TO PREPARE À LA CARTE:
Season the steak with salt and pepper. Place on a heated
char grill or broiler. Cook to desired doneness. CCP: Final
internal cooking temperature must reach a minimum of
145°F, held for a minimum of 15 seconds. Add the oil
to a heated sauté pan. Add mushrooms to pan. Cook
until browned and tender. Brush the insides of the top
and bottom halves of the bun with the oil. Place on a
heated char-grill or broiler until golden brown. Place the
bottom half of the bun on a warmed serving plate. Place
the cheese on top of the steak. Place under a heated
salamander or broiler to melt the cheese. Place the steak
on the bun half. Place the mushrooms and sauerkraut on
top of the cheese. Spread the Thousand Island dressing
on the bun top. Place on top of the sandwich. Slice in half
if desired.
