from P&J’s Greenhouse and Garden<br />

2 – 3 cups fresh kale (small leaves are best)<br />

¹⁄ ³ cup of raw almonds<br />

2 – 3 cloves of garlic<br />

2 Tbsp. of olive oil<br />

2 Tbsp. of fresh lemon juice<br />

½ cup grated Parmesan cheese<br />

(or other local hard cheese)<br />

Chop kale leaves in food processor until fine. Add next four ingredients,<br />

and pulse until blended. Add cheese and blend.<br />

Keep refrigerated. Enjoy on top of pasta or as a cracker dip!<br />

head. Every day, Patty is out in the fields, checking<br />

on her entirely grass-fed herd of Red Angus<br />

and Murray Grey cattle. For her, the practice<br />

of rotational grazing, or moving the cows to a<br />

new strip of pasture daily, “re-establishes that<br />

relationship—why I am here and why I do this.”<br />

Patty and her husband Scott started the herd<br />

in 1995 as a conventional cow-calf operation. A<br />

few years later, hoping to reduce feed costs, they<br />

discovered “stockpiling”—leaving the grass on<br />

the ground through the winter rather than baling<br />

it as hay. From there, it was an obvious transition<br />

to a year-round, grass-fed operation, and Patty<br />

says they haven’t looked back since. In addition,<br />

rotational grazing is a healthy land management<br />

strategy that reduces over-trampling and soil<br />

erosion.<br />

The meat that the cows produce today is the<br />

best proof that the Johnsons are raising their cows<br />

well. “Its really, really noticeable,” she says. “I can<br />

taste it in the beef—the complexity of the flavor<br />

and the boldness. If I eat store-bought beef, my<br />

first impression is that it tastes flat.”<br />

If the resident bull, affectionately known as<br />

“Chunky,” could hear this praise of his herd, perhaps<br />

he would be proud. But he just continues his<br />

benign rule in peace. With the onset of Spring, his<br />

concern is with the young, green shoots of newly<br />

sprouted grass.<br />

It’s safe to say that when most people consider<br />

their local restaurant options, the nearby<br />

hospital’s cafeteria doesn’t normally make the<br />

list. But that’s not the case at Fauquier Hospital<br />

in Warrenton. The hospital’s cafeteria, called the<br />

Bistro on the Hill, not only serves patients and hospital<br />

employees—but it is also frequented by locals<br />

who are simply looking for a good place to eat.<br />

“We have a lot of people come in from the general<br />

public just to eat here...because it’s a good deal<br />

and they know it’s fresh,” says Tony DeWalt, the<br />

Bistro’s Executive Chef. “When you think of hospital<br />

food, you think of lots of canned and frozen<br />

food... but here we have our own gardens and we<br />

work with a lot of local purveyors and growers. We<br />

try to serve everything as fresh as we can.”<br />

Fauquier Hospital has gotten on board with<br />

the local food movement, and the Bistro staff<br />

have worked to buy more local food over the last<br />

few years. “We wanted to make fresh, local foods<br />

available. After all, we’re in the business of keeping<br />

people healthy,” DeWalt explains, “This is the community’s<br />

hospital, so that’s why we’re doing a lot of<br />

outreach as well.”<br />

The hospital works with Blue Ridge Produce,<br />

a local food distributor in the region, as well as<br />

individual farms—and the Bistro’s parking lot is<br />

the home of the Warrenton Farmers’ Market on<br />

Wednesday mornings. Fauquier Hospital has<br />

also planted its Culinary Healing Garden, where<br />

DeWalt and his staff pick fresh veggies and herbs<br />

to include on the menu.<br />

“I think people really appreciate it,” says<br />

DeWalt, “and it’s important personally as well.<br />

Today everything is so processed... So to get people<br />

to see where the food is coming from—you can see<br />

that peas don’t grow in the freezer.”<br />

DeWalt says that people have noticed a difference<br />

since the hospital started buying fresh, local<br />

food, and he and his staff are working to find more<br />

ways to source locally.<br />

“It shows that you care about the people that<br />

live here,” he explains. “You’re supporting the local<br />

people—the buyers, the growers, the sellers...<br />

We’re a part of the community... and we want to<br />

get more people aware and involved.”<br />

A group of individuals has recently met to discuss starting<br />

a Slow Food Chapter in this area. Slow Food is an internationally<br />

recognized non-profit, all-volunteer organization. This chapter will work collaboratively with<br />

other organizations to champion the local foods of this region. The chapter will hold various social<br />

and educational events that will celebrate the production and consumption of fresh, local and seasonal<br />

foods. Events may include mixers, harvest dinners, potlucks, demonstrations, tastings, tours,<br />

film screenings, book club, school gardens, as well as advocacy for food policy. If you are interested<br />
