front 

page photos of dead and dying sparrows 

and sea lions, coupled with videos of rivers 

and beaches littered with “belly up” fish, 

sparked considerable discussion, debate 

and anger. Eventually, the coffee shop talk 

turned to disappointment and rage in that 

“No one ever goes to jail for these things!” 

Then—almost as quickly as it began, the 

photos disappeared, the talk subsided and 

it was back to “business as usual” in terms of 

the public’s interest in environmental crime.

all together. This is where the public, 

especially grass roots environmentalists, 

can stop questioning why folks don’t go 

to jail and help put a few offenders in jail. 

How Simple. Report the “environmental 

murder” in your neighborhood! When you 

discover an “environmental corpse” in your 

neighborhood, don’t step over it, report 

it—it’s that simple. 

Now…enter the BP Gulf oil incident. Again, 

the headlines cry for justice, the papers are 

full of pictures of oil-soaked pelicans and 

once again, the coffee shop discussions 

center on why no one ever goes to jail for 

environmental crime. Well, quite simply 

put, those responsible for environmental 

crime at the “galactic level” do go to jail! In 

June 2010, an Indian court sentenced seven 

people to two years in prison, including the 

Chair of Union Carbide-India, for the Bhopal 

incident. In this country, at the federal level, 

approximately 80% of criminal convictions 

for environmental crimes involved corporate 

defendants—50% of those convicted are 

sentenced to jail or prison—and 85% of 

those sentenced to incarceration actually 

serve time. It happens! 

Unfortunately, those responsible for 

“ordinary” environmental crime (if there is 

such an event!) often don’t go to jail—and 

that is simply a fact. Those responsible 

Before environmental offenders can 

be sentenced to jail…they must be 

prosecuted…before they can be prosecuted, 

their crimes must be investigated…before 

any crime can be investigated, it must be 

detected…and before those responsible 

for investigating environmental crime can 

conduct a thorough investigation, they 

must be made aware that “a body has been 

found,” if you will. Let someone know you’ve 

“found a body” in your neighborhood—they 

will take it from there—that’s what they get 

paid to do. Unless and until those strange 

leaks, new stains on the street, stacks of tires, 

unusual smells, dead animals, colorful fumes, 

midnight noises, and/or mounds of litter are 

reported, then the chances of an “ordinary” 

environmental crime being detected and/or 

investigated is actually very small. And, if 

environmental crimes are never reported… 

then, yes, no one will go to jail!

There are dozens of federal, state and 

local investigative agencies in Louisville 

and Kentucky who are charged with 

the investigation and prosecution of 

environmental crime. Due to the multijurisdictional 

nature of these crimes, a 

Kentucky Environmental Crime Task Force 

(a collection of federal, state and local 

agencies) has been created—a sort of “one 

stop” shopping for investigating suspicious 

activity. Rather than listing the contact 

information for the plethora of different 

“enviro-cops”…I would suggest that you 

simply call the task force (502.582.5833) or 

City Call (311). Hopefully, they will see to it 

your report/information finds its way to the 

proper investigative agency—it really can’t 

be much easier than that. 

So…quit stepping over the body then 

complaining that no one ever goes to jail 

for murder. Report what you see out there 

on your evening walks, bicycle outings or 

weekend trips—it’s that simple.

Floyd Helton Oil Lease #197 - Alton Townsend was sentenced to 24 months probation 

after pleading guilty to one count of violating the Safe Drinking Water Act. Townsend 

specifically pled guilty for failing to maintain the mechanical integrity of a Class II 

underground injection well in Stanton, Kentucky. According to regulators, Townsend 

was operating a production well that was “disguised” to look like an injection well. 

Elwood Young, Webbville, Kentucky, was sentenced to one year probation and paid 

a $1,000 criminal fine after pleading guilty to one misdemeanor count of violating 

the federal pesticide law, FIFRA. Information received from the U.S. Fish and Wildlife 

Service indicated that the defendant was using Furadan to poison predatory 

animals, and endangered wildlife, and other animals may have died as a result of the 

Furadan. 

Stanley Fonso, Columbia, Kentucky, was sentenced to pay a $2,000 fine and 

was placed on three years probation after pleading guilty to violating the Federal 

Migratory Bird Act by killing birds of prey and using the toxic pesticide carbofuran 

as bait in steel–jawed traps to kill owls, hawks and falcons he claimed were killing his 

game chickens. 

Erler Industries Inc. was sentenced to pay a $1,000,000 criminal fine ($500,000 to be 

suspended if Erler complies with all terms of its probation), as well as to pay $25,000 

in restitution to the Midwest Environmental Enforcement Association and $100,000 

in restitution to the Indiana Department of Environmental Management after 

pleading guilty to two Clean Air Act felony counts of knowingly submitting false VOC 

emissions quarterly reports for its paint coating facility for metal and plastic parts in 

North Vernon, Indiana. As part of its one year probation, the company must develop 

an environmental training program for its employees, develop and implement a zero 

tolerance policy for environmental violations, conduct an environmental audit of its 

facility and make a public apology in a local newspaper.

Project Warm -- Reducing Louisville’s Energy 

Usage for Nearly 30 Years

To date, Project Warm has saved Louisville 

households over $25 Million in energy costs 

and they are working hard to do even more. 

Project Warm is a non-profit organization 

that was founded in 1982 to provide free 

weatherization services for low-income 

households that could no longer afford 

their high utility bills. The escalating energy 

prices of the 1970s, approximately a 600% 

increase in the cost of natural gas, created 

a crisis for many fixed-income households 

as well as the families of many workers 

who were laid off from industries that 

were shutting down or down-sizing their 

workforces. The cost of energy continues 

to weigh heavily on our community today. 

Action’s LIHEAP Crisis Program, which 

provides utility assistance to lowincome 

residents who have received a 

disconnection notice from their utility 

service provider or a past due bill with a 

disconnection notice, or who have received 

an eviction notice from their landlord if 

utilities are included in their rent, or who 

are currently without utility services. 

“In the past many Louisville homes were 

built without concern for energy efficiency,” 

said Project Warm Executive Director 

Frank Schwartz. “Windows are single 

paned, there are gaps around doors and 

windows, and many other energy wasting 

problems. These basic construction issues 

create an unnecessary cost burden on all 

of us, especially for those on low-income.” 

According to the U.S. Department of 

Energy, drafts can waste 5% to 30% of your 

energy use. 

In 2005, AARP completed the study, 

“Affects of Energy Costs on US Adults,” 

which included the following two results: 

•Sixteen percent of respondents have 

delayed payment of bills as a result of 

increased energy costs, with significantly 

more adults 18-49 delaying payments 

(21%) compared to adults 50+ (9%). 

•Some Americans are also limiting or doing 

without food (15%), telecommunications 

(15%), medical services (11%), or 

prescription drugs (11%) because of higher 

energy costs. 

In response to statistics such as these, the 

Federal Government has set up programs 

such as the Louisville Metro Community 

“If all we do is try to pay off a bill once 

utilities are ready to shut off service, than 

we are actually providing a disservice to 

our community,” said Schwartz. “However, 

if instead we focus on changing the amount 

of energy used, thereby reducing the bill 

to an affordable amount, we empower 

people to care for themselves, reduce our 

governments expenditures, and work to 

improve our environment. Our objectives 

are a win for everyone.” 

With a modest budget, and a staff of 2 

fulltime and 2 part time people, Project 

Warm trains and organizes hundreds of 

volunteers to weatherize the homes of 

poor and elderly in our community. The 

2,000 homes we serve each year save an 

average of $382 in energy costs. 

•That means more families stay in their 

homes.

•It means less churn in public school 

enrollment. 

•It means we burn less gas and electricity 

in Louisville. 

•It means we generate less pollution. 

Project Warm takes on the home energy 

consumption battle in three ways: 

Energy Management Workshops - Lowincome 

families learn the skills to make their 

home more energy efficient and receive basic 

supplies to get started. 

First Line Weatherization Services - A mix of 

staff and volunteers repair windows and doors, 

add weather stripping, change furnace filters 

and more for households that meet financial 

requirements. 

Project Warm Blitz - Each November hundreds 

of volunteers hang plastic over windows for 

low income families what are physically unable 

to do so themselves in order to help them stay 

warm during the cold winter months. 

“Project Warm’s services are vital to our 

region and provide at-risk people in our 

community with valuable weatherization

Skipping Fish Boat School, located in

and rediscover their connection to the 

wonders of the natural world. It has been 

my own personal experience that the 

more time I spent paddling, the more 

I cared about the issues effecting our 

environment. When I look at the Ohio 

River, I look at a river that I have enjoyed 

and have gotten to know by paddling 

some of its many miles. It is no longer that 

anonymous strip of water that I must just 

drive along or over to get from one place 

to another as I race through the hectic 

schedule of everyday living. It has become 

a powerful symbol that at its best sparkles 

with life, and I feel fortunate to have her 

glistening along the edge of our city. 

Skipping Fish Boat School and its 

underlying philosophy is owed in great 

part to the transformation I witnessed 

when Dennis Pigeon guided my 13 year 

old son, Quinn, through the process of 

building his own kayak. Suddenly, a 13- 

year-old, whose sense of self seemed to 

be the by-product of indoor activities 

that revolved primarily around virtual 

worlds and electronics, became a young 

man who could accomplish something 

extraordinary with his own hands and he 

had something to show for it! He left the 

computer keyboards behind for lengthy 

periods of time, learned to paddle and roll 

his kayak skillfully, stood a little taller and 

seemed significantly more confident about 

his ability to be an adult in a complicated

they’ve built their own kayak 

Presently, Dennis Pidgeon and I are at Bear 

Creek Aquatics Camp. Originally called Camp 

Bear Creek in the 1940s, it later became a 

resident aquatics camp in the 1980s. Situated 

along Kentucky Lake in an area referred to 

as the “Land Between the Lakes,” the girl 

scouts who attend this camp have endless 

opportunities to windsurf, sail, canoe, kayak 

and swim. At the end of the day they stroll back 

to their cabins, tents or sleep in hammocks in 

the lush woods that meet the water’s edge. 

It is idyllic and since I’ve been here I’ve seen 

bluebirds, a scarlet tanager, the elusive 

prothonotory warbler, blue herons, several 

phoebes wagging their tail feathers, zebra 

swallowtail butterflies, a butterfly milkweed 

of the most amazing orange (asclepias 

tuberosa), several toads and deer. In a place 

like Bear Camp Creek Aquatics Camp, it isn’t 

hard to connect these adventuresome young 

women with the natural world. That part of 

our job is easy here. 

Dennis and I were invited by the 

Kentuckiana Girl Scouts to bring something 

new to their 30 year old aquatics camp. 

We are in our second day of guiding four 

young women ranging in ages from 14 

to 15 through the process of building 

two traditional Greenland kayaks. We are

teaching these capable young women an 

ancient craft that has been in existence at 

least 4000 years. Aside from learning some 

woodworking skills, they are learning 

much more about themselves ... that with 

a little sweat and dedication they can 

accomplish extraordinary things. 

Dennis and I will be returning to Louisville 

at the beginning of July and will be 

starting up our second season of summer 

day camps. Last summer we helped eleven 

youths and adults build kayaks and find 

their way to the water’s edge. This summer 

we hope to get even more people out on 

the water, proudly paddling the fruits of 

their labor and enjoying the sanctuary and 

discovery that quietly paddling along a 

water’s edge generously offers up to us all.

Tibetan Acupressure: A New Approach to an Ancient Art

environmental conditions. 

For thousands of years the Tibetan nomads 

took their herds of yaks and ponies up and 

down the sides of the highest mountains 

in the world, moving with the seasons for 

grazing. Historically, the conditions were 

among the most brutal that human beings 

have endured. Diseases and injuries were 

plentiful and the environment offered 

little to support the healing traditions. 

Using the elemental earth connection, 

meditative concentration, the stimulation 

of pre-acupuncture reflex point therapy, 

local herbs and prayers, the Bon shaman 

kept the tribe healthy physically, mentally 

and spiritually. 

When Indian teachers brought Buddhism 

over the Himalayas, they brought new 

medical knowledge too. The basic 

practices of the Indian Ayer Veda and 

the rudimentary medical knowledge of 

the Bon shaman were blended. The basic 

physical practices from these ancient 

times were simple to learn, easy to 

administer, effective and can to this day,

The Tibetan Acupressure System (TAS) is 

an ancient system of reflexive pressure 

point healing, harkening back to the times 

of the Tibetan nomad. TAS accesses the 

body’s natural corrective energies in order 

to bring balance to the body as a whole. 

This system can be used to treat specific 

conditions or for the overall well-being of 

the body and the mind. 

In the classical style, the recipient remains 

clothed and seated upright in a chair. The 

practitioner accesses the reflex points 

by using the tip of the index finger and 

occasionally the thumb, adding a twist of 

the wrist to deepen the contact. Because 

the points require only a quick, deep and 

penetrating touch, professional body 

workers who have had finger or wrist 

injury due to the mechanical stress of their 

work can deliver this system with ease. 

An entire TAS classical treatment takes 

45 minutes to 1 hour. A CD version of the 

system may be played while administering 

the treatment to increase the focus of the 

practitioner and enhance the relaxation of 

the client. 

The TAS reflex protocols are extremely 

useful for massage therapists to integrate 

into their existing massage sequence or to 

add another modality if used in its classical

form. Nurses, palliative care workers 

and care giving individuals will also find 

the system easy to learn and useful for 

reducing pain. 

Health conditions that can be successfully 

treated with TAS: 

•chronic pain 

•insomnia 

•depression and anxiety 

•mental and emotional distress 

•shoulder and back tension 

•PMS and menopausal symptoms 

•digestive disorders including reflux, 

heartburn, constipation and IBS 

•environmental allergies 

Herbal Child Care 

Many parents like the idea of caring for 

their children in a more natural way but 

aren’t sure how. Here are a few tips to get 

you started. 

Bellyache - Many babies and young ones 

struggle with gas pains that leave them 

fussy and up all night. Fennel is an excellent 

herb to relieve gas including colic. You 

can make fennel tea or get a glycerin base 

tincture. I used to make fennel tea in the 

middle of the night and decided a tincture 

would make life a lot easier. Fennel saved 

my life when my daughter was a baby. She 

still wakes up from time to time screaming 

with gas pain. I give her two droppers 

full of fennel glycerin tincture and she is 

back to sleep in five minutes. Adults can 

use this one too. I know several adults 

•back pain including sciatica 

•headaches/migraines 

•cancer/to support immune response 

and reduce localized pain.

tastes good too! 

Cuts & Scrapes - Comfrey is known as the 

knit bone herb. It is known for knitting the 

skin and bones together. Comfrey salve 

is a wonderful multipurpose salve to have 

around the house. You can use it for cuts, 

scrapes, wounds, sores, for healing stitches, 

diaper redness, pregnant bellies, cracked 

nipples and the list goes on. We use 

comfrey salve for most boo boos that occur 

in our family. Comfrey oil can be poured 

over broken bones or sprains. Do NOT 

apply comfrey to open wounds. Comfrey 

salve and oil is for external use only. 

Bites – Of course the best way to deal 

with bug bites would be to prevent them 

all together. There are many natural bug 

repellents available now and they are 

very effective -- so stay away from DEET! 

Our bug repellent is made with a blend 

of essential oils that bugs avoid. It’s been 

thoroughly tested and repels mosquitoes, 

ticks, gnats, flies, and more. And it smells 

good for a repellant. You can also plant 

marigold, rosemary, basil, and catnip 

around your porch or patio to repel 

mosquitoes. If you forget the repellent and 

get bitten, we have Bite Balm that stops

the itching right away. Many children and 

parents have thanked me for making the 

Bite Balm. Instant relief. 

Stings - If you get stung take a few fresh 

plantain leaves, crush or chew them 

and apply the chewed leaves directly to 

the sting. You can find plantain in most 

any yard. Hold it in place with a bandaid 

or gauze and repeat if necessary. 

Plantain has amazing drawing power 

and will bring quick relief. Plantain is an 

anti-inflammatory substance that can 

kill germs, speed wound healing, and 

stimulate the growth of new skin cells. Be 

sure to gather Plantain away from the side 

of the road or places where chemicals are 

sprayed. 

Earache – Garlic Mullein ear oil is a great 

way to care for ear infections naturally. 

Garlic Mullein ear oil dropped into the ear 

can reduce inflammation, stop pain and kill 

bacterial infections. Garlic can also attack 

fungal infections, such as “swimmer’s ear,” 

that usually occur in the outer ear. 

I’ve read many stories about how well 

Garlic Mullein ear oil works but it becomes 

more real when you receive direct

ago saying she had been in and out of the 

emergency room with an ear infection and

I adapted this recipe from Mollie Katzen’s recipe book: Sunlight Café. 

I have used this for several events, and people always love the surprise of fried green tomatoes! 

We’ll have ripe tomatoes soon enough, but I always am excited to see the first green tomatoes 

when they start appearing in late June and early July. Come by the Forecastle Festival Sustainable 

Marketplace for a meal and you can try my version. Otherwise, have a try in your kitchen!

Fried Green Tomato Quiche 

Ingredients 

1 Unbaked pie crust • 1cup grated cheese (your choice) • Sliced fried green tomatoes 

• 3 large farm fresh eggs • 1 cup milk • Salt and pepper to taste 

Instructions 

Preheat the oven to 375 F. Put pie crust on baking pan. • Put grated cheese into pie crust. 

•Cut fried green tomatoes into cubes and arrange them over the cheese. • Whisk eggs, 

milk and seasonings together and pour mixture slowly over the cheese and fried green 

tomatoes. • Put baking pan in the oven for about 40 minutes, or until custard is set. 

• Remove from oven and cool at least 10 minutes. • Slice and eat! 

Fried Green Tomatoes 

Ingredients 

2 large unripe tomatoes • 1/3 cup corn meal • Dash salt • Dash pepper • Butter or 

cooking oil 

Instructions 

Combine cornmeal, salt and pepper. Mix thoroughly, put onto a plate. • Cut the tomatoes 

into slices. • Press the tomato slices in the coating. Make sure to get cornmeal mixture 

into all surfaces. • Fry tomato slices for 8 to 10 minutes per side, or until golden brown. 

• Drain and cool the slices on a baking rack so that they stay crisp. (Paper towels can go 

under the rack in case you get drips…)
