health and behaviour of the equine and of the<br />

preservation of environment.<br />

The feed tables list 169 roughages and 71 concentrates feeds. Data<br />

have been derived from digestion trials on horses, carried out at<br />

INRA and measurements of voluntary intake for most of the forages.<br />

This book also deals with several distinct pedagogic tools dedicated<br />

to end-users: ‘equineration’, a guide to ‘body condition scoring in<br />

horse’ and ‘Equine Rami’ for horse grazing and farming management.<br />

available in many species. Combining these measurements with<br />

This book presents an analysis of the dairy<br />

and associated sector developments in Eastern<br />

Europe and China. The transition in cattle<br />

husbandry in Eastern Europe, resulting in<br />

enormous structural changes, but not in an<br />

increased production volume, is different<br />

from emerging countries, like China, where<br />

traditional small scale farming goes together<br />

with the remodelling or start of mega farms.<br />

Capacity building by means of cooperation appears to be hindered<br />

by historical experience.<br />

Farm development paths were studied in more depth in Poland,<br />

Lithuania and Slovenia using detailed farmer surveys. Farmers’<br />

strategies, availability of resources, and opportunities and threats<br />

were analysed, and interactive group trainings in strategic<br />

management were part of the analysis. The results are presented<br />

here. Although farmers showed similar wishes concerning farm<br />

development, the local environment and policies determines the<br />

degree of achievement. Farm fragmentation, the high percentage of<br />

rented land and availability of suitable labour are major constraints.<br />

Future EU policies are a concern but new technologies are embraced.<br />

This book is a must for those interested in the transition in Eastern<br />

Europe. It is indispensable to consultants, marketers, companies,<br />

farm leaders and government officials in agriculture.<br />

Quality foods, such as traditional, EU<br />

certified, organic and health claimed are part<br />

of a growing trend towards added value in<br />

the agri-food sector. In these foods, elements<br />

of production, processing, marketing, agrotourism<br />

and speciality stores are combined.<br />

Paramount above all is the link to the<br />

consumer, which requires a personal approach.<br />

At this point, one enters the field of food<br />

consumer science. This can be seen as a hybrid of two distinct sciences.<br />

On one hand, there is the ‘hardware’ component, i.e. the science of<br />

food. On the other hand, the ‘software’ component, related to the<br />

science of consumers’ preferences and behaviour. In animal science,<br />

nearly all attention is given to the ‘hardware’ aspect. However, to<br />

build a successful business in quality food products, the ‘software’<br />

aspect is essential. This publication devotes special attention to<br />

the consumer and gives insight into an area of knowledge still very<br />

much in development. It is intended to enhance understanding of<br />

the complex relationships in the route from products to consumers<br />

and offers practical solutions in this field. This publication includes<br />

Game meat is consumed world-wide. In most<br />

regions, it contributes only a small part to the<br />

overall meat and food supply, but for reasons<br />

of animal welfare and sustainability it is<br />

sometimes considered an alternative to meat<br />

from farmed animals. Despite differences in<br />

game species, ante mortem conditions (freerange<br />

or fenced; wild or semi-domesticated),<br />

hunting or harvesting procedures and further<br />

handling of the carcass, there are common requirements as regards<br />

meat safety and quality. Whereas meat hygiene and safety have been<br />

an issue in game meat for export/import for a long time, primary<br />

production, domestic supply and direct supply to the consumer have<br />

recently been addressed by legislation and these sectors still present<br />

unresolved questions and challenges.<br />

This book combines 24 contributions presenting the view of experts<br />

in game meat hygiene and quality. They address four main topics:<br />

i.e. ‘hygiene and microbiology’, ‘epidemiology’, ‘risk assessment and<br />

management’ and ‘muscle biology and meat quality’. In addition<br />

to contributions on this topic by authors from eight European<br />

countries, a South African perspective is provided, thus representing<br />

the standpoint of a major game meat exporter.<br />

This volume is the first in a series on safety and quality assurance<br />

along the game meat chain, following an approach ‘from forest to<br />

fork’ and is targeted at scientists in academia and industry, graduate<br />

students as well as at governmental officials in veterinary public<br />

health and food safety.<br />

Game meat, previously often considered as an ‘exotic’ food, or being<br />

relevant only in remote regions, is becoming increasingly popular.<br />

In order to provide sufficient quantities of nutritious, wholesome<br />

and safe game meat, a number of measures have to be implemented<br />

along the food chain- from the forest/field or fenced area where the<br />

animals are harvested, to the point of consumption. These involve<br />

monitoring and control of diseases of game animals transmissible<br />

various experts in the field, addressing four<br />

This book is the result of collaborative work<br />

between INRA and the Association Française<br />

de Zootechnie (AFZ). The tables in this<br />

book present the chemical composition and<br />

nutritional values of the feed materials fed to<br />

the main farm species.<br />

The feed materials included in this publication<br />

are used both in the formulation of<br />

compound feeds and as straight feedstuffs<br />

(concentrates and by-products).<br />

The values of chemical composition were<br />

mainly obtained using field data collected<br />

by AFZ from laboratories specialising in animal feeding (the data<br />

base includes over one million values). The nutritional values result<br />

principally from experimental work performed by INRA and its<br />

partners.<br />

The data used take into account the evolution in feed materials<br />

and nutritional concepts. Important characteristics have been<br />

introduced, namely net energy for pigs (growing pigs and sows),<br />

amino acid digestibility, mineral availability and starch degradability<br />

for ruminants.<br />

In the present context of animal feeding and the new challenges<br />

that it faces (product quality and safety, animal health and welfare,<br />

environmental issues), this publication provides a reliable scientific<br />

reference document for feed manufacturers, veterinarians, extension<br />

In the past century, many advances were made in the control of<br />

vector-borne diseases. Malaria disappeared from the northern<br />

hemisphere, diseases such as typhus, Bartonella and yellow fever<br />

were seriously reduced in prevalence and in many countries<br />

effective methods of disease control contributed to a greatly reduced<br />

incidence of such diseases. Most of these advances were beneficial<br />

to the industrialized world, whereas underdeveloped countries<br />

continued to suffer much as before. Indeed, several diseases such as<br />

malaria, Rift Valley fever and African sleeping sickness are still highly<br />

prevalent in specific countries. ‘New’ vector-borne diseases, dengue<br />

and West Nile fever, have emerged and are invading previously<br />

disease-free regions. The discovery of new drugs and vaccines has<br />

made great advances and allows for the effective treatment and<br />

control of many diseases. In contrast, vector control has lagged<br />

behind in development, even though it is realized that effective vector<br />

control would allow for an immediate interruption of the transmission<br />

of disease, and aid in disease control and eradication. In the last<br />

20 years new initiatives on vector control have been undertaken,<br />

leading to a rapid development of effective and lasting methods of<br />

vector control. The development of molecular genetics has provided<br />

new insight in vector biology and behaviour, which is being used for<br />

developing new strategies of vector control. Advances in geographic<br />

information systems allow for precision targeting of interventions.<br />

The collective information on new developments in Vector Ecology<br />

and Control of Vector-borne Diseases is scattered over numerous<br />

periodicals and electronic databases. This book series intends to<br />

bring together this information in volumes arranged around selected<br />

themes that are currently of interest.<br />

Ecology of parasite-vector interactions<br />

Vector-borne diseases continue to be one of the<br />

most important determinants affecting human<br />

and animal health. Large numbers of people<br />

suffer from diseases like malaria, dengue,<br />

filariasis and leishmaniasis, especially in the<br />

tropics. Whereas these diseases were eradicated<br />

from the temperate climate zones, in recent<br />

years the rising incidence of ‘emerging’ vectorborne<br />

diseases such as bluetongue, West Nile<br />

Virus, Lyme disease, tick-borne encephalitis and the recent outbreaks<br />

of chikungunya and dengue in southern Europe provide evidence<br />

that these diseases are resilient and can disperse to other regions and<br />

continents where before they were not present or relevant.<br />

Many tools for the management of vector-borne diseases are currently<br />

under pressure because of increasing drug and insecticide resistance,<br />

as well as the realization of biological variation of parasites and vectors<br />

and their ecosystems. At the same time, progress in our understanding<br />

of genetics, immunology, population biology and epidemiology<br />

allow for a better understanding of parasite-vector interactions. Here<br />

the state-of-the-art of these interactions is being reviewed, and means<br />

for using this information for advanced strategies of vector-borne<br />

disease control are proposed. Ecology of parasite-vector interactions<br />

aims to provide a rapid overview of recent developments in the field<br />

of parasite-vector interactions and how this can be used for more<br />

effective and sustainable disease control.<br />

The series Food Safety Assurance and Veterinary Public Health<br />

focusses on all topics considered by the European College of<br />

Veterinary Public Health (ECVPH) – a specialty college operating<br />

methods, from multivariate analyses of survey<br />

There are a few examples in the Western world in which agricultural<br />

and rural protest groups have developed into populist political parties<br />

(Poland, the Netherlands, Finland). This book is the first to explore<br />

under which conditions this happens, and to what extend populist<br />

parties do have rural ties and a rural agenda. Well-known authors<br />

with backgrounds in rural studies or in political sciences describe<br />

and analyse the situation in a number of countries (United Kingdom,<br />

France, Poland, Austria, the Netherlands, Australia, Finland). To<br />

a large extent the political system and existing political landscape<br />

determine the opportunity structure for rural protest groups to play<br />

a role as political party. However, such parties can only survive when<br />

they enlarge their agenda, away from agriculture and the rural. The<br />

chances are best for groups with a national and broad rural agenda<br />

(instead of regional or sectoral). The authors also show that populist<br />

parties often start with an urban agenda, but that generally they have<br />

quite some support in rural areas, even more so when they develop an<br />

Coffee certification in East Africa:<br />

Certification of coffee producers is frequently suggested as a<br />

promising strategy for improving the position of smallholder farmers<br />

in the market. After the launch of the first Fairtrade label in 1988,<br />

several other standards have been promoted either by voluntary<br />

agencies (Utz-certified) or by private coffee companies. Each<br />

coffee label relies on different strategies for enhancing sustainable<br />

production and responsible trade.<br />

Coffee certification in East Africa is of a rather recent nature but<br />

has been rapidly expanding, representing currently 26 percent of<br />

the world’s sustainable certified coffee supply. Marketing channels,<br />

cooperative organisation and household structures show notable<br />

differences between Kenya, Uganda and Ethiopia. Empirical studies<br />

on the effects of standards for smallholders are scarce.<br />

This book intends to deepen our understanding on the role and<br />

functions of coffee certification regimes, based on three innovative<br />

approaches: (1) longitudinal field survey data capturing changes in<br />

coffee farming systems and effects on household welfare; (2) in-depth<br />

interviews and behavioural experiments regarding risk attitudes,<br />

trust and investments at cooperative level; and (3) detailed discourse<br />

analyses regarding gender roles and female bargaining power within<br />

coffee households. The chapters included in this book provide new<br />

and original evidence about the impact of coffee certification based<br />

on large-scale field surveys and in-depth interviews.<br />

The enforceability of the human right to adequate<br />

While the right to adequate food is often<br />

discussed in the context of developing<br />

countries, especially in situations where access<br />

this book focusses on the right to food in two<br />

Western countries in which theoretically the<br />

each individual. Through a legal comparative<br />

study, the enforceability of the right to food<br />

is compared between the Netherlands and Belgium in light of the<br />

current UN Human Rights system. There seems to be a difference<br />

between what the countries do, what they say they do, and what they<br />

should do on the matter. As it appears, the coincidental constitutional<br />

circumstances mainly determine the enforceability of the right to<br />

food, rather than the content of the human right in itself.<br />

This book includes a thorough analysis of suitable comparative legal<br />

methodology and the embedment of the right to food in the UN<br />

human right system. Furthermore, for both countries, an in-depth<br />

analysis of the case law on the right to food (mostly concerning the<br />

status of foreigners), the constitutional context in which the Judiciary<br />

operates, and the relevant UN reports and subsequent procedures are<br />

outlined. Finally, recommendations are made to both countries and<br />

The differences between agricultural law<br />

and food law are becoming progressively<br />

blurred. This is only natural because both<br />

intend to control that food products placed<br />

and withdrawals have been carefully regulated to guarantee a rapid<br />

and efficient reaction, but these legal mechanisms appear to be less<br />

well-designed when dealing with the unwanted consequences of<br />

unjustified alerts. A third topic is food prices and trading conditions,<br />

an area that cannot always be completely left to unregulated marketforces<br />

due to the special nature of the product involved.<br />

The above issues are analysed by several experts from different legal<br />

backgrounds and countries, a varied approach adequate to the hybrid<br />

nature of food law.<br />

of the changing roles of non-governmental<br />

organizations (NGOs) in promoting<br />

sustainability of small and medium-sized<br />

enterprises (SMEs) in Peru. The book focuses<br />

on the domains of organic production,<br />

business social responsibility and sustainable<br />

production. The innovative study uses a<br />

combination of network and discourse analyses<br />

to identify the main patterns and shifts in the roles of NGOs in order<br />

to deal with sustainability and the market. Two major contemporary<br />

sociological theories – ecological modernization theory and network<br />

society theory – are applied to frame the analysis.<br />

The in-depth analysis of international networks of NGOs operating<br />

in Peru provide valuable inputs in terms of changes in network and<br />

discourse patterns, and consequently, changing roles for NGOs.<br />

Remarkably, social movement, liberal market and sustainability<br />

viewpoints are generating new networks and new discourses, with<br />

a prominent position of national and international NGOs visà-vis<br />

SMEs, and in absence of the national state. Next to the usual<br />

‘watchdog’ roles, NGOs are developing roles of ‘helper’ in order to<br />

answer to the market needs of SMEs. The analyses challenges Castells<br />

scheme of space of flows versus space of place and suggests considering<br />

in ecological modernization theory both ecological rationality and<br />

social rationality in order to advance environmental governance of<br />

SMEs in developing countries, particularly in Latin America.<br />

transitions. Theoretically, a practice based<br />

approach is developed as a novel framework<br />

to analyse, understand and influence transition<br />

processes to sustainable mobility at the level of<br />

The focus in each of the three cases studies is on situated interactions<br />

between consumers and producers. Amongst these is an analysis of the<br />

role environmental information and subsidies in new car purchasing.<br />

Also, various examples in which an attempt was made to orchestrate<br />

a (modal) shift in commuting practices are examined. Each of the<br />

empirical case studies shows the important role of contextual factors<br />

in understanding and influencing mobility behaviour of citizenconsumers.<br />

In addition, this book helps to understand how and why<br />

innovation in mobility practices takes place or not.<br />

All prices mentioned in the catalogue are exclusive of local tax or VAT. Prices may be changed without warning. We provide<br />

free shipping from our Dutch warehouse. Dollar prices are given for US or Canadian customers only, which are supplied<br />

through our American distributor, Enfield Publishing.<br />

Individual customers<br />

You can order our books through your local bookstore or directly<br />

from <strong>Wageningen</strong> <strong>Academic</strong> <strong>Publishers</strong>. Order can be placed in our<br />

online bookshop, by e-mail, or by fax.<br />

Lecturers<br />

For lecturers considering adopting our book as a course textbook,<br />

inspection copies are available. Please send us an email with course<br />

details to request an inspection copy. Inspection copies will be sent<br />

at our discretion.<br />

Book suppliers<br />

For non-European book suppliers we prefer to work through a<br />

shipper. Special delivery is used only upon request and is paid by the<br />

customer. A credit account is given at our discretion.<br />

Payment<br />

Orders placed from outside the Netherlands must be pre-paid upon<br />

receipt of a pro-forma invoice or by purchasing directly through our<br />

online bookshop. Payment is possible either by bank transfer or by<br />

credit card. Note: Due to high processing costs, cheque payments are<br />

not accepted.<br />
