We continue to experience the breakfast revolution.
Although breakfast is still considered the
most important meal of the day by the
health experts, what we eat, how we eat
it and when we eat it has changed greatly.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Ingredients
1 cup White Wings Pancake Mix
1 cup Caterers Choice milk
1 Daybreak egg, whisked
Method
Preheat a large, non stick frypan. Place all ingredients in a
large bowl and mix until combined.
Lightly grease the pan with some cooking spray. Ladle
spoonfuls of batter in your choice of size into the pan.
When bubbles appear on the surface, flip the pancake to
the other side. Cook until golden brown.
Serving Suggestions/Tips
Serve with a scoop of vanilla ice cream, drizzle with maple
syrup and sprinkle with icing sugar.

Preparation time: 10 minutes
Muesli
Ingredients
4 cups Caterers Choice rolled oats
1/2 cup each of Caterers Choice:
• dried apple, chopped
• currants
• dried figs, chopped
• dried peaches, chopped
• dried pears, chopped
• sultanas
• slivered almonds
• macadamias, chopped
• walnut halves, chopped
1 tbsp cinnamon
Method
In a large bowl, combine all ingredients and mix well.
Serving Suggestions/Tips
Keep your muesli fresh by storing in an airtight container. You can change the flavours by adding
in different dried fruits and nuts of your preference. To serve, just add milk and top with yoghurt
and fresh berries or banana.

Spicy Baked Eggs
Serves 4
Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients
1 onion, chopped
1 red capsicum, chopped
2 Hans chorizo sausages, chopped
2 x 400g tins Alfina’s chopped
tomatoes
1/2 tbsp Caterers Choice Italian herbs
1/4 tsp Caterers Choice cayenne pepper
Alfina’s Olive oil
4 Daybreak eggs
Parsley chopped, for serving
Extra cayenne pepper for serving
Lime wedges for serving
Method
Preheat oven to 180C degrees.
Heat oil in frypan. Add onion, chorizo and capsicum. Cook for about 5 minutes until cooked. Add
tinned tomatoes, Italian herbs and cayenne pepper. Lower heat and simmer for 10 minutes.
When the mixture is cooked, transfer to an ovenproof dish. Make 4 wells in the tomato mixture
and drop an egg in each well.
Transfer to the oven. Cook for 10 minutes, or until eggs are cooked to your liking.
Remove dish from oven, sprinkle with extra cayenne pepper and parsley. Serve with a lime wedge.
Serving Suggestions/Tips
Serve with hot sourdough toast and drizzle some Chris’ Greek yoghurt over the top for a
creamy finish.

2 tbsp Berri apple juice
2 cups Uncle Tobys natural style muesli
1 1/2 cups Chris’ Greek Dips Greek yoghurt
1 P/C Kraft honey
Caterers Choice passionfruit pulp
Method
In a bowl, add berries with the apple juice. Mix
and let sit for 20 minutes until thawed.
In a tall glass, spoon 2 tbsp muesli. Top with
yoghurt. Top with berry mixture. Repeat. Top
with a little more yoghurt. Dollop passionfruit
pulp over the top and drizzle with honey. Serve.
Serving Suggestions/Tips
Any frozen berries can be used in this recipe.
You can substitute orange juice for apple juice if
preferred.

Ingredients
2 Lipton Earl Grey teabags
1/4 cup boiling water
1/3 cup Caterers Choice milk
100g Caterers Choice butter, softened
2 Daybreak eggs, whisked
1/2 cup Caterers Choice caster sugar
1 1/4 cups Caterers Choice self
raising flour
Icing
1 1/2 cups icing sugar, sifted
4 tsp lemon juice
2 tsp orange juice
Method
Preheat oven to 160C degrees.
Line a 12 hole (1/3 cup) muffin
tray with paper cases.
Place the teabags into a cup and add the
boiling water. Steep for 3 minutes. Stir in the
milk and set aside.
In a bowl, add butter, sugar, flour and eggs
with the tea mixture. Using an electric beater,
combine mixture until pale and creamy.
Spoon the mixture evenly
amongst the paper cases. Bake in the oven for
25 minutes or until golden and cooked through.
Turn onto a wire rack and cool completely.
Combine sifted icing sugar with orange and
lemon juices into a glass bowl.
Spoon icing over cakes and serve.
